1 | Preheat oven to 425 degrees. Line a rimmed sheet pan with foil and spray with oil.

2 | In a medium bowl, combine spinach, bacon, and 1/4 cup of the cheddar cheese.

3 | Place the chicken breast on the prepared pan. Using a sharp knife, cut slits across the top of each chicken breast about 1/2 inch apart and 3/4 way through. Be careful to NOT cut the breast all the way through. Season the breast with salt and pepper. Then stuff each slit with the spinach mixture. Top remaining 2 tablespoons of cheddar cheese on top of the chicken breasts.

4 | Bake on center rack until the chicken is cooked through, about 20 minutes (160-165 degrees). Switch the oven to high broil, moving the chicken to a higher rack (about 6 inches from the broiler) and broil until golden brown, about 2 minutes. Serve hot!
