FIVE SENSES (continued): After a year, people can recall smells with about 65% accuracy. Compare this with visual recall, which is only 50% after a period of three months. • If you think you have a good sense of smell, consider that while you have five million scent receptors, your dog has about 220 million! • Those little raised bumps on the surface of your tongue are not actually your taste buds. They are called papillae, and the majority of your taste buds are clustered on them. The buds’ purpose is to sense sweet, bitter, salty, sour, and savory tastes. Each papilla is home to 100 to 200 buds. • Taste buds can be found on the tongue, in the throat, on the esophagus, and on the roof of the mouth. These 9,000 cells contain chemoreceptors that respond to chemicals in food. When you eat a certain food, your mouth’s saliva helps break it down, which in turn causes the receptors to communicate to the brain through sensory nerves. Your brain then lets you know what you taste.

FIVE SENSES (continued): • There are 20 different varieties of nerve endings, all with a different significance. The most common types are temperature, pain, and pressure receptors. Pain receptors are the most numerous. A little square patch of skin measuring .4 inch (10 mm) on each side contains 200 pain receptors, but only 15 for pressure of touch, six for cold, and one for hot. Pain receptors are very important for alerting the brain that the body is hurt. • Some areas of the body have more nerve endings than others, making them more sensitive. That’s why it hurts so much when you bite your tongue. Yet this area has receptors that are much less effective at sensing hot or cold, which is why you burn your mouth on hot foods. • As skin ages, it has a decreased response to pain and temperature changes. Consequently, older folks have a greater risk of injury from burns and hypothermia. • It’s the colored iris of the eye that makes the pupil change in size, depending on the amount of available light. It controls light levels inside the eye, much like the aperture on a camera. The eye color comes from microscopic pigment cells called melanin. • We are able to see things because beams of light bounce off of an object and enter the cornea – the thick, transparent layer on the surface of the eye. From there, the light rays pass through the pupil and into the lens. The lens focuses the image and sends it to the back surface of the eyeball, the retina. More than 150 million lightsensitive cells work at sending the information upside-down to the brain. The brain turns the image right-side-up and tells you what you are seeing.

Tidbits takes a glimpse into the life of one of the greatest composers of all time, a genius who overcame a crushing disability to bring his music to the world. • Ludwig van Beethoven’s childhood home was controlled by his drunken, harsh disciplinarian father, who exploited his son’s talents from an early age. Recognizing the boy’s abilities, his father touted him as another Mozart, lying about Ludwig’s real age in order to make him out to be even more of a prodigy. For many years, Beethoven did not know his real age, and when he was 32, he believed himself to be 28. • His first proposal of marriage to a young opera singer was refused, because, in the girl’s words, “he was so ugly and half crazy.” • It should come as no surprise that much of Beethoven’s music seems dramatic and turbulent, considering the torture he endured. His writings to a friend conveyed his hopelessness: “My ears whistle and roar incessantly, night and day. I can say that I am leading a miserable life.” In the midst of this, he suffered from excruciating headaches, and his despair frequently led him to thought of suicide. • By age 30, Beethoven was becoming a wellknown composer, and seemed on his way to a brilliant career, but was already noticing the disastrous indications of deafness. By age 31, the symptoms could no longer be ignored. • Having never learned the discipline of selfcontrol, Beethoven was prone to untamed temper tantrums his entire life. • By age 46, Beethoven was nearly completely deaf, using conversation notebooks to understand the words of others. Although his hearing loss produced a decline in his public performances, it did not hinder his composing activities. He composed his brilliant Ninth Symphony after a complete loss of his hearing. Beethoven’s social life, however, suffered immensely, and because of his inability to interact socially, he was an extremely lonely person. • To Beethoven, the piano was “the god of all instruments,” the one for which he composed most of his music. • The composer’s intense emotions and love of nature can be heard in his music by a careful listener. Various instruments create the sound of a wind and rain storm in the country, followed by the serenity of the storm’s aftermath. A violin’s trills imitate the chirping of insects and birds, while soft instrumental sounds mimic a flowing brook. • Following his brother’s death, Beethoven was appointed guardian of his nephew. However, the lazy, reckless young man caused Ludwig nothing but pain, racking up exorbitant gambling debts, followed by an attempted suicide. Beethoven’s already-fragile health continued to decline, until his death at age 57. • Those seated by Beethoven’s bed at the time of his death took snips of his hair after his passing until none remained. One clipping of his rather unruly locks is on display in a permanent exhibit at California’s San Jose State University, along with some of his original manuscripts. • During an autopsy, it was discovered that the three small bones of Beethoven’s inner ear were fused together. This week, Tidbits takes a closer look at one of the world’s favorite foods. • Nine out of ten Americans eat pizza at least once a month. Over the course of a year, about three billion pizzas are purchased, not including those in the grocer’s frozen food case. The average person eats about 23 pounds of pizza annually. (That’s about 46 slices.) Add it all up and it makes for a $35 billion industry in the U.S. • There are about 75,000 pizza restaurants in the U.S., representing about 17% of all restaurants. About 350 slices are consumed every second of every day across America. • Pepperoni is America’s favorite topping, and is chosen for 36% of all orders. Nearly 252 million pounds of pepperoni top U.S. pizzas every year. • Pepperoni may be the favorite in America, but not so around the world! Order pizza in Japan and you’re likely to receive it topped with eel or squid. Russians prefer pizza with mockba: a combination of sardines, tuna, mackerel, salmon, and herring. In India, the locals choose mutton and pickled ginger pizza. • America’s first pizzeria received its business license and opened in New York City in 1905. Italian immigrant Gennaro Lombardi began peddling tomato pies to workers looking for a portable lunch. Upon Gennaro’s death, his son stepped in to run the business, followed by his grandson, operating continually until 1984. After a 10-year closure, the grandson and a childhood friend re-opened Lombardi’s a block away from the original and it carries on its tradition of pizza baked in coal-fired ovens. • The Domino’s Pizza chain began in 1960 with one location. By 1978, there were 200 locations, 5,000 by 1989, and today, there are more than 8,000 stores worldwide. The three dots on the Domino’s logo represent the company’s first three stores. Although their intention was to add a dot every time a new store opened, it didn’t take long for that idea to fizzle based on their rapid growth. • Domino’s delivers about 400 million pizzas in a year. U.S. delivery drivers put on a total of nine million miles each week. The busiest pizza day of the year is Super Bowl Sunday, when about 1.3 million pies are delivered, about 33% more than an average Sunday. The company’s World’s Fastest Pizza Maker can whip up three large pizzas in a mere 46.4 seconds! • Two Wichita, Kansas brothers were the founders of the very successful Pizza Hut chain. College students Dan and Frank Carney borrowed $600 from their mother in 1958 to open the restaurant, and eight years later, had 145 pizzerias. Only six years after that, in 1972, there were 1,000 Pizza Huts, and that number doubled in the next four years. Today their chain boasts 6,500 locations. • Got a craving for pizza? It’s fourth on the list of America’s most craved foods. Cheese, chocolate, and ice cream rank higher. A Gallup poll indicates that children between age 3 and 11 would rather have pizza for lunch and dinner than any other type of food. • Some of the best pizza’s are from local pizzerias that pride themselves on handtossed homade crusts, fresh ingredients and that special secret sauce that sets their pizza’s apart from all the rest. Another aspect to the locally owned single location pizzeria is that the owner works along side with his employees.
