While you won’t find us whipping out a fancy rubric to score our contenders for the Source Weekly’s Restaurant of the Year, we do tend to look for a few key things when our foodie team makes its selection: Great food, of course, but also a welcoming and attractive atmosphere, a bit of community buzz, and a great back-story of local owners committed to bringing something valuable to the scene.
BOSA Food & Drink checks all those boxes, earning it the Restaurant of the Year in this year’s Source Weekly Restaurant Guide.
During our recent visit, BOSA’s owners reiterated a story they’d told the Source in 2021, when Donna Britt wrote our story about the opening of what she called a “neighborhood Italian restaurant”: two chef-friends meet in Aspen, get along great and dream of opening up their own spot together one day.
The product of that dream is a buzzing restaurant on Galveston Avenue where fresh-made pasta is always on the menu, where there’s a great wine list, a cool modern-meets-rustic interior and where neighbors love to belly up to the bar and greet a friendly face.

BOSA’s owners aimed for an Italian-French style to the menu, combining the greatest hits of Italian cuisine — Cacio E Pepe and Rigatoni, for example – with French items such as snails and pommes frites with truffles and shaved parmesan.
“When we were opening this place, the initial concept was, restaurants that were like what we saw in many different cities that we didn’t see in Bend – which is a simple, mainly Italian restaurant,” Nate King told the Source Weekly. “We didn’t want to shy away from French food either. It was mainly just to do a neighborhood style.”
Bendites have definitely responded to that concept; last year, in our annual “Best of Central Oregon” readers’ poll, readers voted BOSA as the Best New Restaurant and also voted it Best Pasta.
“The support we’ve gotten has been really overwhelming,” Dockter said.
“To know that we put our heart and souls into this and to see that response reflected back is quite amazing.”
And while the goal for these two chefs has been to create a welcoming – and delicious —neighborhood place, they also get something out of it, too.
“The raw energy of the restaurant –we wanted to create that, but when it’s just a blank empty building you don’t know what it’s going to turn out to be,” Nate King said. “But it’s amazing being in that open kitchen and just feeling the energy of people walking in.”

When a three-time James Beard award nominee opens up a new restaurant, foodies tend to take notice. When that restaurant also happens to fill a hole in the dining scene, all the better. Yoli, which means simply “cuisine” in Korean, is the latest venture for Chef Joe Kim and his wife Laura. The restaurant is tucked along the north end of Bend’s downtown, featuring a fun, unassuming and unexpected atmosphere and a host of ideas about what Korean cuisine can look like.
“We’d had some success at my former restaurant, 5 Fusion, with some Korean dishes, and so we just wanted to do a restaurant that was pretty much exclusively Korean food, but modernize it, but still make it approachable,” Chef Kim said. “So it seems like a big goal – teach people about Korean food and somewhat traditional Korean food but modernize it as well.”
With no other Korean restaurant in Bend, Yoli has filled a hole for those looking for Korean classics. For those looking for the elevated cuisine Kim has been known for, Yoli also offers a chance for Bendites to push their boundaries.

Other examples of that creativity: the Gagi main dish, featuring eggplant, spicy rice gnocchi, bell peppers, mushroom, onions, scallions and cilantro, or the corn cheese starter, made with corn, kimchi and melted cheese. Also on the starter menu at dinner are a series of raw dishes, including wagyu and tuna tartare, and the Caviar Juk, featuring osetra caviar, black truffle porridge, chive and pine nuts.
Several tasting-menu options also make it possible for guests to explore.
“We just started doing a five-course menu, which will allow someone to come in and navigate through the menu, pick five courses off of the menu that they want to eat,” Kim said.
For the truly adventurous, guests can also opt for chef’s choice.
“We also offer a chef’s tasting menu, which is not on the menu – we just make that menu specifically for those guests that are coming in,” Kim said. “That’s kind of our choice in the kitchen.”
Riding the line between creative offerings and the classics is no easy task, but the Kims have thus far found that balance, bringing a fresh experience to the Bend food scene, and earning them the Rookie of the Year in the 2023 Restaurant Guide.

Central Oregon has so many food carts these days, we wouldn’t be shocked to know that its per-capita spread of carts rivals any other city in the world. They’re a place for budding restauranteurs and even longtime food-industry pros to explore new flavors in a low-key setting.
At Da Nang Vietnamese Eatery, now tucked next to the Deschutes Brewery tasting room, co-owner James Ngo and his business partner Tony Ngo (no relation) aim to cook foods like their Vietnamese moms make – the staple kind of foods that you can eat every day, James Ngo told the Source Weekly. They’ve certainly become a staple for the Source Weekly crew — a mix of vegetarians, pescatarians and omnivores who find ourselves making our way to this cart when we want a solid meal that packs in the flavors.
Da Nang’s menu is simple: choose a protein – steak, chicken or tofu – and then choose your base – rice, vermicelli rice noodles, a baguette or salad. My first sample of Da Nang was the steak salad – bursting with flavors of lemongrass, garlic, green onion and “secrets,” as the menu reads. Part of those secrets involve the addition of nuoc man, or fish sauce, that give meals a savory, umami taste. (A vegan sauce option is also available.) “I think with our research, of just talking to a lot of people we knew in the restaurant industry, in the food industry who we kind of looked up to, they said, if you’re starting out, just keep it simple,” Ngo said. “It’s enough options where people feel like they get to decide what they want, but simple enough where it’s still going to be the outcome that we want.”
Da Nang got its start as a cart in 2014 Eugene, where the two Ngos grew up. In 2021, James Ngo moved to Bend and opened a Da Nang cart at Spoken Moto, later moving the cart to Deschutes upon the move of the Spoken Moto building. The original cart is still in Eugene, currently housed at Thinking Tree Spirits in the Whiteaker neighborhood. The two Ngos also opened a hip brick-and-mortar southeast Asian restaurant in Eugene, called Same Same, earlier this year. Here in Bend, James Ngo said it’s been an adjustment to be away from the busy food-pod scene of Spoken Moto, but that the location at Deschutes still brings in the hungry peeps looking for a delicious meal.
“We’re just riding the wave here,” he said. “The feedback from the community has been good – a lot of regulars, but also new faces.”

Bend’s emergence as a food and wine town feels like a natural extension of its beer town roots. There’s been an exciting explosion of everything from food carts to fine dining establishments to wine bars over the past number of years, not to mention all the local producers, farmers and makers of food and drink products.
But what are the current trends? Have you recognized a proliferation of anything in particular lately? Those were the questions bouncing around the Source Weekly offices recently as the Restaurant Guide 2023 was being curated.
Local dining and community tops the “10 Hot Trends for 2023” compiled by the National Restaurant Association in partnership with the American Culinary Federation. Also in that top 10 list are comfort fare and sustainability. It’s really no surprise that Bend is in line with those current national trends; we’ve long been a progressive community in so many ways.
We’re proclaiming the 2023 Top Food & Drink Trends for Bend to be: Authentic Italian cuisine (comfort food), sustainability and wine.
Italian food in Bend
What could be more comforting than a big bowl of pasta? Thanks to Juri Sbandati and his restaurant Trattoria Sbandati, Bendites have been enjoying authentic Italian cuisine since 2009. Now, suddenly it seems, we have even more Italian dining options. And we’re talking traditional Italian fare versus straight up Italian-American food such as fettuccine alfredo or chicken parmigiana.
Examples include Bosa Food & Drink (opened summer 2021) and their offerings of Bigoli Cacio e Pepe (cheese and pepper pasta from Rome) and their bone-in ribeye which compares to the traditional Bistecca alla Fiorentina (Florentine steak) served throughout Florence, Italy. Then there’s the Reginette Wild Boar Ragu pasta on the menu at Nome Italiano (opened early 2022) along with the Pizza Tartufo Autunnale featuring truffle oil and fontina cheese (first produced in Italy).
Back to Sbandati’s for a moment and the Antipasto Toscano, a charcuterie board featuring Italian-cured meats with grilled bread and the Piatto Di Formaggi Misti, a selection of imported D.O.P. Italian cheeses served with jam and aged balsamic from Modena. I mention this because charcuterie boards still rank in the top three trends on the Restaurant Association’s 2023 list. It’s not a separate trend for Bend, per se, but worth a mention within the local Italian trend.
Another fairly new Italian restaurant opened downtown on Bond Street right before the pandemic hit in 2020. One of the dinner menu items at Salute’ Ristorante Italiano is the Ragu ala Cinghiale (wild boar) with braised Berkshire pork, ragu and spinach. Again, just another indicator of the authentic Italian cuisine dominating the current culinary scene in our town.
Sustainability
Next up on the local trend list is sustainability. Customers are caring more and more about how menus fit with the environment, sustainable farming practices, packaging and less food waste. A couple of local eateries deserve a shout-out in this category and they are Mountain Burger in Northwest Crossing and A Broken Angel food cart. Both are vocal and transparent with their sustainability efforts. Mountain Burger opened last September and is on a mission to reinvent the iconic American burger joint. It offers locally sourced ingredients, meat and plant-based alternatives and the restaurant has a Climate Action Plan with the ambitious goal of getting to net-zero carbon emissions by 2025.
Bend’s Original vegan food cart, A Broken Angel, is now located behind The Pantry on NW Newport Avenue and still serves plant-based food which has its own earth-friendly benefits. But the cart also focuses on sustainability including plastic-free food service. The cart serves “for here” meals as much as they can and uses compostable packaging plus do as much food composting as possible. They refer to the catering side of their business as sustainable catering.
TRENDY TRENDY TRENDY
Bend as a wine town
That brings us to trend number three, wine. As reported in a Source Weekly cover story earlier this year, Bend is pushing beyond its beer town image with an emerging wine scene. In the past half dozen years, at least half a dozen wineries have opened tasting rooms in Bend. Numerous wine bars have also popped up and there’s no sign of a wine slow down. The most recent announcement came in early May with Willamette Valley Vineyards announcing its expansion into Bend. The historic E.A. Sather Building downtown is currently under renovation with plans to open as Willamette’s new wine tasting room and restaurant by this fall.
Willamette Valley will be joining the likes of Domaine Serene, Bledsoe Family Wines, Stoller, The Winery at Manzanita, Va Piano and Evoke Winery who all also have tasting rooms in Bend. Other local wine bars include FERM & fare, Flights Wine Bar, The Good Drop Wine Shoppe, Portello Winecafe and Viaggio Wine Merchant, to name a few. Faith, Hope and Charity Vineyards in Terrebonne also has a tasting room and host other wine-centric events, while Maragas Winery in Culver is making old-world, hand-crafted barrel-aged wine while farming organically and using sustainably farmed natural cork and solar energy.
The power of food to transform individuals as well as entire communities was driven home in Mark Winne’s book, “Food Town, USA,” which came out a few years ago. He outlined how food can be used to attract people and businesses to a region while at the same time taking care of people in a community and improving quality of life. Whatever current food trends we have happening in our hometown are just the cherry on top of the food scene that is rapidly becoming a pillar of our local economy, both economic and humanitarian.
