LA SCALA The Flavour of Irresistible White Alba Truffles 1 - 23 December 2015 The open kitchen at La Scala will come alive with the magnificent aroma of White Truffles from the Alba region of northern Italy, providing guests with a rare opportunity to indulge in the ultimate truffle experience for both lunch and dinner. Truffles, or “tartufi”as they are known, are richly flavoured mushrooms that first appear in early autumn, from October to December. They are rounded and irregularly shaped, white truffles usually being twice the size of black truffles, with a smooth exterior and a pungent fragrance best described as a blend of garlic, mushrooms and matured parmesan cheese.
