There’s a brilliant song from the ‘60s called, “Well-Respected Man.” In the song, Dave and Ray Davies, brothers and founders of English rock band The Kinks, harmonize about the delicate pretensions and self-satisfaction of the man who wakes up early. It’s the kind of satirical-social-commentary tune that British super groups were all about, but I will gladly disagree on one front; early in the morning, there are few delicacies more satisfying than a delicious breakfast sandwich. If you’re at all like me, and you’re out the door with a little extra time on your hands before clock-in, then you’ll understand the need for bacon, egg and cheese. So, join me, on my hunt for an amazing breakfast sandwich.

It’s a daring choice in a world of fried-egg sandwiches, and it’s one that makes you crave another bite, as every mouthful is a fusion of savory bacon, fluffy egg and a garlic herb spread that I’ve been dreaming of since.

Hidden between the overhanging branches of apple and aspen trees lies a charming building painted in an arresting saffron hue with dark trim. At first glance, it might be mistaken for a residence, but fortunately for us, it’s Nancy P’s Café and Bakery. This establishment boasts an extraordinary breakfast and lunch menu while continuing to produce delectable bread, pies and even treats for our four-legged companions. After a bit of silent deliberation, I went with the savory pocket, a meal of all of my breakfast favorites wrapped in a delicious baked dough heated in a panini-press to order. The collection of local art that happily decorates the walls and the breakfast pocket’s herbs and salt that dance on my tongue are reasons enough to have a seat and a coffee to savor this one with.

Imagine a serene Sunday morning with the sun’s first rays illuminating the landscape, casting a reddish hue in the sky that’s tinted with a hint of smoke. The desert morning’s lingering chill finds a pair of deer huddling in your yard. I can assure you, it’s mornings like these that are the perfect time to hop in the car and beat the 8am line at Sparrow Bakery. The Bacon-Breakfast Sandwich, seemingly tailored with me in mind, features bacon, avocado, arugula aioli and a perfectly poached egg. After a night of celebration for a friend’s birthday, this sandwich forms a harmonious union with a Bloody Mary, capable of settling even the most stubborn of wine headaches. The true revelation though, no cheese is needed, as the handrolled croissant foundation is delicious decadence enough.

Parked right next to the Midtown Ballroom/ Domino Room, lies a whimsical food truck reminiscent of a Wes Anderson film, but there’s nothing quaint about the flavors this yellow burrito truck is serving from 7am-1pm. Fresh from a bike ride and wanting to reward myself I ordered a burrito lovingly named, “The Hog.” The ingredients are a cornucopia of powerful flavor, featuring egg, hash brown, cheddar cheese, grilled bell peppers and onion, salsa verde, ham and bacon all swaddled safely in a warm flour tortilla. This massive feast is well-made and a breakfast choice that’ll help you switch up the classic sandwich offerings. Note, this culinary gem is only open Tues.-Sat.,

This eclectic coffee shop, just behind the High Desert Chamber Music office, reminds us that the English muffin has a rightful claim to the throne of breakfast sandwiches. Its bacon, egg, cheese and pesto aioli production, courtesy of Sparrow Bakery, delivers simplicity and reliability that makes me think of the work trucks I see puttering through the city streets these early mornings. Working downtown, trust me when I say, it is getting harder and harder not to grab one of these sandwiches every morning.

A conversation with Cari Brown of Café des Chutes

It’s hard to understate the creativity and care that Cari Brown and her husband, the fine artist Christian Brown, put into everything they touch. Between owning and operating the artists’ space, The Workhouse, and now operating the hip, delectable, European-inspired Café des Chutes next door, the Browns infuse artistry into everything they touch.
Cari Brown started out baking bread at age 17, eventually making her way, in 2009, to the “bread location” of the much-heralded Sparrow Bakery, a company she worked for off and on, eventually managing Sparrow’s Old Ironworks location up until 2018. When Sparrow opted to move out of the 100-year-old Old Ironworks building, the Browns took over the space, opening up Café des Chutes in late 2021.
Initially offering a lineup of Sparrow’s baked goods, Café des Chutes eventually moved into baking its own goods, and now, in 2023, bakes all of its own sweet and savory offerings — besides a couple gluten-free items on offer from Bend’s Blissful Spoon.
Eating some of Café des Chutes’ baked goods have me dreaming for days about getting more. With that in mind, I sat down with Cari Brown to talk about “the art of the pastry.”

Source Weekly: Tell me about some of the top sellers at Café des Chutes.
Cari Brown: We’ve gotten a little bit of notoriety for our Oregon Roll — which I didn’t name it name it the Oregon Roll, a regular customer did — but it’s a croissant dough rolled with the house-made marionberry jam topped with a hazelnut butter-like doughnut glaze; it’s really good. But I think the sleeper, the one that I love the best, is the Pistachio Croissant. It’s a riff on a traditional French-style almond croissant. We use an apricot jam that we make, and we make the pastry cream in house. We roast pistachios and do all that. Those are twice baked, so they’re really excellent way to use leftover croissant. It’s very standard practice.
The pastry cream has a little bit of orange zest, and butter and confectioners’ sugar, ground pistachio. And then you got a pretty healthy topping of whole pistachios on top and a little bit of powdered sugar. I worked on the recipe for that for a while. The day where finally I was like, OK, I got it, I took a bite and I was like, I’m not going to eat the whole thing — I’m just gonna take a bite and I’m gonna throw the rest away. But I literally just stood over the garbage can and ate the whole thing.
SW: What is the “art of the pastry?” What makes them so good?
CB: In all transparency, because of the limitation of our facility, we don’t do our own do lamination here. We buy laminated dough
from a really lovely bakery. Really though, the thing about pastry that makes it so good is the butter. We use as high a quality butter as we possibly can with a really high fat content, and the pastry dough that we get is lovely. There’s this real art to laminating dough I got to learn. One of my primary functions, besides bread baking, was laminating for Sparrow [Bakery], and it’s a process.
SW: Tell me something that you’re really excited about in regards to this place.
CB: One of the things I’m really proud of is that despite some fairly significant handicaps in the realm of our facilities and our space — we have a tiny kitchen — we have really done our best to adhere to making the highest-quality products that we can and making everything from scratch that we can. Sometimes that is really hard and it’s complex. But, you know, it was important to me that we have a hand in most of the things that we make.
As far as our sandwiches go, I think it’s probably the smoked trout sandwich. That’s one of my favorites. So for that we take the highfat-content, unsalted creamery butter and we whip it and we make a compound butter that has fresh dill, lemon zest, lemon oil, salt and pepper, a little bit of Aleppo pepper. And that’s the base for the sandwich. We also
make our own radish and carrot pickles that go on that, which are really lovely and good. Then we get this really beautiful wild-caught trout from up in Washington, and it’s just a rich, unctuous, really flavorful sandwich with this sharpness that you get from the pickle.

February saw the opening of a new location for Shimshon, the Israeli food spot that started with a food cart at Midtown Yacht Club, featuring falafel, za’atar fries, mezza plates and more.

Bend’s west side got a new café featuring locally baked confections, tea and coffee when A Taste of Bend opened in February on Galveston Avenue. Lunch-y items are also available, with charcuterie boxes from Wild and Free Charcuterie also on offer.

La Pine got a new place to hang out and enjoy the mountain views when Wetlands Taphouse opened just off the main drag in late 2022. Featuring food trucks and an indoor taproom, the spot supplied a much-needed hangout (and a great lunch spot) for La Pine.

September 2022 also saw the opening of Mountain Burger, a burger place in Northwest Crossing that aimed to reinvent the American burger joint to include locally sourced ingredients, healthful salads and creative cocktails. Peeps, the burgers — which include plantbased offerings — are inspired.

Roam, the modern restaurant attached to Downtown Bend’s Oxford Hotel, offers delicious choices; a classic mimosa at $9 or a signature mimosa for just $1 more. Roam’s signature mimosa boasts several unique flavors to choose from, including lychee, prickly pear, papaya and passion fruit.
Another great brunch option, and something a little stronger: The sophisticated espresso martini. A great tasting, alcohol-heavy choice is the Lemon Tree’s Hazelnut Espresso Martini.
The potent and aesthetically pleasing beverage mixes Crater Lake’s regular and hazelnut flavored vodka with Kahlua and espresso. While the martini is on the more expensive side, at $16, it’s does leave you energized. The upscale breakfast and lunch joint has several coffee options that are all great for sober friends as well.
Right next door, conveniently, is another tasty brunch spot. As I perused the menu at Drake, I chose yet another caffeinated beverage that’s both cozy and potent.
The heavy $11 Irish Coffee.
An easy drinking classic, ideal for a cool fall morning.
The warm, sweet beverage is simple, including just Irish whiskey, coffee and whipped cream. The fluffy whipped cream on top adds a satisfying surprise to each sip. If you don’t like the strong taste of whiskey in the morning, this drink may not be for you.
These three brunch drinks, all unique and tasty, work wonders in bridging the gap between breakfast and lunch and delivering a nice buzz. But, in my opinion, a Bloody Mary still triumphs as the best brunch cocktail. It’s tough to beat the fiery mixture that oftentimes offers a full meal in one glass.
On mornings when you are both thirsty and hungry, the choice is simple;
A 24 oz. Proud Mary Bloody
from the Victorian Café. This massive morning beverage, priced at $17.99, is crafted with Victorian’s house-made Bloody Mary mix and a double shot of its infused pepper vodka.
The drink doubles as an appetizer, including a smoky prawn skewer with andouille sausage, pepper jack cheese, an olive and an array of yummy veggies, finished off with a crispy garlic breadstick. The Proud Mary Bloody embodies a classic brunch drink, offering an acidic, savory hair-of-the-dog remedy.
A mimosa is always a good bet.
