As an unsigned band, owner and good friend Thomas (Wilson, Scout Bar’s owner) helped us many times by putting us on the Texas Buzz Sunday showcase. We were even nominated for the Texas Buzz awards that were held there, and I won bass player of the year. Later we graduated as a signed band and supporting big acts like Sevendust, Drowning Pool, etc. It's always a great place to play, we get treated very well, and we're looking forward to rockin' it again with Saliva and Filter.”

The opening acts are rock bands Heart-Set Self-Destruct and ANEW REVOLUTION. ANEW REVOLUTION (ANR) was created in Austin, through what I like to call a twist of fate or destiny. ANR is a band that was meant to travel the open road to perform live onstage for the masses. Call it whatever you want to; just don’t say the road to fulfill a dream has been an easy one. Documented there are the trials and tribulations, and the “ins and outs, the nuts and bolts, and the unglamorous details of their lives as a working band.” That means pulling together and overcoming the obstacles while getting from gig to gig. As you will see on iReport, ANR had a “devastating experience” with a trailer breaking down in a severe snowstorm. Plus, their van’s battery died and they couldn’t get a tow truck. “It was like an anxiety attack. Like, ‘Am I in the movie ‘Alive?’'' Salvaggio said.

Zone 504 adds upper deck, expands entertainment By Adam Donaghey Kemah Lighthouse District’s neighborhood sports bar, Zone 504, is expanding its ability to entertain neighbors and visitors by constructing a tri-level upper deck. The welcomed addition will provide a clearer view of Zone 504 is home of the ‘SHOTski’ the Bay and solidify an already spectacular spot to watch fireworks and all the action on the strip. As summer winds down and the warm weather subsides, you’ll find both the lower and brand new upper decks packed with late night crowds. This isn’t the first time Zone 504 has undergone construction. After the devastation from Hurricane Ike, founders Lori and Jesse Chapa thought the iconic hangout was done for. But with the help of Heaven and Kevin Padgett, the foursome forged a new partnership that would restore the historical building, preserving its history and ensuring its survival. Originally built as a summer home in 1926, Zone 504 will be featured in an upcoming book documenting the history of Kemah.

BACK ON THE BEAT: The Tree Pasheen @ Clear Creek Winery House is back on the beat, and this month, we decompressed to an evening of Phil Johnson and Daniel Rose playing set lists from big band Sinatra to ’60s piano bar and easy listening Motown. With hurricane season upon us, a planned rendezvous hangout makes sense and the Tree House is on my list. As a round-the-clock hangout during Ike, they're proven trusty, so check them out, check them over, become a patron and jot The Tree House down into your plan! HOT ROCKS: Cullen’s Live is back on the SCENE beat and Satisfaction is what it be – that is, the Rolling Stones tribute band from Louisiana that came tumbling into town. The experience of catching tribute Kaos @ bands is always a hoot especially when it's for one of Sherlock's the greatest rock & roll bands in the world. Christopher and the staff continue dishing out ample measures of class that Cullen's is known for. Get your yayas over to Cullen's, and we'll catch you there! CLEAR CREEK VINEYARDS: We stopped in for their public grand opening from a live music point of view and at first glance expected little more than a place for soloists or possibly a duet at most. Boy were we fooled! Local jazz diva, Pasheen, was in the house in the third-level listening room complete with her seven-piece jazz band. No kidding! Full bodied articulations of character and nuances, pleasingly blended parts, and mastery of dynamics did this all-together jazz group provide -- perhaps as good to the ear as a good wine is to the palate. Two thumbs up! Speaking of totally over-the-top ear candy, drum roll please... OVER-THE-TOP goes to Ashes of Babylon and the folks at the Texas Hippie Connection. MATT LARA: Becoming Extraordinary From His Every Day Ordinary By Rhonda Meredith

when you can go and learn about something that interest you it is unlike anything else. It just made sense.”

Matt Lara was an average student at Clear Creek High School. At the beginning of his senior year, he dropped out and went to work at TexasYamaha. “I thought it was a good idea to start making some money and look for a field of work to make my career. I had a love for motorcycles and thought that's what I wanted to do!”

Lara started out with a multitouch controller and built from there slowly making the transition from hip-hop to more of an electronic style music. “Sooner or later Dubstep came to my attention and I couldn't do anything but crave more. It's not music that you can hear but it's music that you can feel and that changes the whole outlook of the genre. It just makes you move!”

But his mind began to change and he says, “Something hit me… If I wanted to make it anywhere in this world, I definitely need my diploma.” So Lara went back to school, accomplished his goals and graduated from Clear Creek ISD. Afterwards, he moved out on his own and decided to take the year off. Lara knew that taking basic college classes didn’t sound interesting, so he continued to work at the motorcycle shop. “After a year of no school I just kind of got to the point where I asked myself, "What am I doing? Where am I going? And how am I going to get there?"

The past eight months has been all work and “music, music, music,” but now Lara is getting out and DJ’ing at local events. “Nothing makes me happier than making other people happy. I love the feeling of making someone smile, or laugh, or just see some real happiness where nothing else matters except that moment. That's what I put in my music.”

He had advanced computer skills and enjoyed making YouTube videos. Hits on his “Think Creative” YouTube channel “earned” Lara a spot on Channel 2 News for his “I-45 Jelly Workers” video. Go search for it! “But honestly just wasn't my passion and I still had no idea what I really wanted to do yet,” he lamented. Lara struggled because he wanted his name to be known by the world. But how?

Lara is a forward thinker. “The way I do it is the future of DJ'ing. It's all MIDI (Musical Instrument Digital Interface.) No analog instruments. Everything is computer operated and based off of digital controllers. I can go in and program any knob, button or trigger to do whatever I want it to do, it’s just unbelievable.”

Lara played the bass guitar growing up. “I have been a musician my whole life considering that it runs in my family’s blood. Everyone on my dad’s side of the family is involved with music in some way or another. But it just still wasn't enough to actually take my interest and give me the true feelings that I wanted to take to the next level and make it a career.” He began to dabble with the mixing part of hip-hop music for his friends. With Lara’s "musician’s ear" he could pick out what sounded right and what didn't. “My entire life I always thought DJ'ing was the #1 coolest thing around. It’s something I always wanted to do it but never thought I could actually get into it.” So, a leap of faith was in order for the twenty year old and he enrolled in Houston Community College’s Audio Engineering program. His life took a 180 degree turn and instantly everything just fit into place. “I felt right for once and complete. I've never been one to look forward to going to school but Matt Lara’s video got the attention of NBC Channel 2

The response has been very positive and the support is overwhelming. Lara just made his debut at Scout Bar under the stage name Dub Master Gumby or DMG for the hip. The name originated from Lara’s dad mainly because he’s skinny and loves the color green! Plus he grew up watching Gumby as well. Lara will be a sophomore at HCC this fall and has aspirations to move to LA in the summer. Music has been 100% his outlet and probably saved his life. His ambition has led him to expand into producing while using new virtual software technologies. Lara also plans on dropping an original hour long mix by the end of this year. “I can't wait to finish. The thing that I love about it all is I know every day I have something to do when I get home. No matter what and it never stops because it's all my creations. That brings me to my company’s name "Think Creative Productions…" The lesson from Matt Lara is to find out what your passion is and live out your dream. TIME WARPING: History lesson: Folks populating Friendswood in the early days were through and through friendly. Seems fitting that John Delesandri, Tonya and staff at Dempsey’s have fine-tuned this popular neighborhood outpost into a comfortable hangout for pretty much every body. Country, UFC/MMA , reggae, acoustic, or Abraham’s Tree rock, it doesn't matter ‘cuz it's all @ Dempsey’s good, and it's all here. This month, we caught two long-time local garage bands Motocyco's and Abraham's Tree. Life can sometimes be hectic, but picking So when was the last time you heard a good crisp eight piece reggae band? Now imagine stirring in some rap for spice and tempo while mellowing the steel drum twang with pieces of big band brass. We honestly weren't sure how so many pieces would sound, and boy, did these cats nail it – tight and bright with clean highs and crisp beats locking tightly onto your spinal cord and not letting go! Helping out the acoustics was a packed dance floor and (dig this) no parents! Speaking of the crowd, think Haight & Ashbury back in the day, only these vibrant souls clearly looked like they had daytime jobs, saw their dentists, and showered regularly -- The kind you'd have no problem introducing to your parents. Nice job! :-) WE'RE AN AMERICAN BAND: Last month, we checked out The SCENE beat newcomer, 146 Roadhouse, and figured a confirmation visit fitting. Greg, Michelle and staff have this place SCENE ready and firing on all cylinders complete with plenty of big screens, a spacious game room and a good lineup of live music with a rock & roll slant. We caught Cloud 9 for the first time on the beat and stamp these cats “SCENE Party Ready” playing gritty covers from the ‘60s, ‘70s and ‘80s (that would be Grand Funk, Doors, Ted Nugent and the Sammy Hager edge in case Cloud Nine @ 146 Roadhouse

these two bands for an evening of old fashion rock is a nobrainer. With great fans, super-sounding stages, and powerful playlists of songs that have withstood the test of time, all's well at Dempsey's! SO DON WAS A DUD: It's always good to have a plan to hang out when the big one comes, so we checked out Sherlock's and kept our fingers crossed. It's amazing how great minds think alike -- the place was PACKED! Or was it because KAOS was making their debut performance at this Clear Lake party megapolis? Either way, it was fun by the tons as you would expect at Sherlock's on a Friday night. The folks with KAOS have been adding a variety of sound and light crews to the team which is never a bad idea -- With compressors set at full and the crowd cooking past boil, the storm said, "Not tonight." Complete with David Schwope under the palapa, Drums of the Pacific on the indoor stage, and an entire afternoon of Polynesian fun including limbo dancing, flaming torches and hula dance lessons. Congrats to Jackie's for scoring the first ever LOOSE NOTES OVER-THETOP award for the food and fun category. Give me the lightning rod, I've something to say: The Jackie's cooks and staff dropped our jaws serving up recipes not on their menu that arguably blew away some of the fine area eateries. There, I said it. Folks, we weren't sure if Jackie's was a restaurant with entertainment or a fun place with good food and now, add "culinary powerhouse" to the choosing. Give this a try: Next time at Jackie's for dinner, ask them to whip up an off the menu order of their Teriyaki (beef, pork or chicken, doesn't matter) or their garlic shrimp -- the kind they had at the Mid-Summer Luau. It's the bomb! Okay? Earlier at the Brickhouse, we stopped by to pass our regards to Madigan's fine bass player, Mike Ambro. This September, Mike will be taking a sabbatical to star in his new role as Big Daddy. Congrats and all the best to Mike and his new family! Speaking of Daddy roles...

LOOSE NOTES: Continued from Page 44 STS-135 CREW RETURNS TO HOUSTON: On perhaps the hottest day of the year, a packed Hanger 990 filled with family, ground crew, administrators and well wishers was the SCENE for the return of STS-135 and the crew of the Atlantis. Shuttle Commander Chris Ferguson, Pilot Doug Hurley and Mission Specialists Sandra Magnus and Rex Walheim wrapped up the work usually requiring a crew of seven -- delivering spares and supplies to the International Space Station. Security was gracious allowing the crowds of onlookers into the hanger 30 minutes ahead of time to get out of the striking Texas sun. The V.I. of VIPs included Senator Kay Bailey Hutchinson and Houston Mayor Annise Parker along with other Bay Area representatives & dignitaries. This final shuttle mission was not a certainty and required efforts by Senator Hutchinson to make this final flight a reality. “Don’t cry because it’s over. Smile because it happened.”

Meet SIX GUN SOUND By Rhonda Meredith Hailing from the Dickinson and League City areas is an original southern rock band named SIX GUN SOUND. And paying homage to one of the classic rock band Bad Company’s lyrics is how SIX GUN SOUND’s name came about. The trio is made up of Cory Rardin (drums) and twin brothers Bobby Territo (vocals, guitar) and Vinnie Territo (drums, vocals.) The guys have known each other for a very long time… In fact, their fathers (Robert and Joseph) were best friends and performed in bands together. It has been this unrelenting support that has enabled the Territo brothers and Rardin to realize there is a deeper side to this musical dream. “Music is just a constant part of life and we are very passionate about it,” comments Vinnie. “We focus on being professional, punctual, and putting together good solid songs that are timeless, relevant, and meaningful. Music can save people. Our lyrics deal with being real, life’s frustrations and everyday emotions.”

HANK3 is coming to town in September SEPTEMBER 8TH AT SCOUT BAR

music legend Hank Williams and the son of Hank Williams Jr. He is one of the most prominent musicians to play neo-traditional country as well as alternating between punk and metal styles.

By Rhonda Meredith That means grab your cowboy hat, try to hang on to your cowboy hat, and then just lose the hat all together and replace it with devil horns… Say what? Shelton Hank Williams III, aka Hank3, is ambitiously releasing not one, not two, but FOUR new albums all at once on September 6th through his new record label and he is coming to Scout Bar two days later. "I've been off the road for awhile, and I'm lookin' at two years of bein' full-on dedicated to goin' out there and doin' what we do," said Hank3. "That's one of the reasons I wanted to release all of these albums at the same time, so I could just focus back on touring again."

"That's what makes us different and what gives the wide audience range of 14 to 80. Cowboys, punks, metalheads, jocks, grandmas, and the average everyday person… We bring them all together under the same roof. That's what makes us proud. That's what makes it worth it all at the end of the day,” says Hank3.

His first release is a double CD set with separate names called “Ghost to a Ghost" and "Guttertown.” The 41 straight shooting country tracks dispersed over the two CDs are flavored with Hank3's trademark “Hellbilly” sound, and heavily weighted with Cajun influence and an ambient, lonesome mood.

This is followed by the debut of “Attention Deficit Domination” which is “a slow, Melvins, sleep-oriented type of doom rock.” It will allow the listener into Hank3's crunching, metal world of the heavy and the slow, complete with his renowned, fundamental percussion. On the Water LAKEWOOD TO HOST HATTERAS RENDEZVOUS Upcoming Calendar

Lakewood Yacht Club will host its first annual Hatteras Rendezvous Fri., Aug. 19 through Sun., Aug. 21. Chairman Asa Lockhart and Co-Chairman Brannon Young are planning a full agenda of activities for boat owners and their families. “Both the east and west coast of our country have numerous Hatteras Rendezvous, but we have not had one in Texas to my knowledge,” explained Lockhart. “We are inviting Hatteras owners from all over the Gulf Coast to join us for this fun and educational weekend.” E-mail invitations will be sent to numerous yacht clubs along the Gulf Coast and Bob Bean, general manager of Marine Max is helping to contact local Clear Lake area Hatteras boat owners. Friday night will feature a bar-bque buffet around the club’s pool along with Young as an experienced DJ for entertainment. Saturday will have speakers on “all things Hatteras”: electrical, diesel engines, interiors, woodworking,

Are the Hydroplanes returning to Clear Lake? (Update) Hours before hitting the press with an article previewing the Texas Thunder RaceFest, the first hydroplane race on Clear Lake since 1989, I got word from my contact at Powerboat P1 USA that the Air National Guard Hydroplane Series event may not happen because of concern about the water level in Clear Lake. It’s not surprising considering the current drought and the fact that Clear Lake’s water level -- or lack of it -- was one reason cited 20+ years ago when the races left in the first place. A decision is expected to be made at Powerboat P1 headquarters in London Friday, August 5 (the day this issue hits the streets). Follow The SCENE on Twitter for updates and breaking news. Lunar Rendezvous Festival Events Offered Fun, Fun, and Fun Run! Lunar Rendezvous Festival Chairmen were very busy offering fun events for all ages during the final month of the 2011LRF Season. On July 14, Brandy Culp and Jennifer Farley chaired “3-2-1…Blast Off Into Family Fun” at Putt-Putt Fun House, located in Webster. A crowd of over 130 included friends, families, the Royal Court, and Lunar Princesses and Lieutenants enjoyed three hours of games, rides, attractions and food. The Lunar Rendezvous Festival’s Sunset Service, “Soar on Wings like Eagles” was held on Sunday, July 24, 2011. Lunar Festival Chairmen for this family event were Tammy Barrier and Therese Ruff. Festival King John Wilkins welcomed everyone to the service and scripture readings were presented by current Festival Queen Kathrynne Garcia, Queen Alternate Lizzy Nifong and Captain Kevin McMannis. Music was provided by the Clear Lake United Methodist Praise Team. A special musical performance was made by Festival Lieutenant Brooks Kubena (on piano) and Festival Princess Caitlin Duckworth (singing). They performed “Amazing Grace (my chains are gone)” by Chris Tomlin. Festival chairmen would like to thank Belinda Scheurich for creating the flower arrangements. A slideshow featuring this year’s Court was created and presented by Pam Culpepper of jPamela Photography Inc. Refreshments were served following the service.

“Glitter in the Sky” was the theme of the 46th Annual Lunar Rendezvous Festival’s Fashion Show held on Tuesday, July 26, at the the San Luis Convention Center Ballroom located at 5600 Seawall Blvd, Galveston. The high point of the day, which brought about lots of camera flashes, was the “Glittered Angel” male model walking down the runway at the end of the fashion show.

Bay Area Turning Point prepares to celebrate 20th “Birthday” Mambo Jazz Kings, Texans Cheerleaders, Games, Poker, Auctions, Food Stations & more planned A Bay Area-wide birthday extravaganza will be held Saturday, October 1 from 8 p.m. to 1 a.m. at Big League Dreams to celebrate 20 years of service to the community by Bay Area Turning Point, a United Way Affiliate that provides shelter and outreach programs for victims of physical/sexual abuse and domestic violence, as well as preventive/awareness programs conducted through schools, organizations and companies. “This will be a ‘fun’ party,” said Diane Savage, CEO & president of BATP. “There will be no speeches, no presentations, no sad stories. Rather, it will be a night to celebrate 20 years of saving and rebuilding shattered lives,” she added. The immensely popular 14-piece Mambo Jazz Kings will provide music for listening and dancing. An extremely talented R&B/Soul Band, the Mambo Jazz Kings combine elements of Earth Wind & Fire, Tower of Power, Beyonce, Cameo, James Brown and Luther Vandross and are a visual explosion to watch. Members of the Texans Cheerleaders will perform a special birthday cheer. “There will be something for everyone all through the evening,” Savage said. “If guests need a break from dancing, they can try their hand at a number of games and other activities, including a high stakes poker tournament.” World Series of Poker winner Allen Baker will conduct a high stakes Hold ‘Em tournament during the party. For an entry fee of $500 (75% tax deductible), entrants will play until there is a champion. The winner will receive a “Champion” Tournament bracelet, a “Championship” jacket and bragging rights. Among the other planned activities guests will be able to enjoy are a photo booth with photos immediately posted on a big screen, Limbo contest (how low can you go!), caricatures, balloon animals and much more. Guests also will be able to bid on silent and live auction items, including lunch and dinner with Astronauts Joan Higginbotham and Joe Kerwin, a necklace valued at $2,000, an Arizona golf package, a Costa Rica Getaway, original paintings, electronic game package, a wine tasting for 20, a tennis package and more. Al Saylor of Patriot Bank Mortgage, who has served as auctioneer for many local events, will conduct the live auction. Additionally, there will be a number of gourmet food stations, including a tropical garden fruit station, sliders station with chicken, spicy meat balls, Ahi tuna and pulled pork and dessert station with a variety of sweets, including of course, birthday cake. Water, ice tea and coffee will be available at the food stations, or guests may purchase sodas and alcoholic beverages at the cash bar. Tickets are $70 per person or two tickets for $125. E - For the most golden of tans start with a higher SPF then gradually reduce by the end of the week. DON’T GET A SUNBURN! - If your husband has big feet, pack things in his shoes! I always fill his shoes with either socks or jewelry wrapped in plastic bags for safekeeping. - Always bring more than one swimsuit so one can be drying while you wear the other. (I usually bring a fresh one for every day!) - Tinted moisturizer and bronzer will keep you looking fresh. Don’t be afraid to wear it to the pool or beach. TRAVEL TIPS TO SAVE YOUR SANITY: - If traveling with a partner, pack half your clothes in each other’s bags, that way, if someone loses a bag you still have half your things. - Pack samples of your shampoo, conditioner, lotions and night creams. This saves space and reduces the weight of your bags. - Leave a copy of your travel documents with a friend or relative and email yourself your itinerary to cover all your bases in case you lose your paperwork. - I make travel lists and keep them in my computer (i.e. cruise list, or skiing list.) This makes preparing a cinch. Then take the list with you, and if the airline loses your luggage you have an inventory of everything in it. - Pour body wash, etc. into travel bottles. You can purchase them at any drugstore. Also, be sure to pack them in plastic baggies before putting in your suitcase and always pack extra baggies. - Buy a beautiful fake diamond ring and leave the REAL one at home! - Bring along a small purse for nighttime – ID, lipstick, camera, etc. - Pack all of your toiletries and shoes in a separate suitcase. That way there is no chance of items spilling on your clothing, or your shoes soiling your garments. - Always have aloe vera for burns, but pack LOTS of sunscreen. - Don’t forget extra camera batteries. You don’t want to be on the top of a mountain when your camera dies. - Bring a travel journal. Writing in it passes the time while in transport. Keep a log of small details and places you visited, you

Artist of the Month • Sadie Hopwood Congratulations to Sadie Hopwood on her one-year anniversary at The Hairem Salon. Sadie just completed a rigorous year-long training program at the salon with Owner Heaven Padgett and Artistic Director Jason Mosher. Hopwood's training consisted of all genres of cutting and coloring, blow drying and special event styling and technique, facial waxing, using clip-in extensions and more. Her training was also designed to not only teach technical skills, but to inspire critical and creative thinking. The program highlights the consultation process, therefore increasing communication and customer satisfaction. "Sadie’s meticulous hands-on training and diligence in learning all aspects of the industry have led to her passion and self-confidence in the salon," Padgett said. Hopwood also has three years of experience in the artistry of make-up and brow styling. She has been working and assisting at fashion shows, photo shoots and doing prep-work for educational events and magazine print ads. "Her work on these high-profile events has led her to quickly develop the kind of eye it can take years to hone," Padgett explained. "Her strengths are her great cutting skills, beautiful highlights, blended make up and her sweet and genuine nature that make her a joy to be around." Gulf Coast Film & Video Festival September 23, 24 & 25 Award winning actress Marsha Mason to be honored By Peggy ‘Domino’ Taylor The 13th Annual Gulf Coast Film & Video Festival is around the corner and tickets are on sale now for this annual film event. The Gulf Coast Film Festival will be September 23, 24, 25. This film festival was established 13 years ago and has gained international recognition in the Independent Film Community. Every year the festival hosts a celebrity in the film and video industries and presents a Lifetime Achievement Award. This year’s special guest scheduled to appear will be four-time Academy Award Nominee and Golden Globe winner, Marsha Mason. Mason’s most popular works include Cinderella Liberty, Goodbye Girl, Only When I Laugh and Heartbreak Ridge. Ms. Mason is to receive this award at the Cascade Banquet & Award Gala on September 24 at the South Shore Harbour Resort in the Crystal Ballroom, 2500 South Shore Blvd. in League City starting at 6 p.m. Kicking off the three-day event on September 23, is the Opening Mixer & Reception where Ms. Mason will be available to greet the guests at Madeline’s Wine Bistro at 707 Bradford in Kemah at 7 p.m.

Film Screenings will be all day Saturday, September 24 and Sunday, September 25 at Holiday Inn Kemah (805 Harris Street). Additionally, plans are under way for the inaugural “Producers & Directors Forum” at the Jimmy Walker Kemah Community Center on Hwy. 146, with more details to be announced. During these events there will be opportunities for the festival attendees to meet with actors, producers and directors in the film and television industry. Last year’s celebrity guest and speaker was actress model Cheryl Tiegs that spoke to a sold out room and many fans. The Gulf Coast Film and Video Festival is the creation of Founding Director, Hal Wixon (an actor himself) and his wife Karen who both have been in the film industry for many years. Wixon’s mission was to encourage the work of the independent filmmakers and to promote the art and put budding filmmakers in the spotlight. “This festival was created to showcase the discovery of new and emerging artists,” states Wixon. “The goals for this fun and educational event are to encourage the works of independent filmmakers and promote the concept of film as art and offering awards as means of educational outreach and expand the awareness of independent film.” Filmmakers from all over the world submit their films, and it is recognized internationally as a juried film festival. The festival also showcases Houston and the Clear Lake/Bay Area Houston as a location for future films while promoting tourism. The festival’s title sponsor is the City of Kemah and is supported by the City of League City and the City of Houston and the Houston Film Commission. Tickets are available for all three days and individual film screenings and the social events. Packages are detailed on the festival’s website. Tickets will not be available at the door for the Cascade Banquet & Award Gala. Discounts for the movie passes at the Kemah Holiday Inn are available for the military, students and AARP members, with ID or card. Donations for the silent auction during the Gala are being accepted now, with proceeds going to the Kemah Citizens’ Police Academy. The Scene’s Great Chefs An On-Going Series Chef Chris Simon of Opus Bistro 1002 Aspen, Clear Lake Shores • 281-334-5225 Background / Experience: Chris Simon started his cooking career at the age of 16 under Chef Gert Rausch at Lakeway Inn and Resort in Austin. He benefitted from Gert's training in Germany. (Gert had been honored in Les Amis d' Escoffier.) Chris was chosen among 10 qualified cooks at Lakeway to open Gert's restaurant in Snowmass, Colorado, called The Wineskin Restaurant. His knowledge and experience excelled there. After a couple of years in Colorado, Chris returned to Austin to attend college at St. Edward's University. He was hired as a chef at Cafe Camille and had his first influence on a menu which was received with rave reviews. He ventured to Lost Creek Country Club where he was hired as a bartender. One month later, he was the bar manager, and six months later, he was the Food and Beverage Manager. He ran the operation from the kitchen and was often seen in the dining room in a chef uniform greeting members. It was at Lost Creek that Chris composed his first full menu. Eventually, Chris was promoted to Atascocita Country Club in Humble. He revamped the menus and the

social calendar and, to the delight of the members, the Club's food and the beverage operation improved considerably. Chris has been a general manager for Gallagher's Steakhouse, The Anchorage Seafood Restaurant, Lone Star Steakhouse & Saloon, The Crab House and Joe's Crab Shack. He has always been hands-on in the kitchen providing the very best quality for his guests. Chris fell in love with fine dining from his early days, cooking with Chef Gert Rausch. He vowed to have his own restaurant one day which would be set apart from everyone else. Now he and a friend of 30 years formed a partnership and opened the waterfront restaurant Opus, the compilation of his life's work and passion. Specialty: “My specialty would have to be sauces. I have always been able to please everyone with the flavor and texture of the classic sauces. I love reducing stocks with fresh vegetables, herbs and proteins. I also love making variations of Hollandaise sauce.” Signature Dish: “If I had to pinpoint a signature dish, it would be Steak at Poivre. It

was one of the first sauces I learned to make during my apprenticeship with Gert Rausch. I have always made it on special occasions for my family and friends. My mother knows that when I cook for Thanksgiving, I forgo the turnkey in favor of a whole roasted tenderloin with au Poivre sauce. The term means ‘with pepper,’ and the original sauce was created by Agustus Escoffier consisting of sauteed cracked black pepper corns, heavy cream and rich beef stock.” - Continued on Page 18

BAKKHUS TAVERNA CELEBRATES THREE YEARS IN KEMAH Anniversary Bash: Wednesday, August 31

August 11 marks the third anniversary of Kemah Lighthouse District favorite, Bakkhus Taverna Greek Restaurant & Bar. Made from scratch using fresh ingredients, Bakkhus serves Greek cuisine with a southwest flair, appealing to a variety of palettes. Whether it’s a traditional Greek plate you desire, such as the gyro platter or souvlaki, or a Texas-sized burger, Bakkhus caters to all tastes.

Back in April, Demetri announced several new menu items and they’ve taken off marvelously – I’ve been especially impressed with the new selection of unique burgers. Always thick and juicy, Bakkhus totally upped the ante with its New Orleans style “Cyclops” burger, with honey ham, bacon, American cheese and a fried egg, sunny side up. Available for Sunday brunch, the Cyclops (along with a Bloody Mary) is the perfect remedy after a long Saturday night.

Named for the Greek god of wine and revelry, Bakkhus will celebrate in style at its third annual anniversary party on August 31. Having attended the last two shindigs personally, I can assure you it’ll be a night not to be missed. There will be promotional giveaways and drinks, a DJ and dancing, and an ice luge. The festivities begin around 9 p.m. and go on all night. Party in style inside or enjoy the warm weather outside on the large balcony, overlooking 6th Street.

And with thirteen beers on taps and more craft beer coming, that long Saturday night could easily happen with our friends at Bakkhus. During the week, happy hour is all day until 7 p.m. with $2 domestic pints (craft beer enthusiasts will be happy to know that includes Shiner). I chose the not quite pale ale Magic Hat #9 to go along with my prime rib and couldn’t have been more delighted. If beer’s not your thing, try one of Bakkhus’ signature drinks mixed by some of the area’s most likable bartenders. Classic drinks include the Bakkhus Rita, mixed with Milagro Silver, the Bacardi Silver Mojito and the Mai Tai. For a real treat, try one of Bakkhus’ dozen specialty martinis or savor a post meal liqueur.

Owner Demetrios Kouloumoundras never passes up an opportunity to thank his friends and neighbors. “I have the ‘my house is your house’ attitude,” says Demetri, “we are truly appreciative for the last three years; and hopefully, the many years to come. Without all of our local friends, we would not be able to do what we love to do.” And what Demetri loves to do most is cook. Most often, you’ll find him in the back preparing scratch-made dishes for patrons. During the SCENE photo shoot for this month’s article, Demetri saw me eyeing his prime rib and earmarked it for me. Unfortunately, one of his cover girls snatched it up before I could claim it. Not to worry, we stayed for dinner and Demetri brought me another. That prime rib could take on any steakhouse in the area. And paired with a Greek salad and a loaded baked potato, it’s a meal fit for a king… or a Greek god. If your Greek god of choice is Poseidon, relish in Bakkhus’ delicacies from the sea. Start off with a platter of “Greek Bar Trash,” a generous helping of grilled calamari, shrimp and scallops brushed with olive oil and finished with fresh lemon. Try the Tuna Spanaki – a filet of tuna dusted with Greek spices,
