The pages ahead are intended to help you get a grasp of abundant options—and a little teaser of what to expect—from the restaurants serving dinner in Central Oregon. In addition to dinner spots in Bend, La Pine, Redmond, Sisters, Sunriver, Terrebonne, Tumalo and beyond, we’re bringing you our annual pick for Restaurant of the Year, Rookie of the Year and Food Cart of the Year—our choices for the places truly standing out in 2017. because we can’t stop dreaming about that popcorn they serve you while you’re waiting, the fun cocktails and the double cheeseburger we recently devoured in record time at the bar. And that doesn’t even cover some of their more adventurous dishes. As for Food Cart of the Year, our culinary editorial board chose The Brown Owl, first and foremost for its crave-worthy sandos, but also for the one-two punch of a rad bar adjacent to the cart. Yet, those locations, of course, are only the beginning when it comes to dinner in the C.O. Read further to get some tips on the “Go-Tos” for situations such as ladies night or a first date. ARIANA IS SPECIAL FOR MORE THAN JUST OCCASIONS BY LISA SIPE

T

he restaurant of the year is a Central Oregon love story. A boy and a girl from different parts of the world fall in love while developing their passion for food. Ariana and Andres Fernandez were at the Cascade Culinary Institute together, but didn’t connect until working together at Merenda (now 900 Wall). After they were married, they started their own restaurant with the help of Ariana’s parents, Susan and Glenn. Ariana’s food is stellar, without a doubt, but what makes the spot stand out even more is its focus on community and family. The staff of 10 takes so much pride in what they do. “It is about us and about all the other people that have been working here for such a long time, that they deserve a lot of the credit for this award, for sure, because they are the ones who allow us to do what we do,” Chef Ariana says. “They are the machine that makes everything work. Like kind of our approach is taking care of everyone who works here first, and then it like ripple effects to the customers and it ripple effects to the community. So that’s our biggest priority, taking care of all the people that work here and all the families that are supported by the restaurant.” Running a successful restaurant isn’t easy. The hours are long, with a lot of time spent away from family. Ultimately though, the restaurant is its own family. Some employees have worked for the restaurant since the start 13 years ago. Others met their spouses on the job and are married now. Ariana and Andres live above their craftsman bungalow restaurant on the Westside with their two daughters, so when you sit down to dine you really are guests in their home. The Source isn’t the only organization bestowing awards on Ariana. They’ve made Open Table’s top 100 restaurants in America – twice. To put this in perspective for you, only three restaurants in Oregon made the list, the other two are in Portland. and in Bend, Ariana. Central Oregon is often forgotten in the Pacific Northwest food scene, or is known mostly for beer, so Ariana is both earning the recognition it deserves and helping put this area on the map. Adding to the accolades, a board member from the James Beard Foundation—considered the gold standard of culinary arts organizations—took the time to dine at Ariana and then invited the team to cook at the Beard House in New York City, an enormous honor in the culinary world. The chef

from only one other restaurant in Bend, Joe Kim of 5Fusion, has cooked there. Ariana adds its own perspective to Mediterranean-inspired dishes, with a focus on seasonal Northwest produce. The menu changes often, and as we enter spring Ariana is ready to introduce salmon to the menu again. The salmon is caught by a fisherman in Coos Bay and delivered the same day. You’ll be hard-pressed to find a salmon as vibrantly, pinky orange as the fresh salmon delivered to the restaurant. So where does a successful restaurant such as Ariana, booked every night, go from here? It would be an easy decision for them to expand—they currently seat just 46—but Ariana says they just want to keep getting better. After each service the staff has a family meal together and regroups to discuss the evening and talk about what they can improve to make the next night even better. With the French Laundry in Napa, Calif. as its standard, Ariana’s mission is to give guests an amazing meal and an evening to remember, whether it’s an anniversary, birthday or date night. Walk in and you’ll get a sense of just how important the customer experience is to the staff. Susan, Ariana’s mom and the general manager, is the one taking reservations, doing what she can to accommodate special requests. Ariana says, “It sucks having a dietary issue or whatever and going to a restaurant and limited to one choice or two choices and that doesn’t feel special.” Most chefs would be annoyed with these requests, but Ariana and Andres take them seriously and see them as opportunities to push their skills. Before I left the restaurant during this interview, I asked Ariana and Andres if they had anything else to add. Andres said, “We just want to make sure, Susan, Glenn, me and Ariana, we’re really grateful having the people we have had working here and I think that is the most important thing.” Local tip: As the summer approaches, make your reservations at least a week in advance. What you might not know: Ariana’s menu is almost entirely gluten-free.

W

ashington Dining & Cocktails is the Source Weekly’s pick for Rookie of the Year, largely in part because owner Ted Swigert and his top-notch team are experts when it comes to creating an enjoyable dining and drinking atmosphere. In the case of Washington, that involves mixing a high-end experience with the comfort of a neighborhood joint. Swigert says the new location, located on Mt. Washington Drive in Bend’s NorthWest Crossing community, has already garnered a reputation for having a Cheers-like feel, with regulars who come in two and three times a week. Having opened only in August 2016, that’s quite an accomplishment, which Swigert attributes to the restaurant’s outstanding hospitality. “We maintain that neighborhood feel through our great customer service,” Swigert says. “The team knows each of the customers’ names and what their special requests are, like where they like to sit and what they like to order.” Also the owner of Drake in downtown Bend, Swigert knew that because of its location, Washington would need to appeal to two seemingly contradictory demographics: families with chil-

dren and empty nesters or those without children. Offering an inclusive food menu and a unique cocktail program paired with upscale decor and plenty of space did the trick—an impressive achievement for any restaurant and bar. Swigert characterizes Washington’s menu as seasonally inspired, creative neighborhood cuisine. Customers can expect to find delicious but approachable food choices, including some cool old-school numbers such as the bacon crusted bison meatloaf, Dungeness crab Louie and the delectable double cheeseburger. The health conscious and athletic set gets a nod with the menu’s “Garden Party” section, which offers up a variety of salads, including the popular Washington power salad with spinach, nuts, seeds, quinoa, crunchy vegetables and the option for added avocado and bacon. Washington also has a special treat for families with young ones. Swigert says, “Our children’s menu is called a bento box. The kids get to pick their own protein, starch and vegetable, and each meal comes with a house-made dessert. It’s been a smash hit with both kids and parents.” The bar area of the restaurant offers respite for those looking to enjoy some down time, seating 25

people inside and out. “It’s a great casual place for people to hang out and enjoy their favorite spirit or beer and sit for a while,” says Swigert. While Bend is known for its beer, Washington also deals in “therapeutic libations” of all kinds—as evidenced by the neon sign that hangs over the bar announcing, “Liquid Therapy Served Here.” One of their most popular and unique drinks is the duck fat Sazerac, which requires a five-day prep time. Additional cocktail options include the Bohemian and the Sassy Local, and they even offer two bottled cocktails—angry apple and gin and juice—better known as “bottled therapy,” created under their own label. It’s no surprise to find that the restaurant prides itself on being quirky. “We like to be a little on the odd side,” says Swigert. “We don’t take ourselves too seriously because it’s supposed to be an enjoyable experience for people—and that’s how we like to keep it.”

That meant employees didn’t have to brave the roads, but it also meant the garage door, a clutch feature in the summer, has stayed closed much more than anticipated. That makes it harder for people to know when their food is ready, since they can’t hear cooks from the cart yell out orders. Despite the challenges, The Brown Owl crew is still excited to show up to work every day. “It’s been nice being able to hang out here,” Ramon said, “It’s kind of like having a clubhouse. And it’s a great crew so it doesn’t feel like we’re going to work most days.” Ramon, Huggins and Sous Chef Randi Hobbs wants The Brown Owl to be the new neighborhood hangout, where people can stay for five hours, or grab some food and beer and go back home to eat it. “We want people to come in and throw back with their friends,” Huggins said. “There are no TVs here—we want people to be able to talk and just forget about technology.”

7 FOOD TRENDS HAPPENING NOW Ramen and Buddha hang out in bowls, mermaids swim to our plates BY LISA SIPE

While kale is on its way to a “Where are They Now?” episode, the culinary world is still moving forward finding new stars for our plates. What can we expect to see trending this year in Central Oregon and beyond?

Sauerkraut is the new Kimchi

If the spiciness of kimchi was a slap in the tastebuds for you, it’s time to rejoice! Europe’s cabbage ferment is mellow but still packs a ton of flavor and crunch. Chefs will be pushing it past the traditional caraway and juniper berry (hey, that’s local!) recipe and experimenting with bigger, bolder spice combinations.

Bowls, bowls and more bowls!

The Buddha bowl—a combination of proteins, vegetables and dressings—continues to reign supreme. But bowls don’t stop there. We’re going to see even more smoothie bowls (think of a smoothie topped with fresh and dried fruit, nuts and grains) and Poke bowls (a raw fish salad) for sure in the time to come.

Plant-based food takes on the real thing!

Until now vegetarians and vegans settled for products that tasted similar to the real thing, but this year we’ll see them taste and act almost identical. Plant meat burgers from Impossible Foods and Beyond Meat, cook, “bleed” and taste like the real thing. Faux cheese will also find its glory by learning how to spread and melt like the real deal. Kite Hill has a hold on the artisan nut milk market.

Dining pairs with experience

Dinner theatre is getting a reboot, but this time food is a paired part of the script. Locally, this happens with Anna Witham from The Root Cellar. Anna’s created experiences where guests listen to local stories and eat food inspired by the tale. She also collaborates frequently with A6 Studio & Gallery to offer “Creative Feasts” that fuse art, poetry, music and food into unforgettable evenings.

Food waste reduction lightens the trash load

The word is out. We throw away a lot of food; somewhere between 25-40 percent ends up in the trash. Chefs and consumers are realizing this is an expensive habit and are finding creative solutions. We’re going to see a lot more dishes such as broccoli stem salad and carrot green pesto. And don’t forget, even a small portion of leftovers can become a meal if you put an egg on it!

Ramen is still on fire!

Ramen shops are popping up everywhere! We’re not talking about the inexpensive packets of freeze-dried ramen. This is the real thing. Homemade noodles, broths that take all day to make, topped with slices of pork, seaweed, soft-boiled eggs, vegetables and all sorts of pickled goodies. This is Japanese comfort food to warm your heart and fill your belly. Bend has two ramen shops; check out 123 Ramen and Ajii, as well as the American Monster Noodle cart that roams around town.

Mermaids are the new Unicorns

Don’t worry, we’re still talking about food. Last year Pinterest was covered with rainbow-laden unicorn cakes, macaroons, toast, hot chocolate, even unicorn poop cookies with heart and star sprinkles. Mermaids are about to take over though, since mermaid toast exploded on Instagram with blue algae cream cheese and gold flakes. Seriously, look this up. You won’t be disappointed.
