BEER

by Janet Spencer On January 24, 1935, the first beer in cans was placed on sale in Richmond, Virginia. In honor of that event, come along with Tidbits as we take a look at beer! A CRUCIAL INVENTION ● Ermal Cleon Fraze, born in 1913, grew up to found a tool and die company in the mid 1940s called Reliable Tool and Manufacturing Company. He invented a wide variety of products for clients including General Electric, Ford, and even NASA. But his most famous invention came as a result of a picnic in 1959. ● Ermal had brought plenty of beer to the picnic, but he had forgotten the can opener, which, at that time, was the only way to crack open a cold one. He was forced to resort to opening the cans using the bumper of his car. “There oughta be a better way,” he thought to himself. ● Several months later, he couldn’t sleep, so he got up to spend a few hours puttering in his workshop. The result of his tinkering was the first pop-top pull-tab can. He received a patent for it in 1963, selling the invention to Alcoa. The first customer to use the new pull-tab can was the Pittsburgh Brewing Company, makers of Iron City Beer. By 1975, 75% of U.S. breweries were using them. Turn the page for more!

TO PEE OR NOT TO PEE ● Drinking beer makes the drinker urinate a lot— much more than drinking an equal amount of water or juice. The number of trips a beer drinker makes to the bathroom has nothing to do with the amount of liquid consumed. It has to do with something called anti-diuretic hormone (ADH) produced by the hypothalamus in the brain. ADH regulates urine production and the amount of water in the bloodstream, maintaining the balance between water and salt in the tissues. Alcohol inhibits the production of ADH, so the kidneys don’t receive the normal signals from the brain. They go on drawing water out of the bloodstream at a constant rate because they are not told to stop. This dehydrates the body. That’s why thirst is a main symptom of a hangover. A good way to diminish a hangover is to drink a couple quarts of water before going to bed. Coffee is not a good thing to drink after getting drunk because caffeine is also an ADH inhibitor, and coffee messes up the signals to the kidneys too. Coffee has never sobered anybody up. Drunkenness is caused by unprocessed alcohol in the blood, and nothing can remove it but time. Alcohol plus coffee equals a wide-awake drunk. Soda Fizzes; Beer Foams ● Why does soda fizz whereas beer foams? It’s caused by the chemical processes that occur during fermentation. Fizzing and foaming both involve carbon dioxide rising to the surface, but soda pop is not fermented as beer is. Brewer’s yeast feeds upon the sugar in the ‘wort’ which is the sugary substance in malt, which comes from barley. The yeast gives off carbon dioxide as a by-product. During fermentation, that carbon dioxide dissolves into the liquid. When the pressure is released when a can or bottle is opened, the carbon dioxide rises to the surface. The chemical reactions that have occurred between the carbon dioxide and the proteins in the wort make the bubbles last much longer than the bubbles in pop, champagne, or cider.

Cats' Bad Habits Are Hard to Break DEAR PAW'S CORNER: My boyfriend regularly allowed my cat to jump onto the table during dinner and would feed "Baxter" right from his plate. We're no longer a couple, but Baxter is still with me, and he insists on jumping onto the table and begging food. How can I break him of this habit? -- Janine in Reno, Nev. DEAR JANINE: It can be tough to break a bad habit in a cat, especially one that was allowed to persist for so long. You may never be able to completely train Baxter to stay off the table or to not beg for food, but you can discourage such behavior. Don't feel guilty about doing it, either. Baxter likely will yowl pitifully at you as you eat dinner without him. But don't allow him on the table at all.

How do you do that? Easy. When Baxter moves to jump onto the table, either hiss at him or shake something at him that will frighten him slightly. Many owners use a can of pennies, which rattles loudly when shaken. Others simply wave a rolled-up newspaper at their cat, and that's enough to make their pet stop the aberrant behavior. Repeat this hiss or penny-can shake each and every time he tries to climb onto the table. And, whenever Baxter stays down through the whole meal, or immediately after you finish eating, shower him with praise. To make this even easier, try feeding Baxter shortly before your dinnertime. If you're unable to do that, insist that he stays off the table and doesn't get away with that behavior either with you or with guests.

BEER FACTS ● Frothingslosh was a brand of beer made by Iron City Brewing of Pittsburgh exclusively at Christmas time. The advertisements breathlessly exclaimed, “Oh, my gosh, it’s Frothingslosh!” It was billed as the “pale, stale ale with the foam on the bottom.” How did they get the foam on the bottom? They pasted the label on upsidedown. ● A little cobalt is absolutely necessary for good health, but a lot can kill. Brewers in Quebec and Omaha at one time added cobalt salts to their beer because it gave the brew a better head. When beer drinkers began dropping dead, the practice was halted. ● When escape artist Houdini attempted to escape from a large can filled with beer, the stunt nearly ended in disaster when he was overcome by the carbon dioxide. The alert stage manager noted the lack of sounds coming from inside the can and released him in the nick of time. ● One kind of male Australian beetle always seeks out the largest female to mate with. An Australian beer manufacturer unwittingly made their beer bottles in the shape and color of the female beetle, albeit at a fantastically large size. When it was brought to the company’s attention that thousands of male beetles were trying to mate with discarded beer bottles, they redesigned the bottle. ● Linseed oil soaked rags burst into flames spontaneously late one night in a restaurant in Alameda, California. The heat from the fire popped the tops on the bottles of ten cases of beer. The suds doused the flames.

The ball broke the bottle’s neck and ended up inside the bottom of the bottle. Rather than risk a penalty, Bradshaw decided to play it where it lay. He smashed the bottle with his club. The bottle traveled about 30 feet (9 m). WORD ORIGINS ● The focal point of Irish social life is the pub. This is a term derived from ‘public house.’ At pubs, beer is served by the pint or the quart, which are abbreviated ‘P’ and ‘Q’ on the patron’s bar tab. If a bar owner was concerned that someone was running up too much of a bill, he might tell the person to ‘mind your Ps and Qs.’ A tab was often called a ‘scot’ and if the owner lost the scot or forgot to write the drink down on the scot, the drinker got off ‘scot-free.’ ● In the 1830s a temperance society in Michigan was campaigning against the evils of drink. They offered their members two pledges: one was a pledge of moderate drinking, the other was a pledge of total abstinence. On the membership rolls those who had made pledges were identified as either “O.P.” for those who had taken the “Old Pledge” to drink moderately, or “T-Total” for those who embraced total abstinence. This group eventually became known as Teetotalers. ● In sailing, a sheet is a line that attaches to the lower corner of a sail. When you pull the sheet in, the sail is tight against the wind and the ship sails quickly. When you let the sheet out, the sail sags and flaps in the wind and the ship comes to a standstill. A ship that has “three sheets to the wind” is floating helplessly in the water, just as a person who has had too many drinks is helpless.

DUI FACTS ● Drunk drivers kill 25,000 people a year, compared to 20,000 killed by homicide in the U.S. annually. They injure more people than do criminals who commit assault with a deadly weapon, and cause more property damage than all forgers, burglars, and robbers combined. ● Nearly half of the 45,000 U.S. highway deaths in a year are alcohol-related.

FAMOUS CANADIANS: THE OLAND FAMILY ● Susannah Oland and her nine children left England in 1865, heading for Nova Scotia, where her husband John James Oland had gotten a job on the railroad. Susannah brewed beer in the backyard, as most people did in a day and age where drinking water could be dangerous due to contamination. But Susannah’s beer was excellent, and soon people were urging her to go into business. ● In 1867 a small brewery went up for sale, and Susannah and John Oland bought it. Although the business was named James Oland & Son, it was Susannah who managed it. When John died in a riding accident in 1870, Susannah was forced to sell of majority interest in the brewery. However, seven years later she came into an inheritance after the death of a relative. She used the money to start a new brewery, renaming it ‘S. Oland, Sons, & Co.’ to hide the fact that a woman was in charge. Her sons, Conrad and George, helped run it. Eight years later, the brewery was lost– twice– due to fire. When Susannah died in the year 1886, her sons renamed the business again, calling it the Maritime Brewing & Malting Co. ● In 1917, an explosion of a munitions ship in Halifax harbor wiped out most of the town. The blast killed nearly 2,000 people, including Conrad Oland. The brewery was ruined. Within a year, George re-opened in a different part of Halifax, using the insurance money. A second plant began production in Saint John, New Brunswick, in 1928. This location is currently company headquarters. ● In 1931, George introduced a pale ale he dubbed Moosehead. It became so popular that in 1947 the company was renamed for a final time, becoming Moosehead Breweries.

Computers now control production. Hydraulic valves have replaced hand valves. Computer monitors now stand where control panels used to be. The facility in Saint John now cranks out 1,600 twelve-ounce bottles per minute. ● Today, the Moosehead Brewery is run by two sixth-generation descendants, with Andrew Oland as CEO and Patrick Oland as CFO. Although it’s largely run by the male descendents of Susannah, Patrick Oland insists that the Quality Control department is populated mostly by women, because he feels they have a more sensitive palate. ● Andrew Oland says, “My father, Derek, says that beer is a reward for hard work. It doesn’t matter whether you’ve just mowed the lawn, it’s Friday night and you’ve finished a tough week of work, or you’re getting together with friends. To me, it’s every time that you’ve worked hard and you’ve accomplished something and you want to reward yourself and celebrate your success.” ● The company brews a number of beers aside from Moosehead Pale Ale, including labels such as Barking Squirrel, Cracked Canoe, and Lawn Chair. ● Moosehead is now Canada’s oldest and largest brewery, as well as being the only independently family owned brewery in the country. The company currently employs about 350 people in New Brunswick. Great-great-great Grandma Susannah would be proud.

Online at www.lovemytidbits.com CLYDESDALES ● Clydesdale is a district in Scotland (named after the Clyde River) which is now best known for breeding a particular type of draft horse. Bred for pulling heavy wagons or sturdy plows, the horses are known for being strong, patient, and docile. ● The breed began with a strain of Flemish horses that were imported to Scotland and bred to local mares. The term ‘Clydesdale’ was first used in 1826, and the first official registry of Clydesdales appeared in 1877. Between 1885 and 1945, about 20,000 were exported to other countries, especially Australia and New Zealand. ● Originally, they were short and stocky animals. By 1940, breeders were working hard to increase the physical size of Clydesdales, turning the breed from a compact horse to a large stately horse that looked more impressive in parades. ● Conscripted for use during World War I, their numbers tumbled drastically. Increasing mechanization led to further decline in the population. Soon they were rare. By the mid1970s, there were fewer than 900 breeding Clydesdale mares in all of the United Kingdom. Today, their numbers have increased, although there are still fewer than 20,000 registered worldwide. ● Of the approximately 4,000 Clydesdales that currently live in the U.S. and Canada, about 250 belong to Anheuser-Busch, making it one of the largest herds of Clydesdales in the world. They are bred in Missouri not far from the Anheuser-Busch brewery, and turn out about 15 new foals per year. Three different teams of ten horses each are constantly on tour, attending parades, fairs, and the Superbowl.

His suggestions turned the St. Louis factory into a showplace. ● When he discovered a new recipe for beer which involved fermenting the brew twice, he bought the rights and named the new beer after the Czech town where he discovered the recipe: Budweis. After studying the work of Louis Pasteur, Adolphus became the first to pasteurize beer, which allowed it to be shipped without loss of quality. ● When he died in 1913, his brewery was one of the foremost in the country. His son August Busch took over, but then disaster struck: Prohibition. For years the brewery hung in there, squeaking by on sales of yeast and a nonalcoholic beverage. ● When Prohibition was repealed in 1933, a celebration was called for. August’s son (August Jr.) had recently purchased a team of magnificant Clydesdales as a gift for his father, and they garnered so much attention that August Sr. knew he could spin a major media spectacle out of them. ● He had a gleaming beer wagon and six magnificent Clydesdale horses delivered from St. Louis to New York City where they paraded up Fifth Avenue with 10,000 people following. At the very moment Prohibition was repealed, employees handed a legal beer to Governor Al Smith, who had constantly lobbied for repeal of Prohibition. The brewery got pages of free publicity from this spectacle, and has been associated with Clydesdales ever since. ● Anheuser-Busch is the largest brewing company in the U.S., providing about half of all beer consumed in the country.

The Department of Veterans Affairs has added five illnesses to service-connected Traumatic Brain Injury (TBI). What this means is that veterans who have those illnesses as well as TBI will have an easier time getting additional disability benefits. The VA based its decision on a report by the National Academy of Sciences Institute of Medicine that found "sufficient evidence" to link moderate to severe TBI with the five conditions: Parkinson's disease, certain types of dementia, depression, unprovoked seizures or certain diseases of the hypothalamus and pituitary glands. Those secondary illnesses will be considered service-connected and won't require medical opinions to establish whether there is correlation to TBI. There's a time period for three of the five illnesses, however. Parkinson's disease or unprovoked seizures don't have a time frame. „ Dementia, if it manifests within 15 years with moderate or severe TBI. „ Depression, if it manifests within three years with moderate or severe TBI or within 12 months with mild TBI. „ Diseases of hormone deficiency from hypothalamopituitary changes if they manifest within 12 months of moderate or severe TBI. Even if you don't meet the guidelines for severity of TBI or length of time between TBI and the onset of the second illness, file your claim anyway, says the VA. If you're still active duty but within 180 days of discharge, you can file a pre-discharge TBI claim at the same link to phone number. Braciole with Grape Tomatoes

Braciole is traditionally cooked slowly, simmered in tomato sauce. This recipe is a quicker method: roasting the beef in high heat and pairing with tiny sweet grape tomatoes. 1/2 cup Italian-style bread crumbs 1 clove garlic, crushed with press 1/4 cup finely grated Pecorino Romano cheese 1/2 cup packed fresh flat-leaf parsley leaves, finely chopped 1 tablespoon olive oil 1 teaspoon olive oil Salt Pepper 1 (1 3/4- to 2-pound) beef flank steak 2 pints grape tomatoes 1. Preheat oven to 475 degrees F. In small bowl, combine bread crumbs, garlic, Pecorino, parsley, 1 tablespoon oil and 1/4 teaspoon freshly ground black pepper. 2. On large sheet of waxed paper, with flat side of meat mallet or heavy skillet, pound steak to even 1/2-inch thickness. Spread crumb mixture over steak in even layer; press into meat. Starting at 1 long side, roll steak into long cylinder (about 2 1/2 inches in diameter) to enclose filling completely. (Some bread crumbs may spill out.) With butcher's twine or kitchen string, tie roll tightly at 1-inch intervals. Place roll in center of 18 by 12-inch jelly-roll pan. Rub remaining 1 teaspoon oil, 1/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper all over steak. Scatter tomatoes around steak. 3. Roast 25 to 27 minutes or until temperature on meat thermometer, inserted into thickest part of roll, reaches 130 F. Let steak stand in pan 10 minutes to set juices for easier slicing. Remove and discard twine; cut roll crosswise into 1/2-inch-thick slices. Transfer meat and tomatoes with their juices to serving platter. Makes 8 main-dish servings.

Introduction to the Series “Alone: The Saddest Word in the Dictionary,” “We Watched ‘Friends’ But We didn’t Make Any,” and “Extreme Responses to Loneliness” are all titles of forthcoming columns on the subject of Loneliness: The Constant Heartache. Let me ask you a question: Do you suppose people are more or less lonely today than back then? You’ve probably guessed the right answer: we are lonelier today than we were 10 years ago, despite the explosion of social networking. Back in May, 2012 the Atlantic Monthly carried a lengthy and comprehensive discussion of loneliness titled, “Is Facebook Making Us Lonely?” I’ll save you the pain of reading the 2,000 word treatise. The answer is, “Yes, it is.” Most people live in a world of strangers and have few personal, meaningful relationships. Of course, you might say “hello” to the UPS delivery person or talk about the weather to the barista while ordering your coffee at Starbucks, but in reality you are not likely to change your stranger status with either of them and certainly not with the general public.

You might think, “Sure, I could use a couple of friends, but I’m doing pretty good.” And I say: Do not underestimate the negative impact a life lived in the midst of strangers can have on you. Daily exposure to people who have no desire to interact with other people, who whiz past each other like gnats on a hot summer night, can be overwhelming and debilitating. Of course, people are supposed to have their own group of friends, family and associates who meet their social and psychological need for human interaction, but it doesn’t work like that anymore. A recent study revealed that over one-third of Americans suffer from chronic loneliness. That means they are not lonely once in a while like most people, but constantly lonely*. Why are we so lonely? How does loneliness impact our health? What are we supposed to do about it? Is there any help? Those are the kinds of questions I will answer over the course of the next 13 weeks or so. Time Takes Toll on Brick Walkway Q: Years ago I laid down a brick walkway in my backyard using old building bricks. Lately I noticed that the bricks have become uneven. Some are crooked, but in other areas the bricks are sinking slightly, creating dips in the walkway. What's going on? Can I fix this problem? -- Chet B., Ocala, Fla. A: Walkways built with bricks (also known as pavers) can become uneven over time due to normal ground movement or a shift in the sand base on which such walkways are typically built. This leads to the problems

you've described, with bricks that are out of alignment and a few depressed areas in the walkway. If the uneven bricks don't present a safety problem, consider delaying a repair on these sections. You can try to move the bricks back into alignment, but that might not work without undertaking more time-consuming or costly repairs. The depressed bricks can be lifted back into place by repairing the base underneath them. Use a pry bar or other lever to carefully lift up a sunken brick. Then, using one end of a sturdy piece of wood such as a two by four, tamp the existing sand down into place. Put the brick back into the tamped-down section, tapping with a mallet if it doesn't go in. Measure the different in height between the sunken brick and the surrounding bricks. Remove the sunken brink and fill the section with sand (that has rocks and larger particles screened out of it) up to the height of the measurement you took. Tamp down

the new sand and remeasure the height, adding sand if necessary to bring the brick level. Once the brick is in place and flush with the surrounding bricks, pour sand over and around the repaired brick so that it fills the crevices. Use a broom to sweep sand from the top of the bricks and into the crevices. HOME TIP: Pull or treat weeds that spring up between paving bricks as soon as possible, before their roots have time to spread. This helps keep a brick walkway even over time. Comparing Hospital Infection Rates The Medicare Hospital Compare website now provides information about hospital safety into two areas that are especially important to seniors: prevention of Clostridium difficile infections and methicillinresistant Staphylococcus aureus (MRSA) bloodstream infections. It gathered this information through the National Healthcare Safety Network at the Centers for Disease Control and Prevention. C. diff, as it's called, can be life-threatening, as it causes severe diarrhea, which causes dehydration. It can develop after taking a course of antibiotics or being in a hospital. The spores that cause the illness can stay on surfaces -- bed railings, counters, telephones -- for months. According to the Mayo Clinic, more than a half million people get C. diff every year, and it's very difficult to treat. Seniors age 65 and older are 10 times more susceptible to C. diff. MRSA isn't a walk in the park either. It's a staph infection that resists the antibiotics usually used to treat it. The infection can spread all over the body. It's usually seen in people who have been in hospitals or health-care settings, or who have had invasive procedures. In other words, both of these illnesses are serious and potentially life-threatening. Chicken Club Soup It seems just about everything nowadays has its own celebration day or month. Well, if soup is to have just such an event, I can't think of a better month than January, can you? It's just the thing to chase away the Winter Blues -- even if it's only for a few minutes! 1 (10 3/4-ounce) can reduced-fat cream of chicken soup 1 1/3 cups fat-free milk 1 full cup diced cooked chicken breast 1 cup frozen peas, thawed 1/4 cup purchased real bacon bits 1 (2-ounce) jar diced pimiento, undrained 1 teaspoon dried parsley flakes 1/8 teaspoon black pepper 1. In a medium saucepan sprayed with butter-flavored cooking spray, combine chicken soup, milk and chicken. Stir in peas and bacon bits. Add undrained pimiento, parsley flakes and black pepper. Mix well to combine. 2. Cook over medium heat for 6 to 8 minutes or until mixture is heated through, stirring often. Makes 4 (1 cup each) servings. ● Each serving equals; 196 calories, 4g fat, 22g protein, 18g carb., 660mg sodium, 2g fiber; Diabetic Exchanges: 2 Meat, 1 1/2 Starch.

Sicilian-Style Swiss Chard

A simple side dish of vitamin-rich Swiss chard and onions gets a burst of salty-sweet flavor from raisins and toasted pine nuts. 1 large (1 1/4-pound) bunch Swiss chard, rinsed well, tough stem ends trimmed 1 tablespoon olive oil 1 small (4- to 6-ounce) onion, chopped 1/4 cup golden raisins Salt 2 tablespoons pine nuts (pignoli), toasted 1. Cut center ribs and stems from Swiss chard leaves. Cut ribs and stems into 1/2-inch pieces; set aside. Cut leaves into 2-inch pieces; transfer to colander to drain well. 2. In 7- to 8-quart Dutch oven, heat oil on medium until hot. Add onion and chard ribs and stems, and cook 7 to 9 minutes or until tender, stirring occasionally. Add drained chard leaves, golden raisins and 1/4 teaspoon salt; cover and cook 2 to 3 minutes or until leaves are tender. Remove Dutch oven from heat; stir in pine nuts. DEAR DR. DONOHUE: Will you please do a column on shingles? I have gone through 12 weeks of the nastiest, worst illness possible. I never hear anything on TV about it. -- J.C. ANSWER: I'll have another go at shingles. Others probably think I overdo it. But it's such a common problem of older people that it deserves repetition. Shingles is the work of the reawakened chickenpox virus that has been asleep in nerve cells ever since a person was infected, usually in childhood. It's a safe bet to say you were infected even if you don't recall it; more than 95 percent of adults were. The rash of shingles usually disappears in two to four weeks. Pain, however, can stay with you. The pain is now called postherpetic neuralgia. In making the trip to the skin, the virus damaged the nerve roots that it crawled down to reach the skin. Pain is a consequence of the nerve injury. A large number of treatments exist for this aftermath of shingles. One is amitriptyline, whose primary use is relief of depression. It also has pain-relieving properties in doses lower than what's given for depression. Neurontin (gabapentin) is a seizure-control medicine that often is successful in suppressing pain. The extended-release form of this drug, called Gralise, is given only once
