El Cowboy Mexican Restaurant rides into Chalfant
By Christina Reed, The Hired Pen Chalfant Valley, CA— Going north out of Bishop, on US Highway 6, you come to Chalfant Valley (about 13 miles north of Bishop), and now travelers and residents can stop at the newest eatery in the community of Chalfant, El Cowboy Mexican Restaurant. Owners, Javier and his wife, Guadalupe Jimenez, are celebrating the family-owned business' Grand Opening on Saturday, August 26, with menu specials, 99-cent tacos, a salsa bar, and beer at halfprice. The Jimenez family is very familiar with Mexican dishes and food, and they
also own the J & M Market in Bishop, CA. Javier, who moved from Riverside, CA, “grew up in Bishop,” he says, and the number one reason for opening the market was “Bishop didn't have a carneceria (meat market),” at the time. Javier, a butcher, notes having the meat section of the market, produce, cheeses, and very good salsa selections, have made the business a success. When he started, Javier notes, there were no Mexican markets in town. Seven
and a half years later, the J & M Market is a part of the downtown business community, and Javier's daughter, Ariana, manages the market. Javier Jr. also works at the restaurant and market. The husband and wife will split their time between the two businesses. El Cowboy Mexican Restaurant is the next development, Javier says, the family will be involved with, and his sister, Maria Jimenez is working at the restaurant. The old market

at Chalfant is still in place, with milk, diary products, soft drinks, and beer. There is also a bar in the corner of the restaurant, and patrons can enjoy watching their favorite sports program, while sipping on a cold draft beer. Javier says there is already a small following of folks who are finding the restaurant a good place for leisure time, and some Mexican dishes too. Shrimp skillets, chile rellenos, and tamales are all specials on the weekends, Javier remarks, as he
describes the menu selections. He is especially excited about the skillet dishes that are being prepared with shrimp. Lunch and dinner plates will continue to be added, as well as breakfast burritos. Carne asada, hamburgers and cheeseburgers are also very popular, and “the chicken burrito is very good,” Javier adds. The fresh salsa offerings, in green and several types of red, are a signature feature of the J & M Market, and El Cowboy Mexican Restau-
rant, and regular customers will be pleased to find a salsa bar for topping off your favorite dishes. In the future, the Jimenez family hopes to put in a patio area, and small RV parking for travelers. “We're very happy with the support the community has given us,” Javier continues, and they also plan on hosting special events, family get-togethers, and further develop the business in Chalfant. With food-to-go for the traveling public, and a family restaurant and market nearby, the communities of Bishop, Chalfant, Hamill, and Benton will all have another place to enjoy dining beneath the White Mountains.

Changing Clothes My wife enjoys her Westerns to the exclusion of most other programs. As a result, if I want to be in her vicinity, I am watching Westerns too. Even the bad guys have Sunday-go-to meeting clothes. No matter how bad they are, they show up spiffy and clean for church./ Some of the church services even take place in the saloon. They don’t sell drinks while the services are in session. How nice! As soon as the services are over, everybody goes home, changes clothes and returns to there normal routine: good guy or bad guy. I think it is respectful that old, dirty coveralls are exchanged for clean garments, but what about the inner reality of the parishioner? Is he a good guy in and out of church, or is he only good in church because he is afraid to be bad? Like many of the Westerns, people wear good clothes and act good in church because that’s where God resides. Fire and brimstone was preached from the pulpit, and the fear of God was the beginning of wisdom; at least that is what they said. I was going to start out this paragraph stating how sorry I was to pop your bubble, but I am happy to do it. God is Omnipresent, meaning everywhere equally present. God is in church and out of church, when the saloon is serving drinks and when it is not. You can change clothes and get all spiffy, but all the while God was with you. I don’t mean to infer you shouldn’t dress well for church, only that is not the dressing up that impresses Spirit. In the Declaration of Principles, Ernest Holmes wrote how Spirit takes the direct impress of your thought, and acts upon it. Dressing up a negative thought in pretty new clothes will not change the outcome. Like Jesus, you must be the same yesterday, today and forever. One hour a week hardly cancels out a week of negative input. Like it or not you are a thinking machine, but you don’t have direct current because your thoughts most often follow your feelings and emotions. Rational or irrational feelings generate thoughts to support them. We think we are supposed to love everyone, but it is hard to love the unlovable. However we can love the Spirit in all and reject bad behavior, but make no mistake about it, God is responding to their direction as much as It is top yours, even though yours may be more pleasant. If God is anything, God must be Normal, Natural and Right. The old saying about what goes around, comes around, prevails. Its nice to make yourself presentable for church, but its better when you keep your thoughts presentable as well. You are in charge of your train of thought, not God or the so-called devil. Be comforted or afraid because your thought is shaping the rest of your day. God is Love and Loving You Right Now!

DUVE I went to the supervisors meeting last Tuesday to see if they could help with the 15 day split dove season the F&W has put on use. And was well received. they advised me to go to the to the Inyo F&W comity I attended the meeting Aug.17th. I asked the group for one reason the change was made as anybody that has lived in the Owens valley knows the morning dove are long gone by Nov. The warden that was at the meeting explained the dove are migratory and controlled by the Fed.dept.of F&W and the change was made state wide to benefit the contrail valley. The West side of the Sierra has complete deferent weather then the east side leaving use with a very short season. The committee who all seemed to agree with me asked me to write a letter they could submit to the dept.and get started on the problem. Hopefully the two departments can come together with benefit to all of the counties. California all ready manages game by zones. Seems like a pretty easy fix. We have had a very good dove hatch this year lots feed and lots of big birds now if we don't get a big thunder storm before the opening it should be a good one. The most important part dove hunting is it's season that most youth get their first experience in hunting and the outdoors if we are going to save are hunting rights it will up to them.
