Rockliffe Hall’s Raby Estate Venison Burger Served in Rockliffe Hall’s Brasserie restaurant, the Raby Estate venison burger is topped with grilled Cotherstone cheese and homemade mustard, encased in a delicious toasted bun and served with vine tomatoes, hand-cut chips and Durham Bourbon Stout braised onions; combining a variety of complementing flavours and showcasing some of Durham’s very best local ingredients.
Local Produce The venison in this dish is naturally produced on the lower Raby estate in Durham, ensuring only the highest quality, freshest meat is used within the venison burgers. Rockliffe’s chefs top their homemade burgers with Cotherstone cheese; a mild and creamy semi-hard cheese handmade on a nearby Teesdale Farm and homemade mustard. The burger is accompanied with home-grown succulent tomatoes and hand-cut chips; sourced locally, as well as a delicious serving of onions; braised slowly with Bourbon stout from Sonnet 43 Brewery in nearby Coxoe; this smooth full bodied stout has a sweetness created from the bourbon and the use of chocolate nibs during brewing; an excellent match to the rich flavours of the venison and sweetness of the tomatoes.

Charlie Hird’s Three Little Pigs Crispy pork belly, pulled pork shoulder and tenderloin served with an apple compote and thick cut chips.
Local Produce The pork used in the dish was farmed by 13 year old Charlie Hird of Burdon Village, who breeds and raises Saddleback and Gloucestershire Old Spot pigs, both rare breeds famed for their excellent flavour. The pigs are reared outdoors and are allowed to mature slowly which produces moist meat with a superior taste and texture.

Local Produce Teesdale Blue is making a debut at our restaurant to celebrate TasteDurham Month. Produced by Leaside Cheesemakers which was only set up a year ago in the Durham Dales, it is already making its mark in the foodie world. Not least it has beaten stiff competition in its class from Cornwall, Leicester and Yorkshire and it was only one of two cheeses to be given a Prince of Wales Award for Outstanding Quality at the Great Yorkshire Show in 2013.

Teesdale Lead Miners Pasty Vegetable mix at one end, minted mushy peas at the other and lamb cooked in rosemary and garlic in the middle. Vegetarian option also available – mushrooms, leeks and peppers replace the lamb.
Local Produce In the lead mines of the Durham Dales in the late eighteenth century, the dense, folded pastry of a pasty would stay warm for several hours, and could easily be reheated on a shovel over a candle. Our pasty uses locally reared lamb and vegetables and is a strong link to Teesdale’s lead-mining heritage.

Beamish Fish and Chips Edwardian style fish and chips cooked in a coal-fired range and fried in beef dripping from Davy’s Coal Fired Fish and Chip Shop.
Local Produce Our fish is sourced from local suppliers and potatoes are grown in the fields around the museum; in true Edwardian style they are delivered to the fish and chip shop by horse and cart. Wash down your fish and chips with a bottle of Durham natural spring water, sourced from Leasingthorne Spring, three miles east of Bishop Auckland in the Vale of Durham.
