Village Wine & Spirits
WE EAT AND DRINK WITH THE SEASONS We all love summer. When it gets warm, we live in t-shirts and shorts. We head outdoors, cook on the bbq, eat salads, buy from the markets and we change what we drink.
Summer wines are all about fruit. Cool and refreshing and as informal as the summer dress code. Save the big heavy reds and the fuller bodied whites for the cooler months. Just as the food is seasonal, so are the wines. Bring on the wines of summer: light, crisp whites, thirst quenching rosé, luscious reds, and don’t forget the bubbles. SAUVIGNON BLANC is the first wine of summer. New Zealand excels at making great Sauvignon Blanc. Our cooler climate enables our winegrowers to produce grapes with concentrated flavours and refreshing acidity, with enough fruit characteristics to handle lots of cooling time in the fridge. Marlborough Sauvignon Blanc generally carries lovely green herbaceous flavours, backed up by tropical fruit. Head north to Hawke’s Bay and those tropical fruit flavours shine through. Head south and the grassy green flavour really jump out of the glass, and all are so refreshing when served well chilled. Perfectly matched with salads, seafood and foods that also have that extra touch of acidity.
INTRODUCTION
Rosé is the epitome of summer.
2
Whether it’s Rosé, rosado (Spain), rosato (Italy) or “blush” - these terms all refer to pink wine. This pink shade can range from a soft, subtle hue to a vibrant, hot pink, depending on the grape used and how long the grape skins were in contact with the juice. Rosés can be made in a sweet, off-dry or bone dry style, with most European Rosés being decidedly dry. Rosé is generally made by crushing some red grapes, leaving the skins in contact with the grape juice for just a few hours, before draining off the lovely pink juice, and fermenting it into wine. The flavours in the wine depend on which red grape is used. In New Zealand we make a lot of our Rosé wines using Pinot Noir, and to a lesser degree Merlot. In Australia they often use Shiraz.
Chill that Rosé, settle down with the crayfish, and watch the afternoon go by.
Celebrate with some Bubbles! We all love to celebrate, and over summer we have lots of occasions to do just that. Christmas, New Year’s Eve, New Year’s Day, and lots more call for the sound of a popping cork. Bubbles come in all styles and at all price points. From Brut (Dry) right through to White or Rosé. Bubbles are produced in nearly every country that produces wine. CHAMPAGNE is a region in France, famous for producing fantastic sparkling wines made using Chardonnay, Pinot Noir and a third grape called Pinot Meunier. Mostly all we see in New Zealand are the dry versions, although some sweeter versions are available. Champagnes made with more of the Pinot Noir grape in their blend are generally fuller bodied and bolder flavoured wines. Chardonnay dominant versions are more creamy and subtle in the mouth. PROSECCO is creating waves everywhere at the moment. It is the ‘in’ bubbles. Both light and refreshing, it’s easy to see why Prosecco has become the party wine of choice. It’s very affordable, and whilst traditionally made in Italy, Australia is making thoroughly enjoyable Prosecco too. PINOT NOIR can make great summer drinking too. This is a lighter style of red wine, with a touch more acid and less tannin than other red wines. Pinot Noir is our most planted red variety in New Zealand, and our winemakers are making some great wines out of grapes grown from Hawke’s Bay in the north, to Central Otago in the south. Pinot Noir has long been a favourite in France where it is grown, mainly in Burgundy. In the hotter months, the French are often found to be lightly chilling their lighter red wines. Chilling for just twenty minutes brings the temperature down, lifting the acidity to make the wine a touch more refreshing. Alternatively, the addition of an ice cube to your glass is perfectly acceptable in those hotter months. CHARDONNAY is the most planted grape on the planet. We make a lot of Chardonnay in this country. Fuller richer styles from Waiheke, Gisborne and Hawke’s Bay, wines with an edge from Marlborough, down to crisper styles from North Canterbury and Central Otago.
From the big, rich, ripe, fruity styles grown in the Hawke’s Bay down to the racy crisp wines coming out of Central Otago, there’s a wine for everyone. PINOT GRIS has quickly become a favourite of kiwi wine drinkers because it can satisfy so many palates and tastes. Those wines that have an alcohol level of between 11 and 13 percent make great drinking on their own, whilst the wines that have higher alcohol levels certainly work well with food. Try it with some grilled or bbq pork.
Different Chardonnays will have varying amounts of oak ageing. The more oak, the heavier the wine. This allows us to match our Chardonnays to specific summer dishes. Think about matching a lightly oaked Marlborough Chardonnay with a crayfish or mussel salad. A richer Hawke’s Bay style would be better suited to the intriguing chicken under a brick on the BBQ. SHIRAZ and SYRAH both have their place in summer. You might think that these heavier wine styles should remain in the cellar for the summer months, but they are the perfect accompaniment to the great charred steaks on the BBQ. RIESLING, GEWÜRZTRAMINER, MOSCATO all fit into the category we label as Aromatic. These are wines with plenty of aroma, but also plenty of flavour. They all work sensationally well with lighter dishes, Asian cuisines, smoked foods and loads of salads with distinctive flavours. Match a Gewürztraminer with a salad including pomegranate seeds, and it’s a match made in heaven.
INTRODUCTION
Make some room in the fridge, because Pinot Gris is another wine that just lends itself to summer drinking.

The wines were put into new and seasoned French oak and assessed for quality after several months. After seven months the wine was blended then returned to oak for a further seven months.
