what to expect from this year’s programme

The Cúirt International Festival of Literature has fostered a passion for storytelling and literary expression for almost four decades now. Composed of a team dedicated to the preservation of writing and its sweeping catalogue of forms, Cúirt is one of Galway’s most beloved and introspective festivals. With a line-up that kindles the city’s love for literature, Cúirt reinstates the urgency of sharing stories that simultaneously act as a reflection of ourselves, and the gateway to one another.

We were delighted to speak with Manuela Moser, Cúirt’s new Festival Director about this year’s lineup, and the significance of Cúirt to Galway. Manuela offers her insight and keen observance into what she’s looking forward to in her first year with Cúirt. She has curated a programme that focuses on the universality of literature and the bond of writing that unites us. By assembling a lineup that is saturated with local and international talent, she’s bringing both intrigue and authenticity to Galway.

“Cúirt began 38 years ago as a poetry festival. In the following years it’s become bigger and bigger,” says Manuela. “Everyone is so joyful about the idea of bringing authors to the city, and being able to walk around Galway and meet authors that they know and love.” Since 1985, Cúirt has emphasised the intrinsic desire we have for personal expression through the arts. By facilitating a space for this in Galway, the rich culture that’s embedded within the city flourishes.

Manuela notes how eager she is for this year’s festival. The programme consists of six days of poetry, fiction, discussion and performance woven throughout the entire city. She’s delighted to have programmed writers who will resonate with many people in Galway, some wellknown and many of them new names.

05

The Saturday of the festival coincides with Earth Day, so with a conscious focus on the environment, she fuses activism and literature within the programme. “There’s a panel on nature writing and memoir, how those two things intertwine… There’s a festival swim with some readings down at Blackrock on Saturday morning. There’ll be some poetry readings, and then hopefully everyone will jump in the water.” Manuela’s ability to draw upon voices that inspire and encourage change in our world has helped her curate a vibrant programme that emphasises our ability to connect with the world around us, and each other.

Highlights announced by the festival include two former Laureates for Irish Fiction, Booker Prize-winner Anne Enright, and twice Costa Prize-winner, Sebastian Barry; Carmen Maria Machado, author of the Folio Prize-winning memoir In the Dream House; Max Porter; Tara Bergin; Donal Ryan; Vona Groarke; Manchán Magan and Colette Bryce. Along with these writers, the programme is filled with emerging talent from home and abroad.

Literature has proven to be abiding. Though everchanging in format and guise, the bare-bones of writing remains the same; it’s a chance to understand and be understood. Cúirt brings together these two essential elements of storytelling in one festival. “There are two sides to storytelling. There’s the writing of the story and the reading of the story,” says Manuela. “We are constantly finding new ways to tell stories and express ourselves and share our perspectives on the world with other people.” Galway has continued to embrace this festival and celebrate voices and stories yearning to be shared. In carefully curating a programme that delivers on this desire, Manuela Moser has set herself, and Galway, up for a brillant festival this April.

This year Aran Island Ferries celebrates 40 years in business. In that time they’ve welcomed thousands of eager adventurers, and continue to be the first step for people visiting the world famous Aran Islands. Speaking on this, Sales and Marketing Manager, Áine McLoughlin says; “We welcomed lots of Galwegians on their first trip to the Aran Islands last year and they were blown away by the amount of attractions to see and experiences to try. The feeling of sailing away from it all and enjoying Island life is an unforgettable adventure for our passengers.”

All-Aboard!

Step 1. Visit the Aran Island Ferries website at www.aranislandferries.com and get booking. Opt for the Galway City Docks departure at 9.30am and prepare yourself for the amazing adventure that awaits. Onboard, enjoy a warm Irish welcome and avail of tea, coffee, snacks and full bar facilities during the 40-minute journey. Use your time onboard to chat with staff and fellow voyagers, admire the views of Galway Bay and plan out your day ahead...

A Day’s Itinerary on Inis Mór

The largest of the Aran Islands, Inis Mór offers an authentic Irish island experience. Where the locals chat as Gaeilge and the landscape’s unspoilt beauty is breathtaking beyond belief. Whether you’re taking the island by foot, bicycle or pony and trap, there are plenty of sights to be explored, a warm welcome to be received and plenty of craic to be had.

Dún Aonghasa

This prehistoric World Heritage site should be on every island visitors’ to-see list. Poised atop the cliff’s edge just about 300 feet above the Atlantic, the site consists of a series of semi-circular stone walls enclosing an area of 50 metres. Not only will you enjoy an eclectic array of sights along the way, your end destination is like nothing you’ve ever seen before and we can assure you that the view from the top will fill your soul.

09

Poll na bPéist / The Wormhole

About 1.6km south of Dún Aonghasa, you’ll come across another spectacular attraction. Inis Mór’s Wormhole is a naturally formed rectangular limestone pool into which the sea splashes, creating quite the scene. We recommend waiting to see the waves crash directly into the Wormhole so that you can watch the mesmerising tiny waterfalls effect it creates.

Tí Joe Watty’s Bar & Restaurant

A visit to Inis Mór wouldn’t be complete without visiting the welcoming traditional Irish pub - Tí Joe Watty’s. Relax by the open fire with an Irish coffee or sit out with a pint of Guinness in their beer garden and bask in the island’s natural beauty. Featuring delicious food menus, a fully stocked bar, amazing hospitality and traditional live music sessions that are the stuff of legend, you are covered for ceoil, ól, bia agus craic!

Aran Island Camping & Glamping

If the option of staying the night appeals to you, Aran Island Camping & Glamping is an accommodation experience like no other. The luxury seaside site and eco-friendly campground is ideal for campers wanting to reconnect with nature and their premium solar-powered glamping lodges are perfect for groups, families or couples. Picture yourself waking up to the sunrise over the idyllic Frenchman’s beach and you’ll be booking your stay asap.

Homeward bound via The Cliffs of Moher

When your island meanderings have come to an end, the return journey will introduce you to the Cliffs of Moher from another level. From aboard the ferry, take in the scale of the cliff’s magnificent beauty and keep your eyes peeled and camera ready to snap shots of Ireland’s largest seabird colony, ‘An Branán Mór Sea Stack’ and the sea cave used in filming ‘Harry Potter & the Half Blood Prince’. Topping it all off you might also catch a glimpse of dolphins, seals and basking sharks along the route.

DREW, DONUTS & DIALYSIS

It’s been a long auld exciting, exhausting rocky road for Drew and Beth, I’ve always wanted to write about real people making a difference in Galway’s culinary scene. The struggles, not just getting a business off the ground but knowing you are waiting for someone to give you a kidney so you can sink your teeth into your dream. The same dream your parents had when they returned from America, in somewhat the same street with the same vibe in the most unique neighbourhoods known simply as the West. Let me introduce you to Drew and Beth from The Imperfect Bakery.

14
Photography by Ciarán MacChoncarraige

Q. First thing’s first, how’s the health? I feel we’ve all been holding our breath for the last few years.

A. I’m feeling much better now. My mom selflessly donated her kidney to me at the end of January. There were some high highs and very low lows in the few weeks following the operation and I’ve learned that recovery certainly isn’t a straight line but hopefully we’re going in the right direction now.

Q. Let’s talk about your Mom & Dad and growing up in the restaurant industry.

A. So, my parents own Scotty’s, the OG burger restaurant in Galway. They’ve been slinging burgers here for over 30 years now. They actually started out here down The West in my Grandad’s fruit & veg shop, Silke’s Fruit Market, where The Blue Teapot is now. The West holds a very special place in my heart as the three generations preceding me have been in business down here and I hope to eventually make that four.

Q. Now, you are only one half of The Imperfect Bakery, did you ever think that yourself and Beth would start something with such a cult following?

A. I mean we hoped we would, but it being a bakery was a big surprise! The bakery at the time was purely a product of Covid lockdowns. In March 2020, restaurants along with everything else closed and we were all told to work from home. As you know yourself, that’s a tall ask for hospitality workers, especially for someone as restless as myself.

We started selling some questionable loaves of sourdough and dodgy hot cross buns that Easter weekend and somehow sold out. We knew we needed something that was truly ours and after a few weeks of R&D, the Wonky was born. A Wonky is a type of donut we invented, the centre hole is offset to create textures in the donut which makes them unique to us. The bakery name then stemmed from that as we wanted to embrace our imperfections and essentially turned a weakness into a strength.

We worked ourselves to the bone, not something we take pride in looking back, but it was humbling to sell out week in and week out. I did all of the prep and baking, while Beth took care of literally everything else. The whole operation would have crumbled in a matter of days if it wasn’t for Beth!

15

Q. Are there any rules when it comes to donuts and is there anything that should absolutely not be put into a donut?

A. Everyone will have different preferences but at the end of the day it’s an edible vessel made of dough. Much like a sandwich, pizza or pastry – the possibilities are endless.

Q. So we’re making some Imperfect Bakery classics today and some new donuts. Can you tell me about them and where the inspiration came from?

A. We’ll start with one of our most popular donuts from back in the day, The Claddagh Cream. It is our classic Wonky filled with a fresh vanilla pastry cream and dipped in chocolate ganache. We then place a stencil on top and give a generous dusting of icing sugar to give that iconic Claddagh Ring on top. Another Galway inspired creation here are the Pump Lane Bucky Babógs, an ode to my scauldy youth. These are glazed babógs filled with a Buckfast crème diplomat and a chocolate drizzle.

Last but not least, we have Smooth as Silke, a tribute to my Grandad and where my family’s business began. This is a brioche donut filled with smooth white chocolate cremeux and topped Chantilly cream, fresh fruit and crumbled meringue.

Q. And finally, what’s the plan for the future?

A. Keep your eyes peeled, we’ll be back sooner than expected...

16

buckfast creme diplomat

buckfast pastry cream

400ml Milk

80ml Buckfast

70g Caster Sugar

Pinch of Salt

35g Cornflour

1 tsp Vanilla Extract

3 Egg Yolks

40g Unsalted Butter, softened

1. Bring Milk and Buckfast to a gentle simmer in a heavy based pot.

2. Meanwhile, whisk together all remaining ingredients (except for the Butter) until thick & smooth.

3. Pour ¼ of the heated Milk mixture into the Eggs to temper them - stir to incorporate.

4. Pour all of the Milk mixture back into the pot and whisk constantly over a low heat until the mixture thickens - for 1-2 minutes.

5. Remove from the heat and pass the mix through a strainer, if needed.

6. Whisk in the Butter at this stage until there are no streaks and then press a layer of cling film directly on to the custard to stop a skin from forming.

7. Leave to cool and then chill overnight.

buckfast chantilly cream

120ml Double Cream

25ml Buckfast

25ml Icing Sugar, sifted

1 tsp Vanilla Extract

Pinch of Salt

1. Put the bowl and whisk in the freezer for 10 minutes before making the recipe.

2. Place a damp cloth on the counter to secure the bowl when whisking.

3. Add all ingredients to the chilled bowl and whisk for 3-5 minutes until stiff peaks are achieved. (This is when the cream will stand up straight when the whisk is removed.)

To make the crème diplomat, remove the chilled pastry cream from the fridge and scrape it into a large bowl. Add in 1/3 of the cream and whisk them together to get a smooth mixture. Using a spatula, fold the remaining cream into the mix in stages. This is to ensure the mix retains its volume. Use immediately. (The mixture will keep for 3 days in the fridge albeit with a little less volume.)

LITTLE COLLINS

PUTTING DOWN ROOTS IN A BUDDING INDUSTRY

Husband and wife team, JP O’Brien and Íde Clancy, moved from Australia to Ireland in 2018 with an entrepreneurial spirit. Set in their mission to normalise cannabis and bring it into the home. Five years later, they are confident their goals are in sight.

Opening stores in Galway in 2018, Kilkenny in August 2020, and with a third on the way this April/ May in Dublin. JP and Íde have seen it all, including raids and seizures on both their stores and home, yet despite all adversities, their aim remains the same. JP says, “our mission was to come here and open a plant-based business that offered high-quality coffee, beautiful hemp tea and the best full-spectrum CBD products we could source or create - that’s what we’re still doing today.”

With regards to the near future, their focus lies very much with the new Dublin location. “The thing we’re most excited about at the moment is bringing this product to Dublin.” JP says, “having a family-friendly, positive and energetic space where people can come and get a taste for what the next step in the evolution of the CBD and cannabis industry in Ireland looks like.”

While they await the High Court’s decision on the future of the industry, JP and Íde remain confident in its success, as JP explains, “it hasn’t been easy and it continues to be challenging, however we’re hopeful that things are going to end up in the right place.”

Their customer’s loyal support and gratitude are a testament to all the difficulties the couple have overcome along the way. Íde explains, “if it wasn’t for that, we wouldn’t be here. We’re extremely grateful for the trust the Irish public has put in us to dispense these products to them.” JP continues, “We’ve heard amazing things about people using our house-made products, our buds, the CBD oil and that they are genuinely helping them.” Welcoming an increase in customers over 55 years old, it gives both JP and Íde hope for the future, “to see that demographic coming in with a curious, open outlook, that is the best thing for us. We have a lot of young people come through, but to see the older demographic embrace what is essentially ‘cannabis lite’, to us that says change is coming.”

this is how we roll...

This Is Galway has been on the go for nearly a decade now. In that time we have published dozens of magazines, written thousands of online articles and reached millions of people on social media. Yet, there is one particular piece of groundbreaking journalism that captured the hearts and minds of our readers like no other… The Galway Sausage Roll Review!! So, in anticipation of National Sausage Roll Day on June 5th, we decided it was time to update this guide and give it a well-deserved moment in the spotlight of our magazine. These updates followed extensive research and many tastings around Galway in order to ensure we were able to pick the very best - the sacrifices we make in the name of journalistic integrity…

20

Leroy’s Famous Sausage Roll

We can understand why this one is famous! Leroy’s Sausage Rolls have been served up to thousands of people all around Galway for more than five years, yet Leroy STILL gets neighbours and friends asking for the recipe or a few samples. While the exact recipe is still a secret, every element of this gorgeous creation has been tried and tested to ensure it is of the highest quality and tastes perfect.

This Leroy lad definitely doesn’t cheat with the meat and provides one of the best seasoned sausage rolls in town with plenty of filling and not too much pastry. Originally from London, Leroy spotted a small trend of gourmet sausage rolls starting up in his hometown, and a potential gap in the market across the Irish Sea. The results of this experiment are now available in all the Ground & Co locations, Mr Waffle in Newcastle and Delight in Renmore which means, wherever you are in Galway, there’s a sausage roll nearby to curb your cravings.

21

Blackrock Cottage

The newest roll on the block, but one that has already had a huge impact on our lives here at This Is Galway. You’ve probably heard about Blackrock Cottage’s breath-taking views, delicious pancakes, refreshing açaí bowls and more but we reckon the sight of these savoury delights coming out fresh from the oven could rival the iconic vista across Galway Bay. What makes the sausage roll at Blackrock Cottage really stand out is the layer of crumb across the top, resulting in a delicious medley of textures from the juicy meat, flaky pastry and crispy topping.

Wildlands

When you think of Wildlands adventure centre, just outside Moycullen, you can imagine the adrenaline rush of the various zip lines, high wires, climbing walls and obstacle courses. We get this same feeling every time we bite into their thrilling sausage rolls. Created and homemade by Mary in their stunning Olive Tree Kitchen, they are beautifully caramelised and sticky on the ends, with slightly spicy mustard oozing between the meat and the delightfully golden pastry. Mary tested out dozens of different mustards before landing on this particular one, so you know it’s going to be the best it can be. Mary is a veritable expert when it comes to all things baked and she told us that the secret to a beautifully golden crust is to egg wash twice, letting the first one soak in and applying a second right before they go into the oven. A genius at work!

22

The Lighthouse Café

This vegan roll is one of our favourites because it doesn’t try to imitate a traditional sausage roll; it champions plant-based ingredients, celebrating their unique flavour and texture. The “meat”, which is more like a paté, is an unctuous blend of mushroom and herbs that is just packed with umami flavour. Soft, smooth and moreish in the middle - charred and flavoursome on the outside - there’s a whole lot of flavour in the roll itself, and that’s before we even get to the sauce. The relish is a bright mixture of zingy fruit and tomato, perfectly cutting through the rich filling.

In Memoriam… Gone but not Forgotten

In the time since we first wrote our Galway Sausage Roll Review, the sausage roll landscape has changed and some of our favourite places have sadly disappeared. We felt it only right to honour their memory, as they laid the foundations for the stunning sausage scene we have today.

The beloved Marmalade Bakery on Middle Street used to make a behemoth of a sausage roll that was more akin to a meatloaf - perhaps our friends at Meltd, who now occupy this space, could attempt to bring this fallen hero back to life?

Gerona Deli & Café on Abbeygate was home to a very unique meatball-based sausage roll before it sadly closed down. You can now find Ger behind the counter at The Lane Wine & Cheese on Kirwan’s Lane, treating you to some of the finer things in life.

Abbeyglen Castle Hotel

Located a brisk 5 minute walk from Clifden town (and a leisurely 30 minute stroll home!) you’ll find a famous little castle that is probably as renowned as local-man Festus McDonnagh, the legendary All Ireland goat throwing champion.

Now, you’re probably asking yourself… Why haven’t I heard about this famous Castle on the Sky Road? Well, like many of the guests that began the evening sipping complimentary champagne and later that night found themselves in a piano bar singing along to Bohemian Rhapsody through to the

early hours of the next day, your memory of The Abbeyglen Castle may be a little blurry.

So let us refresh your memory… you’ll be greeted with - Complimentary Champagne, open turf fires, nightly sing-alongs in the piano bar, fine, locally sourced cuisine, and four poster beds, etc.

All of that aside, if we were to be completely honest with ourselves and yourself, they’re famous for their warm welcome and the craic! So book a night with them for as little as €99 pps and they’ll include dinner, bed & breakfast and all of the above.

Here, the Guinness is perfect, the craic is mighty and you’ll encounter some of the soundest people in the West. Sláinte! Synonymous with Clifden, this cosy bar was initially opened and established by The King Family; it has been under the management of another local clan, The Keoghs, since early 2022.

When you walk through its doors you will encounter its cosy snug section where, if you manage to nab a seat, you’ll feel like you’re perched in someone’s living room and won’t be long getting to know the person next to you. Tom Kings Bar prides itself on being an authentic local bar. What you get is a pub where the real local characters drink. Within minutes someone will want to know your story and tell you theirs, whether you want to hear it or not! The Guinness is glorious, the staff are friendly and the interiors are old school and traditional, with an open turf fire that blazes all year round.

Sightseeing Adventures

To see the full scope that Clifden has to offer, rent a bike from Clifden Bike Hire and off you go.

Sky Road: We’re sure you have already heard of Sky Road’s spectacular view but trust us when we say the stories don’t live up to the experience. Overlooking Clifden Bay, the route lies more than 150m above sea level so you’ll feel on cloud nine as you fly along on your bike. Just remember to bring a camera so you can capture some of these breathtaking sights.

Errislannan Loop: This short loop will bring you past Owenglen waterfall where you just might spot the odd salmon swimming upstream. You’ll also spot a signpost directing you to the landing point of the very first transatlantic flights from 1919, the Alcock & Brown Memorial. Not too far away lie the remains of the world’s very first transatlantic radio station -the Marconi Station- which was greatly damaged during the Irish War of Independence.

Cleggan Loop: The route will give you the opportunity to ascend Cleggan Head for optimum views all around.

Roundstone Loop: Offers a tranquil escape past beautiful bogland and the shores of Gurteen and Dog’s Bay.

A local favourite, Eyrephort Beach, provides an ideal escape against the backdrop of lapping waves. Perch on one of the surrounding stones and watch the tide roll in - you really won’t feel the time passing by. If history is your thing, check out the spectacular ruins of Clifden Castle which was owned by John D’Arcy. The romantic Gothic style castle is just one part of the legacy left by this family, who owned much of the west of Galway in the early 19th century.

While we can provide some insight into Clifden’s historical past, speak to the true experts - the locals. They’ve got all the best stories and have a knack for telling them so don’t be afraid to get that conversation going.

Meet culinary enthusiast: Rúibín’s Alice Jary

Life as a Head Chef began and has progressed, as a thing that is as natural as breathing. Award-winning Head Chef Alice Jary followed her love for delicious food from her family home right into the locally and nationally adored Rúibín, which she co-owns with her partner Richie Kennan.

The doors of Rúibín opened 4 years ago this July. While many things have changed and have had to change during this time, Alice and Richie are both still madly in love with the space. Adapting and improving all the time, Rúibín is a reflection of its team’s creativity and passion for great food. Required to accommodate restrictions and open a wine shop and deli, serve takeaway and outdoor seating. Whatever challenges the years brought, with Alice and Richie at the helm, they ensured that Rúibín overcame them all.

As Head Chef, Rúibín has provided an opportunity for Alice to try out new dishes, and introduce guests to her favourite flavours; “It’s complete creative control,” Alice explains. This freedom and her enjoyment in creating the daily menus has resulted in outstanding reviews. “It’s amazing. We have had more good reviews than I ever thought,” Alice says; “I just go to work everyday, enjoy my job, cook things I like to cook, work with people that I like to work with and then reviews come in on top of being that happy at work it’s a dream.” To ensure a balance of dishes across the appetising menu, Alice and her team in the kitchen considers all vegan and dietary requirements. This guarantees that everyone who visits Rúibín is well looked after and gets to enjoy the finest meals in Galway.

45
Photography by Julia Dunin courtesy Rúibín

An integral part of Rúibín is, of course, the team that work behind the scenes and front of house. When it’s time for a new menu - food, cocktail or wine - the whole gang gets involved to give their opinion and partake in some crucial tastings. Allowing everyone a chance to have an influence on the menu is one of Alice’s favourite things about Rúibín; “Everyone has their little stamp on the menu so it’s really nice. It is like a whole team project.”

The fun that comes from working alongside fellow culinary enthusiasts offers Alice another outlet for her creative juices. Alice explains it simply; “It’s nice to be able to work with other people who are really passionate about doing something different.” In recent years we’ve seen her teamed up with former colleague and good friend Tony Carelli of ‘Pasta a Casa’ for a special pop up evening, which sold out at an incredible speed. As well as this, through a local collaboration with Bierhaus in Galway’s Westend, they’ve created an annual tradition here in Galway with Stouthaus, pairing a classic Sunday Roast with a huge range of porter on tap. Taking place in December we highly recommend experiencing this at least once in your lifetime.

Alice’s love for her job and passion for cooking is recognised in every one of her achievements. A highlight of the last year was waking up to see herself named joint Chef of the Year alongside Christine Walsh by Katy McGuinness at Independent.ie. This recognition came as a surprise (that still hasn’t fully sunk in), and means the world to Alice, who has always done in her career what felt natural; “To be recognised to be someone nice to work for and someone who is trying to make a bit of a change in the industry is pretty good.”

The food at Rúibín also draws inspiration from flavours Alice and Richie have enjoyed on their travels across the world. Experiencing how other chefs create different dishes, evokes a desire to introduce similar great tastes to Galway. This is why you’ll always find the team here, cooking up something new and delicious. With both the summer festival season and their fourth birthday on the horizon and many more culinary projects ahead, life at Rúibín never stands still. There is plenty to look forward to with Alice, Richie and their talented team of creatives and if you want a taste of it all when it happens, be sure to stay tuned.

To book a table at Rúibín, head over to their website at; www.ruibin.ie. You can also contact them via email at info@ruibin.ie or by calling them at 091 399 200.

that’s the spirit!

Ahascragh Distillery is putting a rural Galway village back on the map

Quite literally rising from the rubble, Ahascragh Distillery’s beautiful copper pot stills have become a shining beacon of hope for a bright future in the area. This is the story of Ahascragh Distillery…

When Gareth and Michelle McAllister first set eyes on this derelict old flour mill from the 1800s, it was nothing more than a collection of roofless walls covered in ivy and bushes - yet they had a clear vision for how they would transform these ruins into a state-of-the-art, almost futuristic, distillery and visitor centre. Co-founder Michelle says; “We always wanted to build our distillery in the West of Ireland; it’s a beautiful part of the country and the climate offers ideal whiskey making conditions. We were living in Hong Kong at the time and I had seen the mill on a website for old buildings. We enquired with the owner but then life took over and we forgot about it. About 9 months later we were in Galway at a business meeting for something totally different. Gareth said ‘Dya remember that place we were looking at? Will we try and find it?’. When we pulled up outside you could hardly see the building but we both immediately said it was the place we wanted to be.”

Located just 11km from Ballinasloe in East Galway, Ahascragh is a picturesque village near the Bunowen River. This very river, along with its small and mighty canal, are responsible for a long tradition of industry which will now continue into the future thanks to the commitment of the Ahascragh Distillery team. “Our ethos was always to be eco-friendly, and what better way to do that than repurposing an old building?!” asks Michelle, excitedly. “We’re learning that it would have been easier to just build something in an empty field, we would have been ready to go ages ago - but, no, we both thought this mill needed to be brought back to life, along with the village. The village is wonderful and this building has always been the centre of it. It’s really nice to bring employment back to rural places like Ahascragh. There are lots of villages like it all over Ireland that need a bit of love, encouragement and dedication to bring them back to how they used to be. The community has got behind it and we couldn’t do most of what we do without them. They have been amazing.”

51

Despite a small population of around 200 people, this rural community has always written headline stories in the worlds of business and culture. Milliner to the stars, Philip Treacy, hails from Ahascragh and the village was immortalised on RTÉ’s comedy show Don’t Feed The Gondolas with the infamous (and fictional) Monica Looley! The team at Ahascragh Distillery hope to write similar stories long into the future, merging innovative enterprise with tradition. Though rooted firmly in the heritage of their surroundings, Ahascragh Distillery is a business with their eyes set firmly on the future as they strive to produce Ireland’s first carbon-neutral whiskey and gin. Gareth McAllister explains; “That mill used to take in grain, produce flour and support the community in a very green way because it was all powered through the two water wheels either side of the mill race. That was over 250 years ago, so it was always run sustainably. When we bought it, all the old equipment was still there; pulleys and conveyors that tied the power all together in a very efficient way. We were never going to come along and put fossil fuel or gas in a big boiler with a huge chimney!”

Renewable energy will power Ahascragh Distillery and Visitor Centre, 30% of which will be produced on site. Some of that will be obtained via the roof’s solar panels but it’s the stream where old will meet new in spectacular fashion, as the original mill wheel will be reinstalled alongside high-tech submersible hydro turbines. The challenge with clean electricity, though, lies in converting that into a medium that is capable of driving an energy-intensive process such as distillation. That’s where Gareth’s expertise comes in; “My background is in chemical engineering and I’ve used very high temperature heat pump systems industrially around the world, most recently in China. So I know that technology works, in terms of decarbonising your industry. It is proven from other industries but it’s new to the distilling industry. We know for a fact it hasn’t been done before in Ireland or the UK, and nobody else has come back to say that they have done something similar, so we are assuming that we’re the first in the world! We have it coupled with an energy storage system, a closed-loop system, which means all the heat produced from the process is recovered. For every 1 unit of electricity, we get 3 to 4 units of energy output. It’s a very efficient process!”

You’ll soon be able to witness that impressive process in action for yourself as distillery tours will begin in Summer 2023, spurred on by Gareth & Michelle’s attention to detail and commitment to doing things the right way as well as the hard-work of their staff of 19 fulltime employees. That crew of 19 will grow to around 40 when the distillery is fully up and running in the Summer, with the aim of celebrating a Grand Opening on July 1st. The story of Ahascragh Distillery is certainly one full of positive Irish spirit!

52
Our ethos was always to be eco-friendly, and what better way to do that than repurposing an old building?!

Galway’s Hannah Hession

Following Her Own Beat

Spirited chaos pounds the dance floor. A rhythmic beat rises. Moments felt are now moments shared among a crowd of people in this transitional state of audible and visual spectacle. It’s escapism under flashing lights and disco balls, all prompted by one of Galway’s finest DJs; Hannah Hession. We had an amazing time talking with Hannah about her experience as a Galway based DJ, what inspires her, and the love she has for this community.

Hannah has been performing in Galway for the last four years. “I really just fell into it, and I’ve been at it ever since.” She describes her spontaneous entry into DJing a few years ago. A friend had encouraged her to, “just start doing it,” after hearing her radio show on Flirt FM. Soon after, she had her first set in the old record shop, Pleasure. Since then, she’s spent the years cultivating and nurturing her expressionary efforts, and her passion for DJing.

57

She notes that Galway has experienced a sort of revival in the last year or so, with a renewed appreciation for being able to gather and dance in a shared space. “What I love about DJing in Galway is the atmosphere. It was obviously really hard there for a couple of years…it was really disheartening, but now it’s really nice to see that every little crevice of the city is being used for stuff like this.”

Recently Hannah has been a part of a collective with Rob Flynn, Robin Clancy, and Alannah Dunford called Ar Ais Arís. Described as, ‘Galway’s electronic music night for the underground,’ Ar Ais Arís is a space that invokes that enigmatic experience of unification we’re all in search of. “You just never know what’s going to happen with these things. Everyone there is so lovely. We’ve had so much fun picking the acts and decorating the place. There’s just so much love involved…It’s given me such a reminder why I started doing everything in the first place.”

For Hannah, a strong sense of fluidity and freedom is integral to her sets. “When it comes to composition, a lot of it’s just kind of seeing what the crowd actually wants. I still keep it true to myself… I kind of just go with the flow and see what happens. It’s too stressful to plan everything out. You know, panic ensues if something isn’t right.” Whether she is playing in The Blue Note, for Ar Ais Arís, or anywhere else, Hannah’s process is one of openness and experimentation. “It’s not going to go all smoothly. But I would take that as the perfect opportunity to try new things.”

At one of Hannah’s sets in The Blue Note, hypnotic and pounding beats entangle the evening. Indifference is swept aside, and idiosyncrasies are embraced and celebrated. This is music you can feel, in a literal sense of motion and reverb. Quirky and eccentric, her sets build up an indisputable energy that pulls you in, and you follow suit happily.

When a set is good Hannah says things, “just click.” There’s a wonderful sense of unification between her and the crowd, and she thrives off of that. “I don’t know, there’s just such a mutual enthusiasm. Everyone is so desperate to just have the fucking best time ever. We are as well.” This relationship is built upon a shared desire, and Hannah has the gift of knowing what that desire is without having to ask.

Ideal for fans of storytelling, myth, folklore, horror and comedy. Once the storytelling has concluded stay on for a pint and some trad music sessions.
