Father’s Day 2021 Splurge on barbecue and grilling tools, spices, and rubs

Eastern Sierra, CA—Father’s Day is Sunday, June 20, and it’s a day to celebrate fatherhood, and paternal bonds in the family. It’s a day that is observed in more than 100 countries, but at different times of the year. Americans began recognizing the day in 1910, when Sonora Smart Dodd, one of six siblings, honored her single father for raising the children. Finding just the right gift for Father’s Day can be as simple as introducing some new tools, spices, and rubs to the barbecue / grilling / smoking menus. And, becoming a pitmaster could be just around the corner at the local hardware / home stores, where there are lots of choices available for families to select for their father / grandfather / fatherly figure. Rubs, Spices, and Knowing Your Cooking Devices Americans have blended the words barbecue, grill, and smoke into one generic term, “barbecuing.” But. In fact, these are three distinctly different cooking methods, and use different forms of spicing or seasoning the meat. And, the cut of meat is very important for the cooking method selected.

July is the peak month for barbecuing, according to the National Fire Protection Association, and they recommend some safety tips for starting off your summer outdoor cooking properly. First, they say, seven in 10 adults in the U.S. have grills, barbecues or smokers. There were 8,900 home fires involving grills (2014-2018); 3,900 structure fires due to barbecuing, and 4,900 outside fires. Check your propane grill gas lines for leaks before using them each year (check with soapy water, if it bubbles, you have a leak). Have the proper cooking tools / utensils ready for use. Don’t allow small children around grills / barbecues / smokers, and make sure your cooking devices aren’t against wooden structures /near flammables. Shop locally for barbecuing / grilling / smoker tools, and turn your pops into a pitmaster. Grilling is on a fast, hot, direct heat source, with temperatures between 450 degrees and upward. Since it’s a fast form of cooking, it’s suitable to steaks, burgers, vegetables, hot dogs, pork chops, and tender meats. Grilling with rubs and spices creates a crust, but be very careful...too long, too hot, equals charred food. Barbecuing or barbacoa, traditionally found in southern states, features low heat (between 350 and 425 degrees), and slow cooking (all day), or indirect heat. Bone-in meats, like chicken, ribs, and whole cows or pigs or goats (tougher cuts of meats) are great for barbecuing. Spices and rubs, such as wet rubs, which can feature molasses or brown sugar, are on the outer portions of the meat, and create a flavorful barbecue. Smoking is low, indirect heat, between 175 to 250 degrees, and oh so slow...maybe one hour to weeks, depending on the meat. Patience is needed with smoking foods, and you need to start with high quality meats. Port butt, briskets, and jerkies can meet smoking success, where the meats are permeated through and through, with the smoke flavoring. What spices and rubs you use is entirely based on personal tastes, and preferences. Rubs are either wet or dry, and sweet or salty, generally. Spice kits are available, and many folks put together their own variations with experimentation. Locally, our hardware stores carry a large selection of rubs, spices, and

Bill and Shirley have lived here for 32 years. We have seven boys and one beautiful daughter. Now our family has grown to 19 grandchildren, and 29 great grandchildren. We lost Bill 17 years ago, and our oldest son, Tom, three years ago. Three children live in Bishop, Cathlynn, Kevin, and Ken. Whenever we go out of town, we say, “We're going home to Paradise!” Shirley is looking forward to reuniting with family and friends.
