Ability To Connect, To Play, And To Rock Is Undeniable: MEET HOUNDS OF JEZEBEL By Rhonda Meredith Over Memorial Day weekend, Hounds of Jezebel owned the stage at Scout Bar during the Texas Buzz show. Individually, each band member is a “seasoned professional,” and collectively they are quite a musical force. It was like everyone within the venue stopped what they were doing and made their way up to the stage.

Hounds Of Jezebel are relatively new. Officially though, John Curry (vocals, guitar), Chris Loveless (guitar), "Rooster" Rodriguez (bass) and Mike Neyra (drums) met through a mutual friend in the middle of 2010. That long hot summer was productive as the guys wrote and banged out around 20 songs A.K.A. “some music for the soul.” Prior commitments set in and the fledgling musical group was put on hold until January 2011. To say that Hounds of Jezebel is well worth the wait is a bit of an understatement. Their music is fresh and I tend to use that word sparingly. In fact, as I write this, it has been 24 hours since the show, and the words to completely describe Hounds Of Jezebels’ songs are still a bit elusive. The tunes are definitely familiar with a ’90s rock vibe with undertones of bluesy, Southern rock.

Scout Bar is now a non-smoking venue, and it’s in the process of getting some pretty cool updates. “The new non-smoking policy has had an “overall positive” reaction,” says Thomas Wilson, Scout Bar’s owner. He did not want any smokers to feel alienated, so Scout Bar has two designated smoking areas outside on the back patio and in the courtyard area. Wilson also says plans are in the works to enhance the patio and add a full service bar, TVs and speakers. The interior has also been the recipient of change: After entering Scout’s main room, there is a very cool piece of art with a crow and guitar. Adding to the new artsy feel is a Pablo Picasso saying now on the back wall that says “Every act of creation is first of all an act of destruction.” - Continued on Page 43

for the GUITAR STRINGS & SAILBOAT THINGS Music Tour The scene is Clear Lake on a recent evening. Sailboats of all shapes and sizes are competing in the Wednesday Night Races. Many feature bright and colorful spinnakers, which only adds to the beauty of an already visually-appealing sight as the sun prepares to set. But one sailboat keeps catching my attention. Not because of an eye-catching spinnaker; and not because she sports sleek lines or a particularly attractive shape as she cuts through the water. While this vessel, which flies a pirate’s Jolly Roger (skull and crossbones), is far from the fastest boat in the race, you know she means business. And so does “The Crew.” The Alyzarian is a 26-foot Pearson that, at more than 40-years-old, is likely the elder boat in the race on this evening, if not most. Captain Marc Borde describes her as “a beast.” When asked how the Alyzarian fared following the race, Borde answered,“We finished.”

Starting July 1, Borde and crewmates Ryan Beard and Charlie X X Danford set sail on an epic voyage lasting more than a month that will take them down the Texas Coast and back. What makes this voyage epic is that Borde, Beard and Danford aren’t recreational sailors taking a month of from work for some fresh air and adventure. No, this crew is made up of lead singer/songwriters and will be sailing the Alyzarian to work -- specifically an ambitious schedule of live performances at music venues and bars in coastal communities along the Gulf of Mexico. Borde is well known locally for fronting the popular reggae band Shark Attack, which has developed a strong following after 12-plus years, including tours throughout the US. Beard, a key member of Shark Attack, also fronts and writes the music for Mama Tried, which blends Southern country with punk rock and bluegrass for a very unique sound (and sight). Danford is the front man and songwriter for Footpie, one of Houston's hottest reggae rock bands. Editor’s Note: Not a real nautical map. Do not use for navigation!

NEW SCENE STOPS: We stopped into Smokin’ J's, an established neighborhood bar and fairly new to the SCENE. On stage was Magazine whom we've frequently covered and reckoned we’d have this place figured out in no time, but this time, Marty was packing along different pedals and pumping out a totally different sound with playlists we’ve haven’t heard before. Figures... Smokin' J's? It's a great place with cold beers where you can easily blend in -- A good thing!

Heading east, we stopped in at The Roadhouse 146, a new SCENE stop finding a friendly staff, cold beer, plenty of games, David Schwope spinning the disks and The Sharks playing out the sounds -- A super place to get away! The Sharks was the first band I recorded live (at Smokin' J's, in fact) and gotta say they sound as good today as they did back then, possibly even better with JZ on lead, which makes sense for this La Porte-based outfit. Something about musicos from the Gulf Coast region that has a nitty and gritty integrity to them inside and out. If you're looking for a SCENE stop along 146, this place is ready to go! Speaking of the nitty and gritty...

UNDER THE INFLUENCE of the La Porte area that is... Up and down the 146 corridor is a nitty and gritty musical ethos you simply can't find anywhere else. We know ‘cuz you’ve told us. From this musically fertile area comes David Hargrave who played in his first band at age 11 some 45 years ago. Sharing lead guitar and vocals with Danny D, these two Guitar Heros (from Cold Moon Dog at Cockeyed Seagull Feet days) are burning it up with Joann Stone free-forming on the kit and Joe Hamilton providing adult supervision on bass. Word is they’re keeping a spot open for Donny, too... Put these together, and you get yourself a fine "Mojo ’Sixties and Boogie Blues band" of old folks with young souls pouring you the ’50s, ’60s & ’70s obscure classic covers with an authentic surfer zest. And that, folks, is one tasty treat! Cheers to retirement! Moondog has been playing all around the SCENE, and we saw them at Cockeyed Seagull where they just held... THE COCKEYED SEAGULL 7TH ANNIVERSARY: Earlier in the evening, we caught one of the late Jim Shortt's favorite bands, Ronnie Hall Green Onions @ and The Jackie's Brickhouse Green Onions at Jackie's Brickhouse. Jim would’ve liked Jackie’s. After a fine set of of classic R&B, we roosted the rest of the evening at one of Jim’s favorite hangouts, the Cockeyed Seagull to celebrate their 7th Anniversary. The celebration was rockin’ with nonstop music from Greg Wappler (fresh from his recent Hill Country Tour), the Fenton Brothers and Marty Monte, The Edge of Texas, Rick & The Dones, Cisco and jammers (just to name a few). Also this month, we caught some underground tunes from The Last Cigarette and Grizzly. These two bands were playing a Last Cigarette @ Marshall Tucker-style Cockeyed Seagull of rockabilly with Led Zeppelin undertones overpowering the mural walls in every

angle you Green Onions @ Jackie's Brickhouse could imagine. We've these two bands on our watch list and will try to see them again next time around. In a neighborhood where neighborhood bars are rare and those with a great live music SCENE a plus, the Cockeyed Seagull checks off both. Meanwhile, out on the patio... NEW BAND ALERT: Last month, we suggested The Remedy and starting to see them appearing out on the beat. This month, we caught a Trip to Cascity out on the Seagull patio, and dig it. This duet of Tony Bastida and Lee Del Moral are no strangers to the music SCENE. Tony is an instrumental piece with 94.5FM Buzz Texas Metal band of the Year, Metavenge while Lee operates Pyramid Studios in San Leon. Most duets hitting the SCENE have been going unplugged, but Jimmy Page didn't on the MTV show, and neither do these two cats keeping it totally electric *and* keeping it in the 75-80 db range making for an enjoyable tonal experience. We sat through a couple sets on the Cockeyed Seagull patio and the playlist never centered on a specific genre. Rather, the transcendental state of being there in a Jimmy Spheeris Isle of View (with a splash of metal) sort of way. Get it? We have Trip to Cascity on our watchlist. Put them on yours! Down a couple doors... TOUR STOP CLEAR LAKE: Last month right as the presses were spinning up, we get a call to checkout out two-time Grammy nominee "Red," at Scout

UNION TAVERN Is Ok With Being Awesome By Rhonda Meredith

Union Tavern has a welcoming and casual neighborhood bar atmosphere. The tavern has been a neighborhood go-to place in Webster for almost a year now. One this particular night, Friday the 13th, no one was feeling any dread or sense of foreboding. Instead, Union Tavern was celebrating the day with a musical event. The venue was bustling with a fun crowd who were lining the bars and taking advantage of drink specials, hanging out listening to the live bands, and playing friendly games of pool.
And while we are on the subject of specials, Washington Wednesdays offer unbelievable drink pricing and on Fridays, it’s “U Call It” Whiskey and Bourbon. Happy Hour offers mixed drink, well, wine, Dom, and draft specials.
Union Tavern was the conceptual brainchild of Nick and MoMo - two long term friends from the home of the Cheese Steak sandwich. You guessed it – Philly. Both men held blue collar jobs and would wind down in the pubs and taverns after s hard day’s work in their Philadelphia neighborhood. I see your look of confusion. Why would Nick and MoMo open a tavern in Webster, Texas? Well, besides Webster being an awesome place to be, they had friends who were also fellow business owners in the area. So, it was a natural step to bring the tavern experience to the working man (and woman) here!
So what to do after you get that beer in your hand? Well, Union Tavern has all the usual amenities one would expect at a neighborhood pub. You can choose to play darts, shuffleboard or a game of pool of course, watch sporting events and/or fights on any of the numerous TV’s, Golden Tee, listen to live music or the jukebox, or sit out on the big back patio.
Don’t let the name “Union Tavern” bristle your Southern tendencies. It’s not a Yankee thing and does not refer to union workers, the Philadelphia Eagles or anything else Northern for that matter. The bar name pays homage to the common man and woman. It’s all about the working class people plain and simple.
You can catch one of the area’s best cover bands on Union Tavern’s stage every Tuesday night. “Big Richard” is a blast to watch and listen to! Union Tavern teams up with Punkstar Industries to provide the area with music from top original musicians. Throughout any given month, special live music and acoustic performances are set up.

Meet Rat Ranch
There is only one band that can sing Kid Rock’s song “Bawitdaba” better than Kid Rock. Oh yes, I said it. BETTER THAN KID ROCK. It’s Rat Ranch. Of course, a Kid Rock song is only one of many top hits to be heard when you see this magnetic band perform live. Prepare to be treated to “classic rock, current radio hits and everything in between.” The SCENE Magazine caught up with Rat Ranch at Sherlock's Baker St. Pub - Clear Lake last month. It was a little tough to maneuver the crowded dance floor, but well worth it. These guys are so good at what they do. I mean, of course, it’s about delivering the music with “maximum impact and rock concert-like energy,” but the stage show is so much fun to watch! The interaction between Kent Newman (guitar/vocals), Brett Axelson (guitar/vocals), Rick Valadez (drums) and Scott Madigan (bass/vocals) are priceless.

Cameras love lights and our cameras stayed in total bliss all night long. We'll be dropping into the Scout Bar on Wednesdays a bit more often with Mexas putting together an acoustic night featuring some our local avant guard. Readers know how we love checking out new acts from the garages of the region. What's interesting is how many of these bands mix and match the genres, and how it actually works! From the Santa Fe Man Meets Fate @ Scout Bar area, we heard Man Meets Fate for the first time. These folks are no strangers to the SCENE having opened for the likes of Head PE and Forbidden. I chatted with the two guitarists Ron and John and hope to follow up in the future. They’ve got a vocal presence much like Red and a "heavy and melodically friendly" instrumental foundation. Swap out the vocalist with an opera singer, and you've got Epica. While Galveston deals with the sound police, we are rocking at Scout Bar. And that, folks, is Tour Stop Clear Lake! Madigan @ Big Ben
PROOF TEST: When I heard Madigan was stopping into Big Ben Tavern for an evening, I simply had to check it out and am pleased to say, "It worked!" Dale and Hector had the indoor stage looking and sounding great, of course. Add to the ambiance a well-staffed bar, a full house, the band itself and you get an "instant party." Pretty cool, eh? :-) We followed up with Melissa about her stay at the vocal spa and happy to pass word that her pipes are in utmost tip-top form.

We also got in some quality time with Bass player Mike Ambro who is looking forward to his upcoming role playing Cool Daddy, opening this SeptemSix Car Pileup ber. Early in the month, @ Hugh & Jeff's we hung out with Maestro Dave and Hammer Todd along with a who’s who of local musicians gather at Shawn Pritchard's birthday party featuring Six Car Pileup at Hugh & Jeff's. The winter Olympics may have Shaun, the Flying Tomato. We of the Bay Area have our Shawn, the Flying Vocalist -We're good.... ;-) Speaking of birthdays, the who's who of local open mics pulled off a doozy of a surprise party for Bobbie of Wood N Wind. According to Steve, "She had NO Wood & Wind @ T-bone Tom’s idea..." Jammers being jammers jammed out on the pool until curfew. We've been catching the full Wood N Wind show at T-Bone Tom's recently where patio season is underway in full force. Also in full force on the patio was the Andy & The Dreamsicles contingent for a Memorial Day blow out. Did we mention these folks like to party? Well, that we did at the 9th Annual Oleanders party in San Leon. With over 500 people showing up throughout the day, this was a burner. Southbound and Funksion joined up with Andy and The Dreamsicles making for one over-the-top afternoon. LOOSE NOTES: Cont. from Page 48 FAB 40 ABBEY ROAD: Two years ago, The SCENE covered this all-volunteer band with a full orchestra boasting members from around the entire greater Houston metroplex, including our beloved Bay Area, as they pulled off an over-thetop free show -- The complete Abbey Road album to a full house at Discovery Green.... Fast Forward two years later. The band has grown by at least 20 members, the full house turnout is now spilling around the entire block, and the show was followed with a loooong set "bonus encore." This was a serious all-age event shared with parents and children of all generations (a good thing, mind you). Future shows are worth looking forward to. Says band organizer Dave Blassingame, "We want to be a little more ambitious next time!" Cheers!

Rhyder Ready to Rock the Boardwalk June 29 Mark your calendar now for 7:30 p.m. on June 29! Texas performer, songwriter and recording artist Brandon Rhyder will be the special guest performing live at the Event Plaza on the Kemah Boardwalk.
but there is a twist. The single is actually a live version that was recorded in February for Rhyder’s “Live at Billy Bob's Texas” CD/DVD set to drop July 26. Rhyder doesn't really fit into the classical country genre. His music is more of the new country rock groove that bleeds a bit of “red dirt.” But in all honesty, he is really an amazing storyteller who is a legend in the making and doesn’t fit into any niche. Plus, the song lyrics are as real as they come.
"All I’ve heard is great things about the Kemah Boardwalk, and I'm really looking forward to rocking the boat!!" Rhyder enthusiastically told The SCENE Magazine. Rhyder, who is a Carthage native (and coincidentally, so is The SCENE Magazine’s editor...), says that his latest effort and sixth record to date “Head Above Water” (Reserve Records/Smith Music Group, 2010) is “by far the best work I’ve ever done.”
It has been said the he doesn’t write for a genre, but instead for the inspiration he receives. “I take pride in the songs that I write and want to be able to sing many of them for years to come,” Rhyder states. “Quite frankly music changes lives. I want to be a part of that.”
The CD contains 12 solid tracks and a bonus tune. “This is not a book with twelve or thirteen chapters. It’s a collection of completely different books that ebb and flow to new highs and new lows,” Rhyder comments. His first three original singles have all topped the Texas Music Chart. And the current and fourth single, a remake of the classic Don Williams song “Lord I Hope This Day Is Good” is also a chart topper

ALL A-BORDE: Continued From Page 59 Shark Attack, Mama Tried and Footpie join a host of other bands and performers including Sundrunk, Soul Fire and Shaun Michael on the growing roster of Borde Room Entertainment, often called The Bee Room. Borde describes The Bee Room as an “artist network and management group.” They also have recently gotten into putting on events such as the 420 Pogo Festival in Seabrook at Texas Hippie Connection and the All A-Borde Festival on Friday, July 1 at Cabo in Seabrook which will kick off the tour

vendors, activities, drink and food specials and more. Basically, an all-out major bash. From Cabo, the crew of Borde, Beard and Danford will set sail for Galveston for the first of no less than 15 shows over the next 30 days. Some shows will just be the three performing as “The Crew.” While for some of the bigger weekend shows, a land crew consisting of full bands (Shark Attack, Mama Tried, Footpie, and more), vendors, tour supporters, local musicians, artists, entertainers, fans, support staff and more will join up with the sailors. Borde was quick to point out “The Crew” is willing -- if not hoping -- to add additional gigs to the schedule. “We aren’t above playing a living room under the right situation,” Borde joked. “Our goal is to bring original music to places that usually don’t get it.” If all goes according to plan, the trio hopes to return to Clear Lake the weekend of August 7 and 8 for a major concert and event, most likely at back at Cabo where it all started. And if it doesn’t go according to plan, it’ could spell bad news for Borde as the stakes are higher than you yet realize. Not only is the Alyzarian Borde’s boat, but it is his house -- yep, HOUSE! -- and also Shark Attack’s recording studio. So the importance of those training sessions during the Wednesday Night Races can’t be overstated. The Crew also will be putting in practice on their performances as a trio with a couple Thursday acoustic gigs this month (6/16 and 6/30) at Zone 504 in Kemah. So come out to Zone for one of the performances and out to the Wednesday Night Races to see them sail. But no matter what, don’t miss kicking off your July Fourth Weekend at Cabo on Friday, July 1 for the All A-Borde Fest.

AMOCO Federal Credit Union Raises $6,500 for American Cancer Society With an initial goal of $1,500, AMOCO Federal Credit Union quickly blew their goal out of the water. By rallying together to fundraise for their team contribution, staff at AMOCO sold “AMOCO Fights Cancer” wrist bands, blinky cups and accepted donations at each branch location during their four-week fundraising effort. The hard work paid off and in less than 30 days, they had already raised $5,000. According to the American Cancer Society Relay For Life’s website, the walk is a life-changing event that gives everyone in communities across the globe a chance to celebrate the lives of people who have battled cancer, remember loved ones lost and fight back against the disease. During the Relay For Life event, teams of people camp out at a local high school, park, or fairground and take turns walking or running around a track or path. Each team is asked to have a representative on the track at all times during the event. Because cancer never sleeps, Relays are overnight events up to 24 hours in length. East meets West as TEXAS OUTLAW CHALLENGE brings performance boating’s signature event back to Clear Lake The 4th Annual TEXAS OUTLAW CHALLENGE is taking place this month, June 24 and 25. This Texas weekend is focused on high-end performance boating starting with a welcoming “Stampede Street Party” on Friday evening featuring a $2,500 Miss Outlaw Bikini Contest, waterfront viewing of performance boats and vendor displays, Texas champion BBQ cooking teams, and live entertainment. The Saturday “Gunslinger Poker Run” and “Outlaw GPS Shoot-out” competitions are an exciting combination of poker running while logging an event certified GPS MPH. GPS hand-held units are issued to each Captain at the safety meeting prior to the 70-mile run. The final stop involves the posting of the GPS recall feature (highest speed attained throughout the day) by event officials, in addition to the winning poker hands. This event has become a true “East meets West” party with many out-of-town performance boat friends enjoying the unforgettable Texas hospitality while supporting proceeds for local volunteer aquatic conservation efforts and selected charities. National marine industry support for this event has been strong since the inaugural year, with sponsorships from Cigarette, Donzi, Fountain, Pier 57, Florida Powerboat Club, Bullock Marine, Clear Lake Marine, Victory Marine, Rtech Performance and Endeavour Marina. Previous year’s events have included teams representing more than half a dozen states and Canada, all vying for the now-infamous six-shooter Gunslinger trophies in over 20 classes, membership into the notorious Outlaw 100+MPH Club, or for the fastest entry, the Big Gun Shootout Award. Producers have awarded more than $32,000 in cash prizes to participants throughout the first three years of this event, and this year the Texas Outlaw Challenge is welcoming all original “Outlaws” who have participated in previous years to pre-register for 2011 at no charge, by bringing two new registered boats and friends to the 2011 event. With a committed invitation and participant appreciation like that, event organizers are predicting more than 100 participating in the event this year.

The Leukemia Cup Regatta, which is open to all sailors, is more than just a sailing event, according to HYC Past Commodore Cheryl Thomas, regatta chair. This year’s regatta is comprised of several different events to include a golf tournament, a Blues on the Bay Fundraising Party, a Kickoff Party in Houston, a Sip and Sail and culminating with the regatta June 24-26. 2011 Lunar Rendezvous Festival Golf Tournament A Great Success The Annual Lunar Rendezvous Festival’s Golf Tournament, “Come Fly with Me in the 21st Century”, was held on Monday, May 2nd, at Bay Oaks Country Club, 14545 Bay Oaks Blvd in Houston. Event Chairman, Tracey Farmer, would like to thank co-chairs, Penny Brockway and Tammy Horton, sponsors, donors, festival volunteers, and players for being part of such a fun and successful tournament. CCISD Superintendent Dr. Greg Smith, PhD. HonoraryTournament Chairman, greeted players and volunteers along with Festival King, John Wilkins, while both rode in a top of the line golf cart provided by Gulf Coast Golf Carts. Former Harlem Globetrotter player and coach, “Sweet Lou” Dunbar, golfed with a team from Midwest Steel. Mr. Dunbar, currently the Harlem Globetrotter’s Director of Player Personnel, signed a basketball that was one of the many items found in the Silent Auction. A delicious lunch was donated byT-Bone First Place Team with 2011 Lunar Rendezvous Tom’s, Kemah. Festival Queen, Kathrynne Garcia 2011 Lunar Rendezvous Festival Queen, Kathrynne Garcia, handed out the tournament awards during the evening dinner donated by Cheddar’s Casual Cafe, Webster. The first place team: Ron Masters, Mike McCaffrey, John Harkrider and David Parmer, was presented a. large crystal obelisk trophy; second place team: Jim Maultsby, Larry Moser, James Joyce, and Pat Suggs, received a medium crystal obelisk trophy; third place team: Michael Landolt, Herb Miller, Judge Louie Ditta, and Kyle Schneider, received a small crystal obelisk trophy. DADDIN’- The Verb of Being A Dad, The book that Redefines Fatherhood By Domino Taylor Just in time for Father’s Day and graduation ceremonies, a new and relevant book is on the market, Daddin’ – The Verb of Being a Dad. After a brief break, we were treated to a second belly dancer who had a different style. Lauren had a darker costume, darker hair with a flower, a more athletic dance, and a mysterious look on her face. Both performances were absolutely amazing. (I admit to googling belly dancing lessons when I got home!) Opa! Lastly – and so interesting – Skippers’ history: The owners are John and Terry Psarovarkas. They were introduced in 1971 in New York and married six months later. Based on the recommendation of a friend, John and Terry moved to Houston in 1978. In 1994, Skippers Greek Cafe opened in Clear Lake Shores. They are hands on. In fact, Terry was at the register when we visited. She is the matriarch in the family friendly atmosphere. proud “OPA!” and absolutely love the feeling it brings on! Let me tell you about my first time to enjoy Skippers Friday night entertainment... First and foremost, Skippers has some of the kindest servers around. Knowledgeable as well! If you are a little challenged when it comes to Greek cuisine, your server is your best friend. On this particular Friday, Nikki was my “guide” for the evening and helped me choose “Saganaki” to try. Saganaki is a Greek cheese that is set on fire at the table and eaten with pita bread. You are supposed to use lemon wedges to put the fire out, but (oops) my husband used them to flavor his water. Nikki did not judge! Opa! Second and very important is the entertainment. The music was provided by George Kitidis (bouzouki) and Nikkos Leontoudis (accordion). Kitidis is very smooth like a Greek Frank Sinatra. His voice is deep and rich. Leontoudis’ deft fingers mastered the accordion keys. Kitidis introduced the beautiful belly dancer named Jahari as she danced gracefully with swaying hips and clicking finger cymbals. - Continued on Page 20

I started working on the line at the age of 18 at the Petroleum Club in Fort Worth. I worked my way up to Sous Chef under David Hester who was the Executive Sous. After that I moved to Denton to work for two Jamaicans at the Banana Tree (Ital Food). Then moved to The Greenhouse, which had a split menu of vegetarian and carnivore. I ran the vegetarian side. I moved back to Houston in 2003 where I started work and culinary school. (Previously, I had been a poli sci major.) I went to work for Jason Kerr at Zula. Left there to work for Monica Pope and Jonathan Jones at Beaver’s. January 2009, I opened my own place, Holister Grill. But was forced to leave due to being diagnosed with Cancer. I spent May 2009 through July 2010 going through various surgeries and chemotherapy. I was cleared to work January 2011, and started at Signature Bistro. I was offered the Executive Chef position in late February. I brought on Mike Blanchard – who I’ve known for the better part of a decade – as my Sous Chef. I could not do what I do if it weren’t for him. Specialty: Seafood / New American. Signature Dish: Crispy skin snapper with tequila infused South Western roasted corn salsa over spinach risotto. Have you prepared a meal for anyone famous? Mike from Phish used to eat my vegi burritos when I toured with them. I also used to cook for various Houston Oilers. I worked with The Big Wu and would cook for them when they were in Texas. Please share one special cooking tip or technique with our readers: Learn five dishes and learn them well. Casper’s Billiards & Barbecue:
Not your typical pool hall! By Adam Donaghey When I pass by a pool hall, my stomach doesn’t exactly rumble. Typically, pools halls are smoky, dusty and feature pizza that tastes like cardboard or tortilla chips covered in fake cheese. When I sunk my teeth into a tender ribeye at Casper’s, however, I instantly changed my way of thinking. There’s something unique about San Leon – it’s got some of the best food in the Bay Area (and it won’t break the bank either). When Captain Roy built his pool hall, he decided folks might want to enjoy their time at their own pace – maybe have a few drinks and
some dinner and then a couple of rounds of pool. He decided to build in San Leon in order to get away from all the crowds downtown (the view of the Bay doesn’t hurt either). His no-rush approach has created a pleasant atmosphere that just doesn’t seem to exist at your average pool hall. As I was chomping down that ribeye, Roy informed me that every piece is cut separately, each time a steak is ordered. I seriously felt like I was in a bona fide steakhouse – only, this pound of beef is $14.95. But that was Roy’s steak. I had the chicken fried steak sandwich – on special for $4.50, along with a variety of other choices Tuesday through Friday from 11 a.m. to 2 p.m. For half of what it should cost, that hefty sandwich could easily be split between two people. I’m proud to say I finished it all by myself and enjoyed every minute of it. And granted, Leighann behind the bar told me the kitchen might have spoiled me a bit since I was from The SCENE and all. - Continued on Page 21

Remembering those who made the ultimate sacrifice Dear Friend, Memorial Day weekend is the time when we as a nation collectively pay tribute to the servicemen and women who have died in service to their country. America was founded on the basic principles of freedom that many take for granted today. The right to life, liberty and the pursuit of happiness, and the right to representation when your money is being taxed are ingrained in our psyche. The freedom to worship as you choose or have a voice in your own future are also God-given rights that we Americans enjoy. These freedoms come at a high price. The price has been the blood, sweat, tears and lives of hundreds of thousands of brave Americans. They have given all so that we may enjoy those freedoms. For a decade, our nation has been fighting terrorists and those that harbor them, primarily in Iraq and Afghanistan. In Iraq, 4,454 US servicemen and in Afghanistan, 1,582 U.S. servicemen have paid the ultimate price for our freedom. Thousands of other brave soldiers have come back wounded to a grateful nation and we owe them dignity, honor and the best resources possible to re-engage in civilian or non-combat life. It is truly a special day of remembrance because it is the one forged in the blood of over 2.7 million of American servicemen and women. Those lives were precious and it is incumbent upon us to remember them, honor them and ensure that their sacrifices

This is an important opportunity to remember those from our communities who gave their lives in service to our nation. Here is a list of residents (listed at right) of the 22nd Congressional District of Texas who were killed in service to our nation and for the freedoms upon which our nation was founded. I humbly thank them for their sacrifice and honor their memory. God bless them and their families. On this Memorial Day, we also remember the many brave patriots who defended our nation in previous wars and the sacrifices they gave for our liberty. We also remember the families of our servicemen. They too make huge sacrifices and worry and pray for the safety of their loved ones. This is a time for our nation to reflect on the sacrifices that have been made by the generations of Soldiers, Sailors, Airmen, Marines and Coast Guardsmen who have honorably defended our freedoms and way of life. DICKINSON BAR-B-QUE & STEAKHOUSE Friendly Hometown Cafe with all the Trimmings By Sue Mayfield-Geiger With the Dickinson Bayou meandering nearby and tall pines hugging its banks, the smell of aromatic smoke hovering in the breeze is a sure sign that Texas cooking is also nearby. From police chiefs to mayors to local citizens, they come into Dickinson Bar-B-Que & Steakhouse daily, grab a tray and watch as heaps of brisket and ribs are piled high on their plates. Or they may opt for juicy hand-cut U.S.D.A. Choice steaks, hand-battered chicken fried steak with cream gravy, or something off the chalk board, regular menu, or partake of one of the daily specials. If the tables were removed, you’d think you might be in a Texas dance hall due to the high cedar ceilings, polished concrete floors, corrugated tin, and western murals on the walls. Outside, Texas wildflowers are in full bloom and picnic tables invite you to sit a spell on the wrap-around front porch or even dine outside. Under the ownership of Keith and Holly Lilley for almost two years, the Lilleys have developed quite a loyal following and have scored several prestigious awards, like the 2011 North Galveston County's Small Business of the Year, and the Galveston County Health Department's Gold Ribbon Award. “Over the last year, I began tweaking the menu,” says Lilley, “and it has now grown into a classic Texas style cafe with not
only the best Bar-BQue in Galveston County, but fresh seafood (from Hillman’s), hand-cut U.S.D.A. Choice steaks, burgers and home style cooking.” Lilley is all about quality, so he started buying Angus Choice meats, sausage from Snook (Texas), and fresh chicken from local Texas producers. “We try to always buy Texas agriculture and produce, and are members of the Go Texan program through the Department of Agriculture,” adds Lilley. The catfish is U.S.A. farm raised, the hamburgers are thick and juicy, and the 20-plus scratch-made desserts by Anna are irresistible. With a good selection of Texas wine and beer, old-fashioned fresh-brewed sweet tea is also on the menu, and always, four flavors of Blue Bell ice cream. “We’re more than just an outstanding bar-b-que restaurant— we have something for everybody,” says Lilley. “We do the best bar-b-que in Galveston County with awards to prove it, but we do everything else well, too,” he adds. With two enormous smokers in the back, the cooking process is a guarded secret as are the sauce recipes. “We have people who come here just to eat our 8-ounce Norwegian salmon,” says Lilley, reminding me of the versatility of the menu. “Many come in just for our flat-grilled burgers, others just for steaks or seafood, and some for our famous chef salads (dressings all homemade) or scratch-made desserts.”
In a hurry, but still want that great Texas cuisine? Dickinson Bar-B-Que has a convenient drive-thru with a large hand-painted Texas mural on the outside of the building to enjoy while guests order everything from cheeseburgers and bar-b-que Family Packs to 24-ounce ribeyes. Of course, you can always call ahead and have your order waiting for you as you drive up to the window.

It was important to Lilley to offer a wider selection of side orders, so he added turnip greens, real mac/cheese, black-eyed peas, jalapeño pinto beans, baked beans, dirty rice, fried okra, garlic mashed potatoes and many other items such as the Texas Caviar (black-eyed pea salad), while keeping the famous signature redskin potato salad and cole slaw. Onion rings are handbattered, so you definitely want to try those. Speaking of hand-battered, the chicken fried steaks and chicken are dipped in buttermilk and Lilley’s special seasoned breading. - Continued on Page 21
