• The Dead Sea is over 1,300 feet below sea level. At its deepest part, it is over 2,300 feet below sea level. It is 42 miles long and 11 miles wide at its widest point. The Jordan River empties into the Dead Sea; the Dead Sea does not empty out anywhere. It is endorheic, which means it has no outlet besides evaporation. It is totally landlocked, and the deeper areas are the saltiest. There are an estimated 1.9 billion tons of potassium chloride salt in the Dead Sea, which are harvested by using a system of evaporation ponds.

This means nearly 35 percent of the water is dissolved salts. It is one of the world’s saltiest bodies of water. By comparison, ocean water is 3.5 percent dissolved salts.

• Another large endorheic lake is the Caspian Sea. This sea is bordered by five countries: Azerbaijan, Kazakhstan, Russia, Turkmenistan and Iran. The largest lake on the planet at 143,000 square miles, it is called a sea because the Romans who discovered it found it to be salty. With the huge size of the Caspian, the saltiness varies greatly. The southern Caspian is more salty than the northern portion. There are 130 rivers that flow into the Caspian with the Volga in the north being the largest.

SALTWATER (continued): • Accidental fires in 1925 and 1931 and an arson fire in the 1970s at Saltaire have made the location famous more for its history than its tourist appeal. New investors reopened the venue for music events in 1983. • When we think of life in bodies of saltwater, we often think of whales and sharks, but many other odd and interesting creatures call saltwater home. The largest living crocodilians on earth are saltwater crocodiles, called “salties” by Australians. Average males are 17 feet long and 1,000 pounds. It is not uncommon for them to be as long as 23 feet and 2,200 pounds. The range of “salties” is Eastern India, Southeast Asia and Northern Australia, so we don’t have to be worried about them in North America. • A bizarre family of fish called white-blooded or crocodile icefish are found in the cold salty waters of Antarctica and southern South America. Lacking red blood cells in their bodies, these fish are pale, have long snouts, wide mouths and large teeth — hence, their name. Their blood carries less oxygen than the red blood cells of other fish. Because of this, icefish have oversized hearts that pump large volumes of blood at low pressures. • You can bring some of this life into your home or office with a saltwater aquarium. Fill it with colorful fish, sea anemones, jellyfish and other creatures to mimic the abundance of the oceans and seas. • Now, to end this Tidbits on a sweet note. Saltwater taffy is a treat found in many stores, fairs and amusement parks. Is it made from saltwater? No. The most popular story is that a shopkeeper in Atlantic City, New Jersey, gave it the “saltwater” name after his shop was flooded by a tidal surge.

And since, according to experts, the population is stable, of those 56,000 eggs, only two survive to reproduce. • It was Franklin Pierce, the 14th president of the United States, who ordered the White House’s first bathtub in the 1850s. • Harry Houdini is best known as a magician and an escape artist, but he also performed amazing stunts. In the early days of aviation, he flew in an airplane to an altitude of 3,000 feet, then jumped off the plane onto another one -- while wearing handcuffs. • A recent study conducted by researchers at a university in Sweden found that if a person has to commute longer than 45 minutes to work, he or she is 40 percent more likely to get divorced. • There are more languages and dialects spoken in India than in any other country in the world: in excess of 1,600 at last count. • If you’re planning a trip to Marrakesh, Morocco, be sure to visit the Koutoubiya minaret. In 1195 Sultan Yakub al Mansur commanded that the minaret be built in thanksgiving for a military victory, and the tower is lovely. The structure’s unique attribute, however, is not visible -- it’s olfactory. Paying for Retirement Is Major Concern More and more of us are concerned about how we’re going to pay for retirement, or whether we can retire at all, especially as the economy has soured. The Society of Actuaries recently issued a report entitled “The Impact of the Economy on Retirement Risks” about how we’re handling our fears. Here are some facts its survey uncovered: • Nearly half of those polled who have not yet retired are very concerned about retirement finances, much more so than ever before. • Two-thirds of retirees surveyed say their finances are worse than before the economy took a downturn, with a quarter saying “much worse.” For those not yet retired, the figures are even higher. Those who banked on having return from investments have suffered from low interest rates, and those who considered their home a “nest egg” for retirement money are hard hit. • A quarter of retirees fear they might need to return to work, while two-thirds who haven’t retired think they’ll need to work longer. • People who haven’t yet retired have more concerns than those who have already retired. The major concerns are paying for long-term health care, the falling value of investments, running out of money, inability to maintain a standard of living and not having anything to leave to heirs. • Seniors have more debt than they expected to have at retirement. But if there’s a retirement strategy the majority agreed on, it’s this: Get rid of consumer and mortgage debt before retirement by paying off credit cards and cutting back on spending for gifts, vacation and restaurants. PAUL ORFALEA

Paul Orfalea counts his learning problems as “the blessings that allowed him to see the world differently from his peers.” Nicknamed “Kinko” because of his curly red hair, he is an extraordinary entrepreneur. • Orfalea was a child who couldn’t sit still in the classroom. He couldn’t read; he was restless, wiggling all of the time while his mind raced. When he was in school in the 1960s, dyslexia and ADHD (attention deficit hyperactivity disorder) were not recognized or dealt with as they are today. Educators didn’t always know what to do with children who had the undiagnosed “differences.” • Dyslexia is a neurological condition that affects language processing. People with the condition have a hard time recognizing and decoding words. Reading comprehension and even pronunciation skills are usually lacking. With ADHD, restlessness coupled with impulsivity, frustration, difficulty organizing and completing tasks can lead to behavioral problems in classroom settings. Orfalea flunked two grades in school and was expelled from several schools. He did graduate from high school but was a Dstudent at the bottom of his class. • In Orfalea’s words, he “had supportive parents, and that made all the difference. I was a sensitive kid. I could have easily fallen through the cracks.” He, like many with similar learning difficulties, had the creative thinking, curiosity, adventurous spirit and boldness to pursue an unusual endeavor. • While Orfalea was a student at the University of Southern California, he realized that photocopiers were a need for students and were not easily accessible. • In 1970, Orfalea borrowed $5,000 from a local bank, rented a small store-front next to a hamburger stand in Isla Vista, close to the University of California, Santa Barbara, and opened the first Kinko’s Copy Center. He also spent time on the sidewalk in front of the store selling pens and pencils from his backpack and encouraged passersby to give his store a try. The tiny store featured one copy machine selling copies at 2.5¢ each, an offset press, film processing and school supplies. • Orfalea saw a need, zeroed in on it and created a company that eventually grew to more than 1,200 locations and 23,000 employees in 10 different countries. • Orfalea attributed the success of his company to the creation of a working environment where employees loved coming to work. The achievement that really made him proud was having Kinko’s named one of the best places to work in America by FORTUNE magazine three years in a row. • Kinko’s was acquired by FedEx Corporation (Federal Express) in February 2004, and the company was called FedEx Kinko’s. In 2008, Kinko’s was dropped from the name, and it was changed to FedEx Office. • Even though Orfalea has never learned to enjoy reading, there are several books about his success. His autobiography “Copy This!” was published in 2005; “The Entrepreneurial Investor,” about investing, came out in 2008; and the latest book, “Two Billion Dollars in Nickels: Reflections on the Entrepreneurial Life,” became available in February 2009. All three books tell his amazing story of rising above his learning differences to achieve success.

It Lasts A Really, Really Long Time By Doris A. Black

Slate is a hard, dense stone whose structural integrity stands the test of time. A naturally durable material, slate resists rain, snow and wind. Slate roofs are beautiful, functional, and with just a little care, can last a lifetime. It is not uncommon to see cathedrals with 140-year-old slate roofs, or homes with slate roofs approaching the 100-year mark. The oldest slate roofs in Europe are 400 years old. The main reason they have lasted so long is because they were installed using traditional methods and high-quality materials by expert hands. If you own a structure with a slate roof or are considering a slate roof, the best thing you can do to prolong the life of the slate is to be knowledgeable about its construction, installation and care. A slate roof requires a bit of maintenance every 50 to 60 years. Before the slate itself comes to the end of its life, the flashings, metal joints along valleys, chimneys and dormers, will need to be replaced. Existing flashings may be made of copper, sheet-lead or tin. Tin flashings need to be painted regularly to prevent corrosion. Copper flashing will last about 60 years if left unpainted or longer if painted. A slate roof renovator can easily replace old flashings, no matter what their construction, with newer stainless steel ones that should last just as long, if not longer. Slate is a hard, dense stone, but it is not infallible. Over time, say a hundred years, a few slates may break or fall and require replacement. One of the most unique characteristics of slate roofing is that any portion of the roof can be removed and replaced when necessary. Individual slate tiles that have been damaged can be replaced without having to replace the whole roof. Since just one missing slate can cause a roof to leak, replace it as soon as possible with one the same size, shape and color. A reputable slate contractor will use one of the two acceptable methods of installation: the slatehook method and the nail-and-bib method. Working on a slate roof is tricky business. It requires the use of hook ladders, which keep the worker from walking on the slate itself. Walking on slate roofs will break the slate. A competent slate contractor will be able to replace broken or missing slate without walking on the roof. Slate roof renovators attribute faulty repairs made by amateurs as the number one cause of flashing failures, leaks and broken slate. Traditional roofing contractors have very little knowledge or experience with slate and can poorly advise a homeowner to replace the whole slate roof prematurely. Remember, a slate roof will last for decades upon decades and very rarely needs to be totally replaced.

Knowing some basic slate construction techniques will allow you to make informed decisions. Here are some of the main differences between slate and asphalt roofing.

• Residential slate roofs are often built with an underlayment of felt to prevent rain from entering the home during the installation phase. This practice is still used today, but it is important to note that once the installation is complete, the felt serves no other purpose and will deteriorate to a fine dust over time. The felt is not an essential component of the function of a slate roof. • Another difference between slate roof construction and traditional asphalt roof construction is the use of natural wood decking instead of plywood or particleboard. Plywood and particleboard have a short life span as compared to natural wood and should never be used with slate. This is an important distinction that directly affects the life expectancy of your slate roof. Plywood and particleboard are cheap imitations that will not serve you well. • The use of natural wood decking negates the use of an ice and water shield. Ice and water shields protect plywood and are of no use on a slate roof. When your slate roof needs repair, spend some time interviewing contractors to find one who is properly trained in slate installation. If you’ve done your research and know the basics of slate roofing, you should be able to ask intelligent questions and recognize competent responses. In the last century there were hundreds of slate quarries across the country. Today there are just a few located in New York, Pennsylvania, Vermont and Virginia, as consumers opt for hightech, low-cost asphalt roofing systems instead. However, considering the life expectancy of a typical shingled roof versus a slate one, it is more economical to install slate. For new construction, experts advise designing a roof with adequate slope—the more, the better. For roofs with a low pitch, the tendency to walk on it during installation and repair is too great. Although green and black were once the only colors available to homeowners, today’s consumers have a wider choice, including gray, red, mottled purple and green, two-toned black and gray, sea green, royal purple and black. Depending on the type of slate, some colors will gracefully age with time, showing subtle texture variations. Considered the most durable and permanent roof covering available with superior performance qualities, slate is resistant to stains and acid, low in maintenance, impermeable to moisture, noncombustible and environmentally friendly. For a truly crowning touch to your home, consider the distinctive look of slate.

PAPER BAGS Paper or plastic? In the 1980s and ‘90s, that was a question asked frequently at grocery stores. More recently, reusable cloth bags are being promoted in conjunction with a “greener” lifestyle. Let’s look at the development and history of paper bags. • Francis Wolle, a Pennsylvania botanist who later became a minister, invented the paper bag-making machine in 1852. Working at his father’s store, he saw the need for something to help customers carry their groceries home. • Wolle received the patent for his machine in the United States and then later in England and France. It was the first of its kind and with further advancements added by others, is very similar to the machines still in use today. • In 1869, Wolle, his brother and other men involved in the paper bag industry founded the Union Paper Bag Machine Company in Bethlehem, Pennsylvania. • Probably surprising to many is that a woman first put forth the idea and secured the patent for a device to cut, fold and paste paper bag bottoms, creating flat-bottomed bags. Some tried to discredit Margaret Knight, but she fought and won recognition for her paper bag machine. She was employed by the Columbia Paper Bag Company in Springfield, Massachusetts, when she invented her machine in 1870-71. During this time, it was unusual for a woman to get recognition as an inventor. Sometimes called the “woman Edison,” she is credited with 22 patents and 90 inventions.

• Charles Stillwell, a Union soldier during the Civil War, added another patent to the development of paper bags in 1883. His bag machine allowed for flat bottoms and pleated sides, which made the bags stackable. • Stillwell’s bags were called S.O.S. or “selfopening sacks.” With the birth of supermarkets in the 1930s, the demand for paper bags skyrocketed. They were strong, easy to use and inexpensive and quickly became popular around the world. • Savannah, Georgia, was chosen by Union Bag and Paper Company in 1935 as the location for a $4 million plant, thrilling the local area, providing 500 jobs in a depressed economy. • In 1956, Union Bag merged with Camp Manufacturing and became Union Camp. In its busiest years, 5,500 people were employed in Savannah; today there are about 700. It is the largest mill of its kind in the world. Over 1 million cords of long-fibered southern pine are used to make 35 million paper bags per day. That is over 9 billion per year! • The largest paper bag manufacturer today is a privately owned company, Duro Bag, opened in 1953 and owned by the family of founder David Shor. It is based in Florence, Kentucky. The company has a strong program for recycling its waste and using recycled paper. • Plastic grocery bags were introduced to the supermarket industry in 1977. Kroger and Safeway started the craze to replace traditional paper bags with polyethylene “t-shirt” type bags in 1982. Most grocery stores today offer both types of bags but also encourage shoppers to use cloth bags. • With the wide availability of inexpensive paper bags, Americans have used them for groceries, garbage, lunch bags and more for years.

Share this dish at your own risk, but be prepared -- take the recipe with you! 1 cup fat-free mayonnaise Sugar substitute to equal 1/4 cup sugar 1 teaspoon prepared mustard 1 tablespoon white distilled vinegar 1 teaspoon celery seed 6 cups finely shredded cabbage
