Are You Willing To Serve? By Tresa Erickson Early in the morning, late at night, when a fire breaks out of control, you can count on your local fire department to be there. While some departments consist of paid employees, others are a mix of paid employees and volunteers. There are about 800,000 volunteer firefighters in the United States, accounting for more than half the total of firefighters, and you could be one of them. That’s right. There may be an opportunity to serve as a volunteer firefighter in your area. While some fire departments do not permit volunteer firefighters, others do. Some, in fact, depend heavily upon volunteers due to budget constraints. To find out if such an opportunity exists in your area, call your local fire department. The staff there should be able to let you know where the nearest opportunity is and how you can go about applying for it.

There are several steps to becoming a volunteer firefighter. First, you must decide whether you are willing to commit to the endeavor. It is not one to be taken lightly. You will have to undertake several hours of training, and should you complete the process and become a volunteer firefighter, you may have to put your life on the line. To ensure you are serious, your local fire department may suggest you ride along on one of their calls. This will give you a good feel for what you might be in for.

The willingness to commit is not enough. You must also qualify. Criteria vary by fire department. You may need to be a certain age and pass some physical tests. You may need to be certified in CPR and basic first aid. On top of this, you will also have to do some training. Again, this will vary by department. All firefighters, however, must complete a 110-hour National Fire Protection Association-certified course.

Volunteer firefighters do not get paid, and depending upon where they serve, they may have to work more than a couple of shifts per month. They do get experience, however, which could lead to a full-time paid position in the field later down the road. Serving as a volunteer firefighter is by no means an easy job. You must be ready to serve at a moment’s notice and willing to risk everything to ensure the safety of others. Apply only if you are seriously interested and be prepared to put in the time.

Among all the fruits and vegetables that are abundant in summer, there is a group of gourds literally named after the season. Summer squash is a colorful family of yellow, patty pan, scalloped and zucchini squash that flower prolifically and fruit throughout the warm months. This particular clan got its name due to its short shelf life, which differs from the hard-skinned, long-lasting winter squashes such as butternut or acorn. In essence, all summer squash are really just a hard-rind squash that is picked in its immature state Squash gets its name from an Indian word, “askutasquash,” meaning raw or uncooked. It’s believed that Native Americans were growing varieties of squash as one of their “Three Sisters” crops: a combination of corn, beans and squash grown together in a mound. This was to take advantage of their symbiotic relationship. The corn provided a structure on which the beans could grow, the beans nourished the soil with nitrogen, and the squash plant provided shade for the planting bed. These indigenous people then introduced the plant to the early European settlers. Often, home gardeners find themselves overwhelmed with a continuous supply of the crop. Hence, the numerous recipes for squash this and zucchini that. And while most of us are familiar with crook-neck squash or zucchini, summer is the time to try the lesser-known varieties that are available as well. Because the fruit of the summer squash grows fast once it starts, a common mistake of many growers, homegrown and commercially, is picking them too late. In their young state, still relatively small, the flesh and skin are tender, and the seeds undeveloped, yielding the most delicious fruit. So, when growing your own squash, check your plants daily once flowering begins, and harvest the fruit early. When buying them at the store, choose the smallest specimens with well-colored skin. Because summer squash has such a mild flavor, it lends itself to many dishes, both savory and sweet. And while summer squash most often is eaten cooked, fresh tender squash is delicious in many raw preparations as well. For an unusual way to prepare squash, try my recipe for Summer Squash with Sweet Corn and Orzo Pasta. Try using different types of summer squash. It’s delicious hot or cold!

SUMMER SQUASH WITH ORZO PASTA 1 (16 ounce) box of orzo pasta 4 summer squash (cousa, zephyr, costata romanesco and round zucchini) 3 ears of sweet corn 4 tablespoons olive oil 3 green onions, green and white parts, root ends discarded, chopped 3 cloves of garlic, finely chopped 1 teaspoon salt plus 1/2 tablespoon more for the pasta water 1 teaspoon black pepper 1/4 teaspoon nutmeg 1/4 teaspoon cayenne pepper 2 large tomatoes, diced Juice of 1 large lemon 1 bunch of fresh basil, torn Shaved Parmesan cheese 1. On high heat, cover a large pot of water (per package directions for the orzo pasta) and bring to a boil. Meanwhile, rinse squash and trim off ends. Slice in half, lengthwise and then crosswise into half moons of the same size, so that they cook evenly. Set aside. 2. Peel back corn husk and silky tassles. Pop husk off the cob and discard it. Place an ear of corn, cut side down, in a shallow bowl, in the circle of a Bundt cake pan, or on a cutting board. Hold it near the top of the ear, and using a sharp knife, start at the top and cut downward with a gentle sawing motion; cut until all the corn is removed. Reserve the corn cobs to place in pasta water for more corn flavor, if desired. 3. When pasta water comes to boil, add 1/2 tablespoon salt, pasta and the naked cobs to the boiling water. Cook, uncovered, per package directions. 4. In a large saute pan on medium-high heat, add two tablespoons olive oil. Add onion and garlic, salt, pepper, nutmeg and cayenne pepper. Saute 2 minutes. Add the squash and corn. Saute until tender, about 5 to 7 minutes. Turn off heat. 5. Drain the cooked pasta. In a large bowl, mix pasta with the squash mixture and toss with the tomatoes, lemon juice and remaining olive oil. Add additional salt and pepper, as needed. Sprinkle the basil leaves and Parmesan on top. Serves 4.

In 1928, British actor Charles Bennett’s play “Blackmail,” starring Tallulah Bankhead, opened in London to critical acclaim. The following year, Bennett collaborated with Alfred Hitchcock in the film version of his play. The movie is credited as being the first British sound film ever produced, and the first film project that involved both Hitchcock and Bennett. They eventually would make six British motion pictures together, including four major classics: “The Man Who Knew Too Much” (1934), “The 39 Steps” (1935), “Secret Agent” (1936) and Sabotage” (1936). Bennett’s British film work brought him to the attention of Hollywood. His first American project was “The Adventures of Marco Polo” released in 1938, and about three dozen additional film projects followed. Bennett had a colorful career that spanned the history of cinema from the Silent Era to the 1990s. He was an extraordinary man who excelled as an actor, director, playwright, film and television writer, and as a novelist. During the 1980s, Bennett began compiling what eventually would become his autobiography. Although he died before it was completed, his son, John Charles Bennett, edited it for publication. The result is a fascinating behind-the-screens look at the man who helped develop Hitchcock’s signature style, and in a very real sense, advance modern cinema. When Bennett and Hitchcock began their collaboration, they agreed from the start that the fundamental thing was to get the story line first, to know the ending before the beginning and then construct the story in a suspenseful, meaningful way. Their method obviously worked, since they produced some of the most memorable stories ever filmed. With an introduction by Bennett’s son, this is an intimate narrative by a most remarkable figure, a man who helped define 20th-century entertainment. Bennett died in Los Angeles in 1995. He’ll be back as the Terminator in the fifth movie in the series. The first “Terminator” (1984) cost $6.4 million and grossed $78 million. In 1991, “Terminator 2: Judgment Day” cost $100 million and earned $519 million, while 2003’s “Terminator 3: Rise of the Machines” was made for $200 million and took in $433 million. Even though Schwarzenegger wasn’t in 2009’s “Terminator: Salvation” (he was still the governor of California), Christian Bale and “Avatar’s” Sam Worthington took the $200 million production to $371 million at the box office. Why would Arnold want to do another “Terminator” film? This year’s “Sabotage” cost $35 million but only mustered $18 million from ticket buyers. His latest film, “Maggie,” with Abigail Breslin, out in November, may miss its mark. You can bet the $200 million-plus “Terminator: Genisys,” with “Dr. Who’s” Matt Smith and J.K. Simmons, will propel him right back to the top. It’s set for release July 1, 2015. Meanwhile, “Guardians of the Galaxy,” which cost $170 million to make, earned $184 million in its first week. Yes, there is a sequel planned for July 2017. *** Dr. Noah Drake meets “The Iron Lady.” Rick Springfield, who soared to stardom on the daytime soap “General Hospital” and with the hit song “Jessie’s Girl,” starts shooting “Ricki and the Flash” in October opposite Meryl Streep. Streep is Ricki, who chased her dreams at the price of her family and is given one last chance to make things right. Rick plays one of her band members, who has a crush on her. Rick’s been touring the country doing concerts and guested last season on “Hot in Cleveland.” “Ricki” will be released in June. *** Since 1988, A.R. Gurney’s “Love Letters” has toured the world with various name actors and actresses. Now the show is getting a splashy Broadway production with BIG NAME stars. Among those signed are Carol Burnett, Brian Dennehy, Mia Farrow, Alan Alda, Candice Bergen, Stacy Keach, Diana Rigg, Anjelica Huston and Martin Sheen. “Love Letters” is the story of a lifelong correspondence between a man and a woman who may or may not be the love of each other’s life. The two-actor cast needs hardly any rehearsal time, thus big name stars can rotate in and out of the show at will. Most of these stars will play one or two months each, so if you’re planning a trip to New York, it would be a once-in-a-lifetime show to catch. If your young kids and grandkids like blowing bubbles, they’ll love this activity. When the colored bubbles dry on construction paper, they will become the eye-catching background for one-of-a-kind artwork. Here’s the stuff you’ll need: ¥ Pie pan or wide-mouth cup ¥ Liquid poster paint ¥ Liquid dishwashing detergent and water, or commercial bubble blowing solution ¥ Markers or crayons ¥ White or light-colored construction paper or cardstock ¥ Drinking straws ¥ Paper to cover worktable

Here’s the fun: 1. Cover your work surface with newspaper or butcher paper. In the pie pan or cup, stir together 1 cup water,

two to three tablespoons paint, and one tablespoon detergent. Or, add paint to the bubble-blowing solution. 2. Place a straw in the mixture and blow into the straw to create colored bubbles billowing over the edge of the container. Remove the straw. 3. Fold a piece of construction paper in half to form a card, or use the front of the card on top of the bubbles and hold it in place until several colored bubbles have popped and transferred their shapes onto the

paper. Continue the process with different colors, if you wish. Set aside to dry. (If the bubble prints are not as dark as you’d like, add more paint to the mixture and blow again.) 4. Use markers to add drawings to the dried bubble prints, such as a jet flying through the bubble “clouds” for a “Bon Voyage” card. Write a message inside the card and sign it. Tuck into an envelope for a unique greeting or summer thank-you note to a friend or relative. Note: Remind children to be careful not to suck on the straw when blowing the bubble solution.
