Lower East Side, Streit’s kosher matzo factory is one of the last holdouts of a bygone era. When the family-run business was founded in 1925 by Austrian immigrant Aron Streit, Prohibition reigned and the area was home to a bustling Jewish community. Lines of people waiting for fresh matzo snaked around the block. “Now, 20-somethings roll out of the after-hours bars across the street in the morning,” says Alan Adler, Streit’s great-grandson, who runs the business with his cousins. But inside the factory, which produces millions of pounds of matzo a year and distributes across North America, little has changed. Thirty-seven employees bake the unleavened cracker-like bread eaten during Passover, which begins tomorrow at sundown. Flour and water are blended in sevenfoot-high mixers while rabbis on the floor time the process to no more than 15 minutes so the dough doesn’t rise (Jewish law forbids leavened bread during the holiday). “Making matzo is more art than science,” Adler explains. Sure, Streit’s could move to a modern suburban factory, which would eliminate the challenge of loading trucks on crowded city streets, but that would also eliminate a lot of history. Despite lucrative real estate offers, the company has stayed put. “Being a family business, we have a legacy,” Adler says. “We try to keep tradition alive as best we can.” For photos of the company’s history, go to Parade.com/streits. —Ansley Roan

Here’s the thing: If you see a handicapped placard in the car window but the driver seems fine, you may just not be able to see his disability. The driver could have a disease like multiple sclerosis, with symptoms that can come and go without warning. Placards or plates may also be issued for mental conditions (though a pathological fear of being more than 50 feet from a supermarket does not qualify). The point is, you really don’t know the full story. And if the car has no handicapped notification? You’re better off alerting a police officer, who can issue a fine, than confronting the driver yourself. • if you experience an increase in wheezing right after taking SYMBICORT, eye problems including glaucoma and cataracts, decreases in bone mineral density, swelling of blood vessels (signs include a feeling of pins and needles or numbness of arms or legs, flu like symptoms, rash, pain and swelling of the sinuses), decrease in blood potassium, and increase in blood sugar levels. If you are switching to SYMBICORT from an oral corticosteroid, follow your health care provider’s instructions to avoid serious health risks when you stop using oral corticosteroids. Common side effects include inflammation of the nasal passages and throat, thrush in the mouth and throat, bronchitis, sinusitis, and upper respiratory tract infection.

Approved Uses for COPD SYMBICORT 160/4.5 is for adults with COPD, including chronic bronchitis and emphysema. You should only take 2 inhalations of SYMBICORT twice a day. Higher doses will not provide additional benefits.

WHAT SHOULD I TELL MY HEALTH CARE PROVIDER BEFORE USING SYMBICORT?

No advertisement can provide all the information needed to determine if a drug is right for you or take the place of careful discussions with your health care provider. Only your health care provider has the training to weigh the risks and benefits of a prescription drug.

Tell your health care provider about all of your health conditions, including if you: ■ have heart problems ■ have high blood pressure ■ have seizures ■ have thyroid problems ■ have diabetes ■ have liver problems ■ have osteoporosis ■ have an immune system problem ■ have eye problems such as increased pressure in the eye, glaucoma, or cataracts ■ are allergic to any medicines ■ are exposed to chicken pox or measles ■ are pregnant or planning to become pregnant. It is not known if SYMBICORT may harm your unborn baby ■ are breast-feeding. Budesonide, one of the active ingredients in SYMBICORT, passes into breast milk. You and your health care provider should decide if you will take SYMBICORT while breast-feeding Tell your health care provider about all the medicines you take including prescription and nonprescription medicines, vitamins, and herbal supplements. SYMBICORT and certain other medicines may interact with each other and can cause serious side effects. Know all the medicines you take. Keep a list and show it to your health care provider and pharmacist each time you get a new medicine.

WHAT IS THE MOST IMPORTANT INFORMATION I SHOULD KNOW ABOUT SYMBICORT? People with asthma who take long-acting beta2-agonist (LABA) medicines, such as formoterol (one of the medicines in SYMBICORT), have an increased risk of death from asthma problems. It is not known whether budesonide, the other medicine in SYMBICORT, reduces the risk of death from asthma problems seen with formoterol. SYMBICORT should be used only if your health care provider decides that your asthma is not well controlled with a long-term asthma control medicine, such as an inhaled corticosteroid, or that your asthma is severe enough to begin treatment with SYMBICORT. Talk with your health care provider about this risk and the benefits of treating your asthma with SYMBICORT. If you are taking SYMBICORT, see your health care provider if your asthma does not improve or gets worse. It is important that your health care provider assess your asthma control on a regular basis. Your doctor will decide if it is possible for you to stop taking SYMBICORT and start taking a long-term asthma control medicine without loss of asthma control. Get emergency medical care if: breathing problems worsen quickly, and you use your rescue inhaler medicine, but it does not relieve your breathing problems. Children and adolescents who take LABA medicines may be at increased risk of being hospitalized for asthma problems. ■ ■

WHAT IS SYMBICORT? SYMBICORT is an inhaled prescription medicine used for asthma and chronic obstructive pulmonary disease (COPD). It contains two medicines: ■ Budesonide (the same medicine found in Pulmicort Flexhaler™, an inhaled corticosteroid). Inhaled corticosteroids help to decrease inflammation in the lungs. Inflammation in the lungs can lead to asthma symptoms ■ Formoterol (the same medicine found in Foradil® Aerolizer®). LABA medicines are used in patients with COPD and asthma to help the muscles in the airways of your lungs stay relaxed to prevent asthma symptoms, such as wheezing and shortness of breath. These symptoms can happen when the muscles in the airways tighten. This makes it hard to breathe, which, in severe cases, can cause breathing to stop completely if not treated right away SYMBICORT is used for asthma and chronic obstructive pulmonary disease as follows: Asthma SYMBICORT is used to control symptoms of asthma and prevent symptoms such as wheezing in adults and children ages 12 and older. Chronic Obstructive Pulmonary Disease COPD is a chronic lung disease that includes chronic bronchitis, emphysema, or both. SYMBICORT 160/4.5 mcg is used long term, two times each day, to help improve lung function for better breathing in adults with COPD.

WHO SHOULD NOT USE SYMBICORT? Do not use SYMBICORT to treat sudden severe symptoms of asthma or COPD or if you are allergic to any of the ingredients in SYMBICORT.

HOW DO I USE SYMBICORT? Do not use SYMBICORT unless your health care provider has taught you and you understand everything. Ask your health care provider or pharmacist if you have any questions. Use SYMBICORT exactly as prescribed. Do not use SYMBICORT more often than prescribed. SYMBICORT comes in two strengths for asthma: 80/4.5 mcg and 160/4.5 mcg. Your health care provider will prescribe the strength that is best for you. SYMBICORT 160/4.5 mcg is the approved dosage for COPD. ■

SYMBICORT should be taken every day as 2 puffs in the morning and 2 puffs in the evening.

Rinse your mouth with water and spit the water out after each dose (2 puffs) of SYMBICORT. This will help lessen the chance of getting a fungus infection (thrush) in the mouth and throat.

Do not spray SYMBICORT in your eyes. If you accidentally get SYMBICORT in your eyes, rinse your eyes with water. If redness or irritation persists, call your health care provider.

Do not change or stop any medicines used to control or treat your breathing problems. Your health care provider will change your medicines as needed

While you are using SYMBICORT 2 times each day, do not use other medicines that contain a long-acting beta2-agonist (LABA) for any reason. Ask your health care provider or pharmacist if any of your other medicines are LABA medicines. SYMBICORT does not relieve sudden symptoms. Always have a rescue inhaler medicine with you to treat sudden symptoms. If you do not have a rescue inhaler, call your health care provider to have one prescribed for you.

Call your health care provider or get medical care right away if: ■ your breathing problems worsen with SYMBICORT ■ you need to use your rescue inhaler medicine more often than usual ■ your rescue inhaler does not work as well for you at relieving symptoms ■ you need to use 4 or more inhalations of your rescue inhaler medicine for 2 or more days in a row ■ you use one whole canister of your rescue inhaler medicine in 8 weeks’ time ■ your peak flow meter results decrease. Your health care provider will tell you the numbers that are right for you ■ your symptoms do not improve after using SYMBICORT regularly for 1 week

WHAT MEDICATIONS SHOULD I NOT TAKE WHEN USING SYMBICORT? While you are using SYMBICORT, do not use other medicines that contain a long-acting beta2-agonist (LABA) for any reason, such as: ■ Serevent® Diskus® (salmeterol xinafoate inhalation powder) ■ Advair Diskus® or Advair® HFA (fluticasone propionate and salmeterol) ■ Formoterol-containing products such as Foradil Aerolizer, Brovana®, or Perforomist®

WHAT ARE THE POSSIBLE SIDE EFFECTS WITH SYMBICORT? SYMBICORT can cause serious side effects. ■ Increased risk of pneumonia and other lower respiratory tract infections if you have COPD. Call your health care provider if you notice any of these symptoms: increase in mucus production, change in mucus color, fever, chills, increased cough, increased breathing problems ■ Serious allergic reactions including rash; hives; swelling of the face, mouth and tongue; and breathing problems. Call your health care provider or get emergency care if you get any of these symptoms ■ Immune system effects and a higher chance for infections ■ Adrenal insufficiency–a condition in which the adrenal glands do not make enough steroid hormones ■ Cardiovascular and central nervous system effects of LABAs, such as chest pain, increased blood pressure, fast or irregular heartbeat, tremor, or nervousness ■ Increased wheezing right after taking SYMBICORT ■ Eye problems, including glaucoma and cataracts. You should have regular eye exams while using SYMBICORT ■ Osteoporosis. People at risk for increased bone loss may have a greater risk with SYMBICORT ■ Slowed growth in children. As a result, growth should be carefully monitored ■ Swelling of your blood vessels. This can happen in people with asthma ■ Decreases in blood potassium levels and increases in blood sugar levels

you’re not looking at the mirror as an object. Instead, you’re viewing the light from the distant objects themselves, bounced to your eyes by the reflective surface of the mirror. Say you can see well at four feet, and you stand two feet from a mirror. You’ll see your face clearly, because the light travels two feet to the mirror, then two feet back to your eyes, a total of four feet. But if you don’t see well at 50 feet, you’ll have trouble clearly seeing a tree across the street reflected in a mirror, because the light from the tree must travel 50 feet to the mirror, then two more feet back to your eyes. You’ll easily see a drop of water on the mirror because the droplet is only two feet away. The light isn’t being reflected at all. This phenomenon is why a mirror makes a room seem larger. And when the mirror faces a landscape, the impression is even greater. Replace the mirror with a photo of the same landscape, and the effect will disappear. 30 volunteers gathered at the visitor center for the Canyons of the Ancients National Monument, armed with weapons for that day’s battle: trash bags, work gloves, and wheelbarrows. They’d spent the rest of the week being college students, medical assistants, or retired schoolteachers. But not this morning. Today they were monument caretakers. Tucked into the southwestern corner of Colorado, Canyons of the Ancients, a 170,000-acre high-desert landscape, has no restaurants and few trail markers. But its canyons teem with riches of the past: 13th-century towers, rocks painted with images of ghostly hands, and other vestiges of the 1,000-year-old Ancestral Puebloan civilization. “I hike in two miles every few months to check on one of the sites, make sure it hasn’t been vandalized,” says Harry Hance, 80. In the past decade, looters have stolen artifacts, pushed over walls, and even desecrated centuries-old graves in search of

valuables. Today the volunteers pick up trash and close a stretch of road that’s been used to intrude on monument land. The work is hard and dirty, but no one minds. Canyons of the Ancients is one of the 886 properties that make up the little-known National Landscape Conservation System (NLCS), created in 2000 and formally signed into law by President Obama just two years ago. These undeveloped wildernesses, historic trails, expansive monuments, scenic rivers, and other sites cover 27 million acres, an area nearly the size of New York state. But the NLCS functions on a budget of $67 million—acre for acre less than a tenth the amount allotted to the National Park Service. Since funds for rangers and other paid caretakers are scarce, the landscapes are often neglected, if not violated. At Agua Fria Na-

tional Monument, in central Arizona, ATV drivers ride unchecked across riverbeds, home to such sensitive species as the yellowbilled cuckoo and lowland leopard frog. At Red Rock Canyon National Conservation Area, 17 miles—but a world away— from the hubbub of the Las Vegas Strip, vandals have scrawled graffiti on ancient pictographs and spray-painted rocks with

the names of local gang members. Taking on the vandals are thousands of Americans who spend their time doing everything from carting away litter to mapping archaeological sites. “The more you come here, the more you realize it’s just covered with history,” says Canyons of the Ancients volunteer Karen Bernhart, 66, who works in a chiropractor’s office. “You can live here a long time and never see it all.” In the past year or so, the NLCS volunteers have become more organized—and more forceful. I put all this effort into getting nice things—but still, the picture above the fireplace is a Bruce Springsteen poster I found in the garbage. What is the most important information I should know about Prolia? Prolia can cause serious side effects including: 1. Low calcium levels in your blood (hypocalcemia). Prolia may lower the calcium levels in your blood. If you have low blood calcium before you start receiving Prolia, it may get worse during treatment. Your low blood calcium must be treated before you receive Prolia. Most people with low blood calcium levels do not have symptoms, but some people may have symptoms. Call your doctor right away if you have symptoms of low blood calcium such as: • Spasms, twitches, or cramps in your muscles • Numbness or tingling in your fingers, toes, or around your mouth Your doctor may prescribe calcium and vitamin D to help prevent low calcium levels in your blood while you take Prolia. What is Prolia? Prolia may harm your unborn baby. Tell your doctor right away if you become pregnant while taking Prolia. Pregnancy Surveillance Program: Prolia is not intended for use in pregnant women. If you become pregnant while taking Prolia, talk to your doctor about enrolling with Amgen’s Pregnancy Surveillance Program or call 1-800-772-6436 (1-800-77-AMGEN). The purpose of this program is to collect information about women who have become pregnant while taking Prolia. • Are breast-feeding or plan to breast-feed. It is not known if Prolia passes into your breast milk. You and your doctor should decide if you will take Prolia or breast-feed. You should not do both. Tell your doctor about all the medicines you take, including prescription and nonprescription drugs, vitamins, and herbal supplements. Know the medicines you take. Keep a list of medicines with you to show to your doctor or pharmacist when you get a new medicine. How will I receive Prolia? • Prolia is an injection that will be given to you by a healthcare professional. Prolia is injected under your skin (subcutaneous). • You will receive Prolia 1 time every 6 months. • You should take calcium and vitamin D as your doctor tells you to while you receive Prolia. • If you miss a dose of Prolia, you should receive your injection as soon as you can. • Take good care of your teeth and gums while you receive Prolia. Brush and floss your teeth regularly. • Tell your dentist that you are receiving Prolia before you have dental work. What are the possible side effects of Prolia? Osteoporosis is a disease in which the bones become thin and weak, increasing the chance of having a broken bone. Osteoporosis usually causes no symptoms until a fracture happens. The most common fractures are in the spine (backbone). They can shorten height, even without causing pain. Over time, the spine can become curved or deformed and the body bent over. Fractures from osteoporosis can also happen in almost any bone in the body, for example: the wrist, rib, or hip. Once you have had a fracture, the chance for more fractures greatly increases. The following risk factors increase your chance of getting fractures from osteoporosis: • Past broken bones from osteoporosis • Very low bone mineral density (BMD) • Frequent falls • Limited movement, such as using a wheelchair • Medical conditions likely to cause bone loss, such as some kinds of arthritis • Taking steroid medicines called glucocorticoids, such as prednisone • Other medicines that may cause bone loss, for example: seizure medicines (such as phenytoin), blood thinners (such as heparin), high doses of vitamin A What can I do to treat osteoporosis? There are many steps you can take to treat osteoporosis. Taking Prolia, along with calcium and vitamin D, may be one option for you.

1. For dressing, combine oil, lemon juice, and half the salt and pepper in a small bowl. Whisk well; set aside. 2. The House That Built Me

T

he plan was to

drive slowly by the house and keep on going. But I wasn’t prepared for the sight of all those boarded-up windows. How could a home once so full of living be so deadly silent now? I slowed the car to a crawl as the ghost of my younger self—all arms and legs and teenage attitude— stood on the porch and shouted, “Oh, c’mon! You’ve got time to stop!” I was bossy, even then. So I did a U-turn and pulled into the driveway of the home where I lived for most of my childhood. It sits on U.S. Route 20 in Ashtabula, Ohio. When we were kids, we used to stand close to the street and pump our arms at the semitrucks roaring toward us. Every time a driver blasted his horn, we’d hoot and holler. “Like kids raised by wolves,” Mom would say, shaking her head. But she always smiled. Sure doesn’t take long for memories to kick in when you’re face-toface with the house that built you, as the country song goes. When my parents died in their 60s, they took a chunk of my history with them. But seeing the house where they raised me breathed new life into forgotten times and revealed the origins of some of my habits, too. I stepped out of the car and headed for the front steps, where 24 • April 17, 2011

my father used to sit after working at the power plant. She was big on building character with buckets and Brillos; I preferred to sprawl out on that swing, reading one book after another and dreaming of a future too big for my small town. I stood under the kitchen window where Mom used to peek out on tiptoes and name every bird visitin visiting the feeder. As a kid, I thought she was so silly. N Now I do the same thing. S Someday I hope to identify eevery bird by its song, just li like Mom. She would have lo loved knowing that. I walked to the backyard an and started to laugh. When I w was 12, Dad broke his collarbo bone playing softball and insi sisted I mow the lawn while h he walked next to me, row by ro row. I was so nervous, I kept b brushing back my bangs with one hand until the mower slipped and sliced off the toe of Dad’s sneaker. We watched that sliver of canvas fly into the air, and I was sure it was taking his toe with it. I screamed and darted down the street and didn’t return until dark. As it turned out, Dad’s big toe was just fine and wiggled a hearty hello for the two years

As a child, I absolutely loved Reese’s Peanut Butter Cups. They were my favorite candy on the planet. They had that hard edge and really soft middle—who wouldn’t want that? When I became a vegan 10 years ago, I was sad to give them up. So I developed these Chocolate Peanut Butter Cups by combining various recipes and using only homemade and natural ingredients. I’m proud of them. I think they’re the most ridiculously delicious things in the entire world, and I always give them to people as an introduction to how great vegan treats can be.

Chocolate Peanut Butter Cups ½ cup Earth Balance buttery spread ¾ cup crunchy peanut butter (preferably unsweetened and unsalted) ¾ cup graham cracker crumbs (about 10 squares) ¼ cup maple sugar or other granulated sweetener 1 cup grain-sweetened, nondairy chocolate or carob chips ¼ cup soy, rice, or nut milk ¼ cup chopped peanuts, pecans, or almonds

MAKES: 12 PER CUP: 300 calories, 24g carbs, 5g protein, 21g fat,

1. Line a 12-cup muffin tin with paper liners. 2. Melt butter in a small saucepan over medium. Stir in peanut butter, graham cracker crumbs, and maple sugar; mix well. Remove from heat. Divide mixture evenly among muffin cups, about 2 Tbsp per cup. 3. Combine chocolate and milk in another saucepan. Stir over medium until chocolate
