TIDBITS® GOBBLES WITH THE TURKEYS by Kathy Wolfe ‘Tis the season, as they say, so this week, Tidbits is wondering just how much you know about the turkey, one of our favorite meals over the holidays. • The U.S. Department of Agriculture tells us that about 45 million turkeys will be cooked in America for Thanksgiving, about 17% of all the turkeys sold throughout the year. Close to 250 million turkeys are raised in the U.S. annually. • The Meleagris gallopavo is the wild turkey Pepsi from which our domesticated turkey is descended. There are six subspecies of wild turkeys, including the Gallopavo silvestris, or forest turkey, the most numerous of all turkeys, more than five million birds. The turkey is the only poultry native to North America. • Because domesticated turkeys have been bred to have large breasts for cooking purposes, they are top-heavy and unable to fly. However, wild turkeys can fly as fast as 55 mph (89 km/hr) and they even roost in the treetops at night to avoid predators. Wild birds can also run up to a speed of 25 mph (40 km/hr). The domestic bird will weigh about twice as much as the wild one. turn the page for more!

House Training a New Kitten

DEAR PAW’S CORNER: My mom says she will let me keep a kitten from one of my friend’s cats as soon as the kitten is old enough. I can’t wait, but I wonder if it will be hard to house train the kitten? -- Sara, via email DEAR SARA: Compared to house training puppies, kittens usually are very easy to train. Cats instinctively use the bathroom in specific ways -burying their poop, for example -- because in the wild, it hides their scent from potential predators. The first time you bring the kitten home, let it explore the house a bit (supervised at all times). Then carry the kitten to the litter box and place it into it. If the kitten pees or poops elsewhere in the house, don’t scold it. As soon as it happens, carry

the kitten to the litter box, gently place the kitten in it and speak in a soothing voice. The kitten should quickly make the connection that this is where you want it to go. A couple of quick tips: scoop the litter box daily and change it weekly. Neither you nor your cat will like a smelly litter box. If the kitten’s habits change -- it uses the litter box, then suddenly stops using it and eliminates around the house -- take it straight to the vet to make sure it’s not sick. Be sure to take your kitten to the vet as soon as you get it -- ideally on the same day -- for its first checkup. This is also a great time to practice your manners, table side or otherwise. With just a little extra planning your family mealtime can become a highlight of the day and a way to build some pleasant family memories. Remember to make it fun. Involve the children in planning and executing the meal. Keep conversations light and distractions to a minimum. And then enjoy spending time together whenever possible. Turkeys have excellent hearing, able to determine sounds up to a mile away, but oddly enough, have no external ears. They hear through small holes in the head directly behind the eyes. The birds have periscopic vision, with eyes on the sides of the head, able to achieve a 360-degree field of vision.

• The male turkey has sharp bony spikes on the back of its lower legs, used as a method of defense. You can determine a turkey’s age by measuring the length of these spurs. A oneyear-old can have spurs of 7/16” (1.1 cm), while two-year-olds’ spurs range from ½” to 15/16” (1.27 cm to 2.4 cm). The spurs on a five-year-old turkey are from 1.5” to 2.25” (3.8 cm to 5.7 cm) in length. • During mating season, the male turkey fluffs out his feathers, fans out his tail feathers, and drags his wings when he walks. This little performance is called strutting. • When it’s time for the female hen to lay eggs, she’ll lay about 12 eggs at the rate of one per day in just under two weeks. Those eggs will incubate about 28 days before hatching. •

It was first observed in April of 1872 in recognition of the recovery of the Prince of Wales from a serious illness. •

• What’s in that little plastic bag found in your turkey’s empty body cavity when you bring it home from the store? That bag contains the giblets, which are the turkey’s edible internal parts, including the gizzard, heart, liver, and neck. The gizzard is part of the turkey’s stomach, containing tiny stones that help grind up food in the digestion process. Some cooks chop up the giblets to add to the gravy or stuffing, but in all probability, most giblets end up in the dog’s dish! • The meat of an older, larger male turkey is preferred over that of a younger bird, which is usually stringy and tougher. However, when it comes to female turkeys, the meat of a younger bird is better. • Benjamin Franklin favored the turkey as a symbol for America over the chosen bald eagle, saying, “I wish the bald eagle had not been chosen as the representative of our country; he is a bird of bad moral character; the turkey is in comparison a much more respectable bird…a true original native of America. Eagles have been found in all countries, but the turkey was peculiar to ours.”

FAMOUS CANADIANS: FEMALE VOCALISTS This week, Tidbits looks at four dynamic Canadian female vocalists who’ve all hit the charts in a big way. • Ontario country singer Shania Twain began life as Eilleen Regina Edwards, and was raised in near poverty. She was adopted by stepfather Jerry Twain, a member of the Ojibwa tribe, and took on the first name of Shania, said to be a translation from that language as “I’m on my way.” She began singing in bars at age 8 to help the family make ends meet, wrote her first song at age 10, and appeared on CBS television at 13. From her humble beginnings, Twain has gone on to have sales of 85 million albums, has earned five Grammy Awards, and has been inducted into the Canadian Music Hall of Fame. • Although Ontario native Avril Lavigne is just 30 years old, she has already sold more than 30 million albums and 50 million singles. By age 16, she had already appeared on stage with Shania Twain, and had a $2 million recording contract in her pocket. She’s also a songwriter for other artists, having co-written the mega-hit “Breakaway” recorded by Kelly Clarkson. She has branched out into films, doing a voice-over for a character in the 2006 animated film Over the Hedge, and appeared in Fast Food Nation. She has two perfumes on department store shelves, and has launched her own clothing line, Abbey Dawn. Avril (whose name means April in French) gives back to the world through the foundation she founded that funds Easter Seals and Make-AWish, helping children and youth with serious illnesses.

What would Thanksgiving dinner be without cranberries? Here’s the lowdown on this little fruit, a member of the heaher family. • Cranberries grow on creeping shrubs and vines that are about 7 feet (2 m) long and 2 to 8 inches (5 to 20 cm) in height. They flourish in sandy bogs and marshes, requiring at least a ton of vines per acre to plant a bog. • The cranberry is one of three fruits native to North America, along with the Concord grape and the blueberry. Long before the arrival of Europeans to the New World, the Native Americans were using cranberries for food, as a dye for fabrics, rugs, and blankets, and for medicinal purposes. They mixed deer meat with mashed berries to make pemmican, a food that kept for long periods of time. The tribes’ medicine man used cranberries in a poultice to draw out poison from wounds. Some tribes called the little berries “sassamanesh,” while others named them “ibimi,” meaning “bitter berry.” When German and Dutch settlers arrived, they called them “crane berries,” because the plant’s blossoms looked like the head of a sandhill crane. The word “cranberries” is first recorded in 1647 in a letter written by John Eliot, who was a missionary to the Native Americans. Eliot, who was also the translator of the first Bible printed in America, asked in his letter, “Why are strawberries sweet and cranberries sour?” • Just 5% of the cranberry crop is sold as fresh, with the other 95% turned into other products, such as juice and sauce. These little berries are ingredients in more than 1,000 food and beverage products sold.

The state of Wisconsin is the nation’s No. 1 producer of cranberries, producing nearly 5 million barrels, which amounts to 60% of America’s crop. Other contributors to the supply are Massachusetts, New Jersey, Oregon, and Washington. British Columbia is Canada’s leading producer, cultivating 20% of the world’s cranberries. A lot of fruit is produced in a tiny area – if all of North America’s cranberry bogs were put together, they would encompass an area about the size of Massachusetts’ Nantucket Island, just 47 square miles (122 sq. km). • Canned cranberry sauce was first marketed commercially in 1912 by the Cape Cod Cranberry Company in Hanson, Massachusetts. The Ocean Spray Company got its start in 1930, when it formed as a grower-owned marketing cooperative. • The health benefits of cranberries are many, including preventing urinary tract infections, respiratory disorders, kidney stones, and heart disorders. Their proanthocyanidin content and anti-carcinogenic components help inhibit the growth of several cancer cells, especially colon and prostate cancer. Its antioxidants may also contribute to a healthy immune system. • People who are allergic to aspirin should be careful of their cranberry consumption, as the berries contain sizable quantities of salicylic acid, also present in aspirin.

ROACH: We spent a considerable amount of money on our teen daughter’s laser hair-removal procedures, but the poor thing takes after her swarthy father, and the treatment seems to have no effect. Is there any real science behind this treatment? -- S.O. ANSWER: There certainly is real science, and laser hair removal is effective, but its effectiveness is limited, and it’s important to have realistic expectations. Laser treatment usually doesn’t remove hair entirely, forever. Most people will have less hair, thinner hair and lighter hair. About two-thirds of people will have at least a 50 percent reduction in the treated areas after a single laser course. With multiple courses, 90 percent of people will get up to a 50 percent reduction. Lasers tend to work best for light-skinned people with dark hair. Even people with apparently complete results usually get hair regrowth after six to 12 months.

Your daughter appears to be among those who have a poor response to laser. Besides shaving or plucking, other options include chemicals to remove the hair, medications to prevent hair growth and electrolysis, which is the only permanent hair-loss method -- and even that depends on the technique of the technician. A dermatologist can help guide the right treatment for your daughter. *** DR. ROACH WRITES: In January I wrote about cluster headaches, and many readers took the time to write in with what had been helpful for them. Among the treatments recommended were the antidepressant Zoloft, and the anesthetic lidocaine administered in the nose. Several readers wrote in to tell me that acupuncture cured them. Mold and food sensitivities also were frequently mentioned, with an antihistamine and avoidance of offending agents being helpful. Botox, commonly used for migraine, was the key for at least one reader. Finally, several people said chiropractic manipulation cured their headaches. It is easy to say, “If it worked for someone else, it will work for me.” However, the body is vastly complex, and it takes a great deal of judgment to know what is right for a given person. I don’t pretend to have all the answers, but I wanted to share my readers’ experiences. What is certain is that none of these treatments will work for everybody. Q: Last winter was a doozy by any standard, and several of my border shrubs that had survived previous winters unprotected froze and died off. I replaced them, but I don’t want a repeat if we have another bad winter. What’s the best way to protect the new plants? -- Jane V., Worcester, Mass. A: Many shrub varieties are hardy, and can put up with a lot of weather. Some do very well under a coat of snow or ice (which actually can help insulate the plant during the coldest part of winter). But snow-less cold snaps or sudden weather changes can test even the toughest of these plants. Since these are new plants, you should take extra protective measures regardless of how mild or rough the winter is. Go ahead and place burlap covering (available at home and garden stores by the yard) over or around the shrubs, ideally before the first hard frost, but definitely ahead of any multi-day periods with temperatures below freezing. Drape or wrap the burlap around the shrubs, not too tightly -- enough to keep it from flapping loosely in the wind, but not so tight that it constricts the plant. Secure the wrap at the base of the plant with twine, again being careful not to damage the bark. For larger outdoor plants with extended branches, carefully tie up the branches by loosely wrapping twine around the bottommost branches, then sliding the twine circle upward a few inches to gather in the plant. Repeat with another length of twine to secure the branches higher up, and repeat again higher up if necessary. Then wrap burlap around the plant and secure. If you’re worried about a plant being pushed over by wind or banks of snow, place wooden stakes around the plant and wrap burlap around the stakes and plant to secure them. During the winter, immediately clear snow banks from around the plant so the weight doesn’t push the plant over. Protect the roots of new and old shrubs during the winter, by placing fresh mulch around their base as an insulator. First, rake back existing mulch to expose the base of the tree or shrub trunk to the air for a few days. Next, cover the exposed area with new mulch. Straw, pine needles or wood chips, or a combination of these, work well as winter mulch, insulating without compacting, so that water can get to the roots. This cover needs to be removed in the spring. HOME TIP: Mulch around tree and shrub bases should be kept just 2 or 3 inches deep, to insulate while allowing air and water to get to the roots. Whether you have a forced-air furnace with full house vents, direct vent heaters in multiple rooms, a wood or pellet stove or an oil-fired boiler with radiators, we have a long winter ahead of us. Any necessary repairs can be made now before we’re in the full force of winter, when quick service might be impossible to get. Plus, you’ll add years to the life of your heat system by doing regular maintenance. If your system is a furnace with filters, buy multiple filters and change them regularly. If you have pets, once a month isn’t too often to drop in a new filter to keep clear air flowing through the system. Be sure to read your heating system’s manual. As good as they are for pulling pollutants out of the air, pleated filters can be too restrictive for airflow, especially on startup. Know what your system requires. If you live in a cold climate, keep snow, ice and leaves cleared from the outdoor condenser, if you have one. Keep the flue on the roof clear of built-up snow. Indoors, be sure to keep the area around the furnace clear. Consider having a preventive maintenance agreement with a qualified technician or even your fuel supplier if it offers the service. Your annual inspection will uncover any problems with pumps, airflow, electrical components and more. Additionally, most maintenance contracts offer service calls 24/7 if necessary. A hint for staying warm this winter if you have oil or propane and are on automatic delivery: Do your own checking once a week to see how much you have left. If your tanks run dry because your fuel company has miscalculated when you’ll need a delivery, you could face a big expense if debris at the bottom of the tank is pulled up into the furnace. If you don’t have a carbon monoxide detector, install one near your furnace and in other places around the house. Whether you choose detectors that are hardwired or batteryoperated, check them frequently, especially the one in the basement, where you don’t see it often. If you have hardwired detectors, be sure they have a battery backup in case of power failure. No matter what kind you get, be sure it’s UL-approved. Reversing Memory Loss Here’s something many of us have been waiting on: the reversal of memory loss due to Alzheimer’s disease. UCLA, working with the Buck Institute for Research on Aging, created a multi-faceted approach to help participants with mild cognitive impairment, and for the first time, memory loss was reversed. Granted, the study was small, just 10 people, but six patients were able to return to their job or found their job much easier to perform. Nine of the 10 participants experienced memory improvement starting within a few months, and some regained functions that they hadn’t had for many years. The final participant, with late-stage Alzheimer’s showed no improvement. Alzheimer’s historically has been treated with monopharmaceuticals, which is one drug. It either works or it doesn’t. The program created for this study was different for each participant, but each involved 36 therapeutic points. Some of the overall parameters involved sleep changes, diet that eliminated gluten and processed food, fasting with timed meals, meditation for stress reduction, vitamins at specific times and exercise. All were very tightly regulated and complex -- and difficult to follow. No participant managed to follow all of the protocols, but they apparently saw enough of a benefit that they kept working at it. No, this program isn’t something to try to create on your own. All of it was individualized per participant based on tests and ongoing progress. But your doctor can get more information for you. If anything stands out as potentially promising for you or someone you know who has Alzheimer’s, it’s worth a look. To cut patient wait times, Department of Veterans Affairs chief Robert A. McDonald is touring the country to recruit doctors, dentists and nurses for the VA health-care system. He’s looking for 30,000 more medical personnel. So far, the VA secretary has made his pitch at Johns Hopkins, University of Vermont and UC Davis. On the schedule are Harvard, Howard and Tufts. Top drawer, all of them. To show he means business, at one recruiting location, McDonald even handed out his personal cellphone number and email address. There are benefits to hiring on as a doctor with the VA. • The first is the eye-catching sum of $120,000 that will go toward paying student-loan debt, double the amount it used to be. The VA earmarked $5 billion for just this purpose. • New doctors and other medical staff will know they’re practicing cutting-edge medicine. • In September, it raised the starting pay rates for doctors dentists just coming in to the VA by an additional $20,000 to $35,000. That’s a necessary step: Most private sector doctors make more than those working for the VA. • Students can do clinical rotations and get a foot in the door that way. Former combat medics and corpsmen can hire on as clinicians. They’ll add 1,500 residencies across the VA system. Meanwhile, the VA isn’t waiting on hiring. In Maryland, a dozen physicians have been hired and a contract with outside health care will hopefully allow patients to be seen within a week for primary care. White River Junction, Vermont, has brought on more than 50 people and needs more for their new programs. So, opportunities are there for graduating medical staff, and ideally better, faster health care is coming to veterans across the country.
