AN ESSENTIAL ROLE
• The human body is composed of a series of complex chemical reactions. These chemical reactions occur with the help of enzymes, and the primary function of vitamins is to help our bodies create those enzymes, and help the enzymes complete their jobs. When the chemical reactions occur, the vitamins get used up and so the body needs more vitamins on a daily basis. Without vitamins, chemical reactions that depend on those vitamins come to a stop and the result can be catastrophic. Vitamins cannot be manufactured inside the human body and must come from food. • Plants manufacture all of the vitamins humans need except for vitamins D, B12, and (to a large extent) vitamin A. Vitamins help a plant with the process of photosynthesis. The more photosynthesis a plant has going on, the higher the level of vitamins will be contained in that plant. This is why light colored vegetables like iceberg lettuce have lower levels of vitamins than dark-colored vegetables like kale and spinach. (Cont’d next page)

• Vitamin A is found in animal products such as organ meat, full fat milk, butter, and cod liver oil. It’s also present in some vegetables such as dark leafy greens and foods rich in beta carotene such as carrots, tomatoes, sweet potatoes, broccoli, and cantaloupe. But the amount of vitamin A in plants is tiny compared to the amount in animal matter. • Vitamin A is stored in the liver, so the human body can usually survive up to a year without taking in any vitamin A at all. But after that, a person who is not receiving any vitamin A will first experience night blindness and then go blind entirely. This problem is particularly prevalent in sub-Saharan Africa and South Asia. The World Health Organization estimates that between 500,000 and a million children go blind every year, and up to 90% of those children die of complications related to their vitamin deficiency. • Today, over 70 countries have programs to deliver vitamin A supplementation to its populations in order to reduce child mortality and blindness. VITAMIN B • Pregnant women need to get enough B9 (also called folic acid) or their child runs the risk of being born with neurological damage. The amount of B9 that is needed each day during pregnancy is equal to about the weight of 4 grains of salt. Beans, lentils, and spinach are high in vitamin B9. • The amount of vitamin B12 needed each day is even less than that, equivalent to 1/67th of a single grain of salt. But without that tiny amount, the result is memory loss, depression, nerve damage, and anemia. Vitamin B12 is primarily present in animal-based foods such as meat and eggs, which makes strict vegans susceptible to deficiency.

DEAR PAW’S CORNER: I saw a news story about a man who built a miniature “Jurassic Park” landscape for his pet tortoise to play in. I have a little box turtle named “Darlene” that I got for my birthday, and I’m wondering, can I make something like that for my turtle? -- Sarah J., via email DEAR SARAH: Turtle and tortoise owners can get pretty creative with their pets’ enclosures, and it can be fun to do. To make it fun for turtles and tortoises too, any enclosure has two important requirements: It needs to meet their basic needs, and it must be safe for them. If you live in a climate that is not native to your turtle’s species, you’ll need to have an indoor and an outdoor enclosure. The indoor one should have the most ideal
climate possible for your turtle, with steady temperature and proper humidity, a couple of places in which to hide, and a sunny corner (or a heat lamp) where she can go to warm up if necessary. An outdoor enclosure gives your turtle a place to roam on warm, sunny days. It can and should be bigger than Darlene’s indoor enclosure, but ideally should be covered with mesh or wire to prevent predators from getting in. You’ll also need to build walls around the enclosure so Darlene can’t see out. It should have some nice flat rocks to climb up on, a shallow pool of water to rest in, a few shady spots and plenty of places to burrow in and hide. VITAMIN C
• Vitamin C is necessary for the production of collagen. Collagen is the protein that forms connective tissues that hold our bodies together. The word collagen comes from the Greek word for glue. Without collagen, the body breaks down, an illness called scurvy. • Between the time Columbus landed in the New World in 1492 and the time steam engines made ocean travel speedy in the mid-1800s, it’s estimated that over 2 million sailors died of scurvy. On any given voyage, about half of the sailors would die of scurvy, which was more than died of shipwreck, combat, storms, and diseases combined. • James Lind was a Scottish doctor who helped discover the connection between vitamin C and the prevention of scurvy. In 1747 he took 12 sailors who were all suffering from scurvy and divided them into six pairs. All the men ate the same food and lived in the same quarters but he gave each pair a different remedy to try to cure them. The remedies were widely varied and included such things as garlic, seawater, and cream of tartar. But the two sailors whose remedy included citrus fruit recovered from their scurvy so quickly that they were able to assist the doctor in his experiments. Lind largely failed to recognize the significance of this discovery and scurvy continued to plague sailors for many decades to come. VITAMIN D • Vitamin D is not naturally available in very many foods. The best sources are fatty fish such as tuna, salmon, mackerel, and cod liver oil. However, the body is able to synthesize its own vitamin D through exposure to ultraviolet light. When you take a vitamin D pill, the contents of that pill may have originated with lanolin from sheep’s wool.

Online at www.lovemytidbits.com TOO MUCH OF A GOOD THING • Many people feel that if a little bit is good, then more must be better, but that is not always the case. The healthiest and safest doses of vitamins are the ones that appear naturally in food. Taking too much vitamin D on a regular basis can eventually cause calcium deposits in places where calcium deposits don’t belong, such as your arteries or kidneys. Excess vitamin D can also interfere with blood clotting. Too much vitamin A can cause liver damage, birth defects, and death in extreme cases. Too much vitamin C can cause kidney stones. TOO LITTLE OF A GOOD THING • In World War II the Nazis cut off all supplies headed for Holland. Famine set in quickly. About 22,000 people died of starvation and another quarter of a million were made ill. The average weight loss among the population was about 20% of body weight. Nine months after the famine ended, the birth rate dropped by 50%. • After the war ended, researchers wanted to find out how that period of starvation affected the citizens who survived it. They were not surprised to find that children who had been in the womb when their mothers experienced starvation had increased risk of physical and mental health problems as they grew into adults. They suffered from higher rates of depression, cardiovascular problems, and type 2 diabetes. But researchers were very surprised to find that these negative effects extended not only to the children but also to the grandchildren of the people who had been involved. The grandchildren of the mothers who had experienced starvation also grew up to have higher than normal levels of health problems, all due to famine conditions suffered by their grandparents.

• “Amphibian” comes from the Greek words meaning “two lives” since the frog can live both in the water and on the land. • Frogs always croak, right? Wrong. The European tree frog sounds like a quacking duck. Another kind of frog sounds like a cat meowing. • Frogs have no ribs. • A frog closes its eyes by pulling the eyeballs deeper into the sockets, which serves to close the eyelids. • A frog’s tongue is attached to the front of its mouth to give a longer reach. • Do frogs have teeth? Just two tiny teeth in the upper jaw, which keep prey from getting away. • A frog does not need to drink water because it absorbs water through its skin. • A frog’s thigh, shin, and foot are of nearly equal length, to make jumping easier. • A bullfrog with a six-inch (15 cm) body can leap ten times its own body length. • Tadpoles are generally born being one sex or the other, but environmental influences can change the frog’s sex. If food is scarce or the temperature is not right, the transformation of female tadpoles into male frogs keeps the population down until conditions improve in the pond. • S ome frogs have lived for 20 years. One toad lived 36 years. • If you pick up a frog while you have insect repellent on your hands, the frog will absorb it through the skin and become very sick. • Handling a toad does not cause warts. For Advertising Call (740) 446-4543 FROGS (cont’d) • Frogs don’t always lay their eggs in ponds: • The Malaysian hill frog lives high in the mountains where there are few ponds, so it lays its eggs in damp moss that hangs from trees. The tadpoles develop into frogs there. • One kind of poison dart frog lays eggs on moist vegetation, and then watches over the eggs until the tadpoles hatch. Then the young crawl up on the backs of either parent and are literally glued in place by a mucous secretion. They are attached there for more than a week, until the parent can find a pool to release them. The water loosens the mucous bond, and the young swim free. • Bullfrogs can lay 20,000 eggs at a time. On the other hand, some kinds of dart-poison frogs will lay a single tiny egg in each of the miniature “ponds” that forms when rainwater collects in the base of a leaf. The mother frog will also lay a number of unfertilized eggs next to the fertilized egg so the tadpole will have something to eat when it hatches. • The eggs of the horned marsupial frog are placed on the mother’s back, where a pouch of skin grows around them to protect them. Tadpoles of the frog hatch and develop in that pouch, completing their development into frogs without ever seeing water. • The male midwife toad will wrap the long sticky strands of eggs around his legs, hopping around with them until they are ready to hatch. The law was strengthened and bolstered in 1938, closing many loopholes and putting the burden upon the manufacturers to prove their products were safe and effective. • Today, the FDA regulates things such as food, cosmetics, tobacco products, medical devices, veterinarian supplies, pharmaceuticals, and even blood transfusions. However, the FDA is not responsible for testing or approving nutritional supplements. If a particular supplement claims that it will help your arthritis, the FDA is not responsible for testing that hypothesis or for making sure the supplement doesn’t have any side effects. Manufacturers are not required to prove that their product is safe or effective before releasing it on the market. There is little the FDA can do about that. • The only time the FDA has been successful in pulling a dangerous supplement off the shelves was when it outlawed ephedra, a stimulant that caused over 100 deaths. • Today there are over 85,000 supplements and vitamins products available for sale in America. Can Tea Tree Oil Cure Nail Fungus? DEAR DR. ROACH: I read in a medical advice column that tea tree oil can help cure the nail fungus that I have had for more than 10 years on my big toe. It did dramatically reduce the inflammation around the nail, but the nail is unchanged, and the inflammation subsequently returns. Recently, though, I have seen or heard of several nail fungus treatments that do not present a danger of liver damage. Are there any new treatments for the nail fungus that actually are effective? -- J.S. ANSWER: According to the Natural Medicines Comprehensive Database, 100 percent tea tree oil cream, applied twice daily for six months, is effective at curing infection in only 18 percent of people who try it. Most people have some benefit that isn’t permanent, as you did. The only highly effective medicines I can find good evidence about, with cure rates of 50 percent to 75 percent, all have the possibility, albeit small, of liver damage. DEAR DR. ROACH: I am 72. Several years ago, because of bad back pain, I had tests and X-rays. The orthopedic physician assistant I was directed to afterward said I’d need hip replacements, or I could get a shot. No more comment than that. At my own insistence, I tried physical therapy instead of a shot. It merely aggravated the situation. Twice since, I’ve seen the same PA. We have a little conversation, and he bills me for the same advice. He did not display the X-rays, and I didn’t think to ask. I’ve yet to see the licensed doctor in that office. Walking is the one exercise that generally doesn’t bother me, so that’s how I keep a bit active. Judging by charts, I am about 30 pounds overweight. My leg and hip pains now do have me thinking about having at least one hip replaced. How do I initiate this? What sort of improved mobility can I expect? How long is recovery? Might my insurance cover a second opinion? What options are there? Which implants are best? -- J.W. ANSWER: You need a different orthopedic surgeon. He or she will go over all the questions you have -- all of which are reasonable, but can be answered only by someone who has examined you, listened to your concerns and knows your particular orthopedic problem. Almost all insurances will let you seek a second opinion. If you are feeling kind, let the orthopedic surgeon you didn’t see know the treatment you got from the PA. It has been my experience that physician assistants give out very good care, within the scope of their expertise, but this one is not giving good care to you, and I’m sure the surgeon would like to know. Unconquered and Undefeated If you ever have the opportunity to visit a newspaper office, you will immediately notice the decorations, particularly in the meeting rooms and lobbies of the newspapers who have been around awhile (and have managed to stick around). If they own their own presses, you will see thin sheets of tin called “plates” hanging on the walls. In other cases, you will find reprints of front pages that span the decades, featuring prominent moments in time. In almost every case, you are certain to find front pages, declaring in large, bold type any number (or all) of the following: the sinking of the Lusitania, the sinking of the Titanic, the assassination of JFK, the resignation of Nixon and the Challenger disaster. On occasion, you may come across a “V-J Day” or the moon landing, but those would be rare finds. Just about the only place you will find moments of archival triumph enshrined instead of tragedy is at the sports desk. There, you will find pictures of local athletes and teams with their hands held high in victory, trophies aloft, flags raised, ticker tape and confetti streaming down. But imagine, if you will, driving to your local market one day and running over an improvised explosive device (IED) that kills all your passengers in the fiery aftermath, leaves you unconscious, flesh burning away. You awaken three months later from a coma to learn that 80 percent of your body suffered third-degree burns, lungs injured from inhaling toxic smoke. You have lost fingers from both hands and the nerves in your right foot have been sheared away. After enduring more than 120 surgeries and skin grafts, would your first inclination be to return to the market? Well, that’s precisely what Air Force Master Sgt. Israel Del Toro Jr. did ... only in his case, he went back to the frontline of a war. On Sunday, May 8, he stood atop a podium in Orlando, Florida, and delivered the keynote speech for the Invictus Games not only as a hero, but as an athlete. The Invictus Games, a Paralympic-styled competition, is the brainchild of Prince Harry, who founded the games with a grant from his foundation in 2014. And while the event certainly draws its share of celebrity involvement and the competition is fierce, it isn’t the sort of event that has any losers in the traditional sense. And, unfortunately, it isn’t the kind of event that many newsrooms would choose to enshrine on their library walls. But men like Master Sgt. Del Toro, who will compete in cycling and powerlifting, embodies the word “invictus,” Latin for “unconquered,” perhaps as well or better than any other athlete ever, and the words he shared transcend competition and speak more to the human heart. “I will never let the guys who set that bomb get the satisfaction that they ruined my life,” Del Toro declared. Now that’s something you can put on any wall. Remember to never forget our soldiers.

Grow a Pizza Garden
Make pizza-slice clay markers: Roll out self-hardening clay or clay that can be baked in the oven (available at crafts stores) to 1/4 inch to 3/8 inch thickness. Cut out 4-inch to 5-inch pizza-slice shapes. For younger kids, make a cardboard template and set on the clay. Let your child carefully cut around it with a dull butter knife. Poke a craft or Tinkertoy stick into an edge of each slice. Set the marker on a cookie cooling rack to air dry according to product directions. When hard, paint the pizza slices with acrylic paints with images of a tomato, onion, basil, etc. When dry, an adult may apply nontoxic varnish to protect the surface from rain. It’s time to begin planting your summer herb and vegetable garden. This year add some whimsy to the family project by designing a circular plot with sections shaped like pizza slices. Fill each triangular area with herbs and vegetables that will grow and mature in time to place on the sauce of fresh barbecued or baked pizzas. Grow a pizza garden in three basic steps: 1. If this is your kids’ first garden, keep it reasonably small and manageable. Create a clever border by arranging large white rocks in a complete circle to represent the crust of the pizza. Arrange wooden dowels flat on the soil like the spokes of a wheel to divide the circle in neat triangles. Be sure to allow ample room in some sections for larger plants, such as tomatoes. 2. Sow seeds and plant plants. Good choices are: tomatoes, peppers, onions, basil, oregano and parsley. Set “pizza slice” clay markers in the ground to identify the plants as they germinate and grow. (See directions below.) If you don’t have a backyard garden, plant a few pizza ingredients in container gardens on a sunny patio or deck. 3. Water, weed, fertilize and watch the plants grow throughout the summer. Enjoy the pleasure of harvesting your garden together. Tip: When autumn comes, clip healthy herbs from your garden and wash and dry completely. Place into plastic bags, drizzle a little olive oil into the bag and freeze. Use as you prepare fall soups, pasta sauces and pizza.

Where Are Medicare Hospital Ratings?

If you had been hoping to go to the Centers for Medicare and Medicaid Services website and take a look at its new hospital ratings, you’ll be disappointed. It doesn’t exist yet. The very day before the site was to launch, it was delayed. It seems that Congress, along with the hospital industry, pushed to stop the launch in its tracks. For the survey, hospitals are rated for more than 100 measures of care, but the information is often confusing. (Or perhaps they’re afraid the information will make them look bad.) For example, hospitals objected to a Medicare patient death rate being known to women trying to choose a hospital for having a baby. Another objection was that a hospital’s death rate might be because the patients are low income. Hospitals called 60 senators and more than 200 representatives and asked for the delay so the information can be reassembled. We have ratings on CMS for various patient surveys, and those are of value. The higher the number of stars, the lower the death and readmission rates. We have a star rating system for nursing homes -- covering health inspections, staffing, quality measures and more. There’s one for Home Health Compare that includes a patient survey rating. The new rating system for overall hospital quality was meant to make the information about hospitals easier to understand, with over 60 of the measurements being condensed into the star system, with ratings from one to five stars. Initially the CMS told Congress that the website would be running by July. Now they’ve backtracked and say it might be after July if they’re still working on the data. Veteran unemployment isn’t as high as it used to be, down to 5.8 percent in 2015 from a high of 12.2 percent in 2011. It’s likely the Joining Forces program is at least partially responsible for that. In 2011, first lady Michelle Obama and Dr. Jill Biden challenged civilian companies to hire 100,000 veterans and spouses in an employment and training launch. Companies responded by hiring or training more than 1 million. One year ago, that same initiative saw numerous companies pledging to hire 90,000 veterans in the technology and energy fields over the next five years. Fast-forward to now: Forty companies participating in a renewal of the program have committed to hiring 110,000 veterans and to training 60,000 veterans and spouses in the next five years, mostly in technology, aerospace and telecommunications. Let’s see where some of those jobs are: JPMorgan Chase will hire 1,000 veterans over five years. It’s going to commit to spending $13.8 million through 2020 to support the Institute for Veterans and Military Families. Since 2011 they’ve helped 2,400 earn information-technology certificates. Amazon has hired 10,000 veterans and spouses since 2013 and is committing to hiring 25,000 more in the next five years. In addition, it will train another 10,000 in cloud computing. The aerospace industry (including General Dynamics, Lockheed Martin, Northrop Grumman, BAE Systems and Boeing) will hire 30,000 veterans in total. The big phone companies (T-Mobile and Verizon, AT&T and Sprint) will hire 25,000 more. Accenture and USAA will hire 5,000 each. Dell, Tesla, GoDaddy, Intuit, Seagate and HewlettPackard will hire as well. Multiple companies will provide training and certification. Get your resume ready.
