n the world of professional sport, rarely a week goes by without serious injury making the headlines. It is an occupational hazard which all competitors have to face, and pushing themselves to the limit can often see tournament dreams torn down, or worse, spell the end of their careers completely. leg For Chemmy Alcott, who broke her last training in 2009, and then again just August, it seemed that she might not return to the ski slopes. Whether you’re heading out for a romantic meal with the hubby or a hot date with the new man in your life, Valentine’s Day is the perfect opportunity to add a little glamour. This month makeup guru Sheelagh Powell shares her ideas on how to update your look
Sexy Romantic The key to keeping your look soft is to use sheer, understated colours and avoid overdoing any one area of your face. There are lots of sheer, beautiful pinks available that look wonderful on all skin tones. If you buy only one new product, make it a pink lip gloss or blusher. This shade is fresh and youthful and looks great on everyone. I love Max Factor’s ‘Miracle Touch’ blush in Soft Pink. This can double up as a lip colour too, perfect!
It’s all about the eyes! It’s time to vamp it up and put all your focus into this area. False lashes are a great way to enhance the eyes and draw more attention to them. I think strip lashes are the easiest to apply to yourself. I always use Eylure lashes. Here’s how: • Do your eye makeup and pencil eye liner before applying strip lashes. Use the pencil eye liner as a guide. • Pop some glue along the ‘spine’ of the strip lash and wait about 30-60 seconds to allow the glue become tacky - this will help with the application. • Then using some tweezers guide the lashes along your lash line, as close as you can get to the eye. • Press gently into place to secure. Open the eye carefully and make any adjustments with the eyes open. • Be careful not to use too much glue. If you have never worn lashes before, I would always recommend doing a patch test of the glue beforehand, ideally 24 hours before.
• Once you’re happy with the placement, use liquid eye liner along the upper eye line to blend the false lashes. This will also help conceal the ‘spine’ of the lashes. • Finish your eye makeup with a coat of black mascara - try Benefit BadGal Waterproof Mascara - and voila! Ultimately, try and have fun with whatever look you choose. I’m sure the extra effort won’t go unnoticed by your significant other. URBAN FOX FEBRUARY 2014 15

THE BOB 2014 sees ‘the bob’ making a comeback in a big way! Whether it’s smooth and flawless or textured and lived-in there’s a bob for everyone. From jaw to shoulder length, the bob will be all over the catwalk and many celebrities will be going for the chop! A great way to ‘try before you buy’ is to ask your stylist to give you a pin-up cut á la Emma Watson; this way your long locks can be pinned into place to give the illusion of short hair before you take the plunge. This can also work really well if you would like to try a fringe before the scissors go anywhere near your hair.
For those of you that cannot part with your long locks the middle parting is the only way to wear your hair this season. A style preferred by our favourite The Voice judge, Kylie. Wear it straight with intense shine or with mermaid waves. The waves should be as random as possible; try sleeping in large plaits to create this look.
THE COLOUR 2014 sees hair colour come into its own. Brunettes, your colour specialist will be working with a very organic palette of 3 or 4 tones, skilfully blended together for a multi-tonal look and giving the hair an expensive cashmere feel. With primary colours all over the spring catwalk your colourist will perhaps suggest a more avant-garde hue. Fashion Police’s Kelly Osbourne knows how to rock colour. Finally ‘ombre’ is here for another summer. Simply change the hue on the lighter parts of the hair with a toner. It’s quick, inexpensive and a great way to update your look for the coming season. A herniated or ‘slipped’ disc is an all too familiar condition and amongst the most debilitating of back pain problems. We spoke to back pain expert, Craig Mortimer from The Ashleigh Clinic, Stoneygate for some advice on how to treat a ‘slipped’ disc.

The spine has 24 individual bones (vertebrae) stacked on top of each other. Discs are the protective pads of connective tissue in between - the ‘padding’- which protects the spine when we run or jump.
Disc problems can cause other symptoms - most commonly, sciatica - a grinding or shooting pain which travels down the length of the leg. Neck pain, headaches, pins and needles or numbness in the arms or feet can also be a sign of a damaged disc. So, what are your options for treatment?

Without knowing it, every day we cause small weaknesses in our spine with prolonged sitting or standing in certain positions - at workstations or hunched over the ironing board for example. If a weakness develops or we move awkwardly, it’s possible to rupture the outer casing of the disc and the gel
Your first stop should be a good physiotherapist, osteopath or chiropractor with experience in disc-related problems. Your GP can prescribe you painkillers and/or antiinflammatory medicines which can be taken alongside treatment.

If you’re no better after eight weeks of manual therapy, it’s advisable to get an MRI scan to confirm the level of damage to the disc(s). Before considering invasive treatments e.g. spinal injections or surgery, you have the option of a non-surgical treatment programme called Intervertebral Differential Dynamics (IDD) Therapy.
IDD Therapy uses gentle pulling forces to draw apart specific spinal segments where discs are damaged or herniated (bulging), taking pressure off targeted discs and any trapped nerves. Patients receive a structured programme of regular IDD Therapy sessions, allowing the body to adapt to treatment whilst progressively relieving pain and improving mobility. For longterm sufferers, a series of treatments is needed to achieve long-lasting therapeutic changes.
“I know of patients who have been booked in for an operation and have tried IDD Therapy as a last resort and are now pain-free and active again.” The programme has been particularly effective for patients with herniated discs and sciatica - including lumbarsurgery candidates. The IDD outcomes are impressive: UK clinicians report a significant improvement in 70-80% of patients. In severe cases, where the damage to a disc is excessive (or where bowel or bladder function is affected - in which case, emergency surgery may be necessary) you may need to visit a spinal surgeon; however, with the associated risks of surgery, an operation to repair or remove a disc should always be a last resort. Quinoa
Quinoa is a gluten free grain that can be found in supermarkets. Less common than rice and pasta but it is much more powerful. It contains more protein than any other grain and is packed with high levels of energy boosting nutrients. Quinoa is a great replacement for wheat or refined carbohydrates and the linked health benefits are endless.

Eggs
It may be true that eggs are relatively high in fat but they are also a low calorie source of high quality protein and full of essential amino acids and vitamins, all of which help us feel full for longer and boost our energy levels.

Iron Rich Foods
Certain nutrients especially iron, may help women feel more energized. Nearly 10% of women between the ages of 20 and 49 are iron deficient, which can cause fatigue. Iron is needed to deliver oxygen to cells, and too little has also been shown to decrease immunity. By ensuring that you are eating plenty of iron rich foods in your diet - spinach, lentils, beans, red meat, fish - you will start to feel the difference in energy levels.

Nuts
Nuts can be high in calories due to their fat content (mostly good fats) but they are packed full of goodness and are a great addition to your diet. Different nuts have different qualities and benefits. Cashews, almonds and hazelnuts are high in magnesium which plays a key role in converting sugar to energy. SLOW DOWN
When we’re absorbed in our everyday lives – work, family commitments etc. - it’s rare that we take the time to stop and reflect on what we truly want from life. If we slow down, we often find the answers we’ve been looking for, e.g. I want a new job, I’m unhappy in my relationship, I need to take more time out for myself.

LIST TALENTS
No one else has your unique blend of talents, strengths, skills and creativity; so make a list of what you’re good at, or things that other people have complimented you on - listening or cooking skills, flair for interior design or photography. Then remove from the list anything you’re good at but don’t really enjoy doing. You might be good at it but it’s not going to be your passion.

Now that you’ve gotten this far, the next step is to stop talking and take action. That could mean writing a short story, becoming a volunteer, learning to play a musical instrument, or just somehow engaging in an activity you love. The important thing is that you take time out to do it!

CHALLENGE YOURSELF
It’s easy to fall into the trap of creating self-limiting prophecies – “I’m not good enough”; “I don’t deserve to be happy” etc. Before you move onto step 3, create new prophecies that are grounded in confidence and courage – “I want and deserve more from life”, “I am willing to challenge and change my life”.

Originally set to come out last year in the US, the film was continually pushed back (never a good sign) finally settling on a February release - a date outside the traditional awards corridor.
What a welcome relief then that The Monuments Men turns out to be an exciting, good old-fashioned boys own adventure yarn, with the middle-aged cast gamely rolling back the years to throw themselves into the action. It may be slightly overlong at 2hrs and suffers from a slightly saggy middle - dare we say like certain members of the cast - but we’re willing to forgive these small issues in what is an engrossing tale of real-life heroism and daring-do.

n the world of professional sport, rarely a week goes by without serious injury making the headlines. It is an occupational hazard which all competitors have to face, and pushing themselves to the limit can often see tournament dreams torn down, or worse, spell the end of their careers completely. For Chemmy Alcott, who broke her leg training in 2009, and then again just last August, it seemed that she might not return to the ski slopes. However, with the kind of determination and passion which gets any professional athlete to the top, Chemmy is not letting any setback force her out of skiing just yet. Back in training, she is focused on preparing for the Russian Winter Olympics, making sure that her body can take the rigorous test of Sochi’s slopes.
“I’ve put in so much hard work that, in the end, I am not going to let a little leg break stand in my way!” After breaking that leg more than once, you wonder how it must feel to nearly recover, then suffer the same injury with her next major tournament just days away.
“That was brutal after everything I’ve been through. I was like… how many more times do I have to prove I am a fighter?! I’ve had to push myself really hard to see what I can take. I am having to fast-track this, not just because it is my last Olympics but because I need to know I can do this. I need the time to prove it, I need the coaches to see that I can compete. And I am getting that feeling back!” Alcott is certainly a testament to mind over matter. Staying positive and setting her sights on her competing again, she confirms that much of her mantra centres on confidence and belief in your ability. “Skiing is a hugely mental sport. I can go in the gym and lift more and work harder but that doesn’t mean I am a better skier. To have that edge, you have to be prepared to push yourself to the limit. That makes a huge difference. Early on in my career I wasn’t the best technical skier, but I was hugely confident, and I was able to pull out some great results because of that. So much is in the mind.”

At the heart of it, of course, skiing is a sport obsessive about speed. It is a competition in which pushing harder and closer to the brink of what is possible can yield huge rewards, but that comes accompanied with massive risk. She does admit that ultimately, the decision rests with the skier. “You are outdoors, you are in control and you can choose how fast you go. Dinner for two Creating a Valentine’s Day meal has to rank as one of the most daunting culinary tasks. This month we asked three local chefs for their recipe ideas to help you plan a stress-free romantic dinner
PAN-SEARED SCALLOPS, SMOKED BACON CRISP & CAULIFLOWER PUREE by Jay McCree-Falconer, Sous Chef at Quorn Grange Hotel, Quorn
Ingredients For a single portion: 3 plump king scallops 1 smoked bacon rasher 4 cauliflower florets 1 sprig of thyme 1 bay leaf 200ml milk 100 ml double cream seasalt & ground black pepper frisee & red amaranth salad leaves
Method Scallops: Take your king scallops, dry them fully and sear them in a hot pan until golden on the top and the bottom and garnish with seasalt and ground black pepper. Smoked Bacon Crisp: Place the rasher of smoked bacon on a baking tray lined with parchment, place another piece of parchment on top and weigh down with another baking tray (to ensure the bacon is very flat). Cook in a pre-heated oven at 160°C for 15 minutes. Cauliflower Puree: Take 4 florets of cauliflower and place in a saucepan. Cover the cauliflower with the milk and cream, and add the bay leaf and sprig of thyme. Cook for approximately 2-3 minutes until the cauliflower is cooked (softening). Remove the herbs and then puree until smooth. To prevent any lumps, pass through a fine sieve. To serve put a swirl of the puree onto a plate, place the scallops on top of the puree and then place the bacon crisp over the top. Garnish with the frisee and red amarinth leaves.

Ingredients For 4 portions: Filling 900g lean stewing beef, trimmed, cut into rough 3cm cubes 2-3 tbsp oil 3 long shallots, roughly quartered 2 garlic cloves, finely chopped 125g rindless, streaky smoked bacon rashers, cut into 1cm strips 1 tbsp roughly chopped thyme leaves 2 bay leaves 330ml stout 400ml beef stock (can be made with one stock cube) sea salt and freshly ground black pepper 2 tbsp cornflour, blended with 2 tbsp water to make a smooth paste 8 oysters, freshly shucked Pastry 400g plain flour ¼ tsp salt 250g butter, frozen for 2 hours minimum 1 free-range egg, beaten, to glaze

• I ncrease oven temperature to 200°C.
•P reheat oven to 180°C.
•P lace the flour and salt into a large bowl. Grate the butter and stir into the flour in three batches. Gradually add 325ml of cold water – you may not need it all – stir with a round-bladed knife until the mixture comes together. Knead pastry into light ball on a lightly floured surface. Set aside 250g for the pie lid.
•S eason beef cubes with salt and black pepper. Heat a tbsp of oil in a frying pan and fry the meat in three batches over a high heat until browned. Transfer to a large flameproof casserole dish. • I n the same pan, add another tbsp of oil and cook shallots for 4-5 mins; add garlic and fry for a further 30 seconds. Add bacon and fry until lightly browned, then transfer mixture to the casserole dish and add herbs. •P our the stout into the frying pan and bring to the boil while stirring. Pour over the beef and add stock. Cover dish and place in the oven for 1½-2 hours, or until beef is tender and sauce has reduced. •S kim surface fat, taste, add seasoning if necessary and stir in the cornflour paste. Put dish onto the hob and simmer for 1-2 minutes, stirring until thickened - leave to cool.
CHILLED DARK CHOCOLATE FONDANT by Fraser McDonald, Head Chef at Hothorpe Hall, Theddingworth
•R oll remaining pastry until 2cm larger than your pie dish. Line dish with pastry; add filling and tuck-in oysters. Brush the edge of the pastry with a beaten egg. •R oll the pastry you previously set aside until slightly larger than your dish. Lift over the filling, pressing the edges firmly and trim with a sharp knife. Brush with beaten egg to glaze. •B ake for 25-30 minutes, or until the pastry is golden-brown and the filling is bubbling. •S erve with your choice of fresh vegetables.
Ingredients For 8 portions: Fondant: 400g dark chocolate (70% cocoa) 4 egg yolks 400ml double cream 50g caster sugar 2 egg whites
Base: 250g amaretti biscuit 50g unsalted butter, melted Salted caramel cream: 250ml double cream 150g soft brown sugar 100g unsalted butter 10g Maldon sea salt
Method Fondant: • Gently melt chocolate by heating gently over a bain marie. Whisk the egg whites until a soft peak forms. Heat the double cream until just under boiling point. Whilst the cream is heating, whisk the egg yolks and sugar until pale and forms ribbons. • Pour the hot cream into the egg yolks slowly so as not to scramble the eggs, and whisk until well mixed. Then gently fold in the egg whites, to retain as much air as possible to keep the fondant light. Base: • Crush the biscuit until breadcrumbs; add to the melted butter and stir until well mixed together. Equally divide the biscuit mixture between 8 dessert rings. Press the mixture down into each ring until firm before pouring the chocolate mixture on top of each biscuit base. Chill in the fridge for at least 4 hours, until set. Salted caramel cream: •A dd half the double cream, all the sugar and the unsalted butter to a pan. Gently heat, and stir until the sugar’s dissolved, the butter’s melted and all is combined together to make a caramel sauce. Stir in the salt and allow the mixture to cool. •W hisk the other half of the double cream until a soft peak forms; then gently fold the caramel sauce into the cream. •T o serve, remove the chocolate fondant from the ring and serve with a quenelle of salted caramel cream. At Hothorpe we also add a scoop of our delicious homemade cherry ice cream.

When you first start working from home if you do not have a ground-floor separate study space, think carefully about which room to use. You may consider setting up in an obvious place such as a spare bedroom, which might be your only option inside your home, but there could be a better place. For example if you rarely use your dining room or formal living room, consider setting up shop in one of those rooms. Whichever room you choose, aid productivity by making sure it’s clean, bright and uncluttered.

A recent survey suggests that we function better if we work from an outside office i.e. a converted outbuilding or a purpose built garden house. The latter can be costly but very beneficial for your working environment and efficiency and can also add value to the property. Colour
Although the colour you choose for the walls is important, there is no real right or wrong colour. It all depends on your taste and also your profession - blue for concentration; yellow for creativity etc. However if you are really unsure go for green, as it’s both calming and balancing. You might decide to opt for wallpaper instead. If you do, keep it plain but lightly textured, in a muted tone.

Tips from the
POTTING SHED This month’s tips are courtesy of Mark Goddard of Coles Plant Centre
I love the idea of growing my own veg, but could use some advice on when to start, how much space is required and what I could grow? ‘Grow Your Own’ produce pretty much runs throughout the growing season, starting with Seed Potatoes in January. Good garden retailers will stock in excess of 40 varieties including First Early, Second Early, Main Crop and Salad Potatoes. Onion sets, Shallots and Garlic cloves are available from seed in an abundance of varieties and are ready for sowing from now, right through the year. Another convenient option from March onwards are various spring vegetables; Cabbages, Lettuce, Runner beans, French beans, Peas, Carrots, Beetroot, Leeks and many
more! Starting slightly later are Tomatoes, Cucumbers, Peppers (red, yellow and green), Chilli peppers, Aubergines, Squash, Courgettes, Asparagus, and Grafted tomatoes. The list goes on! If space is an issue then why not try something a little different such as growing mixed Lettuce leaves in a pot? They’re available either ready mixed or you can make your own arrangement using anything from large leaves to cut leaves in greens, purples or reds. On the subject of leaf interest, why not consider incorporating some herbs; there are all sorts of wonderfully scented and colourful varieties available.
I received a lovely Camellia for Christmas, but have no space for it in the garden. Will it grow in a pot on my patio?

Camellia will grow very nicely in a pot, as long as they are given the correct care and attention. Try to avoid an east facing aspect if possible, as the early morning sun can sometimes shock the flower buds when frosted, causing blooms to fail. Camellia are acid loving plants, therefore when planting be sure to choose the correct compost; an Ericaceous compost or better still a
‘John Innes’ Ericaceous are ideal and very easy to find. Keep the plants moist at all times but be careful not to overwater (if you can water with rainwater rather than tap-water, as mains can have a rather high calcium content). For easy feeding consider Controlled Release Pellets; these will feed the plants throughout the growing season, with no further care needed. URBAN FOX FEBRUARY 2014 45

OFFENCE With rising floods and winds all over the UK causing destruction, the garden often gets the brunt of the blustery weather. So this month we asked Aron Millergill, Advisor for Beddow Fence Team, for his tips on how we can limit the damage and costs to our garden fences
P
revention is always better than cure, so first check the condition of all your garden fences, posts and structures at the beginning of the winter; secure any loose joints and replace anything which is weakened or broken. Then treat wood with a good timber care product to enhance and protect the surface. If you’re thinking about replacing your fencing before the weather worsens some elements to consider are: • Use ‘pressure-treated timber’ which has been treated with an anti-rot preservative during manufacture, in order to protect it from the elements. • Look for panels that have wide capping and oversize rails, which minimises shrinkage and reduces summer panel rattle. • Invest in suitable posts. Heavier fence panels will benefit from the added strength of 100mm posts. • Ensure your posts are long enough to support the panels during high winds. Posts should be sunk at least 600mm into the ground. If you are erecting
panels over an uneven or sloping surface you may require longer posts in certain areas. • As an alternative to timber, use concrete posts and gravel boards. This prevents water wicking into the bottom of the wooden fence which reduces the panel life; and protects the base of the fence from damage from kicking or animals. • Ask what guarantee period is being offered. Some timber products are guaranteed for as long as 25 years. Although the upfront cost may appear more expensive, it may represent the lowest overall ‘lifetime’ cost. If the weather hits and you lose only part of your fence, before you replace just a single panel, look at the condition of the remaining posts. If they were all put in at the same time, they’ll have roughly the same life span. Therefore it might be prudent to replace all the fence rather than keep on replacing them as they break, potentially causing further damage each time. Don’t assume that storm damage to your fence will be covered by your home insurance policy. Many policies do not
pay out at all on damage to fences, sheds, hedges, garden walls and plants; whilst some only pay if damage to your home has occurred at the same time. Consequently protecting, maintaining and replacing your fences becomes all the more important. Finally if you’re unsure about repairs to or replacement of your fences, a fence specialist will be able to assess any damage and advise you on the work needed. URBAN FOX FEBRUARY 2014 47

Joanne Withers
The woman behind the camera talks to us about changing careers, her passion for photography and volunteering in Nicaragua Born in Widnes, Cheshire, I first came to Leicester in 1992 to study Textile & Knitwear Technology at De Montfort University. It was here I met my husband Damian and after college we decided to settle in Leicestershire. We love where we live but I do miss the North and still call it ‘home’. After university I worked as a designer for a babywear manufacturer in West Bromwich, followed by a career with Adams Childrenswear. I was promoted to a Buyer and had a fabulous time travelling to meet suppliers in countries including Turkey and Hong Kong. Travel was a great inspiration for my work both then and now.

Keen to start my own creative business I headed back to De Montfort University in 2004 to study Photography & Video. Apart from textiles, my other interest at college had been photography and so I made the commitment to change careers. After I qualified I went to work for Venture Portraits in Leicester but left in 2009 to run my own business ‘Nine Photos’. My passion for photography stems from the old suitcase of prints that my parents had. My mum bought me my first SLR camera when I was studying and it still sits at home in my office. It’s about memories for me with photography. I love being part of people’s special moments; creating our yearly albums and those old family prints still make me smile. I spent last year training with Aspire Photography Training who helped me uncover my own style. Favourite high street store: Anthropologie
My work is social and about me and my personal style. Clients want to know the person they are going to be spending time with. So last year I said goodbye to Nine Photos and have recently launched my new brand ‘Joanne Withers Photography’. Running your own business can be tough. I am always looking for ways to collaborate, whether for inspiration, personal recommendations or simply to learn new things. I loved working with Urban Fox last year and was delighted to win an award from The Guild of Photographers for one of the images taken for their ‘Grace of Monaco’ shoot. This year is huge for me! Apart from some amazing work projects, Damian and I have been approved as volunteers for sustainable development charity Raleigh International.
