The Sweet Life You know that golden amber syrup you pour over your pancakes was not born in a bottle. But do you know how it is cultivated? Sugar Maple Groves, also known as Sugarbushes, grow only in colder climates. The process of collecting the sap was perfected hundreds of years ago by Native Americans. Several local environmental groups sponsor end of winter Maple Sugaring events. You’ll learn how the sap is tapped and evaporated into sweet, delicious syrup. Monroe County’s 35th Annual Maple Sugaring Day March 3rd is Maple Sugaring Day at the Monroe County Environmental Education Center’s (MCEEC) Meesing Sugarbush. Celebrating the wonder of maple sugar, the day features a tour of the sugar maple grove, called the Sugarbush, and includes stops to learn about Native American and early pioneer methods of making the syrup, the evaporator process and methods of identifying and tapping a maple tree. After the 90-minute tour, enjoy fresh pancakes drizzled with maple syrup. According to maple sugar lore, its discovery was accidental. After removing his tomahawk from a tree, an Iroquois man caught the sap that flowed in a container at the base of the tree. His wife happened upon the container and, thinking it was water, used it to prepare dinner that night. Everyone agreed: the sweet treat was a profoundly fortunate mistake. Native Americans celebrated maple sugar harvests with dancing and music. As food staples, maple sap and sugar were mixed with grains, beans, nuts and berries. Maple syrup is relatively healthy. As a whole, unprocessed food, the syrup contains a high concentration of the types of antioxidants that may lower your risk of certain diseases. You can substitute maple syrup for white sugar in some recipes—cookies, for example. However, be mindful that maple syrup, like all sweeteners, should be consumed only in moderation. Maple Sugaring Day, March 3rd, is from 10 a.m. to 3 p.m., and costs $5 for adults, $3 for children under 12. On March 10th, MCEEC will host scout groups and their families. Programs can be scheduled between 9 a.m. and 2 p.m., and are open to all scout age groups. Pre-registration for Scout Day is required. Eagle Institute: Preserving Our National Symbol On the brink of extinction when the Eagle Institute in Lackawaxen was founded nearly 20 years ago by Lori McKean, eagles now thrive in the Pocono Mountains. Animal Sanctuaries in the Pocono Mountains Since the beginning of civilization, humans have enjoyed a symbiotic relationship with animals. We’ve relied on them for food, clothing, transportation and companionship; they’ve relied on us for care. The groundbreaking book, A General Theory of Love, by three University of California, San Francisco, psychiatrists explores the science of human emotions and biological psychiatry. Among its many surprising findings: the mammalian brain, across all species, is much more similar than it is different. Animals’ feelings are almost identical to ours. Animal lovers instinctively know that animals feel love, pain, grief, sorrow and joy the same as we do, and are grateful for the quality of life animals afford humans. Animal activism is strong in Pennsylvania, where an abundance of sanctuaries, shelters and rescues flourish. Here are some of the animal welfare organizations you’ll find in the Poconos: AWSOM, Stroudsburg—Monroe County’s Animal Welfare Society focuses on cats and dogs. www.awsomanimals.org. Kettle Creek Wildlife Sanctuary, Monroe County Environmental Education Center, near Bartonsville—166-acre preserve open yearround to the public. Pocono Animal Rescue, Inc., Bartonsville—focuses on rescuing large domestic animals, including horses, cows, goats, sheep and other farm animals. www.poconoanimalrescue.org. Pocono Greyhound Adoption, Canadensis—helps retired racing greyhounds find permanent, loving homes. www.poconogreyhound.com. Safe Haven Pet Rescue, Adoption Days held in Brodheadsville—volunteeronly rescue saving dogs and cats from high-kill shelters and fostering them until they are adopted into their forever homes. www.safehavenpa.org. Beyond the Poconos: Farm Sanctuary, Watkins Glen, NY—perhaps the most highly respected animal sanctuary in the country, if not the world. Hiking in the Poconos Rolling hills, waterfalls, rivers, lakes and evergreen forests: the Pocono Mountains offer 2,400 square miles of natural beauty for hikers. Here are some wonderful places to hike in the Poconos: Big Pocono State Park, Camelback Road, Tannersville—Steep and rough grades are appropriate for experienced, physically fit hikers. Delaware Water Gap National Recreation Area, River Road, Bushkill—40 miles of the Delaware River roar within the park that is a sanctuary for eagles, bears and rattlesnakes, among other wildlife species. After your hike, stop by the Shawnee Gallery in nearby Shawnee-on-Delaware for paintings, ceramics, jewelry and more from local artists. Raymondskill Falls at Dingmans Falls Visitors Center, 224 Dingmans Falls Road, Dingmans Ferry—The tallest waterfall in the state, Raymondskill measures a mere four feet shorter than Niagara. Gouldsboro State Park, Route 507, Tobyhanna—Rugged terrain makes hiking in this Northern Pocono park challenging, but fun. Mauch Chunk Lake Park, 625 Lentz Trail, Jim Thorpe—Try the Switchback Trail and walk among towering Hemlock, White Pine and American Beech trees. Monroe County Environmental Education Center, 8050 Running Valley Road, Stroudsburg—This center sponsors numerous year-round activities, including guided hikes, within its Kettle Creek wildlife sanctuary. Pocono Environmental Education Center, 538 Emery Road, Dingmans Ferry—Located within the Delaware Water Gap Recreational Area, PEEC offers six trails for every fitness level. Some trails afford splendid views of the Kittatinny Mountains across the river.
