REBALANCE THE GUT
A summer of indulging on unhealthy foods can impact the gut. This can not only cause digestion problems, but can throw out all your body’s systems, leaving you feeling sluggish, lacking in energy or feeling ill. The best way to restore balance is to cut out processed and unhealthy foods and take a probiotic or eat probiotic foods, such as yoghurt, sauerkraut and miso.
BOOST YOUR IMMUNE SYSTEM
Good weather and alcohol often go hand-in-hand. However, increased alcohol consumption can affect the nutrients available for our body and the way and amount we absorb. Get your immune system back on track by eating plenty of vegetables of all colours for varying nutrients. A good multi vitamin supplement is also useful for those suffering from vitamin depletion or absorption problems.
RESTORE AND REPLENISH
Hot sticky nights as well as sugar and alcohol intake can all disrupt our sleep. Not getting enough good quality sleep can cause hormonal and metabolism disruptions, leading to weight management issues among other health problems. Aim to get 7-9 hours per night and reduce technology use in the period before bedtime.

Get yourself motivated and back on track by setting new healthy goals. Find your inspiration - what do you want to achieve, what motivates you to do this, what is needed to achieve these goals? Then plan and prepare - the more prepared you are, the easier it is to keep on track. Find yourself a health buddy to workout with, share stories, achievements and recipes.
NOURISH THE MIND
The comedown of summer bingeing can affect how we feel. Throw into the mix shorter, darker days and we can quickly lose that summer high. What we eat and what we do has an immense effect on our mental wellbeing. Aim for 30 minutes of activity everyday something that gets your heart rate up and those feel good hormones pumping. PENNE WITH SPROUTS & PANCETTA Preparation time: 10 minutes Cooking time: 15 minutes Serves: 4 Ingredients: 77g Cook’s Ingredients beechwood smoked diced pancetta 2 echalion shallots, sliced 2 garlic cloves, crushed 2 tsp fennel seeds 330g pack trimmed Brussel sprouts, roughly shredded 300g wholewheat penne rigate 6 tbsp reduced fat pouring cream 1 small lemon, zest

Put the pancetta in a large frying pan set over a medium heat. Cook, stirring occasionally, for 5 minutes until starting to turn golden. Add the shallots, garlic and fennel seeds and cook for another 2 minutes until starting to soften. Stir in the sprouts, season, then increase the heat a little and cook for another 6-7 minutes until softened and charred in places.

Meanwhile, simmer the penne in a large pan of boiling salted water for 11 minutes, then drain, reserving a cupful of cooking water. In a small bowl, combine the cream and lemon zest.

Remove the pan of sprouts from the heat and pour in the cream. Add the drained pasta and toss everything together with a splash of cooking water until evenly coated. Serve immediately with a sprinkle of grated pecorino, if liked.
MACARONI & CAULIFLOWER CHEESE Preparation time: 10 minutes, plus cooling Cooking time: 30 minutes Serves: 4-6 Ingredients: 1 small cauliflower 150g cherry vine tomatoes 1 tbsp olive oil 200g macaroni 2 x 180g packs pecorino & cracked black pepper drizzle 2 tbsp finely grated pecorino

Preheat the oven to 200˚C, gas mark 6. Trim the base of the cauliflower, halve, then cut out the thick core and chop into small florets (about 500g prepared weight), keeping any tender leaves. Toss the florets and leaves in a bowl with the tomatoes and oil. Season and spread out on a parchment-lined baking tray; roast for 15 minutes.

Meanwhile, simmer the macaroni in a pan of boiling salted water for 4 minutes; drain, then toss in a bowl with the 2 packs of pecorino drizzle. Stir through the cauliflower florets and leaves (leave the tomatoes on the tray) and tip ½ into an ovenproof baking dish (about 1 litre in volume). Scatter over ½ the grated pecorino, then tip in the remaining cauliflower. Scatter the tomatoes and remaining pecorino over the top.

Bake for 15 minutes until golden. Cool for 5 minutes before serving with a green salad, if liked.

MEATBALLS WITH TOMATO & MASCARPONE Preparation time: 10 minutes Cooking time: 30 minutes Serves: 4 Ingredients: ½ tbsp olive oil 300g pack reduced fat British beef meatballs 200g pack swiss chard 3 garlic cloves, crushed 680g bottle Cirio passata rustica 2 oregano sprigs 2 tbsp mascarpone Pasta to serve

Preheat the oven to 180˚C, gas mark 4. Heat the oil in a large ovenproof casserole dish, sauté pan or frying pan over a high heat. Add the meatballs, season and fry for 5 minutes until browned all over. Meanwhile, strip the chard leaves from the stalks.

Finely slice the chard stalks and add to the pan with the garlic; fry for a minute. Pour in the passata, add the oregano sprigs, then season (you may want to add a pinch of sugar too). Transfer the uncovered pan to the oven for 15 minutes.

Remove the pan from the oven and stir in the mascarpone. Tear the chard leaves into large strips and stir into the sauce. Return the pan to the oven for 5 minutes, then serve with a pasta of your choice.

For an on-the-go breakfast or afternoon snack, these autumn bakes are the ultimate sweet treat.
GRAPE & ALMOND LOAF Serves: 8-10 Ingredients: 175g unsalted butter, softened, plus extra for greasing 150g caster sugar 3 free range eggs Few drops Cooks’ Ingredients French Almond Natural Extract 150g self-raising flour ½ tsp fine salt 100g ground almonds Topping: 75g seedless vitoria grapes, halved 90-100g icing sugar Method: Preheat the oven to 160°C, gas mark 3. Grease and line a 900g loaf tin with baking parchment. In a large mixing bowl, use electric beaters to cream the butter and caster sugar for 3-4 minutes, until light and fluffy.
Beat in the eggs one at a time, then beat in the almond extract. In a separate bowl, combine the flour, salt and almonds, then fold into the wet ingredients until combined. Stir through the grapes, then spoon the mixture into the loaf tin, levelling the top. Bake for 1 hour-1 hour 10 minutes, or until a skewer inserted into the centre comes out clean. Cool in the tin for 20 minutes, then carefully transfer to a wire rack. As soon as the cake is on the wire rack, place the halved grapes in a small roasting tin with 2 tbsp water. Roast in the oven for 20 minutes, until soft but still just holding their shape, then remove and lift the grapes onto a plate. Add another 1 tbsp water to the roasting tin and scrape up the inky grape juices with a wooden spoon. Adding a little at a time, stir in the icing sugar with a wooden spoon until you have a spoonable icing. Spoon over the cake and top with the roasted grapes. Cool completely before serving.
BAKED PEAR, ALMOND & OAT SQUARES Makes: 16 Ingredients: 250g porridge oats 100g ground almonds 1½ tsp baking powder 1 tsp ground cinnamon ¼ tsp fine salt 50g soft dried apricots, roughly chopped 350ml Alpro oat unsweetened drink 1 free range egg, beaten 2 ripe bananas, mashed 3 tbsp maple syrup ¼ tsp almond extract 2 conference pears Method: Preheat the oven to 200°C, gas mark 6. Line a 21cm square cake tin with parchment. Mix the oats, ground almonds, baking powder, cinnamon, salt and apricots in a large mixing bowl. In a jug, whisk together the Alpro oat drink, egg, mashed bananas, maple syrup and almond extract. Pour the oat drink mixture into the bowl of dry ingredients. Peel, halve and core both pears. Cut 1 pear into 1cm dice and stir through the mixture. Tip the mixture into the cake tin, smoothing the top. Slice the other pear and scatter over the top. Bake for 45 minutes, then cool completely before cutting into squares. URBAN FOX SEPTEMBER 2019 21

Plant bulbs in preparation for spring. As a rule of thumb, plant them 2-3 times the bulb’s depth and 2 bulb’s width apart.
Here’s my top tips for getting your garden winter ready…

Refresh your boarders with a palette of autumnal shades. Look for species including Rudbeckia, Helenium, Dahlias, and Yarrow.

Clear fading hanging baskets and summer containers to prepare for winter bedding. Pansies, Violas, Primroses or Primulas will make a colourful display.

Add interest to containers. Try an arrangement of Heucheras, small ornamental grasses such as Carex Aure, Purple Sage, or an ornamental cabbage which changes colour in winter.

This is the ideal time to plant trees and shrubs as they require less watering and can establish before the frosts.

The harvest should be in full sway with apples, pears and plums to enjoy. Use to make jams, chutneys, crumbles and pies.

Move containers to a more sheltered spot and ensure terracotta pots are raised on pot feet so they aren’t cracked by the frosts.

Tidy beds but leave seed heads to provide food and shelter for wildlife.

Prune rambling and climbing roses and tie to supports and cut hedges now the nesting season is over.

When someone goes out of their way to express their appreciation, instead of mumbling your shortcomings, simply try saying “thank you for noticing”. You’ll have acknowledged, without being the slightest bit boastful, that you know or do something particularly well. It gets easier, trust us.
Learn to ask
You don’t need to know everything. Successful people surround themselves with others who know more than they do. And they ask. A lot! So, ask for advice or help and ask your boss how s/he got to where they are. Then go for
that promotion, even if you can’t do all of the job right now.
Claim due credit
If someone in the team always takes credit for a joint effort, speak up. If you were part of the success, it’s OK to say so. Ensure your input, whether it was your vision, expertise or organisational skills, is recorded in your performance plan. Your success will make your boss/team look good too.
Stop apologising
There are definitely times when a sorry is necessary, but not just because you have something to say. And definitely not at the start of every sentence. Remember, you’re not the only one suffering imposter syndrome. So, feel the fear and...

FIRST... As a parent it’s tempting to want to shield your child from life’s falls; but allowing your child the opportunity to experience failure will build their resilience and make them more likely to succeed in the future, says Margaret Kewell, Headmistress at Grace Dieu Manor School.
FUTURE PROOFING
Today’s children will be entering a world that will be very different – so their education needs to prepare them for their future. While academic capability and the ability to pass exams will always be important, it’s no longer the defining factor for success. Children today will need to have the resilience and confidence (the ability to be ‘fallproof’) to be able to adapt to changing employment patterns in the future. This is critical given that the World Economic Forum suggests that 65% of children entering primary school today will ultimately end up working in completely new job types that don’t yet exist.
COURAGE TO CONTINUE
Churchill’s famous quote, that ‘success is not final, failure is not fatal: it is the courage to continue that counts’, is popular because it’s pertinent. Children need to learn to fail – to get things wrong - and then to want and be able to try again to get it right. This begins at an early age – from Nursery-aged children and particularly in the Early Years of school.
Being encouraged to keep trying until they succeed is critical. Having supportive teachers who have the time to dedicate to ensuring this happens for each and every child is key.
The more opportunities your child has to fall or fail at something, the more resilient and confident they will become. At home you can give your children the ‘courage to continue’ by stepping back – it’s counterintuitive as a parent, but it’s vitally important. Think of yourself as their cheerleader, celebrating and motivating them to the ‘touchline’ – to complete the task they are doing. Perhaps try to remember to keep your hands busy with your
imaginary cheerleading pom-poms – so that you don’t step in and take over and instead allow them the time and space to complete their own task!
OPPORTUNITIES TO FALL
The more opportunities your child has to fall or fail at something, the more resilient and confident they will become. Sport, Music and Drama are all incredibly useful activities to take part in to build these skills. Opportunities to regularly engage in a variety of matches from a young age – from Rugby to Hockey, or Netball to Football – is character building as it helps pupils to learn how to win and lose. The challenge of learning musical instruments or performing in front of an audience also builds resilience and confidence. Of course, being in a safe, friendly and secure environment is essential so your child will happily ‘have a go’ and so begin to lay the foundations for their future success. Then there’s her marriage to Green Lantern co-star and regular contender for the title of Hollywood’s ‘Mr Popular’, Ryan Reynolds, with whom she has two children, and a third on the way. On the face of it, Lively is the epitome of a red carpet regular – stylish, beautiful, assured, and talented, not to mention just one fifth of an acting family that includes her brothers, sisters, half-brother and father. Which makes her early struggles with self-confidence both surprising and somewhat a little reassuring for the rest of us. "I was kind of quiet and shy growing up," the 31-year-old admits. "I had problems in high school with some of the other girls and because I was tall, I felt insecure about standing out in a crowd when I really just wanted to disappear and be alone. I was kind of withdrawn, and I spent a lot of time by myself and lost in my own thoughts." In spite of her anxiety, the Los Angeles-born star could rely on a well-spring of positivity that still seems to emanate from her today. “I get that from my mother,” she nods. “She would always tell me and my sister: ‘Where there's a will, there's a way!’ That's pretty much served as my personal mantra when things get complicated in life and you want to feel sorry for yourself. I try not to let myself go
there because it doesn't do you any good anyway and that's the time when you need to energise yourself even more rather than mope around. I'm usually in pretty good spirits and I like to think I bring a positive mood to the people around me.”
The obvious benefits of being one-half of a Hollywood supercouple aside, however, Lively is under no illusions when it comes to being a mother to her growing family: daughters James and Inez, and – as of May this year – another baby arriving soon.
There’s no clearer sign, perhaps, of this outlook than the 2011 comic-book caper Green Lantern, which bombed spectacularly at the box office but left Lively with a silver lining in the form of Canadian leading man Ryan Reynolds.
“Wherever we go in the world on our adventure together our family is our first priority,” she nods.
“It's been wonderful,” she says of the pair’s seven-yearmarriage. “We like doing everything together. He loves helping me choose things for the house, he's interested in all types of cuisine, and he says he loves everything I cook for him - he's such a good liar! We help each other when we're preparing our characters for a new film. It's great to be partners like that with someone you love.
"I'm usually in pretty good spirits and I like to think I bring a positive mood to the people around me." Ryan makes me feel very strong and independent. He's someone who has a great spirit and we have a very healthy relationship which is both very profound and also very light-hearted. And we also have that kind of mutual trust and respect which is the basis of every good partnership.”
“I'm very lucky that Ryan is a very devoted father and shares all the domestic responsibilities with me. We never work at the same time, either. I was with him in Vancouver while he was shooting Deadpool 2, and I was looking after the kids during the day and he would take care of the kids while I've been working on my films.” Having such stability in the family home has other benefits as well. Though she’s proud of her happygo-lucky attitude to life, Lively has of late sought darker challenges on-screen, from The Shallows, to the mystery-bound A Simple Favor, and the upcoming The Rhythm Section, an international spy flick also starring Jude Law. “That’s what I love about acting,” she smiles. “I get to project myself into all these dark spaces and indulge in a lot of heavy psychological states. It helps me get to understand myself better and not just stay in my comfortable little world. I’m a pretty happy person but it’s much more interesting to play tormented women who have to struggle in life. I feel that every time I finish a film, I’ve become a stronger person. Pushing yourself to the maximum leaves you feeling much more confident and less fearful.”

LEARN The holiday madness is over, and the kids are back in class. So why not follow their example and learn something new, says Kirsty France. At this time of year, it’s easy to feel that summer is over and there’s nothing to look forward to until Christmas. One of the best ways to give yourself a lift is to try something new. Here’s some great ways to learn, have fun or simply grab some elusive ‘me time’.
GET ACTIVE
Is there a sport or activity that you’ve always wanted to try? If you’d love to swing a tennis racket or golf club to see if you like it, a weekend break gives you the perfect opportunity. You won’t have to invest in loads of kit, plus you’ll be getting expert tuition with other beginners. Or maybe there’s a sport that you use to play pre-kids that you’d love to get back to, or perhaps you love rambling but no-one else in the family does. Take yourself off for a weekend and indulge in your activity with other people who love it too. Best of all, you can find suitable breaks almost anywhere in the world, from golf in
Scotland, to yoga in France. So, what’s holding you back?
MASTER A SKILL
A weekend activity break doesn’t have to be about hiking up mountains. It can be an opportunity to focus on developing a new skill. That could be anything from a writing retreat in Devon, to cookery classes in London or watercolour painting in Italy. There’s such a wide range of courses that choosing a destination can be tricky, although there might be a destination that’s particularly suited to the skill you’d like to develop. St Ives in Cornwall is a mecca for painters as the light is amazing, plus you can visit Tate St Ives while you’re there. Think about what you’d like to get out of your weekend too. Do you want two solid days of quiet reflection in the countryside or a day of learning with an urban adventure in the evening? Whatever you choose there’s bound to be something to suit you.
LOOK AFTER YOURSELF
Wellbeing retreats are becoming increasingly popular as our lives get busier. Who wouldn’t welcome the opportunity to step off the world and be looked after? Of course, you could just book yourself into a spa for the weekend, have a few treatments and eat delicious food that you didn’t have to cook. I love the idea of a retreat that teaches me something I can use in my daily life. You could try a weekend boot camp for ideas about ways to exercise that don’t involve joining a gym. Perhaps you want to improve your diet so need something that focuses on healthy eating. Or maybe you just want space to work out what you do need because daily life doesn’t give you time to pause for breath! Wherever you go and whatever you do, I hope you come back home feeling refreshed.

“I feel rewarded when the people I've helped, tell me how much better they feel once they’re receiving correct treatment” says Tracey Witty, founder of B12deficiency.info I was born and brought up in Leicestershire, living for a brief spell in North Wales. I was lucky to grow up surrounded by woods and fields, so my childhood was spent climbing trees, building dens and fishing for sticklebacks. I loved my years at school. I was involved in a range of team sports including netball and hockey, as well as athletics and gymnastics. Although I did well in my exams, at 16 my dream was to travel. So, I left full-time education and spent a few years working in various roles to save money to travel, spending my summers in Europe and the USA. It was an eyeopening experience! At 24 I decided to go back into education, initially studying furniture design and making at Southfields College in Leicester and later traditional and modern upholstery at Basford Hall College in Nottingham. After completing my training, I worked on my own projects, having my upholstery work showcased in the Design Museum London and in lifestyle magazines. I later worked on exhibitions and in event management, before moving to a design agency
where I met my husband Damian. He’s a graphic designer and talented stone letter carver, so it wasn’t long before we decided to go it alone and set up our own design and marketing business. Then in 2012 I was diagnosed with vitamin B12 deficiency. B12 along with folate is essential for the production of red blood cells and aids in the maintenance of a healthy nervous system and immune system. 1 in 10 people in the UK are believed to be B12 deficient but the varied symptoms can make it difficult to diagnose. My own symptoms included memory loss, blurred vision and multiple early miscarriages, but other symptoms such as lack of energy, depression, tinnitus, can be generic and so B12 deficiency can be overlooked or misdiagnosed by GPs. Unfortunately, if B12 deficiency goes untreated, it can in some instances, lead to severe complications including permanent damage to the nervous system and cardiovascular events. In 2013 I decided to create a website as a hub for both patients and clinicians to access accurate and free information about B12 deficiency. Over the years the website has developed. I now offer a personalised

This can involve writing and speaking to GPs and attending appointments. I also educate health professionals on B12 deficiency, speak at events and conferences, blog, run pop up cafés and campaign for better treatment via my local MP. My ultimate goal is for people to be able to access B12 injections direct from a pharmacist, as they can in other European countries, in order that they can manage their own treatment.
