To make ice cream, it has to be formed under a temperature of –3°. However water freezes at 0°C, thus preventing us from stirring and mixing the icecream.. This is why we need salt. By adding salt to the Ice, it dissolves in the water that melts making the water impure with sodium ions. This then decreases the freezing point of the water to a lower temperature allowing us to make icecream Constantly stirring the icecream as it freezes prevents giant ice crystals from forming and allows air bubbles to get trapped making the ice cream smooth.
