Recipe

Ingredients (serves 8) 4 ounces dark chocolate (for the cake) 4 ounces granulated sugar 4 ounces unsalted butter (softened) 1 egg 8 ounces Rich Tea biscuits ½ teaspoon butter for greasing 8 ounces dark chocolate (for coating) 1 ounce chocolate (for decoration)

Method � Lightly grease a 6x2½-inch cake ring and place on a tray on a sheet of parchment paper. � Break each of the biscuits into almond size pieces by hand and set aside. � Cream the butter and sugar in a bowl until the mixture starts to lighten. � Melt the 4 ounces of chocolate and add to the butter mixture whilst constantly stirring. � Beat in the egg to the mixture. � Fold in the biscuit pieces until they are all coated with the chocolate mixture. � Spoon the mixture into the prepared cake ring. Try to fill all of the gaps on the bottom of the ring because this will be the top when it is un-molded. � Chill the cake in the refrigerator for at least three hours. � Remove the cake from the refrigerator and let it stand while you melt the 8 ounces of chocolate. � Slide the ring off the cake and turn it upside down onto a cake wire. � Pour the melted chocolate over the cake and smooth the top and sides using a palette knife. � Allow the chocolate to set at room temperature. � Carefully run a knife around the bottom of the cake where the chocolate has stuck it to the cake wire and lift it onto a tea plate. � Melt the remaining ounce of chocolate and use to decorate the top of the cake.

Triple measure: capital hosts globe’s best three bars as NY venue launches residency LONDON can today boast that it is hosting the top three bars in the world for the first time as a famed New York venue heads across the Atlantic. The Dead Rabbit Grocery and Grog was placed second in the coveted World’s 50 Best Bars 2015 competition — and this evening it launches a monthlong residency in the capital. For two weeks Dead Rabbit mixologists will be at the Canary Wharf branch of The Big Easy, which serves Southern-style American cuisine, before moving on to the venue’s Covent Garden restaurant. With The Langham hotel’s Artesian Bar top of the world list, and Nightjar in Shoreditch third, it means all of the top three are represented in London. Six famous Dead Rabbit drinks are being served at The Big Easy, including its signature Irish Coffee, plus cocktails

Letters From Ethiopia and a Window to the Past BY HEIDI MITCHELL In Alistair Hughes’s attic in London sits a little window into history. It’s a stash of 100 or so letters airmailed by his father to his grandparents and siblings while he was living in Ethiopia. “My dad died quite young, when he was 40,” says Mr. OBJECT OF Hughes, owner of DESIRE Savoir Beds, the mattresses that have been handcrafted for London’s high-end Savoy Hotel for more than 100 years. “They gave me a peek into my dad’s life when the world was very different.” Back then, in the late 1960s and early 1970s, Emperor Haile Selassie was still in power. The eastern town of Harar, where Mr. Hughes, his teacher father and his midwife mother lived for five years, “was so rural, they employed a watchman at night to feed the hyenas so they’d stay outside the city walls,” Mr. Hughes says he was told. There were no televisions to get news from abroad, and telephones were unreliable. The only way to communicate across the ocean was for the elder Mr. Hughes to write letters. Mr. Hughes, now 49, stumbled upon the stash of blue envelopes decorated in vibrant stamps two decades ago, while clearing out his deceased grandparents’ home in the north of England. He carried them back to his home in London and put them in his attic. Because Mr. Hughes doesn’t have strong memories of those five early years spent in Harar, reading the tattered letters has become an immersive and surreal experience. “It’s odd when you’re reading about yourself as a very young kid,” he says. “The letters might say, ‘Alistair is doing very well.…He’s supposed to be sleeping, but he’s sitting on his bed pretending to be a bus driver.’ Some of it is minutiae, but it’s all somehow fascinating to me.” Equally as intriguing are the characters who make their way into these time-capsule letters They talk of public

encounters with Emperor Selassie and his chihuahua, “which he never went without,” according to accounts from Mr. Hughes’s dad. Another letter, from 1970, includes a hand-drawn map of East Africa depicting gunrunning operations to the Eritrean Liberation Front and the Somali opposition. Another favorite letter from 1968 tells the story of Mr. Hughes’s father going to the Governor-General’s residence and meeting the Olympic gold medalist Abebe Bikila. “He was the last Olympic marathon runner to run in bare feet and win,” Mr. Hughes says. Mr. Hughes thinks that reading of his parents’ adventures in Africa with him may have given him the sense of freedom required to take risks, like purchasing a tiny, old-fashioned company that handmade mattresses out of horsetail, and reinventing it for the modern buyer. After college, he went on a traditional route of becoming a management consultant, “and I quickly became restless,” he says. He moved to Australia and the Philippines, but wound up back in London when he heard that the Savoy Hotel was looking to unload the arm of its business that made the hotel’s coveted beds. “I never dreamed even the day before that I would be ‘bed mogul,’ ” Mr. Hughes says. His company sells about 1,000 a year, with a starting price of $8,000. Mr. Hughes can’t help but be nostalgic for an earlier era of which his memory is hazy. Which is why he is always pleasantly surprised when he heads up to his attic to look for camping gear for his daughter or some other set-aside equipment and rediscovers the pile of blue letters. He savors each one, and still has nearly half left to read for the first time. “Sometimes I end up sitting in the attic reading these things for two or three hours,” he says.

Art deco is roaring back into style Voted the nation’s favourite design era, the glamour of the interwar years is enjoying a renaissance in the home, says Emily Brooks

A

definitive style has emerged for the design of high-end homes, and it has its roots in the elegant, ultra-glamorous interiors of nearly a century ago. Oversized, curving sofas with a hard outer shell of rich timber; console tables with metallic bases of swooping, symmetrical shapes; streamlined glass lighting; beautiful black-and-white floors – these are all reminiscent of the interwar period, and the fiercely modern, forward-looking age of art deco. “The art deco period seems to have a wide market appeal – it’s one of those timeless eras,” says interior designer Martin Kemp. As if to back him up, research conducted ahead of this year’s Art & Antiques Fair, Olympia (June 27-July 3) saw art deco come out on top as the nation’s most popular

artistic style. “It can span many looks,” continues Kemp. “There’s the colourful, gimmicky version with images of speeding trains with stylised smoke, or a much more sophisticated, understated version.” It’s this echo of sophistication that top designers are aiming for. Kemp recently completed an apartment at Ten Trinity Square, the former headquarters of the Port of London Authority, next to the Tower of London. Developer Reignwood Group spent four years restoring and extending the Twenties building, which will house a Four Seasons hotel, a private members’ club and 41 luxury homes that will be run under the Four Seasons name. Externally, the architecture is neoclassical Edwardian, with an imposing columned portico. Yet inside the apartments it is the lighter deco influence that Kemp has amped up, in the cream upholstered chairs with their glossy walnut shells, the bedside tables in birdseye maple (a quintessentially deco material) or

the stylised sunray motif on the satin oversized headboard. The designer says he would look to the same period for inspiration even if the building was not of a commensurate age. “We work across many styles, but whether I was designing the interiors for a super-futuristic house for Zaha Hadid’s firm, or a Grade I listed mansion with original plasterwork, I would still incorporate elements of that ‘vintage modern’ look – it’s a style that’s so timeless that it can really straddle anything, and fit with modern lifestyles.” Kemp says that deco’s simple forms and refined detailing have made it endure. This sentiment is shared by Iain Johnson, design director of Rigby & Rigby, an architecture and development firm that recently worked on a deco-influenced apartment at 33 Grosvenor Square. The property includes a dramatic entrance hallway with monochrome flooring, an onyx fire mantel and a glossy wenge built-in bar. “The deco influence comes out in the geometric shapes, symmetrical layouts and clean lines, which are all real pillars for our architectural studio,” says Johnson. Historical contrasts with modern, including a playful suspended sculpture that dances across the ceiling, and a cutting-edge Bulthaup kitchen. Peter Wetherell, chief executive of Wetherell, the agency selling 33 Grosvenor Square, feels that a deco influence is spot on for Mayfair because so much local building stock dates from that era. “When you look around a Twenties or Thirties-built block the detailing is fantastic; from the light fittings to the inlaid flooring, the amount of work that went into it all was phenomenal. That never goes out of fashion.” In the late Twenties, vast Mayfair mansions were knocked down and replaced by hotels such as Grosvenor House and The Dorchester, establishments that became bywords for glamour, luxury and the latest mod cons. Today, with hotel design

strongly influencing top residential interiors, the glamorous interwar look is being lifted from bars and lobbies and transferred to our homes. At the Savoy – synonymous with the party set of the era, from Noël Coward to Evelyn Waugh – interior designer Robert Angell has recently finished working on a new look for the iconic American Bar. “It’s a little bit like being on deck on a glamorous Thirties yacht,” says Angell of the bar. “It’s beautifully detailed, with nickel-inlaid tables, dark leather club chairs, walls in pale ivory wallpaper, macassar ebony built-in seating and silver leaf lining the recessed ceiling coffers. “The influence of art deco on designers now is in the simplicity, the attention to detail, and the elegance of the design. But we’re paying homage to it – it has to be of the moment, not a pastiche, and people should feel relaxed and comfortable with it, not like they’re in a museum.” With designers constantly emphasising that it’s all in the (expensive) materials and detailing, it’s no wonder that, despite art deco’s mass appeal, it’s not a look that’s easy to recreate. Most furniture for top-end schemes is made bespoke to designers’ specifications; companies such as Chelsea-based Decorus offer a sort of halfway house, offering made-toorder styles that can be finished in a large choice of materials, from brass to lacquered wood. “The art deco style is continually popular for us, but we are always updating it,” says Stuart Sharpless, who runs Decorus with fellow director Richard Hart. “A lot of pieces of furniture from the era would be too big for modern homes, so we often scale down, but we’re also introducing lots of specialist finishes – liquid metal finishes are hugely in demand at the moment.” If you lust after the real thing, it’s the season of specialist fairs and sales. The Art & Antiques Fair, Olympia, and Masterpiece London (Royal Hospital Chelsea, June 30-July 6) both feature deco specialists. There are few things more British than high-tea and couture, especially when they are both found at the classically British The Savoy hotel. The Fairmont Managed hotel has a rich history forging a⌶ʸliations with Britain’s most luxurious fashion tastemakers. It comes as no surprise that The Savoy would chose British couturier Suzie Turner for their next haute collaboration. Salon Couture High-Tea with Suzie Turner is having its o⌶ʸcial debut on Wednesday 6th July, and continuing the 뀾Ⱝrst Wednesday of every month thereafter. The fashion-forward partnership will be bringing back the the salon-style fashion shows of the 1950s and the couture shows once held at The Savoy. Fashion houses like Christian Dior once showed their second collection at The Savoy. Salon Couture High-Tea with Suzie Turner will present 10 to 12 looks from the couturier’s highly anticipated collection. Guests will be able to admire the intricate pieces while having curated pairings of tea, a welcome cocktail accompanied and a selection of delectable sandwiches, cakes, scones and bespoke éclairs, decorated with intricate sketches of Suzie Turner designs. All under the stunning glass-domed atrium found in the Thames Foyer space at The Savoy. Suzie Turner represents British fashion in every way. Since 1990, she has been has been utilizing the 뀾Ⱝnest in British craftsmanship and meticulous attention to detail to create a truly special couture experience. Every element of design and production is completed in-house in their London Atelier to create bespoke gowns that bring her clients’ dream dresses to life. Salon Couture High-tea is priced at £58 and will occur every Wednesday starting July 6th at 5:30pm.
