Remember the good old days when you would go to a friends' house as a child and their mom would give you a celery snack stuffed with either peanut butter or cheese spread. It seems celery has come along way since then. Unfortunately celery was also caught up in the diet food craze. Who ate just celery by itself. The vegetable is stringy and chewy, I feel for the kids who had to eat this stuff. Today I can not get enough celery. It is green, it has leaves, the texture is crunchy. Celery has come a long way or more importantly we have figured out how to use celery in our daily food. Celery can add flavor to any meal or it can be used to make any meal go a little farther. Celery is one of those versatile foods that is extremely cheap to purchase and will keep in your fridge for a very long time. If you find your celery has gone limp the trick to refreshing your celery is to submerge your celery in ice cold water until it becomes crisp again. Here are 6 tips for celery. When you are shopping for the green food pick the firmest bunch with the most leaves. The first thing I make with celery is egg salad, I do this because the leaves of celery will add a substantial amount of flavor. I simply begin chopping the top of the stalks into fine pieces which will include the leaves and add it all to my egg. Celery will work with any type of bird. I rough cut and use it to stuff any bird that I am roasting in the oven. Celery can be used in any soup. You can put a little or a lot in any soup, the rule of thumb that I use is equal amounts of celery to carrot. It can be added to pasta sauce, if you do I would saute the celery first before adding it to the sauce. The root can be used in low carbohydrate cooking as a substitute for potato. I have used it to make fake hash browns covered with cooked onions and peppers. Celery is a vegetable that has many uses, the flavor combines well with carrot and onion. Anywhere you use those two vegetables means you can also use celery. I never buy individual celery stalks because I consider the leaf to be the best part individual pieces never have the leaves.
