À Paris comme à Londres, de nouveaux palaces contemporains fleurissent. Mais les palaces historiques font de la résistance. Rénovés, embellis, magnifiés, ils fascinent et fascineront toujours parce qu’ils sont habités. Devenus légendaires, ils sont des livres ouverts. Au moment où le Ritz fait son grand retour sur la scène parisienne, une envie d’aller outre-Manche s’immerger dans l’âme du Savoy.

J’aurais voulu vivre à l’époque de son ouverture le 6 août 1889 », confie l’experte Suzan Scott. Quatrième archiviste du Savoy depuis que la fonction a été créée en 1979 pour les 90 ans de l’hôtel, elle est la mémoire vivante du palace. En parcourant le dédale de couloirs, les salons, l’imposante salle de bal, comment ne pas vouloir remonter le temps ? Têtes couronnées, politiques, artistes, divas et personnalités y avaient leurs habitudes. De Christian Dior à Elisabeth Taylor en passant par Fred Astaire, John Wayne et Marylin Monroe, autant d’anecdotes délicieuses, et de scandales aussi.

C’est au Savoy pour l’actrice Nelly Melba que fut créée par Auguste Escoffier la célèbre pêche éponyme, ou encore qu’eut lieu l’improbable rencontre entre Albert Einstein et Bernard Shaw, invités d’honneur d’un dîner, ou que les Beatles rencontrèrent Bob Dylan qui séjournait à l’hôtel dans les sixties. Gershwin donna ainsi la première de sa Rhapsody in Blue en 1925 retransmise par la BBC…L’atout du Savoy est d’avoir conservé ses archives et de continuer à les enrichir par des legs. Il est plus facile de raconter des histoires sur la vie d’un palace que de prouver qu’elles sont vraies. C’est pourquoi nos sources sont si précieuses », commente Suzan. C’est d’ailleurs en hommage à ce passé prestigieux, que depuis la rénovation de 2007-2010 avec la décoration subtile de Pierre-Yves Rochon, on a baptisé huit suites, en mémoire à ses plus illustres clients et pas des moindres : Maria Callas, Claude Monet, Winston Churchill, Charlie Chaplin, Noël Coward, Frank Sinatra, Katharine Hepburn et Richard Harris. À propos de Churchill, Suzan aime raconter que ce fumeur invétéré de cigares dit un jour à l’un des directeurs combien il aimait les « larges cendriers » en métal du Savoy. Stupeur ! ll s’agissait des corbeilles à papier en métal. La direction lui en fit porter une douzaine pour sa demeure de Chartwell ! Ce sont les mêmes modèles de corbeilles à papier art déco utilisés aujourd’hui encore dans les chambres.

Au Savoy, il faut s’accorder la pause de l’afternoon tea. Que vous séjourniez à l’hôtel ou pas, c’est incontestablement l’un des plus beaux palaces historiques de la capitale où il faut vivre ce moment d’élégance, héritage d’une autre époque.

C’est à la Duchesse Anna de Bedford que l’on doit l’invention du tea-time. Celui-ci était pris à 16 heures car historiquement il permettait de faire patienter jusqu’au dîner pris alors tardivement vers 20h »,rappelle l’archiviste. Avant que ne commence le rituel du service, laissez-vous transporter par la magie du décor du Thames Foyer avec en son centre l’immense volière. Irrésistible l’assortiment des sandwichs au concombre, à la tomate, aux œufs durs, au cresson, sans oublier les scones et pâtisseries. Autre lieu iconique, l’American Bar qui est mentionné dans les livres de comptes dès 1893. C’est ici qu’officia à partir de 1903, la légendaire chef barmaid Ada Coleman alias Coley qui concocta son célèbre cocktail signature le Hanky Panky. Si l’endroit reste légendaire comme l’évoque la galerie de photos de la montée d’escalier, l’autre spot tendance est le Beaufort Bar, avec aux commandes le chef barman Chris Moore qui outre une sélection exclusive de champagnes propose une carte ultra sophistiquée de cocktails signatures mixés sur des chariots : mise en scène assurée ! Un régal pour les yeux !

Côté gastronomie, Le Savoy fut le premier palace à avoir un grand chef, le français Auguste Escoffier, qui fit découvrir à Londres ce que gastronomie voulait dire. La relève a été assurée depuis au restaurant le Kaspar. Depuis 2015, le chef Holger Jackish a rejoint le palace pour des préparations d’excellence. Pour un cadeau ou souvenir, se laisser tenter par la jolie boutique-écrin qui vend chocolats, cupcakes et pâtisseries, vaisselles sans oublier le livre de cocktails en série limitée.

Un dernier clin d’œil avec Kaspar, la mascotte historique du palace ! Ce chat noir en chrome et résine permettait de conjurer les superstitions lorsqu’il y avait des tables de 13 convives ! Un double hommage lui est rendu : un buis taillé en forme de félin au début de la petite allée qui mène à l’entrée et des statues à son effigie à côté de la conciergerie. Distiller back in 2008, there were three iterations of JD. Now, there are nine, including Gentleman Jack, a more approachable, lighter style, and, soon, Single Barrel Rye, the company’s first new rye whisky since Prohibition. But it’s not just Americans that can’t get enough of American whiskey, as cocktail king Ryan Chetiyawardana, the venerable Mr Lyan of White Lyan and Dandelyan fame, confirms. He, like many in the drinks world, puts bourbon cocktails’ resurgence in the UK down to Mad Men. “When people saw them displayed with that great sexiness,” he says, “they bought into the classic style of serve.” He says the availability of cult American whiskies such as Buffalo Trace’s Antique Collection or Pappy Van Winkle has fuelled the trend. As for rye, he says it sold out so fast in his cocktails at White Lyan, he now has to serve it neat only. Berry Bros. & Rudd have just released a new bourbon that’s a reminder that there is a corner of St James’s that is forever Texas—their shop was the site of the Texas legation for nine years from Texan independence in 1836 until the Lone Star State joined the US in 1845. The new bourbon, aptly named Texas Legation, is a 95 per cent corn whiskey that’s sophisticated, complex, and not too sweet. But legations aside, there’s no better place in London to pretend you’re in America than The Savoy. Declan McGurk heads up the American Bar—which just pipped Dandelyan to the no. 2 spot in the World’s 50 Best Bars awards this month (no. 1 is Dead Rabbit in downtown Manhattan). “North American Whisky is under great demand,” he says, adding that the bar has recently started stocking the small­batch Michters range, and has a number of great bourbon cocktails on its menu— such as the Secret Agent, made with Woodford Reserve, Laphroaig, Cocchi Amaro, absinthe, lemon juice, sugar syrup and egg white. Rewind—a peaty single malt Scotch rubbing shoulders with bourbon? Yup. The trend is towards a less reverent approach, and bourbon is even influencing Scotch. The #LoveScotch social­media campaign is going a long way towards breaking down some of the more intractable associations of Scotch—the older man’s drink, the hushed country­club setting, the austere neat serve—and Haig Club Clubman, David Beckham’s latest tipple, has a lot in common with bourbon, being a single grain whisky matured in ex­bourbon casks. It’s a highly approachable, mixable (indeed, its recommended serve is with cola), lighthearted take on Scotch that might open the category up to those who previously intimidated by it. As we all pray to whatever gods we hold dear that the world’s handbasket doesn’t slip one step closer to hell come November 8, let’s raise a glass of American whiskey to the special relationship and just hope we’re not fiddling while Rome burns. HandCNews’ intrepid, brave (sic) reporting team were invited to sample ‘The Ultimate Martini Experience’. As far as experiences go then it is a must do – a big fat No. 1 on the bucket list. Everything about this is an experience – far more than just a drink and my job now is to try and bring some of not just the taste, look and feel but the atmosphere of what you could expect from such a theatrical event. Let me know if I achieve it or not! Firstly the atmosphere is exclusive. That is not to say that providing reasonable dress and behaviour it excludes certain types of people – this is an experience that most can enjoy even if on a very occasional basis. A greeter quietly acknowledges you as you enter and shows you to a table. The bar overlooks the Embankment although it’s the quiet, cultured and relaxed American atmosphere that brings you in. Clearly from is size it can only hold so many people so it becomes exclusive by the existence of four walls. I am sure on a Saturday evening that it is a hive of social activity. However on a Thursday or Monday afternoon for that matter, it is quiet and a delightful place to be. Secondly, having ordered, then service commences. A bespoke made three tier ‘stage’ delivers the custom made Baccarat cristal glasses on stage 1, including three individual shot glasses each containing a classic Martini accompaniment – lemon rind, a tomolive and a caviar filled olive.

before you start drinking! And so to the drink – this is no ordinary Martini. If I ever manage to get close then believe me you will hear about it. As a drink it is as close to sublime as you can get. A clear natural diamond colour, not crystal clear, but not dirty, it shimmers as though waiting to be consumed. Its nose (sorry but I am a wine taster) is a curious mix of gentle herbs, and piquancy of alcohol, quietly inviting. On the palate it is quite majestic – a beguiling smooth, powerful, elegant yet pervasive texture and flavour that resonates around gently covering the tastebuds, as it works its magic. It quietly moves things through to a level that softens. It is quite simply outstanding.

without. The garnish partners lemon rind in the glass is a crisp addition. Tomolives for those that don’t know, and until yesterday I was one of them, is a pickled green tomato. Their sweetness and sharpness are excellent to eat with a martini. And for those with a more savoury tooth the rich olive with caviar is classic and dutiful. And so to the oysters; plain and for the guest to choose which vinaigrette or dressing to have. The vinaigrettes are a work of art in them. The paler of the two has a vodka twang with apple, elderflower, pine was my preference with the oysters. The more classic red wine vinegar and vermouth based, preferred by my pro food photographer colleague Majella. And we both enjoyed these fine historic pie­fillers turned amorous food with the Tabasco. We were then treated to Pickering Place, a duo of cocktails served on a wooden frame which opened up to reveal a small tablet including a silent movie starring the bar manager Declan. There is a whole other epic for another time! In the round, so to speak, the American Bar is a unique experience that in itself is a bucket list must do. It celebrates the long modern day cultural history between America and London in a way that only story tellers can express in such a powerful way. So if you have someone to take to somewhere special in London or a special event that needs a ‘je ne sais quoi’ touch then show a little ‘savvy’ a delight with a unique experience of The American Bar. On Saturday 29th and Monday 31st October, Kaspar’s at The Savoy invites All Hallows Eve revelers to a sophisticated dinner party for 13 guests. Set in the elegant private dining room at Kaspar’s restaurant, the evening will consist of a bespoke five-course dinner party, inspired by the ill-fated story of South African diamond magnate Woolf Joel, who dined at The Savoy in 1898. We’ll let the press team at the Savoy tell you the story, as we simply can’t improve on it: “The story has it that Joel held a dinner at The Savoy for 14 guests and one cancelled at the last minute. The dinner continued, but one superstitious guest announced that death would come to the first person to leave the unlucky table of 13. Joel took that gamble and a few weeks later he was shot dead in Johannesburg. To avoid a repeat performance and damaging its reputation, The Savoy offered a member of staff to sit amongst tables of thirteen thereafter. Unable to discuss private matters or feel at ease, this proved to be unpopular with guests and thus, in a stroke of genius, Kaspar was born. “Kaspar is a three-foot-high cat that was sculpted in 1926 by British Basil Lonides to stave off bad luck. For almost 90 years The Savoy has been more than happy to oblige parties of 13 with Kaspar’s company, whereby he joins in with napkin around the neck and a full place setting to ‘enjoy’ every course.” Will you choose to have Kaspar join the table, or take a Halloween-appropriate gamble and stick with an unlucky 13 guests? London was the toast of the town last night as the World’s 50 Best Bars were announced, with a total of nine of the capital’s best bars making the top 50 – more than any other city in the countdown. The highest London entry went to The Savoy’s classy American Bar (http://www.timeout.com/london/bars-and-pubs/american-bar-at-the-savoy), while Dandelyan (http://www.timeout.com/london/bars-pubs/dandelyan) (winner of Time Out’s best bar team award) swooped in at number 3. Apparently, the Queen Mother used to pop in for a gin and Dubonnet on a regular basis, and the likes of Frank Sinatra and Marlene Dietrich were known to pull up a stool at the classic mirrored bar. Earlier this year, the bar revamped its menu, with each section honoring a different borough of London—Westminster, Camden, and Hackney to name a few. Gin­based cocktail Pickering Place, for example, is an ode to a once popular “dueling” site, while boozy tequila drink Eternal Whisper pays tribute to the whispering gallery at St. Paul’s Cathedral. If the after­work crowds start to swell, make your way to The Savoy’s recently refurbished—and very golden— Beaufort Bar for a pricey tipple.

LADIES AND GENTLEMEN A disused­public toilet­turned­cocktail bar doesn’t sound like the most appealing concept, however, this neighborhood spot nails the unusual location: The moody setting is “the kind of bar where you can quickly become a regular." Founded by Courtesy ofBorrell Langham(the Hotels William man behind craft spirit Vestal Vodka) the seasonal bar program Artesian at The Langham, London uses locally sourced ingredients such as fruits picked in Hampstead Heath, and syrups out of honey sourced from the bar’s own neighborhood of Kentish Town. Gin lovers, indulge one step further and take home a bottle from the on­site distillery, which produces 12 bottles of ‘Highwayman Gin’ a day, named after the Frenchman Claude Du Val, famed for robbing those traveling the roads to London.

The results were announced on Thursday 6 October 2016 by Drinks International The American Bar, at The Savoy London was crowned the Tanqueray Best Bar in Europe at number 2, followed by Dandelyan at the Mondiran Hotel on the South Bank, which took the Nikka Whisky Highest Climber Award with a dramatic 47-place ascent to number 3, and the Connaught Bar at The Connaught in Mayfair (http://www.theresident.co.uk/tag/mayfair/) at number 4. The Gibson Bar on Old Street debuts at number 6, taking the Urban Bar Highest New Entry Award, but it was London’s hotel bars leading the rankings this year. And the best bar in the world? The bars were chosen by an Academy of 476 members from 57 countries – the strongest, most diverse collection of industry experts ever assembled to express their view on the best bars in the world. The driveway into The Savoy Hotel is the only street in London where motorists must drive on the right hand side. Most people believe this is due to the large number of American or European visitors. The reason is in fact quintessentially British. In the days of the horse drawn carriage, ladies would always sit the seat directly behind the driver. Drivers would have to walk around the other side of the car to open the door to let the lady out so The Savoy, in it’s timeless dedication to social etiquette, wrote to Westminster council in 1922 asking permission to switch the sides of the roads so that drivers could open their doors, allowing ladies an instant view of the front of the hotel, and a clear route through its doors.

The American Bar launched a new menu in January this year attempts to inextricably link The Publication Date: October ✉ Savoy to the capital city. One gin and one bourbon based cocktail is served on a mahogany box that slides out to reveal an iPad playing the �lm. The anachronism of a silent �lm screened on an iPad is entertaining in a puzzling way. However, there is a simple satisfaction derived from watching the movie stars wait on your table because if Hollywood is at your service then who are you? And then you realise what that confusing feeling is and it’s vanity. This bar makes you forget you get the tube or don’t have a title, or that you spent last Sunday eating �sh �ngers on the sofa using your tummy button as a ketchup dipping pot. This bar makes you feel re�ned, you have taste and everyone you know has taste. It makes you believe you are the beautiful people; you mingle with the rich and the famous, and your mouth has known nothing other than the reassuring curvature of a silver spoon. End of Part 1

This Christmas, The Savoy, a Fairmont Managed Hotel, will be transformed into a frozen fantasia, featuring a magnificent 15ft Boodles­inspired Christmas tree and, for the first time in Savoy history, an indoor Ice Rink and cascading Louis Roederer Champagne bauble installation. Celebrated for its annual creative festivities, The Savoy’s spectacular showcase will feature sparkling Ice and Diamond inspired decorations, with Boodles’ signature pink and Louis Roederer champagne festive offerings. Savoy Flowers, The Savoy’s floral design team, will work tirelessly throughout the night on 19 November to transform the entire hotel. Hotel guests retiring to bed at The Savoy that Saturday night will wake up to a magical Christmas surprise on Sunday 20 November.

created using cut mirror, which will hang alongside mirrored deco squares and rectangles. Perfect decorations in ‘Boodles pink’ tones, sit alongside ombre and mirrored details in line with the Ice and Diamond theme that has been selected for this stunning tree. Louis Roederer, a family­owned Champagne house since 1776, and The Savoy’s preferred champagne, has collaborated with The Savoy to create the Ice Rink installation in the Thames Foyer. To bring the idea to life, The Savoy has commissioned London­based creative production agency, We Are Family, who took inspiration from a child’s jewellery box featuring a spinning dancer. Designed and made for The Savoy by renowned sculptor Gareth Knowles, a life­size ice skater will pirouette under the champagne bauble adorned gazebo, and continually twirl on an ice­like surface throughout Christmas and New Year in the Thames Foyer. A Champagne Festive Afternoon Tea will feature Boodles inspired patisserie and Louis Roederer Vintage Rose cuvée. Priced at £82 per person and available from Sunday 20 November 2016 until Friday 6 January, 2017. A monthly event that caters for all things fashion and fabulous, (hello pink éclairs) whilst drawing on the tradiⴠ〠onal values of Chrisⴠ〠an Dior's 1947 show. I was accompanied by friend and fellow tea addict Millicent Binks. On arrival we felt like we were walking into a real life film set. Vintage Bentleys were parked outside, a beauⴠ〠ful ornate fountain and the ⴠ〠nkling of a grand piano was just enough to make you believe it was the 1940's. I have always been a fan of The Savoy, known for its patrioⴠ〠c glamour and iconic affiliaⴠ〠ons with fashion whilst the quintessenⴠ〠al tradiⴠ〠on of a溶⧼ernoon tea is the perfect pasⴠ〠me. A溶⧼er stopping by the salons beauⴠ〠ful flower display for a few impromptu photos and selfies, we were taken to a table underneath a stunning glass dome.

The night before we had urgently conferred with franⴠ〠c texts about our ou〠ㄊits (big earrings or small earrings? Hair down or huge hat?) So we decided to wear vintage style dresses designed by Mariya Ivanova to fit in with the classic backdrop. We were instantly in heaven when our kind waiter promptly brought out a ⴠ〠er of sandwiches. A溶⧼er Millicent and I played a game of which ones were our favourite (and naturally social occasions to wear them) they brought out the most delicious selecⴠ〠on of Suzie embellished Cakes‐ all decorated with her name!

Whilst we indulged, photographer Marⴠ〠n Parr took a few photos of us for his ongoing Savoy project, which I am excited to see, as it will be showcasing a selecⴠ〠on of visitors at the hotel. The combinaⴠ〠on of couture fashion in a bespoke salon is a unique and wonderful idea and great for a spot of socialising. And as they say, you can't buy happiness but you can buy tea‐ and that's sort of the same thing, right? 0 votes

when she noticed the uniforms at a £3,000-a-night hotel in Johannesburg, South Africa, Joha were “not up to scratch”. Unique Art You Can Find in Hotels Around the World

highlight is the tile mural designed by Bjorn Wiinblad, lead designer for Rosenthal china. Guest rooms have original pencil drawings of LA attractions, such as the Hollywood Bowl, and larger­than­life Fellini paparazzi scenes in the closets. The art of those decades is everywhere on property—tennis rackets as art installation in the lobby, photographs of Stevie Nicks, Bob Dylan and others along hallways, Suzani textiles in the St. James Suite, the restaurant, and of course macrame in the front yard. If guests wish to create some art of their own, macrame classes are held weekly during the summer by the pool.

In 1246, the Count of Savoy was gifted a piece of land between the Strand and the Thames and built a palace. About 600 years later, Richard D’Oyly Carte coined it The Savoy Theatre. After a visit to America, D’Oyly decided to re­purpose The Savoy, converting it into a luxury hotel in the heart of the theatre district. Artists, writers, diplomats and celebrities frequented the hotel then, and Designer Pierre­Yves Rochon undertook the task of restoring the Edwardian style of the original buildings while incorporating the Art Deco style of the 20s and 30s into its design. The hotel is a piece of art. Fresh flowers adorn all the public rooms with crystal chandeliers glistening from the high ceilings and black and white checkerboard floors across the lobby, and original art and photographs on all the walls.
