Locally, Manor True Value Hardware store in Bishop, CA has a nice assortment of everything for the canning, jamming, pickling, and jerked meats. Debbie Christensen, owner, explains that all of these assorted goods are in high demand, and the stock won't stay long. However, Manor True Value Hardware does have these items now, so get them while they last. The stock includes pressure cookers, pickling and canning spices, fruit preservatives, wax, pretty green and blue Mason jar lids, jerky kits, quilted crystal jars, classic blue Ball jars, mini jars, Snack on the Go jars, wire hangers for hanging Mason jars, water bath canners, mini food mills, cheese cloth, cherry pitters, canning funnels, jar lifters, canning racks, and herb shaker lids.

Pickling preserves and extends the shelf life of meats, fish, fruits, dairy, eggs, vegetables, and this pickling (especially of cucumbers) appears to go back about 4,500 years ago to the Indus and Mesopotamia Valleys, where the Greeks and Romans no doubt encountered the pickled cukes. The Romans, especially seem to like the pickles. English settlers brought the cucumber seeds to America around 1607, and Jamestown records such pickles too. Pickle time is July through August, and cucumbers are a berry / fruit, not a vegetable. A single ovary in the female plant is pollinated by the male plant, and honey bees / pollinators in particular are necessary for the production of the fruit. Cucumbers are in the same family as squashes, melons, and pumpkins.

Making the Cut Not all pickles are created equally. And, gherkins are cucumbers, but not all cucumbers are gherkins.

Eastern Sierra, CA—It's country fair time around America, except this year looks a lot different. While we can't attend fairs in person yet, there are still ways to enjoy the traditional recipes, displays of flowers, table settings, quilts, barbecues, preserves, and pie contests. We can invite our family, friends, and neighbors to put together their favorites of the fair, take pictures, and share them with us at The Sierra Reader (mesatink@aol.com). We'll be featuring some of these fair entries / pictures in the upcoming issues.

Some cucumbers are grown to be sliced, some pickled, and burpless / seedless cukes. Some pickles are destined for relish, spears, sticks, gherkins, halves, lengthwise (for sandwiches), chunks, chips, and whole. Dill pickles have dill weed and seeds; Kosher pickles are processed the Jewish New York deli-style way (garlic and salt); sweet pickles are just that; Bread and Butter pickles originated from the farmer making his own pickles in exchange for bread and butter at the mercantile, and gherkins are small, usually sweet in nature. Pickled foods have nutritional value, and help with our body's probiotics and natural antioxidant intact. Pickled foods can also maintain a year-long shelf life, with average pickles made at home, ready to eat in about three weeks. Although the local fair hasn't had a pickled food contest in recent memory, we all can enjoy pickled foods that are common, such as three-bean salad, corned beef or pastrami, pickled herring (fish), pickled quail eggs, mixed vegetables,
