Bishop, CA—Chef Luis Robledo says Molcajetes Fusion’s ideas and dishes reflect new thoughts and presentations, blended with some twists on traditional ingredients. “Every plate looks a little different.” That’s the idea of fusion cuisine. New and fresh, every day. Molcajetes are a means of combining or fusing ingredients as well, and the traditional Mexican style stone culinary tools are on display in the restaurant on Main Street in Bishop, CA.

Molcajetes Fusion, Main Street, Bishop, CA, features fusion dishes, fresh ideas from different culinary traditions, and the traditional molcajetes are a part of the atmosphere and the amazing plates.

Molcajetes Fusion opened in October of 2020 to an enthusiastic community of customers, and they provided curbside pick up and delivery in the area. Dining in is a delightful experience, and the lava bowl filled with a tasty salsa is served with chips. Menu items for lunch include seafood, grilled specials, such as fusion tacos, or maybe you order the appetizers, the Guacamole Molcajete a favorite. There are beer and wine selections, and tall cold glasses of iced tea available, and the kids menu has a variety of dishes.

The real Chef Luis Robledo is creating menu items at Molcajetes Fusion, downtown Bishop, CA, he says will please customers. “Every plate looks a little different.”

Exploring different tastes is really highlighted by the dishes, as they come out, individually garnished and arranged. The large Molcajetes, to be shared with others, feature Aguachile, with Swai fish and shrimp. The Cocktail Campechano presents shrimp, octopus, and mussels together, with flavors and spices introduced to each dish. Dinner can be a seafood or surf and turf salad, or ribs, or the unique, Tomahawk steak. Grilled favorites include the three fusion tacos.

Chef Robledo notes the seafood dishes are popular, and weekly menu specials show the versatility of Robledo’s combinations of different culinary traditions from different parts of the world. “I’m happy that people are happy with the food,” Robledo says, and he adds, “new desserts” in new styles, are coming soon. Robledo runs a variety of businesses in Bishop, with his wife, Maritza, and son, Diego Gonzalez (Upper Crust Pizza). Their restaurants include Eastside Juice, next door to Molcajetes Fusion, and Upper Crust Pizza, which will celebrate a grand reopening the end of August (near the Smart and Final store). Robledo’s experiences in the kitchen and restaurant industry, he says with a smile, give him “a lot of ideas.”

The festivities will begin at 6:30 p.m. on Saturday, August 7th at the corner of Highway 395 and Hwy 168 where the original Sequoia sapling was planted in 1913. The three cedar trees will be dedicated in the memories of Bob Steele, Cindy Schlick, and Avo Nersesian; the Pinyon pine tree is in honor of the native Paiute Tribe of the Owens Valley. Following the ceremony, the Civic Club will provide refreshments and music for dancing at the Kiosk. Please join Big Pine in marking this new historical milestone.
