by Janet Spencer On May 14, 1853, a patent application for commercially condensed milk was received, having been sent by a pioneer in milk technology, a man whose first name was Gail. Come along with Tidbits as we drink milk! CONDENSING MILK • When a man named Gail was traveling by ship from England to America in the 1850s, cows were on board to provide milk for babies. The ship rocked so much that the cows could not produce milk, and several infants died. Gail knew there must be a way to preserve milk so it could be used on long voyages. • He knew that the religious sect known as Shakers used vacuum pans to preserve fruits, so he moved to a Shaker community in New York to use their equipment. Adapting their methods, he perfected a way of preserving milk in a can, calling it condensed milk. • He had a hard time marketing it because it was more expensive than fresh milk, and housewives thought real milk was better than canned milk. It didn’t catch on until the Civil War made it essential to get unspoiled food to soldiers. After the war, thousands of soldiers went home and introduced their wives to condensed milk. Gail’s company thrived and is still going strong today. The company is named after Gail’s last name. What was his last name? Answer on next page.

Gail’s last name was Borden. Incidentally, Gail Borden was distantly related to Lizzie Borden of axe fame who supposedly murdered her parents. MILK SAFETY • Germs responsible for transmitting tuberculosis, typhoid fever, cholera, and scarlet fever live in cow manure. When the cow kicks up the manure, the germs land on the teats. If they are not washed before milking, the germs go in the milk. In the 1890s scientists finally had the evidence they needed to prove that outbreaks of these diseases came from contaminated milk. • Louis Pasteur invented pasteurization just at that time. In pasteurization, milk is heated briefly to kill organisms without damaging or changing the milk. In 1891 in New Jersey the first milk plant to install a pasteurizer was exhibited as a modern marvel. Dairymen opposed the new technology for many reasons. They claimed it was unhealthy to alter milk this way; that the extra expense involved would send the price of milk prohibitively high; and that unscrupulous dairymen would rely so much on the pasteurizer to clean their milk that they would let their cattle and barns become filthy. Children, they claimed, were better off drinking live bacteria in real milk than dead bacteria in altered milk. • Teddy Roosevelt ordered the Public Health Service to do a study. They concluded that pasteurization did not alter milk in any way except to kill all deadly germs. The following year, Chicago became the first city to require all milk sold to be pasteurized.

DEAR PAW’S CORNER: My golden retriever mix, “Benny,” seems to be drinking a lot more water lately. Every time we’re near a water dish or a running tap he is lapping water like crazy. This doesn’t seem normal, even though the weather is now much warmer. What could be wrong? -- Lane Y., Columbia, Md. DEAR LANE: While it could just be excess thirst due to the hot weather, anytime you feel something is not right with your pet, you should act on that feeling. I recommend taking Benny in to see the veterinarian as soon as possible. A number of health issues can cause excessive water drinking among dogs and cats. I’m not going to speculate about Benny’s health, because he could be just fine. Diseases like diabetes can make pets thirsty, as can emergencies like bloat (which can occur in dogs that eat too much at once, and must be dealt with

immediately by a veterinarian). A number of other conditions can cause excessive thirst, too. The vet will check for any immediate causes of concern, and may do blood tests to determine if anything systemic is going on. If Benny seems OK, he will tell you to keep monitoring his water intake. You may want to keep a journal -- carry around a small notebook or use your smartphone’s note-taking app -- to jot down the time and place that Benny takes a drink and how long he drinks. You also might want to note any changes in Benny’s coat, his behavior (overly excited or lethargic), or even if everything seems normal. If Benny’s excessive drinking continues or worsens, his overall condition worsens or if you still just don’t feel right about how things are going, contact the vet again to continue testing and monitoring him. MILK SAFETY (cont’d) Opponents of pasteurization went to court, arguing that requiring pasteurization interfered with free trade. Chicago courts repealed the ordinance. In 1911, the American Medical Association came out in favor of pasteurization, and New York City ordered all milk pasteurized. Milk producers, arguing hardship, managed to get enough loopholes in the law that it was essentially still legal to sell raw milk. But in 1913 when an epidemic of typhoid hit New York due to unsanitary milk, the loopholes were closed. Eventually all cities followed suit. Infant mortality dropped drastically. Today the milk we drink rarely sees either light or air between the time it leaves the cow and the time it enters your glass. QUICK BITS In the 1930s each milk bottle had an average life span of 35 round trips between dairy and home. Before World War II, about 80% of milk was delivered directly to the door. Gas rationing hastened the end of that practice and people started buying their milk at the store. Homogenized milk is milk that has been treated to prevent the cream from rising to the top. The milk has been forced through a fine mesh which breaks up the globules of fat which remain suspended in the milk instead of rising. It has nothing to do with purity. Unfortified milk has only tiny traces of vitamin D. Vitamin D is found naturally in egg yolk and fish liver oil, but nowhere else. Iron is added to many foods, but it is not added to milk because iron-fortified milk turns coffee green. Sheep milk was popular in medieval England, and a sheep dairy was called a ‘wich.’ The name survives in many village names such as Greenwich, Norwich, and Sandwich.

LACKING LACTASE • Milk contains lactose sugar. In order to digest it, people have to produce an enzyme called lactase in their digestive tract. Babies produce this necessary enzyme naturally until they are about six. After that, their bodies continue to produce lactase only if they continue to eat milk products regularly. • If a person goes for a long period without eating milk products, they lose the ability to digest milk and will suffer from stomach cramps, nausea, and diarrhea if they try to drink milk again. In many parts of the world where cattle were never domesticated, entire races of people lost the ability to digest milk and many cultures still believe that milk products are unclean and unhealthy. Today lactase is available in tablet form for people who suffer a deficiency of it but still enjoy eating milk products. COLIC CONNECTION • 20% of infants suffer from a little understood disorder called colic. This causes sustained uncontrollable fits of crying in the baby. A recent study has turned up evidence that colic may be caused by intolerance to certain antibodies produced in the cow and passed to the baby through the milk. But some babies suffer from colic even when they are fed exclusively human milk. Researchers theorized that these cow antibodies are passed to the baby through mother’s milk. They asked mothers to stop eating milk products themselves, and in half of the cases, the colic cleared up in the child as a result. SOUR MILK In the 1932 film The Sign of the Cross Claudette Colbert plays a spoiled empress who luxuriates in a marble bathtub full of milk. Some 400 gallons of real milk were used. The scene took a week to film, during which time the milk became steadily more rancid. “Excuse me,” said Colbert, “But my bath is turning to cheese!”

FAMOUS CANADIANS: JAMES KRAFT • James Kraft was born on a dairy farm near Stevensville, Ontario, Canada in 1874, the second of eleven children. He went to work in a local grocery store at the age of 18, and later moved to Buffalo, New York, where he invested in a cheese factory. The company sent him to Chicago to manage a branch of the firm. While he was there, he was ousted from the company. With only $65 to his name, James Kraft needed to do something to survive, but cheese was the only business he knew. • At the time, selling cheese was a dicey business. Because there was no refrigeration, cheese melted in the summer heat and rotted quickly. Many merchants refused to carry cheese because the quality was iffy and the shelf life was short. In 1903, Kraft invested his $65 in a horse and wagon, and began buying cheese early in the morning and selling it to merchants before the heat of the day could spoil it. Profits were plowed back into his own dairy herd, and he spent his spare time experimenting with cheese, certain that there must be a way to pasteurize cheese the same way milk was pasteurized. • The problem was that heating cheese caused it to separate into oils and solids, rendering it unpalatable. However, Kraft eventually discovered that if he shredded the cheese first, and stirred it quickly while heating it, the growth of mold and bacteria would stop, and the resulting product was tasty and shelfstable. It did not require refrigeration and could be shipped long distances. • Competing cheese producers insisted that Kraft label his product as ‘embalmed cheese’ because the aging process had been stopped. Federal regulations later ruled that his product be labeled as ‘processed cheese.’

By 1911, when James became an American citizen, the new company was advertising on billboards and reaching out to retail grocers with direct mailing campaigns. • The company opened its first cheese factory in Illinois in 1914, distributing 30 kinds of cheese. In 1915, Kraft sold $5000 worth of cheese. By 1916, sales had risen to $150,000. During World War I, Kraft supplied American forces with 6 million pounds of cheese, and soldiers were introduced to his product. By 1926, the Kraft Canadian organization was making 25 million five-pound boxes per year in British Columbia.

• Meantime, the company kept introducing new products: Velveeta in 1928, Miracle Whip in 1933, macaroni and cheese in 1937, Parkay margarine in 1940, sliced processed cheese in 1950, and Cheez Whiz in 1952. In 1933, Kraft started packaging cheese spreads in a container that could be used as a drinking glass when emptied. Hand-painted and nicely designed, the glasses were called Swankyswigs. In the first year following their introduction, sales rose 601% and 94.3% of women who purchased the spreads reported that they were saving the glasses. Today Swankyswigs are collectible items.

• When cream is placed in a crock and jiggled a lot, the result is butter. But one day in ancient times some person placed milk or cream in a sack made from the intestines or stomach of an animal. After being agitated, perhaps during a day’s ride, the result was not butter, but a primitive form of cheese. That was the first discovery that the enzymes and acids in the lining of an animal’s stomach will cause milk to coagulate. • Known as rennet, these chemicals are essential in the manufacture of cheese. Rennet contains many enzymes which coagulate the milk, causing it to separate into solids (curds) and liquid (whey). This helps young mammals digest and assimilate their mother’s milk. • Cheese is little more than artificially coagulated milk, with different types of bacteria and/or molds added. There are 18 different categories of cheese and well over 1,000 different varieties. • The average American eats about 26 lbs. (12 kg) of cheese each year. CHEESE FACTS & ANECDOTES • A mouse will not eat cheese if other food is available. Mice have been known to eat glue, leather, plastic, paste, soap, bugs, leaves, roots, stems, and seeds— but they just don’t go for cheese. • Canadian cheese makers wanted to have a very unique display at Chicago’s World’s Columbian Exposition in 1983. They created a cheese centerpiece that weighed 22,000 pounds (10,000 kg). The train that was hauling it to Chicago broke down under the strain several times on the way. When it was maneuvered into place at the Expo, it promptly crashed through the floor of the building.

CHEESE FACTS & ANECDOTES • President Andrew Jackson had just a few days left in office when a dairy presented him with 1,400 lbs (635 kg) of cheese. What to do with it? Jackson decided to hold a party in the White House and invite the public at large to attend. On February 22, 1837, he threw open the doors of the White House and the public surged in. By nightfall, the only thing left of the cheese were stains left where bits of it had been ground into the rugs, furniture, and walls. When Martin van Buren moved into the White House ten days later, the place still smelled like cheese. • When Thomas Jefferson was in office, cheesemakers of Berkshire, MA, decided to present the president with a cheese of colossal proportions. They had 900 dairy cows among them, and they turned a single day’s production of milk into a 1,200 lb. (544 kg) cheese which was moved by sled, boat, and wagon to the White House. By the time it reached the president, some 60 lbs. (27 kg) had to be removed because of deterioration, but the president was so impressed he made a $200 donation to the church of Berkshire. • As a practical joke, the Duchess of Marlborough once mixed slices of soap in with the slices of cheese and watched her guests actually eat the soap rather than appear to have bad manners. • In the mid-1800s, naval vessels of Brazil and Uruguay were engaged in battle when the Uruguayan ship ran out of shot for their cannons. The captain ordered his men to load the cannons with Dutch cheeses which were too old and hard to eat. The first two cheese cannonballs missed their mark, but the third one crashed into the mainmast of Brazil’s ship. Two sailors nearby were killed by cheese shrapnel. After several more cheeses ripped their sails, the Brazilian ship fled.

Q: At a recent church rummage sale, I found a W.C. Field’s cookie jar marked “McCoy.” I paid $50 for it and feel I got quite a bargain. -- Phyllis, Pueblo, Colo. A: Your cookie jar was produced by McCoy in 1972 and generally retails in the $200 to $250 range, according to “McCoy Pottery: Identification and Price Guide” by Mark F. Moran. Many of the McCoy cookie jars have increased in value in recent years as collectors have become more and more interested in them. For example, the “Liberty Bell” cookie jar, which often sold for about $25 only five or six years ago, now sells for about $100. Q: I was a great fan of Hoot Gibson, the Western movie star of the 1930s and ‘40s. I have two of his comics, No. 1 and No. 3WW, both issued by Fox Features Syndicate. Are they worth keeping? -- Rob, Roswell, N.M. A: I contacted several comic-book dealers, and they seem to agree that your comics probably are worth about $300 each. They were issued in about 1950. An excellent reference is “The Standard Guide to Golden Age Comics” by Alex G. Malloy and Stuart W. Wells III, and published by Krause Books. This guide serves up 900 covers of Golden Age comics from 1938-1956, along with nearly 50,000 up-to-date values. It is easy to use and highly recommended, especially if you have a stack of older comics stashed under your bed or in a closet. Q: I still have several books from when I was a child. They are “Fred Flintstone Bewildered Baby-Sitter with Pebbles,” “The Flintstones and Dino” and “Hildy’s Hideaway.” Although I have no plans to sell them, I am nevertheless curious about how much they are currently worth. -Susan, Mitchell, S.D. A: I found your three books referenced in “Warman’s Children’s Books” by Steve Santi and published by Krause Books. The first Flintstone book was published in 1963 and is valued at $16; the second featuring Dino was issued in 1961 and is worth about the same amount. “Hildy’s Hideaway” also is from 1961 and listed for $10. Vietnam Vets File Suit Over PTSD Aided by the Yale Law School Veterans Legal Service Clinic, a handful of Vietnam veterans with PTSD filed suit in U.S. District Court in Connecticut alleging that the military didn’t upgrade their discharges when it should have. Over the years, less than 5 percent of requests for upgrade have been given. Post-Traumatic Stress Disorder didn’t have a name back when these veterans were in Vietnam. That only came about in 1980. Various wars have called it “shell shock” and “combat exhaustion.” During the Vietnam War, they were calling it “stress response syndrome.” Doctors thought it was caused by “response” and would go away, and if it lasted too long, it must have been pre-existing. What no one took into consideration back then was that there was a reason for the behaviors of veterans with PTSD, which included being absent without leave, drug use, hyper-vigilance, the inability to carry out duties, altercations and blackouts. Once PTSD had a name, and its symptoms and accompanying behaviors recognized, those undesirable discharges should have been upgraded for tens of thousands of veterans. The veterans in the class-action lawsuit all had been given other-than-honorable discharges, which has followed them since then, bringing a lack of correct medical care, unemployment, homelessness and damaged relationships, as well as years of anxiety. This lawsuit is similar to a 2008 lawsuit (Sabo vs. United States) that was filed for veterans who’d served in Iraq and Afghanistan. In those cases, veterans with PTSD only rated a 10 percent disability (when it should have been 50 percent after 2002), and the veterans therefore were denied benefits. When Honey Isn’t No matter what we do to keep our families safe, we can’t cover all bases all the time ... especially when there are dangers in the food supply. Example: Honey is supposed to contain the pollen from where it was harvested. If nothing else, that pollen helps investigators trace the honey back to the source if there is a contamination. During any filtering process, harmful additions can be made to the pure product the bees made for us. According to Food Safety News, the Food and Drug Administration says that filtered honey isn’t really honey ... but that no one is checking. Go online to FoodSafetyNews.com for a long list of honey brands that don’t contain any pollen at all. FSN conducted tests on honey sold all over the U.S. as a follow-up to its original research. That first round of testing revealed that the 27 countries of the European Union banned shipments of honey from India because it contained animal antibiotics and lead, and likely was shipped to India from China, where the product might contain only a tiny amount of actual honey. That same honey is sent to the U.S. by the millions of pounds with little oversight by U.S. Department of Agriculture officials. To check other foods, go online to FoodFraud. org. Put some of the foods you commonly eat into the search box to get lists of foods that might not be what you think they are. Click the little X to the left of each item for the research that revealed the food fraud. Here are a few other foods to watch: • When you buy a can of tuna, is it really tuna? Or has escolar been mixed in or swapped? Escolar can cause serious intestinal problems. • If your orange juice is cloudy, it might be an unhealthy filler to deceive you into thinking it’s the pulp. • Milk, coffee, tea and even black pepper are on the top-10 list of foods associated with food fraud, according to Mercola.com. Best bets: • Do as much of your grocery shopping as possible at local vendors and farmers markets. Ask questions. • Buy whole foods instead of mixes or prepared foods. With whole foods you can tell whether something else has been mixed in. Treatments Not Same for Toe Joint Pain DEAR DR. ROACH: I am an 82-year-old male. In my younger years, I participated vigorously in sports. As a result, I ended up with a degenerated joint in the big toe of my right foot. Forty years ago, the doctors gave me an artificial joint. Prior to the joint installation, I was in severe pain. After the procedure, I had no pain or problems of any kind with the joint. My oldest daughter has a bad joint in her big toe that gives her a lot of pain, plus problems walking. Her doctors tell her that they will not replace that joint anymore. Instead they propose to fuse the joint. She would be off her feet for six weeks, and she would have to undergo eight weeks of intensive therapy and learn to walk differently. What’s missing here? Why would they not do the procedure for her, when my procedure was so successful? -- A.E.C. ANSWER: First off, not everyone with a “bad joint” in the big toe -- usually a bunion -- needs surgery. Many people get relief from conservative measures, such as shoe modification, orthotics, night splinting and stretching. However, if pain or difficulty walking persists despite conservative measures, then referral to a foot surgeon is appropriate. There are more than 150 surgeries described for treatment of bunion deformities. Joint replacement (arthroplasty) is still being done, but a 2005 trial comparing a fusion procedure (arthrodesis) to joint replacement found arthrodesis to have superior pain control. Other studies have found the two

The only meds I take are for diabetes and a thyroid condition, and I’ve taken them for ages. -- F.L. ANSWER: I am surprised you aren’t taking an antihistamine, like Benadryl or a prescription equivalent. However, the real issue here is why are you having hives? There are many causes, and the biopsy report, while consistent with chemical allergy, might not be definitive. If the hives last more than six weeks, normally you’d get a series of blood tests, with perhaps some additional follow-up testing if necessary. Sometimes the cause is never found. 6 large eggs 2 cups milk 1 tablespoons Dijon mustard Salt and pepper 1/4 cup snipped chives, plus additional for garnish 1 loaf (9 ounces) French bread (preferably day-old), cut into 1/4-inch-thick slices 6 ounces Gruyere cheese, shredded 1. Grease shallow 1 1/2-quart ceramic baking dish. In medium bowl, whisk eggs, milk, Dijon, 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper until well-blended. Stir in chives. 2. Arrange half of bread in bottom of prepared baking dish, overlapping slices to fit. Pour half of egg mixture over bread and sprinkle with two-thirds of Gruyere. Cover with remaining bread, overlapping slices. Pour remaining egg mixture over bread; gently press down to help bread absorb egg mixture. Sprinkle with remaining one-third Gruyere. Cover and refrigerate overnight. 3. Preheat oven to 350 F. Bake 50 to 60 minutes or until puffed and golden, and tip of knife inserted in center comes out clean, covering top during last 15 minutes if browning too quickly. It might be possible to enhance your cognitive functions and your muscles at the same time. All you’ll need is a thermos of green tea or coffee to carry with you to the gym. Swiss researchers have discovered that green-tea extract helps working memory, and they have the results to prove it. For the study, they had male volunteers drink a soft drink that had green-tea extract in it, and then do memory tasks. What they discovered in MRIs taken afterward is that the tea extract caused “increased connectivity between the parietal and the frontal cortex of the brain.” The results of the memory tasks improved as well. The possibilities for the future are that green tea could be used in treatment of dementia. If green tea isn’t a drink you enjoy, try coffee in your thermos. Researchers at Johns Hopkins discovered that caffeine is a memory enhancer, too, and works for at least a whole day, 24 hours. In the lab, researchers provided placebos (they contain nothing) or actual caffeine tablets (equal to a cup or two of coffee) before having participants review images. A day later they were tested on their memory of images, some of which they’d seen the day before. Researchers found a “deeper level” of memory retention than in previous studies where the caffeine was given first and were therefore able to call the caffeine a memory enhancer. Add in exercise, and you have an additional way to keep your brain healthy. Researchers studied women between the ages of 70 and 80 and learned that aerobic exercise increased the size of the brain in the hippocampus, the area involving memory and learning, or at the very least, the exercise slowed any shrinking of that area. A: That depends on a couple of factors, besides convincing your mom to let you replace it. One, is there enough interest among the family to continue to have a porch swing? And two, is the porch structurally sound enough to safely put up a new swing? The reason I ask is that older homes, while probably pretty sturdy, may have developed hidden problems structurally. Porches usually are built outside any load-bearing points and so don’t present a threat to the house itself, but they are sometimes built with less-durable materials and therefore deteriorate faster. T h e r e ’s nothing more embarrassing than putting up a sturdy, heavy porch swing only to have to anchor bolts tear out of a rotting beam, dumping out the swing’s occupants. Have a construction professional who specializes in outside attachments like decks and porches inspect and evaluate the condition of the porch. Tell him your plans to replace the swing and ask about the best places from which to anchor it. Another option: If the porch doesn’t check out, or if you or your mom simply don’t want a swing on the porch, try a freestanding swing in the yard. Again, look for a sturdy, durable model with good supports that will stand up to outdoor weather for several years. HOME TIP: Want to paint a wooden porch swing?
