The Thames Foyer is the heart of The Savoy. A must-try here is the famous Afternoon Tea, which is quintessentially a very British custom. Guests choose from a range of teas served with finger sandwiches, homemade scones, and a selection of seasonal cakes and pastries.
london holds many special memories for me. my last trip to the city was three years ago when i met shingai shoniwa from the noisettes and we photographed her for our jun/jul 2013 cover. i also caught the extraordinary “david bowie is” exhibition, which was impossible to get tickets to; i only found out about it when i reached london and tickets were completely sold out. but i was also staying at the savoy, one of london’s historical hotels; and the concierge (whom i suspect are magicians), knew someone who knew someone with a vvip pass to the v&a (where the exhibition was taking place), and they secured me a pair of bowie tickets during my stay there. now i’m back in london for the launch of chanel’s fall/winter 2016 makeup collection, and the one place i really wanted to return to was the savoy — for its unrivalled hospitality, and also for its excellent location in the heart of london’s shopping and theatre district. by adele chan Visit fairmont.com/savoy-london for rates and dates.

The shopping and dining area of Covent Garden is just a short walk away from the hotel.
Kinky Boots the musical (highly recommended) is showing at Adelphi theatre, which is just across the road from the hotel. The concierge arranged tickets for us.
We toured Hyde Park by horseback, also arranged by the hotel’s concierge. The Hyde Park Stables was a quick Uber ride away.
If you walk a bit further from Covent Garden, you can hit Oxford Street, famous for its stretch of shops.

lifetime treat. But it’s the Savoy, the most famous hotel in the world, a selfcontained belle epoque world of limitless luxury: of course it’s going to be breathtaking.

Tea is served in the Thames Foyer, which following the hotel’s £220 million refurb (really) is a pillared and It’s rare to find a restaurant where the toilets are more famous than the food, but this Mayfair venue has chandeliered fantasy of gold and contentment. In a central birdcagelike structure, a pianist provides plenty to offer besides its futuristic allwhite, eggshaped cubicles in which an ambient nature soundtrack lustrous American jazz (with the odd cheeky pop cover woven in); the menu is fairly traditional, with finger plays. The tea itself is thoroughly good fun. sandwiches (cucumber and mint, Scottish salmon, Wiltshire ham), bijou cakes, pastries and fluffy scones. It probably doesn’t need to be pointed out that Champagne is a speciality here, and practically compulsory. All the classic elements have been given a Sketch twist: the bone china is decorated with playful illustrations by David Shrigley; a finger sandwich comes topped with caviar and a perfect disc of quail egg; and 100 Strand, WC2R 0EW. (020) 7420 2111 Conversesporting staff are dressed in utilitarian ensembles designed by Richard Nicoll. It’s all terribly cool. The icing on the cake? It’s the Gallery dining space with its plush pink booths and a domed ceiling which will make you feel like you’re dining inside a giant fondant fancy.

This punchy cocktail is elderflower, mint, and lime. Earlier this year, the restaurant opened the Captains made from Barcardi Superior Rum, Ancho Reyes, zingy grapefruit juice, sugar syrup, Quarters, a dedicated private area for people, while the whole venue, including the Peychaud bitters and hickory. garden, is available to hire.

With its Grand Divan having played host to the great and the good for over a century and the powerhouse American and Beaufort bars next door at the Savoy Hotel, Simpson’s Knight’s Bar (http://www.simpsonsinthestrand.co.uk/knights-bar.php) has never quite got the plaudits it deserves. Opened in 1999, it is a supremely elegant and chic spot to sink a cocktail and it has recently re䜷ned and expanded its gin menu. In a small but very tastefully furnished space, the bar sits no more than 30 on an array of comfortable sofas and chairs. There is a very 1920s feel to the Art Deco inspired room with mirrors and traditional English sporting and satirists prints adorning the walls alongside a gleaming marble topped bar. Knight’s Bar has enlarged its gin selection so that both the gin fanatic and just merely curious have plenty of scope. It does not boast of having the largest gin selection in London, but its selection of 30 odd are carefully broken down by type into juniper heavy, citrus, 쎿䘼oral and complex tasting groups. Smaller gin distilleries such as 45W and their Burleighs gin, Cremorne Colonel Fox and Gin Mare are all available. At the heart of their refreshed menu are their Simpson’s Signature Serves – a selection of ten carefully paired gins with the correct garnish and appropriate tonic – be it Fentimans or Fevertree. Coming in between 11 and 13 quid these are very reasonably priced for the urbane surroundings. My Colonel Fox with Star Anise, candied Ginger and Fevertree was delicious and refreshing – the candied ginger o鎄뼀ering a little bite to liㆨ㑠t the drink. Those desiring more cocktails are well catered for gin wise with o鎄뼀erings such as the Kit Kat Club (Tanqueray, strawberry cordial, lime, rose wine, basil and balsamic vinegar) and Dicken’s Mule (Beefeater, Cointreau, lemon juice, Savoy marmalade and ginger beer). Smaller but well selected ranges of wines and whiskies are also available. For those not partaking in the feast downstairs a small selection of very moreish bar snacks are available – with dishes such as Honey Panko Prawn, Devilled White Bait and Duck Spring Roll weighing in at around six quid these will accompany a sniㆨ㑠ter or three admirably. Those seeking a supremely comfortable and stylish bar – and perhaps needing respite from the tourist hordes across the road in Covent Garden – should follow in the footsteps of Dickens and Sherlock Holmes and head for 100 Strand and turn leㆨ㑠t up the richly carpeted stairs to this stylish gin sanctuary.

On the list of manly actions to have perfected, carving the formal roast comes somewhere in between being able to immaculately mow a lawn in stripes and bringing a woman to orgasm every time. An act full of potential pitfalls, for those who get it wrong, humiliation, bits of animal all over the dining room or a trip to Accident and Emergency awaits. Having been in the business of carving top-quality joints of beef and lamb since 1828, Simpson’s in the Strand (http://www.simpsonsinthestrand.co.uk) has o␀갂ered carving masterclasses for some years now – a fun and useful way for all to improve their knife wielding dexterity. Welcomed over a refreshing gin and tonic (do not partake of too many before handling rather sharp knives… ) you are welcomed by Simpson’s head cook Gerry Rae, whose informative and witty banter is enough in itself to be worth the price of entrance. Gerry explains the intricacies of carving using beef, lamb and chicken as each require their own special approach to present the meat to best advantage. Preparation is everything; as Gerry explains a poorly cooked piece of meat will never carve well. It is critical to allow all meat plenty of time to sit. The key is to monitor the temperature at the fattest part of the cut or bird. Beef should be taken out of the oven to rest when its core temperature hits 33 degrees C, lamb 45 degrees C and chicken 50 degrees C. Meat is a very good insulator (the bones on a rib of beef also act in a similar way); leaving it resting for the same amount of time it takes to cook to those temperatures actually means the meat will continue to cook and the core temperature will go up whilst it’s out the oven. Leaving the meat to rest, in beef and lamb’s case will allow the juices to be absorbed and retained whilst also allowing the meat to gently cook itself uniformly. For chicken, leaving it to rest and cook through itself means a more succulent bird – no overly dry and desiccated breast here. With chicken, Gerry also recommends removing the wishbone before cooking and to stu␀갂 with lemon, shallot and herbs – never stuぽxng as it takes so long to cook inside it invariably leads to an over-done and dried out bird. Cooking the chicken in the Simpson’s manner will mean the legs will be slightly underdone – remember this and pop back in the oven for a further ␑ve to six minutes. Once placed on the serving plate the fun starts. Use the carving fork as an extension of your ␑ngers and always use the entire length of the sharpened carving knife, as Gerry puts it, “don’t poke away with the ␑rst two inches of the blade…!” Useful advice for so many arenas of life really…. Cut smoothly. For beef and lamb, no slice should be more than 3mm wide. On a leg of lamb, do not cut around the bone but cut down towards it at a 45 degree angle. With chicken, removing the wishbone before cooking should allow better access and thus smoother slicing of the breast. For those on the carving class who manage to resist sneaking a slice or two during instruction, head upstairs to the Grand Divan to be served Simpson’s cuts of meat in their full glory. 28 day aged Scottish beef or hogget – lamb over one year old but under two (Simpson’s use it for its depth of ㏈핐avour) – is carved on their Georgian trolleys as it has been since the days the restaurant was mentioned by Sherlock Holmes. Given the heaviness of those most traditional English dishes, the restaurant does see a slight drop o␀갂 in custom over high summer but has recently re␑ned other main course options including lighter ␑sh dishes as well as other Strand standards such as Beef Wellington. Be warned – a full three courses at Simpson’s in the Strand is not to be taken on lightly (!) but o␀갂ers a memorable English dining experience. Arguably thePlantation most keenly contested is the World’s Best Cocktail Bar which went to The Stiggins’ Fancy Pineapple Rum Connaught Bar at The Connaught in Mayfair. With its David Collins interior – a Awards also went to the American Bar at the Savoy (Best International Bar Team); gleaming, fat-leather-chaired contemporary version of the Edwardian original – it’s Callooh Callay (Best International High Volume Cocktail Bar); Hawksmoor Spitalfields certainly one of my favourite places in which to drink. 'There are few hours in life more agreeable,' writes the great novelist and dispenser of needlessly authoritative-sounding bon mots Henry James, 'than the hour dedicated to the ceremony known as afternoon tea.' But what do you mean 'hour'? Honestly. You should've gone to T H E S AVOY , old sock. They wouldn't have given you the bum's rush after a paltry hour. You could've spun the agreeable ceremony out as long as you wanted - like one of your marvellous, circuitous, interminable sentences. London today is as blessed with at least as many fine grand hotels in which to take afternoon tea as it was when Henry James was dabbing clotted cream and strawberry jam off the tip of his brilliant nose. Possibly even more of them. Nominating the best of the lot would be a thankless and unrealistic task. So much depends on mood and whim and the exigencies of the moment. Service is lively, liveried and brisk, respectful but not fawning, attentive without being obtrusive, resolutely on the right side of stuffy. In short, it's spot-on. The tableware is pleasingly crisp of linen, silvery of pot and spoon, and floral of cup and saucer. Nor is there any faulting the foodstuffs. The obligatory finger sandwiches, scones, pastries and cakes are impeccable; the teas, from the house blend to the splendidly named Iron Buddha Oolong and Flowering Osmanthus, likewise. The Savoy all but invented the thé dansant in its Thames Foyer, as it has become known. Despite its name, it's not actually very easy to see the Thames from here. (It's a different story from the suites above, which have river views to stagger the gods.) Yet there's a curiously riparian feel to the space, with its palette of pale greens, the light filtered softly through a splendid stained-glass dome, the staff eddying and flowing around the central gazebo, which itself seems to float on a bed of hydrangeas. The three most valuable assets to be an aspiring butler are passion, personality and wanting to look aㄵ‵er people. What has been the biggest challenge you have faced in your career and how did you overcome it?
One of the biggest challenges I faced during my career is understanding the concept of luxury. I came to understand luxury by listening to the people that I served and by consistently reading and researching topics ranging from how to dress for certain occasions to local shopping destinations. I relish a challenge and thoroughly enjoy learning new skills and abilities each day.

Whatever you do in life, be the best you can, always put your best foot forward and be proud of what you do and who you are. What of all your Butler duties do you think is the most important to be an expert in and why?
One of the most important duties that our role encompasses is building a relationship and rapport with the guest, providing them with trust and confidence in all that you do. Another contributing aspect to take into consideration is personality, adapting your character to each individual guest.

My top tips that I would be delighted to share are as follows: Plan and organise your week, plan exactly what needs to be executed for all those concerned. No matter how simple a task may appear, planning always make things easier. Do you have a most memorable client or particular task that you have been asked to do that you could share with us?
On one occasion, I was sent to New York via a concord, tasked to pick up jewellery (which was also completed in a day); this is a memory that I will treasure for years to come.
