Can Some Americans Get Any Dumber?

This article will address this question from a human nutrition perspective, only. From an historical point, the fact that Americans have embraced advances in science and technology, particularly as new discoveries have increased our production of food and fiber, is what has made America the great country it is. However, there seems to be a move away from the use of sound science and its knowledge base by more and more Americans towards food consumption based on popular perception. The following are some examples of dumbness at its worst. The legalization, sale and purchase of unpasteurized milk for human consumption: I don’t know who is dumber, the politicians for legalizing the sale of unpasteurized milk, the dairy farmer for selling unpasteurized milk for direct human consumption, or the consumer for purchasing unpasteurized milk for human consumption. We have known for over 100 years that to prevent illness that occurs from drinking unpasteurized milk, it should be heat treated (pasteurized), and pasteurization of milk has been a U.S. standard for nearly a century. While the dairy farms of today are more sanitary than they were 50 years ago, unpasteurized milk can still contain harmful bacteria such as E coli and salmonella. Most states in the U.S. are brucellosis free, though individual cows for one reason or another can still get this disease. Drinking unpasteurized milk from a cow with brucellosis can transfer this disease to humans in the form of undulant fever that can be fatal. Pasteurization destroys the bacteria that cause brucellosis (undulant fever). Therefore, why assume the risk? If a consumer gets sick after drinking unpasteurized milk purchased from a local farmer, who is liable? In a court of law it very well could be the farmer. Few farmers can financially afford a civil lawsuit regarding the direct sale of unpasteurized milk to a customer who gets sick and blames the milk. Does the phase “ground beef recall” ring a bell? Those consumers who advocate consumption of unpasteurized milk claim improved taste and nutritional health. Taste is an acquired trait. If taste is perceived, then so it is. Some people like the taste of beets – some folks don’t. Advocates claim the pasteurization process destroys the vitamin and enzyme content in milk – a belief not supported by science. If the decrease in nutritional value for pasteurized milk was substantial then the same analogy should hold for eggs, and these folks should eat raw eggs. Eating uncooked eggs has several downsides, including avidin contained in raw egg white that renders the B vitamin Biotin unavailable. Cooking inactivates avidin making eggs more nutritious. People who advocate the drinking of unpasteurized milk, also should drink the green bean juice produced when boiling green beans. These people should just eat all their vegetables uncooked. After all, a considerable amount of the vitamins and minerals in any vegetable (such as green beans) are water soluble and when boiling vegetables (green beans) to enhance their flavor some of the vitamin/mineral content is transferred to the water-that results in a reduction of nutritional value of the vegetables. Back to the main point, drinking unpasteurized milk is simply not worth the health risk. The negative effects of drinking unpasteurized milk out-weigh the improvement in taste and perceived (negligible) increase in nutritional value. America is going to spend millions, maybe billions of dollars fighting obesity and blaming bad foods as the problem:

Obesity for all people (except a few persons with a metabolic disorder) is simply an imbalance of calories in/calories out. It is that simple. If a person eats more calories in 24 hours than that person expends, then the excess calories will be stored as fat. Once a fat cell is developed it is never lost. A fat cell can shrink in size but it does not go away. That is why many people find it so difficult to maintain weight loss over time. Once fat cells are developed they are easily filled when the calorie intake/energy expenditure ratio goes back up. There simply is no such thing as good food vs. bad food. All foods eaten in moderation as part of a balanced diet are good foods. It is not the fast food industry’s fault Americans are getting fat. Americans are getting fat because they eat too much relative to how much they exercise. A small bag (1 oz. serving) of potato chips and a 12 oz. soft drink as part of ones daily diet is not harmful. Consuming a 10 oz. bag of chips and a liter bottle (2 ¾ - 12 oz. cans) in one sitting for most people are far too many calories of intake relative to the calories expended. The good food/bad food concept is relative to amount consumed. Some research reports suggest a “small” glass of red wine each day decreases the chances for heart attack. Of course, too much red wine intake can result in alcoholism. A few research studies have suggested a “little” chocolate consumption can decrease the incidence for some kinds of cancer. Again, too much chocolate intake and here comes the obesity issue. Good foods/bad foods, all foods in appropriate moderation as part of a balanced diet are good foods. A recent report I read found that people consume more calories when they eat out than when they eat at home. Maybe we should pass a law limiting how many times per week a person can eat out. Maybe not! It is not the advertising industry’s fault Americans are getting fat: I don’t care where on the shelf the grocer places the frosted (sugar coated) shredded wheat – I’m not going to buy plain shredded wheat. And, I don’t care what the TV adds say, I’m just glad Leslie (my 12-year-old daughter) is having pasteurized whole milk with the frosted wheats every morning. Her energy expenditure is equal to her energy intake. Maybe, physical education classes in the primary/secondary schools should include some real exercise instead of films on politically correct, unfunded mandates that the legislatures force upon our schools. Local food is more nutritious and more wholesome: Than what? And, what scientific study says it is? Does local food taste fresher? It can – remember, taste is acquired or perceived. I kind of like buying strawberries in January at Wal-Mart and Kroger. I bet they’re not local. Of course, I consider food produced on this planet as local. That is why I have such a large variety from which to choose. Nothing guarantees that local food (in this case food produced within 10 miles of the farmers market where it was sold) is more wholesome or sanitary, than the food I buy at Wal-Mart or Kroger. My guess is that most vegetables in a can are more sanitary than any noncanned vegetable. The canned vegetables have been cooked at least once. Of course, there is that issue of taste – its acquired you know. That is what makes America so great – we have great freedom of choice – to buy local (food grown in my neighbor’s garden) or to buy local (foods produced on this planet). We just shouldn’t confuse scientific fact and perception as one and the same.
