Hometown Paper of the Eastern Sierra - Published Weekly By Christina Reed, The Hired Pen Bishop, CA—Celebrating a second anniversary in Bishop (opened on November 11, 2016), El Pollo Loco is offering more than just fastfood service for the communities of the Eastern Sierra, and for the holidays, or anytime, the local franchise is catering for all occasions. Anne Denman, assistant manager, explains there are many options for meals, for any number of people, and it's delivered (for catering, with advance notice), which makes it all the easier to entertain during the busy holiday season.

“We can do the whole enchilada” “Holidays are probably our biggest season,” Denman says, and the local business is expanding its distinctive taste, including participating in the “Taste of the Sierra,” sponsored by the Bishop Chamber of Commerce at the Tri-County Fairgrounds in May. El Pollo Loco served up their “famous” chips and salsa, Denman explains. The local schools in Bishop have also tasted a bit of the unique food, with end-of-the-schoolyear events and conferences.

“From chips and salsa, to taquitos, and chirros (a dessert),” El Pollo Loco's menus accommodate a wide variety of dining choices. “We can do the whole enchilada,” says Denman, with a smile. And, there is a “local” or “regulars” presence developing, and new specials (some limited in nature), like tamales, draw customers in for an ever-changing menu of interesting dishes. El Pollo Loco, “The Crazy Chicken,” has its roots in Guasave, Sinaloa, México, when Juan Francisco Ochoa served marinated chickens, beans, and warm tortillas at a roadside stand in 1975. His wife created the special fruitbased sauce to season the chickens with, and the recipe was altered some, when Ochoa moved his successful restaurants stateside in 1980. Ochoa selected the Alvarado and Sixth Streets' location in Los Angeles after discovering the large Sinaloan population in LA. El Pollo Loco also made the Guinness Book of World Records in 1995, for the largest burrito...weighing in at two tons (3,112 pounds). SEE EL POLLO CONTINUED

The Use of Mind

Fulfilling Expectations From a very early age we are exposed to desire, and at that young age, our desire was equal to expectation. A child tells who ever will listen that he will be a fireman, and he fully expects that will be the case. An older child may want to be a fireman, however; he must weigh the many challenges he might face to fulfill that desire. The desire and the expectation have moved further apart. The confidence of youth has been undercut by the self-doubts that come with the complications that come from buying into race mind. We might not think to tell the youngster how difficult his dream might be, but as he ages, a good part of society is quick to bring up all the reasons he should have a backup plan. People have been quick to justify their admonitions by claiming they wanted to point out ‘reality.’ While I was in high school, I was an art major. My great desire was to become a billboard artist. I visited a billboard factory more than once, which added to my expectation. The art teacher in my school seemed to support me in my quest, however; at a very critical juncture, he called me to his office, and said, “Art is such a competitive field. You may not make it. Perhaps, you should try another field.” I know that the teacher was trying to lessen the blow I might have if I didn’t make it, but in effect, he trounced my dream. Just possibly, that is why Jesus welcomed children to his side. Children don’t know what they can’t do, their enthusiasm and zest for life can be contagious, if you let it. Some have said that children have simplistic thinking when it comes our desires in life, but you must consider that we have complicated it beyond reason. Jesus said, “It is done unto you as you believe.” In another place he said, “When you pray believing, you shall have what you believe.” In other words, desire is not hindered by false expectation. What you believe holds all the cards. If you examine your belief, you may find some flaws in that belief. For example: praying for healing of a relative or friend whose body has been ravaged by disease. Which image do you carry in your mind; the disease, in all its ugliness, or a body whole, complete and perfect? The answer to that question will tell you the effectiveness of your prayer, and what you can expect. When it comes to living life at the highest level, it behooves us to become as a little child. Your desire and expectation can be the same as long as you don’t introduce something different into the mix. God is Love and Loving You Right Now!
