It’s A Changing Of The Guard At The Cock & Bull By Rhonda Meredith The Cock & Bull British Pub, located at 3659 NASA Parkway in Seabrook, is now under new ownership. The recent changing of the guard will transition The Cock & Bull British Pub from an old British decorum to a more modern London appeal, and introduce a progressive vibe with more emphasis on Asian European items on the menu. Expect The Cock & Bull British Pub's name to stay the same, as well as most of the July events such as the James Bond Ball (Saturday, July 25), but look forward to more…More TVs will be placed around the pub. More taps are coming this month to expand the already generous beer selections. There will be more fun to be had at The Cock & Bull British Pub. And more emphasis on seafood items on the menu. On The Bayou: Two Concepts in One Provides Unique Experience By Rhonda Meredith On The Bayou, located at 6028 Heards Lane (exit 61st Street) in Galveston, is an upscale dining and sports-entertainment venue offering two menu concepts: George’s Texas Cuisine and T-Bones Sports Bar. On The Bayou offers visitors and islanders a unique waterfront dining and social experience enhanced with cedar, bamboo and a tropical décor. “We wanted a place where locals and tourists can come in and hang out, and feel equally welcome,” said ‘Gregg O’ Frankfort, Managing Partner of On The Bayou. Guests can choose seating style according to their mood or the occasion: There is the “more formal” dining room with standard tables and booth seating, the game room, bar seating or choose a cocktail table, found throughout the venue. Outside, enjoy the waterfront view on the newly upgraded patio. The George’s menu offers mouthwatering dishes, with a Texas twist, such as grilled steaks and a wide variety of seafood dishes, gumbo and salads, Po-Boys, burgers, and more. “We offer the ‘good stuff’ and the ‘stuff that's good for you,’” said Gregg O. “We've got you covered no matter your preference.” T-Bones Sports Bar, one of the largest sports bars on the island, is 21 and up and offers a laid back, entertainment environment within the On the Bayou complex. Featuring 32 TVs, T-Bones Sports Bar is a great place to root for your favorite team events they subscribe to all the sports packages. The large game room has a pool table, dart board, and shuffleboard. The “pub-style” menu features po-boys, burgers, nachos and wings. Quickly gaining a reputation for their impressive burgers, T-Bones Sports Bar is home to The Cyclops (an 8-ounce patty topped with bacon, grilled pineapple, jalapeños, and a sunny-side-up egg) and the Bison burger. Original items include the Pub Seafood Balls and the Steak Bites (10-ounce rib eye diced, served with chips and queso.) Crawfish is $5 a pound in July, served daily until they run out. The KITCHEN at On The Bayou stays open until 11 p.m. Sunday - Thursday; and until midnight on Fridays and Saturdays with later hours if necessary to meet customers’ needs.

Signature appetizers include the Crab Cake (jumbo lump crab meat lightly breaded and baked served on a red bell pepper sauce); the Tuna Tower (diced yellow fin tuna stacked with avocado and citrus pico de gallo); or the Jack Johnson Salad (chopped romaine and Napa cabbage tossed with Granny Smith apples, bacon, julienne cucumbers, and celery topped with Bleu cheese and served with Jack Johnson dressing). Just a bit of trivia: Jack Johnson was a boxer who grew up in Galveston’s 12th Ward (in the early 20th century). He became the first African American world heavyweight boxing champion. Be sure to savor the flavors of one of George’s Texas Cuisine’s main dishes that are sure to please the most discriminating palate. TOPWATER GRILL: The Little Marina Down The Street With Unique Signature Food and Drinks By Rhonda Meredith For more than 16 years, Topwater Grill (located at 815 Avenue O) has been a part of the community in sunny San Leon. “We still like to think of ourselves as the little marina down the street where you can have a fresh seafood meal, cool beverage, and enjoyable day of fun for the whole family while taking pleasure in the beautiful views of Galveston Bay,” said owner Ginny Jakubas. Ginny and her husband Robert recently re-created Topwater Grill’s outdoor patio seating area with the addition of 15 roller gliders. “The roller gliders are our version of the traditional picnic table and benches together with its own umbrella fabric sunshade that glide together. It’s a way to enjoy our fabulous food with a cold beverage of your choice in a unique patio setting by the Bay!” said Ginny. Baytown’s Pirates Bay Waterpark – Fun for the Family Pirates Bay Water Park, located at the Wayne Gray Sports Complex, 5300 East Road in Baytown, is a Caribbean-themed, 4-acre water park. Operated by the Baytown Parks and Recreation Department, the family-friendly resort-styled park opened the summer of 2010. Pirates Bay features attractions for everyone with 2 Beach style “zero-entry” pools, a large active and colorful Pirate themed water play center complete with a large dumping bucket and an awesome array of spray nozzles, tot slides, and water guns, a 671 foot long lazy river, three large slide towers and a 10,000 square foot wave pool. Slides include fun for both kids and adults alike with innertube slides, body slides, racing slides, drop slides and the new boomerango slide. Beach-style, “zero–entry” pools (gradually sloping from the deck into the water, becoming deeper with each step, in the manner of a natural beach) is ideal for older people or families with young children. The feature attraction is the Flowrider surfing machine. The Flowrider provides an endless moving mountain of water with all the excitement of ocean surfing that challenges all who enter. Surfer boys and girls can ride the waves with an audience, as there is always a crowd watching. A wave pool, two new slides and a concession area were added in 2014. The park also features a climbing wall, crossing challenge, and a small rectangular pool for lap swimming and swim lessons programs. The two concession stands offer hamburgers, hot dogs, chicken tenders and pizza; and covered picnic areas invite visitors to rest between activities. The Crow’s Nest, an air conditioned meeting room, is available year-round for rentals for family reunions and company outings. The park also offers five party tents and two large pavilions available for rentals for birthday parties or family get-togethers. Visitors enjoy free tubes, free parking and are welcome to bring coolers, provided no glass bottles or alcoholic beverages are brought onsite. Pirates Bay 2015 season opened on May 2 for weekends only. Beginning June 6, the park will move to seven day a week operations. The season will end on August 23 as the park will return to weekends only through Labor Day. .The season will end on Sunday, August 24. However, the park will re-open for Labor Day weekend August 30 through September 1. The schedule will be dependent on weather after Labor Day. Pirates Bay is open Mon-Thurs from 11-7 and FriSun 10-7. Admission is $20 for persons taller than 48 inches; $15 for those below 48 inches. Group rates and Season Passes are available for individuals and families as well. 8TH ANNUAL TEXAS OUTLAW CHALLENGE Congratulations to the Texas Outlaw Challenge for another record-breaking event last month. The Texas Outlaw Challenge hosts five high-performance packed days and nights of Texas-style parties, boating events and quick draw contests, all benefitting charity. Once the “extreme boats” and the “super cars arrive,” it creates a buzz. With that buzz, comes huge local economic benefits to our area by bringing participants and spectators together which also brings national attention to our waterfront paradise. The Texas Outlaw Challenge has grown into one of the largest events of its kind nationally. But probably less known is that the event raises a money for local charities including but not limited to the Kemah Lions Club, Shriner's Children's Hospital, The Bridge Women's Shelter, Boys & Girls Harbor, Clear Creek Conservation Foundation, Sentinels of Freedom Gulf Coast, Special Spaces and Galveston-Houston Families Exploring Down Syndrome.

Featured Artist: Mary Ann Matthys

Mary Ann Matthys creates intentional art turning the ordinary into extraordinary and even hurt into healing with purposeful brush strokes. Matthys explained the intentional creativity movement is a process of healing and transformation through art for all people. She said it begins with actually writing the intention of painting on the canvas and “then let the creativity flow.” She added, “Each person will come to painting with inner wisdom, and it’s allowed to come through. Time and time again, I see people create amazing paintings and stories.” Regarding Matthys’ own works, she said, “I come away with gorgeous images, but what touches me is the content.” She said most everyone’s favorite painting of hers is Soul Fire. “It flowed out of me and was an incredible process of painting her,” revealed Matthys. The painting encompasses the amazing energy of a phoenix and fiery colors. It exhibits metaphors and many symbols as is common with all of Matthys paintings. She said, “Soul fire is meant to reignite passion for life and fire in our soul that time to time goes out.” Matthys’ paintings are quite large and often average 20 layers of paint. According to Matthys, with each layer something is happening. She described her healing process of intentional creativity as placing a wound on the painting and over time covering it with other layers eventually releasing the wound. “Now I’m free of it. It’s a very transformative process,” said Matthys. She shared, her Talisman painting of a powerful medicine woman is filled with possibilities, alchemy and holds her deepest wounds. “I’ve been a creative soul since I can remember and studied art all my life,” explained Matthys. She earned a Masters Degree at University Houston Clear Lake and also studied at the Glassell School of Art through the Houston Museum of Fine Art. Matthys currently teaches art appreciation at Alvin Community College. Most recently, she completed an intense year-long intentional creativity training at the Color of Woman School. The School’s mission statement is “to provide global revolutionary education empowering women to catalyze their lives and the lives of others through Intentional Creativity. To rise up a tribe of teachers who are inspired to live and teach ‘creativity’ as an essential and valued part of human development." Matthys disclosed, “The process ignited something in me. It’s incredible and deeply resonated. It’s not just for artists, it’s for everybody.” She hopes to share the empowerment through her own paintings as well as her intentional art workshops and weekend retreats. Matthys also donates her time and abilities to low-income women who might not otherwise be able to afford such an art experience. “I feel very blessed. Something happens when work is your passion, and it transforms your life. I want to bring this abundance, fun, and healing to everybody,” she said. The Butler Longhorn Museum is holding its 5th annual fundraiser, the ‘Boot Scootin’ Longhorn Social’, Saturday, July 11 at South Shore Harbour Resort and Conference Center located at 2500 South Shore Boulevard in League City. This event has the look and feel of the Old West with numerous things to do and loads of entertainment. Boot Scootin’ proceeds benefit the non-profit museum and the education center, which is a major hub of various arts in the Clear Lake area . This year’s event will include various entertainment and group activities throughout the evening including a casino night, live and silent auctions, dancing and live music with dinner provided.

Clear Creek Community Theater is Producing A Busy July CCCT's has more for July with "Shakespeare in the Summer," a nationwide tradition and Clear Creek’s Community Theatre is no different. It kicks off Friday, July 23, with The Tragedy of Hamlet - Prince of Denmark, a tragic tale of revenge, murder, and political intrigue. The play seems to have been one of Shakespeare's most popular works during his lifetime, and remains one of his most widely performed works. HOUSTON SPACEPORT plans approved by FAA The Houston Airport System (HAS) has been granted a Launch Site License from the Federal Aviation Administration (FAA) that enables Ellington Airport (EFD) to establish itself as a launch site for Reusable Launch Vehicles (RLV), making it the 10th commercial spaceport in the United States. Nearly two years after Houston City Council members gave their overwhelming support for the project, the FAA’s formal approval opens the door for plans that could see Ellington Airport become a focal point for aerospace operations, such as the launching of micro satellites, astronaut training, zero gravity experimentation, spacecraft manufacturing and a host of other potential activities. “Houston will play a lead role in commercial space operations in the 21st century,” said Houston Mayor Annise Parker. “We believe a licensed Spaceport in Houston will not only serve as an economic generator for the city but also enhance Houston’s well-deserved reputation as a leader and key player in the aerospace industry.”

After working closely with the FAA’s Office of Commercial Space Transportation, HAS now can move forward in establishing the required infrastructure and support facilities needed to accommodate RLVs — which execute horizontal launches, rather than vertical, similar to commercial aircraft. “Houston has been at the forefront of aviation history and innovation for decades,” Houston Aviation Director Mario C. Diaz said. “Not only does this opportunity reinforce an already long-established connection with the aerospace industry, it offers Houston an opportunity to strengthen its reputation as a forward-looking city and leader in creating

2015 BAY CUP SERIES - A WEEKEND OF SUMMER, SAILING AND FUN! • AUGUST 1 Lakewood Yacht Club and Bay Access are excited to present Bay Cup II, part of the 2015 Bay Cup Series! The 2015 Bay Cup II Regatta will be held on Saturday, Aug. 1, on Galveston Bay. This one day event will once again showcase a full spectrum of sailboats competing in distance racing. It is an excellent way to enjoy a beautiful summer day! Golden Jubilee July Events The excitement of the Lunar Rendezvous Festival Golden Jubilee will come to a pinnacle during the month of July. The Golden Jubilee Honeywell Fun Run will be Saturday, July 18 beginning at 7 am. The Fun Run will start at Space Center Houston and winds through the NASA JSC Campus. BACLIFF BEAT – We started the evening catching Wood & Wind at Noah’s Ark on the Parrot Deck along with “THREE” birthday parties happening the same time. Talk about crazy fun times by all and Bobbie was definitely in her element. For those of you that haven’t checked out Noah’s yet, this is definitely the season to do so with probably the best view on the water happening on The SCENE today. Down the Wood & Wind & Noah’s Ark road from Noah’s Ark is the best thing happening for the aficionados of live music and that would be at Katie’s where every seat is a good seat, the drinks are the coldest, the A/C is one of the area’s coolest, the service is utmost friendly, and the house sound system is ever so exquisitely dialed in for listening pleasure. In June, we took in the Scott McGill show. Over the years, we’ve known Scott and his band as a “hard driving & gutsy” blues band one naturally expects out of Beaumont and now pleased to add two not often used descriptors, “seasoned” and “character” to the list – The good stuff… Catching up with Scott’s bassist Bob Bridges, during break, I got word that he has joined forces with one of my favorite female vocalist, Tommie Lee Bradley, in a new band that we will hopefully get a chance to catch soon. July is upon us meaning it’s summer and while the days are technically getting shorter, the fun lasts longer – which makes sense – as there’s plenty happening around these parts this time of year. Cabo (2513 NASA Pkwy., Seabrook) On Sunday, June 26, country musician Cole Degges will take the Main Stage from 3 to 7 p.m. for the Patrick Wells benefit. Degges was born and raised in Texas, but moved to Nashville in 1996 to write music. He has had his songs recorded by some of Nashville's biggest artist including Kenny Chesney, Gary Allan, Billy Dean, Tracy Byrd and more.
Robert Greaney will be on the Main Stage at Noah’s Ark on Friday, July 17. Enjoy tunes that cross multiple genres such as blues, rock, jazz, trop-rock, and Texas country. The Vinyl Revival will perform under the Palapa on Saturday, July 25. Check them out! Not only does it bring the local music and art community together, but it

also comes with a compilation CD showcasing the local music scene, regardless of genre. Being involved every year, we have seen the scene grow not only larger but also together to open people's minds and do good for others, and it's working on a much larger scale than I think any of us originally imagined.” We all have experienced the feeling and most of us can stop the temporary experience of hunger. Unfortunately, thousands of individuals EACH WEEK in southeast Texas may not have that choice. The Galveston County

That is 1 in 5 of our neighbors in Galveston County. They do not know where dinner will come from today or tomorrow. Most are not homeless. Most are children. So adding the entire band and audience into the frame would simply be like adding a few more cats and so to Scout Bar we went to go see The Spazmatics along with a full house of all ages. Wow, what a crowd…. Alex Slay (drummer for the Hunger) was working the light board that night and I approached him about the special assignment. In case you didn’t know Alex, he pounds the bejeezus out of his reinforced drum kit with a rage and control which ironically suits him perfectly for assignments controlling the Scout Bar lighting board. As for the quality of the shots, we will continue this endeavor for the while where we can. As for the show? If you’ve never been to a Spazmatics show, I would say they fall into the genre “high-energy, boisterous, hootin’-good-time, frivolous rock” along with other bands

Von Hindenburg’s accuracy in their delivery of melody, accents, rhythm & tempo, and tone was sincerely appreciated by the audience and induced flashbacks throughout the evening. People simply need to hear more live Led Zeppelin and Von Hindenburg can serve you up. Got it? As for future Fab 40 news, the word straight from David is that the next show is planned for September 26 at Discovery Green featuring the rock opera “Tommy.” How’s that for moxie? Mastering on this compilation was very well done blending the wide variety of levels and ambience into a uniform presentation. Aside from rehabbing, the family is in transition from Rio de Janeiro, Atlanta, Waxahachie and Houston which demands a nimble ability I suspect comes about from their musical background, training and genre diversity. That night, Kevin Fenton had the band dialed in masterfully in the spacious Seagull cavern. (Heads up, the Fenton Brothers altogether with an Hourglass for the ages, will be rocking for Mark’s big six-oh in July – Always a fun show!!!). In the words of Galen Medlenka, the music must have an integrity for which this night did, through and through. Speaking of Galen….
although he’s very much able to stand on his own two musical feet, sports an assortment of not only six CDs, but also a live concert DVD that’s pretty savvy. In addition to playing across the country, Van Wilks has toured across Europe and America and his song Blues for Dolphins, brings it home on Zach Tate’s Texas Music Selections of Blues, Jazz, Rock, Folk, Cajun, Latin, Reggae, and Country CD. Speaking of which… TEXAS MUSIC Selections – Every couple of years, Zach Tate
VAN WILKS – is a name well regarded in music circles in Austin and a performer I got turned on to by Galen Medlenka (The Navigators) a few months back at TBone Tom’s. We so were impressed by Van’s first night out in the Kemah Lighthouse District, that we had to do a follow up just to be sure. Over the years, I’ve gotten to notice the crowds T-Bone Tom’s crowds typically keeps, and the number of patrons there for that show was noticeable indeed – qualifying the place now as a bona-fide music hall. Van Wilks is often mentioned along with Billy Gibbons Van Wilks @ T-bone Tom’s
takes his gig to Europe, where their appreciation of American music is perhaps as popular as a plate of beef brisket here in the region that produces many great musical talents. This summer, Le K Gallery in San Raphael, France will exhibit 21 of Tate’s large-scale portraits of mostly Houston and Galveston based musicians. A limited edition compilation CD featuring music from many of the artists in the photo exhibition has been produced by Tate and Grammy-nominated Houston producer, Andy Bradley, and given to visitors of the Le K exhibition. My kind of diplomacy! Scanning through the list of performers, readers will recall mention of the likes of Vicente Castaneda, John & Rebecca Stoll, Fear the Poet, Cassette Tape, Sonny Boy Terry, The Mighty Orq, Hamilton Loomis, Ezra Charles, and Van Wilks. - Continued on Page 38

Let’s see… Tropical Storm gave us the gentle dirty side, the Astro’s are still on top of the division and having fun at it, you’ll probably have enjoyed the 4th of July by the time you read this, and at least twice last month, you were glad you had a copy of the SCENE handy, right??? Me too… If you were me, you lost a week cuz of Bill, you were three crawfish boils shy of getting your fill, BUT we still got to spend some quality After Party @ Zone 504 time catching up with good friends and family, and taking in some of our crazy good live music happening around down. Sounds close? Let’s trade notes….
EMAN WALKING – Hey good readers… Remember the fundraiser you all supported for Emmanuel Gilligan, the musician raising a family of musicians in Brazil who was shot in the spine during a robbery? The guy paralyzed from the chest down? The guy you good folks helped ante in on to pay for his way back to the USA and into quality rehab? Well, we got to catch him and his family band, Eman and the SunDogs play an evening at the Eman @ Cock-eyed Cock-Eyed Seagull (one of the Seagull coolest places happening this summer) in June that was well into the realm of magical. First through fifth impressions of this family band comes up with a cross between the Swiss Family Robinson and what the “true” Americana Partridge Family had they have been on the FM dial. Listening and watching closely, it would be hard to find another band that enjoys playing together as much as this one. South American influences on their diction stood out as did the entire night in so many ways. - Continued on Page 41

"Mike has improved our cleaning cart a couple of times over the years," Ennis explained. "Mike likes engineering, building and improving things at the brewery as much as he enjoys brewing beer. And he would definitely rather build something than buy it. He taught himself to weld; he set up a tap handle production studio with a drill press and lathe in his garage, and I'm pretty sure we are the only brewery that has built their own LED-enhanced tap handles. He is hands-on and earned the nickname 'Mad Scientist.'"
Space: The Final Frontier As the name suggests, Galactic Coast Brewing is proud of the area's position as the home of human space flight. Even before walking in the brewery's giant roll up door, one notices rockets mounted on the walls and hanging from the ceilings. Those rockets are from Galactic's third team member and long-time Space City Rocket Club president, Andy Eng, the brewery's "Rocket Scientist with Skin in the Game." Eng, who has spent a career working on projects ranging from reconnaissance satellites to lift vehicles and space stations, brings a unique set of skills to the core trio and Ennis credits Eng with helping the team plan and project for the future while also having a wealth of information and experience. “It helps when we are discussing our cold liquor tank upgrade and he is able to reference a submarine project he worked on for Lockheed back in the day to help us rule out one idea in favor of another," Ennis shared. Closer inspection inside the brewery shows space-related artwork on the walls. Because the U.S. Treasury Department-required names on brewery tanks, each one has an obvious space

theme. The original, smaller fermentation tanks are named Mercury, Gemini, Apollo and Skylab. The giant stainless steel conditioning (brite) tanks are named after the various Lunar and Command Modules (Gumdrop, Charlie Brown, Columbia, Spider, Snoopy, Eagle, etc.) during the Apollo program. The recently delivered fermentation tanks, which will increase brewery capacity four-fold, will be named after key figures in aerospace history who have passed including Neil (Armstrong), Alan (Sheppard), Kelly (Johnson) and Robert (Ennis) among others. Ennis mentioned there have been some initial and interesting primary conversations with the Chief Scientist at a local company with payloads on upcoming rocket launches and in the International Space Station about the potential of an experiment attempting the fermentation of beer in space (Zero G). Apparently he is a fan of the Galactic's Rocket Ride. "There is a lot we are excited about, and we have ambitious goals not necessarily tied into being the biggest brewery around," Ennis explained. Although, the immediate goal is increasing production to accommodate venues contacting them to buy kegs. Next up, the long-awaited tap/tour room. "We have been in business for three years and – except for a few media members, some fellow brewers and some sales people – we have not had anyone to the brewery," Ennis explained. "I probably get asked 20 times a week about tours. It will be nice to one day have a better answer than 'We don't currently do tours.' We do look forward to having people come check out the brewery when the time is right. Stay tuned as I predict our fourth year will be the most exciting yet."

As the popularity of craft beer explodes and more breweries open locally it only makes sense that Growlers follow. What is a growler? A growler is a container or vessel that is used for the transport of beer. It can also be described as an air-tight jug, typically made out of glass, ceramic or stainless steel that allows you to take draft beer from one place to another without a degradation of quality. Growlers are filled straight from the tap and if they remain air-tight, should remain fresh while transported. Generally once opened and exposed to oxygen, the beer will only remain fresh for a couple days. Just in the last month, two businesses that sell and fill growlers opened in the Clear Lake area. The Oak Barrel Craft Beer Exchange, located at 18019 Upper Bay Drive in Nassau Bay just off of NASA Road 1, sells and fill growlers, hard to find bottles and even has a special Oak Barrel Beer Club with various membership levels. J. Henry's Draught House & Kitchen, located at 1105 Clear Lake City Blvd., is a family owned and operated restaurant with an impressive craft beer selection including 51 taps and the first “growler drive-thru” we have ever heard of. Also new on the growler scene, although not new, is the Gordon Street Tavern (114 N Gordon St. in Alvin). Gordon Street recently got its brewpub license and now can legally fill growlers of beer brewered on site.

NOBI PUBLIC HOUSE brings the Crowler to town!! No article on growlers would be complete without mentioning Nobi Public House (241 E NASA Pkwy. in Webster). Nobi has probably filled the most growlers locally and recently upped the anti by becoming one of two venues in the Houston-area to offer the crowler. A cousin of the growler, crowlers are empty 32-ounce aluminum cans that can be filled with craft beer and sealed on the spot. They were invented by Colorado-based Oskar Blues Brewery, a pioneer in beer canning. Crowlers are quickly gaining popularity because they keep beer fresh longer, are more easily transportable and are not as prone to contamination as their glass counterparts. A plus is they are recyclable, which is good since they are not re-usable.

Instead of dropping tens of thousands of dollars on stainless steel conical fermentation tanks, they went against the grain investing in FDA-approved food-grade plastic conical fermentation tanks at a fraction of the cost. Through serious testing and experimentation they figured out how to make the plastic tanks work as good as stainless, and it created a complete rethinking of yeast and fermentation processes.
One doesn't spend much time in this brewery without noticing it might be described as “space efficient.”
"At first, we decided not to bring attention to the plastic tanks. It was a deviation from the norm, and we thought there might be a negative bias, just as many people still have a negative bias toward beer cans over bottles, despite the fact that the can is a much better vessel to contain beer," explained Ennis. "But after a while and after receiving such great feedback regarding our beer, we dropped our guard and posted some pictures of our plastic tanks.
"Wheels can help make up for a lack of space," laughed Taylor. “If I could, I’d make guests wear roller skates.” A point of pride is a Frankenstein-esque glycol machine made from an air conditioning unit and a cooler – basically a DIY, mobile cooling unit. "I definitely don't recommend people try that [taking a window A/C unit apart] at home," said Taylor who went on to explain the sharp dangers (blades) found inside these units.
“Next thing we know, brewers are contacting us with questions about the tanks, our process and protocol. Now it has caught on in a many small and mid-sized breweries and is widely accepted. We have to be more careful with plastic than stainless as there is less margin for error, but if there was a problem, like oxygen getting through, boy, would you taste it in the beer."
Luckily we didn't. What we created is faster than the unit we almost bought and without the major expense."
"I've said before that I bet no brewery in America has produced as much beer in as small of a footprint and for less initial investment than we have," Ennis said.

Even keg cleaners were built in-house to test the limits of innovation and to spare the budget. However, cost savings originally meant more work. According to Taylor, processing a keg averaged 25-plus minutes per keg and required moving, lifting and hooking each keg up to equipment three separate times. Always improving, now four kegs are hooked up once and run through the entire process in about 8 minutes. "Cutting down on keg cleaning time was a game changer," Taylor explained. "Sure we saved about $15,000 by not needing to buy a keg cleaner, but cleaning kegs was our least time-efficient task. We almost gave up and bought a single unit cleaner.

Experimenting with more than Gravity
In his book, "Failure Is Not An Option," Dickinson resident and retired NASA flight director Gene Kranz explains that during the Apollo 13 crisis his team in Mission Control was forced to find a "workaround" – "other ways of doing things, solutions to problems that weren't to be found in manuals and schematics. These three astronauts were beyond our physical reach. But not beyond the reach of human imagination, inventiveness, and a creed that we all lived by, ‘Failure is not an option.’" Not far from where the Presidential Medal of Freedom recipient Kranz lives today, a small Dickinson brewery put a similar creed into action – although admittedly they do so with less rocket fuel and no lives on the line.

We began this brewery with an unwillingness to follow the capital-intensive path common in this industry," Ennis explained. He laughed and admitted it is easy to feel that way when one has little capital. The partners decided early on they would not start out with a loan in an effort to force them to make every penny count. They feel that decision has forced them to be disciplined and to embrace the imagination and inventiveness of brewing renegades.
"Originally, the goal was to launch a commercial brewery without going broke or getting divorced," joked Galactic Coast Brewing co-founder John Ennis. "We did that, and our current goal is to catch up to unsolicited demand." It has been roughly five years since Ennis and his brewery partner Mike Taylor formed Galactic Coast Brewing inside an unincorporated Galveston County warehouse. July marks three years since Galactic Coast Brewing delivered its first keg as the then-only business in Galveston County licensed to manufacture beer. The first keg they delivered replaced Bud Light on draft, and they have never looked back. Galactic Coast Brewing, which one Texas Beer Blogger referred to as, "The most popular brewery you have never heard of," currently has four beers (Rocket Ride, Sneaky Blonde, Goblin Hunter and GPA - Galactic Pale Ale) available on draft at venues in nine cities. Since Galactic Coast Brewing went full throttle, many new breweries in Houston and even locally in Galveston County have been licensed and entered the fray. "We are playing a different game," explained Taylor, the head brewer and a third generation electrician who Ennis calls the brewery’s 'mad scientist.’ Taylor is credited with "imagineering," testing and qualifying a long list of equipment,

Workarounds & Inventiveness Instead of cutting a mid-six-digit check for a complete, automated brew system (brewhouse) installed by a third party, Galactic Coast built their own flameless system. When they outgrew that system, they held off signing for a loan to buy a pre-fab system. They built a second system that produced more than five times the amount their original system – still avoiding an open flame, steam or gas. Taylor pointed out, "There is no one to call if something with the system breaks or fails, but once we get to the point where we are almost forced to buy a huge, automated system, we will know how everything works and will sure appreciate how easy brewing just became." - Continued on Next Page
