o hotel in London has a better prospect than the Savoy. Located right on the apex of the great bend in the Thames where the river makes a 90-degree sweep to the south, its best rooms look both downriver towards Tate Modern and the skyline of Canary Wharf in the east; and directly south over the London Eye and the Houses of Parliament. It is that view which inspired Claude Monet’s great series of paintings of the The Palace of Westminster, in which the pinnacled tower of Big Ben and the great square stump of Victoria Tower, loom out of a purple haze of fog and smog. (Thankfully, a century later, the air is a little clearer.) Some of those 70-odd canvases were painted from the river bank, but many encapsulate the amazing views from the upper stories of the Savoy Hotel, where Monet stayed three times between 1899 and 1901.

He was then at the height of his powers, and the hotel was at the height of cultural chic. Since it opened ten years earlier in 1889, it had attracted some of the greatest writers and artists of the day. James McNeill Whistler had painted the hotel scaffolding when it was still a building site. Oscar Wilde and Mark Twain stayed in the 1890s, as had Monet’s friend and compatriot Emile Zola. And after Monet, in the 1920s and '30s came Oscar Kokoschka and Raoul Dufy, and in the '60s Andy Warhol.

It is this great artistic tradition which has stirred the hotel into creating its new Savoy Suite, which opened for bookings last week. It incorporates one of the rooms on the sixth floor where Monet stayed: a dividing wall has been removed to create a doublelength sitting room which makes the most of those fabulous views over the river and the South Bank. You can book it with a single bedroom, or open the connection to the adjoining suite to form a huge two-bedroom apartment. I’m not sure, however, that Monet would have approved of the new colour scheme. Overseen by interior designer Pierre-Yves Rochon, its tasteful muted pastels are a long way from the vibrant blues and canary yellows of the artist’s manor house back across the Channel in Giverny. But, as a collector of Oriental art, Monet would have liked the Japanese-style freeze behind the cocktail bar at the back of the sitting room, and I’m sure he would have enjoyed the glass panel which has been inserted into the bathroom wall. Open the shutters and you can lie back in the bath and take in the view across the river.

Guests who book the suite will also enjoy another kind of private view. The hotel is inviting celebrated contemporary artists to exhibit selections of their work in the suite, and it will also host regular “Artists' Salons”, which will be a chance for the artist whose work is displayed to introduce their work to guests during an evening reception. The first artist to feature is Ralph Heimans, who painted the official portrait of the Queen in her Diamond Jubilee year, now found in Westminster Abbey. The miniexhibition will feature a series of portraits which the publisher Random House asked him to paint as part of the Shakespeare400 celebrations and which have already been on display at Shakespeare’s Globe. They represent some of the authors it had commissioned to rewrite a Shakespeare play in prose, including Margaret Atwood, Tracy Chevalier, Gillian Flynn, Jo Nesbø and Anne Tyler. Guests who stay in the suite can also, by arrangment, enjoy a visit the Abbey with Heimans to see his portrait of the Queen.

The month of May sees a swarm of events for the artistically curious. Just last week alone there was Art16 and Photo London, as well as a plenty of smaller exhibitions in the capital’s galleries and museums. Attendance is not for the fainthearted, and the sharpening of elbows required is certainly not for everyone, which is what makes the artists’ residency programme at The Savoy extra clever. From the sixthfloor twobedroom Savoy Suite, you can look out of the window at the view of the Thames that inspired Monet’s famous paintings of London’s bridges, or gaze upon your own private exhibition on the walls of the suite. First to display his work is artist Ralph Heimans. As well as being the only artist who painted an official portrait of the Queen during her Diamond Jubilee year, Heimans recently painted a series of portraits of authors who have been invited to reimagine a Shakespeare play in prose as part of the Shakespeare400 celebrations. 01 Mix everything with a hand blender, then add ice and shake hard. The chlorophyll in the spinach will bind leftover toxins, preparing them for elimination, while the agave sugar restores blood sugar to normal levels. 02 Strain the mixture over ice into a rocks glass, dusting the glass with matcha to garnish. Epigallocatechin gallate is what you’re after here – an antioxidant that supports the liver after you’ve put it through the gauntlet.

Their legendary edible Bloody Mary that you shoot from an oyster shell... don't ask, just try it. This is one of the most epic bars BarChick's ever been to. 7. The Blues Kitchen Shoreditch If you love live music and wanna party in a private caravan inside a bar, this is your place. The ribs are some of the best in London, the bourbon selection is banging and you're pretty much guaranteed to pull. 8. Cahoots It doesn't get more London than drinking in a tube carriage. Book into this once air raid shelter and you'll be transported, literally, to wartorn 1940's London for some drinking on the ration.

The beautifully designed borough byborough menu starts in Westminster, where the Savoy is situated, and runs through the City, up to Camden and then heads east, featuring Hackney, Islington and Tower Hamlets. Within each area, four leftfield landmarks or legends are represented in liquid form.

Inspiration for honouring these littlediscussed London stories came when bar manager Declan McGurk discovered a hook in Russell Square, once used by policemen to hang up their coats while directing the traffic. bitters is inventively served atop moss, and decorated with (very tasty) roasted kombu (edible kelp). Hackney’s highlights are suitably feted with imaginative cocktails dedicated to the borough’s grand buildings, films studios, and the humble hackney coach. The City Lights, celebrating the Hackney Empire, is a light and fizzy concoction of vodka, Cocchi Rosa and sparkling rosé, topped with a dainty little spray of pink buds. The Hackney Carriage, served in a beautiful glass designed to mirror the bar’s decor, is a trafficstopping blend of rum, umeshu, vermouth and Laphroig. Hackney Carriage
The storytelling Secret Agent, a glorious combination of bourbon, Laphroig, Cocchi Amaro, absinthe and egg white, came garnished with a gunshot, conjuring up the B movies and melodramas (including a number of Hitchcock’s) produced at Hoxton’s famed Gainsborough Pictures studios: find out how to make it here. No rundown of afternoon tea is complete without a mention of the muchInstagrammed Sketch. The Mayfair restaurant’s unique selling point is its breathtaking déco every few years, the place is completely gutted and refurbished with new finery, and until 2017 the ultrapink room is festooned with the work of illustrator David Shrigley (it also features the beautiful tiled floor of former designer Martin Creed). The velvet scalloped seating, low lighting and bronze back bar give the whole room cushiony, softfocus feel that’s completely enveloping – what sitting in a giant marshmallow might be like. That’s not to say it’s not a glitzy affair. The full lowdown: The moment you step into the Thames Foyer in the heart of the Savoy hotel, you know you’re in for a treat. Flutes of Champagne arrived within seconds of us taking our seats, just as the pianist took to the baby grand. When it comes to timeless elegance, the Savoy knows how to do it right. The finest china teacups, spotless silverware and crystal flutes dressed the table, and a glorious threetiered cake stand will eventually complete the setting.
Our waiter was wellinformed and talked us through the menu with enthusiasm. The selection of teas on offer is vast; we opted for the Savoy blend, which was pleasantly bitter and smoky. Classic sandwich fillings, including ham & mustard, egg mayonnaise and Coronation chicken, are served in fresh, soft bread, and are replenishable but be warned, there’s lots more to come!. The ovenfresh scones were exceptional, and the buttery, sharp lemon curd served alongside was exquis The third course was a selection of French patisserie served tableside on a silver platter. You’re welcomed to try one or all five of the selection – which of course we did. The final course was a wedge of Thames Foyer signature cake – flourless chocolate or Victoria sponge. If you manage this, on top of the previous three courses, I salute you. To say this tea is generous is an exaggeration, but I can think of no better way to while away an afternoon, than by sipping the finest tea and eating sumptuous cakes in this fabulous setting. Erik Lorincz is arguably London's most accomplished and authoritative figure when it comes to creating and handling an alcoholic beverage. Now esteemed Head Bartender at The Savoy's historic American Bar, his prior placements include the Sanderson Hotel’s Purple Bar and awardwinning Connaught Bar, which was accredited with the UK title for Diageo Reserve’s World Class. He further earned the World Class Bartender of the Year award in 2010 before the opportunity to head one of London's most famous and high-class boozy haunts arose. Suffice to say, this man knows his stuff when it comes to shaking and stirring the most elegant of alcoholic concoctions. With summer cocktail hours on the horizon and a continued (now much less formal) social tradition for many as part of The London Season, we find out below from the man himself about the craft of the perfect cocktail, savouring etiquette and most crucially, how to order one without showing yourself up... What makes the American Bar such a special place to drink? The American Bar is the oldest surviving American Bar in London, with such heritage attached it is important to preserve its history but also cater for the modern palette. Personal service is also another crucial element to take into consideration, maintaining high and reputable levels of service standards whilst also providing the guest with a memorable experience. What’s your favourite cocktail to A) make B) drink
A. From a bartender’s perspective, in order to have a favourite you must therefore have a least favourite also. I feel the guest’s choice, their favourite, always comes first and is therefore a shared favourite of mine. B. I cannot truthfully say I have one favourite cocktail, but believe in savouring the moment with any drink depending on my mood and location. I enjoy celebrating the locality of drinks, appreciating the delicacies and cocktail recipes of the local region which I am situated in. For example if I was visiting New York I would order a Manhattan or in London, a classic Dry Martini. Do you have any top tips for appreciating a cocktail and how to savour flavours? Creating a good cocktail requires skill and understanding on how flavours work, just like cooking. In order to appreciate a cocktail, I advise to try the most well known classics - the base ingredients used throughout formulate as a core foundation for flavour. Have you come across any common mistakes people make when ordering/making cocktails? One common mistake which I often see is guests ordering three cocktails all at once. When left, the ice melts diluting the ingredients and overall quality of the drink. Do you think there are levels of similarity between barbers and barmen? I believe there are certain levels of similarity between barbers and barmen; they both share distinctive skills such as precision, creativity and the ability to entertain clients. Do you have any favourite pieces of cocktail knowledge to share for someone looking to impress their date? One piece of knowledge I would like to share would be to never ask for a straw when drinking from a martini glass. Spilling your drink during a date is not considered correct ‘date etiquette’ either! The Savoy will present a menu that’s fit for a Queen and a true representation of what our reigning monarch enjoys when taking tea at the Palace. Chef Darren McGrady was personal chef to Queen Elizabeth II, Diana, Princess of Wales, and Princes’ William and Harry for 15 years, and has cooked for many US and visiting dignitaries to Buckingham Palace. But it all began here at The Savoy as before his time in the Royal Kitchens, Chef McGrady trained at The Savoy, achieving the position of Chef‐de‐Partie Saucier. The Savoy is delighted to welcome Chef McGrady back to consult on this special Afternoon Tea menu in collaboration with The Savoy’s Executive Chef, Holger Jackisch. To be served in the beautiful Thames Foyer, The Savoy’s Royal Afternoon Tea will feature some of Her Majesty’s favourites, which remain on the Royal tea menu today, such as the Jam Pennies Queen Elizabeth and Princess Margaret loved as young children; Chocolate birthday cake, the recipe of which dates back to Queen Victoria’s chef; and Her Majesty’s absolute favourite, the Chocolate biscuit cake chosen by Prince William for his Groom’s cake. The Savoy’s Royal Afternoon Tea will be available from 9th June 2016 until the end of the month and is priced from £52.50 per person. The Thistle Invented by Harry Craddock, head bartender at the Savoy’s American Bar from 1925 — any British cocktail fan will be forever in his debt. The Savoy is paradoxically both one of London’s oldest and its newest hotels. For, although the hotel �rst opened in 1889, it went through a huge £220m restoration project that saw its doors close for three years, before opening once again in 2010. Claude Monet, and Oscar Wilde to Bob Dylan. Behind the scenes, it takes an army of support staff to keep the hotel running smoothly and the cocktails �owing in the art deco American Bar. So when it reopened, the hotel had needed to recruit more than 500 largely new employees, but as Emma Jayne, HR director at The Savoy, explains:

When the hotel had been open just a year, we started to experience quite rapidly declining retention levels.
Jayne identi�ed falling engagement levels as the chief reason behind the rapid staff churn. Employees may all have been under one roof, but it was hard for people to stay in touch with each other and to really feel part of a team. Jayne notes:
"
Really good people are hard to �nd in a luxury hotel environment in London. So, we had to make a lot of changes – engagement being the biggest one. And we looked at the marketplace to try and �nd a product and there was literally nothing out there.
Nothing at least until Jayne came across LifeWorks’s employee engagement platform, which combines a recognition program and staff reward program, which offers staff discounts at local bars and restaurants, for example. When an employee wants to recognize a fellow worker for being helpful or going the extra mile, LifeWorks gives them a way of instantly responding using their mobile device. All they have to do is simply select that person’s name in LifeWorks and choose from a list of behaviors, such as teamwork, passion, creativity or helpfulness, that their colleague demonstrated. Each of these behaviors represents the kind of company values that The Savoy wants to encourage.
Mobile generation A mobile and digital solution is ideal for The Savoy, according to Jayne, because 70% of the workers are millennials or Gen Y, used to updating their social media status every hour (if not more):

It was really a no-brainer. I don’t know why all hotels don’t have something like this. The results in such a short space of time were phenomenal. Every day there’s on average 10 recommendations going peer-to-peer – they take the time to thank each other. Jayne is in no doubt that “the returns far outweigh the investment”:
"
Two months after implementing it, we did our annual engagement survey. Emma Jayne, HR director at The Savoy Scores had started climbing since that �rst disastrous result, but they really took a big step forward and we achieved a result of 93% of our colleagues who are highly engaged at work. While LifeWorks was just one out of a number of initiatives to improve engagement, Jayne is convinced that it has played an important role in changing engagement at the hotel. Turnover has dropped to 31% and has remained steady at that level for a year. And the effect of happier staff has been felt by customers. The Savoy has improved its rating on TripAdvisor and the guest scores given to the hotel have �oated around 90% mark. Using LifeWorks is voluntary, but there’s been an impressive 80% sign up so far and Jayne is striving for a perfect 100%. User numbers ramped up quickly, egged on by a series of initiatives to educate staff, says Jayne:

We had a quite targeted campaign for signing up – we put posters up in heavy traf�c areas in the hotel and worked on managers to get them signed up.

Alongside the recognition and discounts, there are also bespoke Savoy discounts for staff on LiveWorks and last month the hotel introduced ‘spot awards’. When the hotel wants to reward a member of staff, Jayne simply has to type in the name into LifeWorks and money drops into their online wallet for them to spend on discounted offers. This kind of spot reward was previously paper based and it could take some time before the person was rewarded for their act ions. The advantage of this system, says Jayne, is that it enables instant recognition. Currently these awards are handled by HR, but LifeWorks is working with the hotel to enable department heads themselves to bestow these spot awards from an allocated budget. Jayne believes that:

It just means so much more if it comes from your own manager and that your own manager has recognized that you stayed an hour later or went the extra mile.
Using LifeWorks has spurred on the hotel to look at making other changes in the way it communicates with staff. Gone are the formal quarterly meeting in the ballroom, and in their place are quick monthly updates in a function room. It’s also made it look more closely at its whole wellness agenda; there’s gym discounts, a running club and the hotel is just about to start working with a nutritionist. Jayne explains:

Hotel work is very physical, so people are working on their feet all day, so we try to ‘bespoke’ our bene�ts so they will be really appealing to employees, such gym membership and ensuring the staff restaurant has a healthy menu selection.

A brush with greatness RICHARD HARRIS MICHAEL TUFT
After my boy died from meningitis in 1992, I wanted to compile and release a CD of WB Yeats poems performed by musicians and artists in his memory. Bereavement causes peculiar reactions such as that. That is why I, and my friend and co-producer Frank Dunne, found ourselves in the lobby of the Savoy waiting to meet Richard Harris. He had agreed to recite a couple of poems. We told the receptionist we had been invited to go to Harris’s suite. After a few whispered exchanges on the phone we were informed that Mr Harris had changed his mind and therefore could we wait in the bar until someone came to see us? Frank and I sat down in the Art Deco American bar, unsure what the news meant, but certain it was not good. We were going to get blown out. A flunkey was on the way down to give us the news. Then we saw an odd-looking gent peering in at us from the threshold. Whatever the bar dress code was, this man was breaking it. He wore shapeless grey jogging pants, a green rugby jersey, a bathrobe tied at the waist and flipflops. It was Richard Harris and he was coming towards us. “Are you the Yeats boys?” he asked, in a deep growling rasp. We said we were. “My voice has gone. I can’t do it.” He was a man you could describe
as hoarse. But instead of turning on his heels, he sat down. He had, he explained, been up all night shouting at rugby on the telly from Australia. That was why his voice was shot. I like to think he sensed our disappointment and wanted to make amends, or maybe he had time to kill. Whatever, he called over the waiter. “Three bellinis,” Harris croaked. “I don’t drink any more but these are good here – better than in Venice.” He spoke in a stage whisper, but
he also had this habit of leaning in close and beckoning us to do the same as if we were to be privy to the most extraordinary secrets. Three more bellinis. He talked of his own days playing rugby in Limerick, he talked of the remote parts of Donegal, he talked of his own poetry, and of sparring with Muhammad Ali. He called Brando, “Marlon”. It was dazzling storytelling. It was part performance, undoubtedly, with rehearsed punchlines, but he just loved words, and he enjoyed his talent for using them well. Of the recording, he said nothing. After four or five rounds of bellinis, he announced he couldn’t stay longer. “Come back tomorrow boys, we’ll get it done then.” The waiter said there was no bill. We stumbled out. Through the fug of my first – and so far only – pre-lunch Bellini binge, I was unsure if I remembered the new arrangements correctly. Would it really happen? The next day, we were shown straight to his suite. He was a man transformed, serious and engaged; at

Queensberry — frustrated in his attempts to publicly horsewhip Wilde — left a card at the desk of his club, the Albemarle, addressed to “Oscar Wilde posing as a somdomite”. The hall porter saw it, thus qualifying it, potentially, as public libel. Doubtless the porter, Sidney Wright, knew much worse things about members than “somdomy”. Wilde had, in his earlier days, scandalised America by lecturing in patent leather shoes, a turban à la turque, and a Byronic décolletée and — what affronted American manhood most of all — silk stockings. The allegation that he was a “poseur” had a certain historic plausibility. Wilde sued. It led to three trials. In the last, testimony from a chambermaid at the Savoy was introduced. Among the rent boys he took to the hotel was one, she alleged, “looking about 14 years of age”. Wilde’s bed, the next morning was “in a most disgusting state . . . [with] traces of
vaseline, soil and semen”. None of this dirty washing needed to be hung out, had Wilde been prudent. A room at the Savoy was not prudent. He was never, his grandson Merlin Holland (author of The Trials of Oscar Wilde) recently claimed, “an odious predator. The boys seemed to be willing partners.” Willing if paid, that is. One wishes to God Wilde had been more careful about “boys”. And that he had never met the wholly odious Bosie. Wilde was, in the years of his prime, married, with two children and a home in Chelsea. But he preferred hotels. He confided why, with brutal frankness, to Frank Harris (a loyal friend, if not always a reliable witness): “When I married, my wife was a beautiful girl, white and slim as a lily, with dancing eyes and gay rippling laughter, like music. In a year or so the flower-like grace had all vanished; she became heavy, shapeless, deformed: she dragged herself about the house in uncouth misery with drawn blotched face and hideous body.” Constance Wilde, true to her name, was a good wife, despite what she called her husband’s “filthy, insane life”. Oscar could not live with her when she ceased being an ornament to womanhood. And him.

Royal chef Darren McGrady recalls cooking for Princess Diana, Prince Harry and Prince William
"I was always there, so sometimes she'd come in and vent about things she wasn't happy with. Other times I'd see her just burst into tears and it was like, 'What do I say? What do I do?' Other times she told a dirty, risqué joke and you think, 'I can't believe Princess Diana just said that!'"

ormer royal chef Darren McGrady had the privilege of cooking for Princess Diana and her sons William and Harry for four years when they were growing up. Darren, who also spent 11 years working for the Queen, has opened up about
Diana's relaxed approach to food and dinner time – which often led to a "battle" with the children's nanny.
Speaking exclusively to HELLO! Online, Darren said: "She wasn't strict at all. She let them be boys, young boys! There was always a battle between her and Nanny. Nanny would say, 'No, they're eating their dinner, they're having cabbage.
"And the Princess would say, 'No, if they're with me and they want loaded potato skins and fried chicken then they can have that. And if they don't eat it and they still want pudding, they can have that too!' She was much more relaxed than Nanny."

"I was watching Harry at the Invictus Games and read the interviews where he said he doesn't remember a great deal about his mum. I'd love to sit down with him some time and talk to him and let him know what she was really like.
"She absolutely adored the two of them. She would be so thrilled right now with both of them, especially with Harry, with his charity work. He's his mother's son; you can see that in the way he acts naturally with young kids. He's just incredible... We just need to find him a bride now!"
Darren, who has his own website eatingroyally.com, has partnered with The Savoy in London to create an afternoon tea in celebration of the Queen's 90th birthday celebrations.
