August is National Water Month, so let’s have a drink! IT’S A FACT • Water will stay 9 days in the atmosphere; 2 weeks in rivers; 10 years in the largest lakes; 3,000 years in the ocean; up to 10,000 years in deep groundwater; and 10,000 years in the polar icecap. • Water on Earth acts like water in a pan: turn the stove burner on under a pan that’s dry, and the pan will scorch and melt. Turn the burner on under a pan of water, and the water absorbs the heat and keeps the pan in good condition. Without water, our planet would be a scorching desert, unable to regulate the heat of the sun. • There is a total of 369 quintillion gallons of water on Earth. If all the water were split evenly among the residents of the Earth, we would each have about 85 billion gallons. • The amount of water on Earth has not changed since the beginning of time. DEAR PAW’S CORNER: I was shopping recently and noticed a healthylooking man pushing a cart around the store with a big dog by his side. As they came closer, I saw the dog was on a regular leash and wore an assistance dog vest, but the guy didn’t look disabled. Was he faking it? -- Suspicious in Pittsburgh DEAR SUSPICIOUS: No, the man was not “faking it.” I can’t emphasize this strongly enough, but many people with physical challenges do not appear, to those who don’t know them, to be challenged. Service dogs or assistance dogs have increasingly become essential companions for people with different kinds and levels of disability. While many of us are familiar with guide dogs for the blind, dogs providing other types of assistance are more prevalent
today as well. They provide everything from emotional support to actively alerting their owners to potential dangers. For example, many dogs that provide assistance to people with hearing disabilities are small- to medium-size. Seeing a Chihuahua with an assistance vest may be odd to some folks, they are a vital part of that person’s interaction with the outside world. Military veterans with injuries ranging from PTSD to limb loss, paralysis, traumatic brain injury or other issues also have been greatly helped by assistance dogs that provide a varying range of services. Although New York and London are about the same size, New York uses about three times as much water. • California uses more water than any other state, but Alaska uses the most per capita. • Americans use an average of 200 gallons (757 liters) of water in the home daily. That includes 5 gallons for every flush; 3 gallons for brushing teeth if the water is running; 40 gallons for a bath; 10 gallons to wash dishes; 8 gallons to clean house; 30 gallons to wash clothes; 30 gallons for lawns and pools; and a mere 2 gallons for drinking and cooking. • If you include industrial and agricultural uses as well as home use, the average American uses 1,900 gallons (7,192 l) of water per day. • 40% of water used in the home is flushed down the toilet. The average toilet is flushed eight times a day. • It takes 13,000 gallons (49,000 l) of water to carry away 165 gallons (624 l) of body waste per person each year. • People living in cities that charge a flat rate for water have been found to use twice as much water as people in cities that meter water use. In Tucson, Arizona, water use per person dropped from 200 to 140 gallons a day when the price was raised significantly. • It takes 40 gallons (151 l) to produce one egg; 80 gallons (300 l) for an ear of corn; 150 gallons (567 l) for a loaf of bread; 230 gallons (870 l) for a gallon of whisky; 2,500 gallons (9,463 l) for a pound of beef; and 100,000 gallons for a new car. • More than 700 chemicals have been found in drinking water, but most municipalities typically test their water for fewer than ten.

Classic Cookbook Q: My grandmother lived in St. Louis during the 1920s and ‘30s, and she was a personal friend of Irma S. Rombauer, author of “The Joy of Cooking.” In 1931, she received an autographed copy of the very first edition, which surprisingly, was soft bound. I have been told it could be quite valuable. My question is, how valuable? -- Carol, St. Charles, Missouri A: “The Joy of Cooking” is one of the most famous and significant cookbooks ever published in this country. Irma S. Rombauer had no cooking experience, but after the death of her husband in 1930 she decided to self-publish a collection of recipes. That edition was illustrated by her daughter, Marion, who later became her writing partner. Now for the tasty part. Your cookbook could be worth $3,000 or more, according to cookbook experts Patricia Edwards and Peter Peckham. Since the 1931 edition was published mostly for family, friends and neighbors, the more popular hardback edition did not appear until 1936. It sells in the $150-$300 range in good condition. The one I use in my kitchen is the 1943 edition, which contains sugarless recipes prompted by the rationing of World War II. It is my favorite cookbook.
Q: I purchased a partial set of flatware in the “Adams” pattern. What can you tell me about it? It is a very simple design that I think could be from the 1930s. -- Jennifer, Sun City West, Arizona A: Your pattern was manufactured by Frank M. Whiting and Company, which began in Attleboro, Massachusetts, in 1878 when it was known as Holbrook, Whiting & Albee. According to “Sterling Silver Flatware: Value and Identification Guide” by Mark F. Moran, the company became part of Ellmore Silver Company in about 1940, and then went out of business about two decades later. The Whiting dies were then acquired by the Crown Silver Company. “Adams” was introduced in 1944. You are correct that it is a rather simple pattern that also is rather elegant. Moran lists typical prices as $30 for a soup spoon, $50 for a steak knife and $44 for fork. Noteworthy Inventions ROY PLUNKETT
• On April 6, 1938, chemist Dr. Roy Plunkett was experimenting with coolant gases used in refrigerators and air conditioners at the DuPont laboratories in New Jersey. From the freezer he removed a tank of experimental gas he’d been working with, called tetrafluoroethylene. He expected to find a container of very cold gas, but when he turned the valve to let some gas out, nothing happened. • He weighed the tank, which showed it should be full of gas. He checked the valve, but it worked fine. Perplexed, he cut the tank in half to find out what happened to the gas. He was surprised to see the gas had congealed into a solid, waxy substance. • Plunkett ran some tests. The new material was impervious to chemicals and heat; it did not absorb things and nothing absorbed it; it was colorless and odorless; and it had an extremely high melting point. • Plunkett had accidentally discovered what is popularly known as the slipperiest substance on Earth, equivalent to two wet ice cubes rubbing against each other in a warm room. The molecules of the substance are some of the largest molecules known. • Three years after Plunkett’s accidental discovery, the process of manufacturing the substance was patented. Four years after that, it began to be sold on the market, mostly for military applications at first. • Fifty years later Plunkett was inducted into the Inventor’s Hall of Fame. Today the product has hundreds of uses. It’s used on windshield wiper blades, it’s in fingernail polish, it forms a scratch-resistant coating on eyeglasses, it covers cookware, it protects fabrics, and it covers lightbulbs to make them shatterproof. Noteworthy Inventions BILL & BOB
• Bill was one of the researchers working in the DuPont lab when Teflon was invented. He continued to experiment with it, inventing many uses. However, the DuPont Teflon team was disbanded in 1957. Bill begged his bosses to let him continue to work with Teflon, but was turned down. • He took Teflon home with him, experimented with it in his basement after work, and established his own company. His son Bob joined him, and in 1969 they discovered that Teflon would stretch if it was heated and then pulled slowly. They wanted to stretch it into a fabric, but time after time – while heating it and pulling it slowly – they failed. • Finally in frustration, Bob heated it and then yanked it. That was the secret. Teflon, when heated and stretched quickly, expands to 1000% of its original size and forms fabric. • Normally raincoats are made out of two layers: the outer layer is polyester or nylon, and the inner layer is polyurethane. Bill and Bob found that when sheets of this new Teflon fabric were inserted between the two layers, the raincoat was porous enough to breathe, but tight enough to be waterproof. • The fabric contains over 9 billion microscopic pores per square inch. Whereas the pores are about 20,000 times smaller than a drop of water, they are also 700 times bigger than a molecule of moisture vapor. Therefore, water droplets cannot get through the fabric, but gases and water vapor can easily escape. It was superior to any outerwear on the market. • Bill and Bob were granted a patent in 1976, the product line hit the market in 1989, and Bob was inducted into the Inventor’s Hall of Fame in 2006. A deer will sniff the wind and think, “I smell a dead skunk” instead of thinking, “I smell a canine on the prowl.” • Wolves bark a little and howl a lot. Dogs bark a lot and howl a little. Wolves and dogs both howl for the same reason: to get the entire pack together in communication and galvanize them for action. A howl means, “Where are you? Come join me! By Keith Roach, M. D, Your Doctor Has Heard it All DEAR DR. ROACH: This question is just too embarrassing for me to even sign my name. I get many infected pubic hairs that are painful. Is this normal? Do other people get them? I have had them off and on my whole life, but the past two years have been just awful. Some are like boils, and it takes them many weeks to go away. What can I do? I have never mentioned this to my doctor. I won’t even go for my Pap test if I have one, because I don’t want the doctor to see it. -- Anon. ANSWER: Infected hair follicles are common, and when they are in the pubic area or in the armpits, they can be quite painful and last a long time. They often are caused by Staphylococcus, which nowadays can be resistant to multiple antibiotics (MRSA). Please don’t be embarrassed by these. I guarantee you that your doctor has seen them many times before. The sooner you are seen, the faster you can get relief. And you certainly don’t want to delay important tests like your Pap for these common infections. *** DEAR DR. ROACH: I am a 56-year-old female. I recently have been having terrible pain in my joints. It is so bad at night that I can’t sleep. I recently went to a rheumatologist because I had an elevated rheumatoid factor (it wasn’t extremely high). I was told I have arthritis and a high risk for rheumatoid arthritis. I was then diagnosed with fibromyalgia. I was shocked and embarrassed! I had always thought that fibro was not a real disease. I feel bad and tired almost every day, and I am so sick of it! -- S.S. ANSWER: Some of my colleagues still doubt it, but I think that fibromyalgia certainly is a real disease. There is no doubt that there are a large number of people with chronic pain in the muscles and soft tissues who meet the diagnostic tests for fibromyalgia, which are all based on history and exam -- there’s no blood test or X-ray for fibromyalgia, but that doesn’t mean it isn’t real. The current thinking is that fibromyalgia is due to alterations in the perception of pain by the central nervous system. The most common symptom is aching in the body, usually in the muscles and joints. Fatigue and poorquality sleep also are nearly universal in fibromyalgia. Depression is highly prevalent in people with fibromyalgia, and in my opinion, the depression is more likely caused by the chronic pain and fatigue than the other way around. My opinion is that it is better to have a diagnosis of fibromyalgia because, even though fibromyalgia isn’t completely understood, it is a starting point for understanding and treating chronic pain. Tricyclic antidepressants are the most common initial treatment of fibromyalgia, because they affect the way pain is processed. They are usually started at far, far below the effective dose for depression. Feeling a sense of control over the pain, continuing to work and exercising more are all associated with a better outcome in fibromyalgia. *** Dr. Roach regrets that he is unable to answer individual letters, but will incorporate them in the column whenever possible. Martinez Makes His Point There was an old journalist I used to run into at the Greenwich Village Bistro who looked every bit like an old journalist hanging around a Greenwich Village restaurant sounds like he would look, complete with crumpled felt fedora and wide tie. One day, I was reading one of the tabloids, and I threw it aside with disgust. There was no real news on page one, and it had a bunch of hypothetical trades on the back. It was more about what somebody said he would do and a bunch of people reacting with disdain for the thing that hadn’t happened. “Hey,” I said, pointing to the newspaper, “This is a very bad newspaper.” “No, it’s not,” he replied. “That newspaper is great. You’re missing the point.” I realized that he had just performed some sort of low-level Jedi mind trick on me, but I didn’t care. Now I was free to like that newspaper again. Toward the end of July, with the trade deadline approaching, of course you’re going to hear about potential trades. This is one of the few times where hypothetical trades are welcome fodder for call-in radio shows, but if there’s ever a waste of airwaves, it’s those pre-season callers who offer Didi Gregorius for Mike Trout in a straight-up deal, and anytime somebody uses them to disparage another person for the crime of being from someplace else they know little or nothing about. By now, most sports fans are aware that Colin Cowherd was fired by ESPN after making disparaging remarks about Dominicans, not one day, but two days in a row. This wasn’t a situation where “political correctness” claimed another victim. This was ignorance on full display. The baseball gods conspired to induct Pedro Martinez into the Hall of Fame the same week that Cowherd was fired. In a world where “public speaking” is considered one of the greatest fears a person can face, Pedro Martinez manages to speak about baseball in a second language. Can you imagine being on TV, in front of millions, in another nation, using their language to provide in-depth analysis? Martinez is a guy who grew up in a tin-shack and worked as a mechanic at an age most American kids are in middle school. He couldn’t afford a baseball, so he played with oranges. He grew up to be one of the greatest right-handed pitchers of all-time. Yes, really, all-time. His numbers are incredible to behold. But perhaps the greatest thing he ever did was done off the mound, on the dais at Cooperstown. There, the Dominican with the great pitch, reminded us yet again what great people do: They deliver. “When you see me, you can see a sign of hope, of faith, of determination, of strength, [and] courage with dignity.” No matter where you are from, in a world of fallen heroes, being able to point to yourself as a good example is something that is truly great. Some people just miss the point.

I have to admit that Asian food in our house usually comes from one of those little white containers with skinny metal handles. But when we eat out, we like to explore the innovative pan-Asian dishes that have become popular with American palettes. Spring Rolls are one of my favorite Asian dishes, but I don’t need to go globetrotting further than the popular Rice Paper Asian Fusion restaurant in my neighborhood. Fresh, light and full of flavor, owner An Nguyen’s preparation derived from her Vietnamese roots is tasty and thoughtfully presented. An shared her recipe with me, and at the same time encouraged me to devise variations with my family. “Substitute sliced Swedish meatballs for the shrimp,” she suggested, in a nod to my Scandinavian heritage. I encourage you to do the same. Once you have the basic ingredients out on your counter, take turns with your teens assembling spring rolls with your own family twist. SPRING ROLLS 1 package round rice-paper wrappers (also known as spring rolls skin) 1 cup thinly sliced cooked chicken (or use deli slices) 1 cup cooked shrimp, sliced lengthwise Leafy lettuce washed and dry Chopped fresh cilantro leaves Chopped fresh mint leaves 1 package fresh mung bean sprouts 6 ounces rice stick noodles soaked in hot water until soft, about 10 minutes. Drain and snip with kitchen scissors to shorten. 1 carrot, shredded Bottled peanut dipping sauce 1. Soak rice paper one at a time in a shallow dish of hot water until soft and flexible. Place on a clean, damp towel. 2. Set chicken or shrimp slices in a row, 1 inch from the bottom edge. Set some lettuce on top, then layer with cilantro, mint, sprouts and noodles. Carefully fold the wrapper down over the mixture just to cover it as tightly as you can without tearing it, then fold the two sides in and continue to roll up until all edges are secure. Place seam-side down on a plate, cover with a damp cloth and refrigerate until ready to serve. 3. Top with a sprig of cilantro and shredded carrots. French-Fried Onion Rings Onion rings are wonderfully versatile; pile them on your favorite grilled meat -- they’ll add a whole new dimension. 1 jumbo onion (1 pound), cut into 1/4-inchthick slices Vegetable oil for frying 1/4 cup milk 1 cup all-purpose flour 1/2 teaspoon salt 1. Separate onion slices into rings. In 4-quart saucepan, heat 2 inches oil over medium heat until temperature reaches 370 F on deep-fat thermometer. 2. Pour milk into large bowl. In ziptight plastic bag, mix flour and salt. Dip one-fourth of onion rings in milk. With tongs, transfer to flour mixture, shake to coat. 3. Drop coated onion rings into hot oil; fry until golden brown, 5 to 7 minutes. With slotted spoon, transfer to paper towels to drain. Repeat dipping, coating, and frying with remaining onion rings. There are an increasing number of people who think Washington DC has all the resources and all the wisdom necessary to solve their daily personal problems. This kind of thinking is music to the ears of professional politicians and government bureaucrats because they want as many people as possible to be dependent on them. It gives them power and assures their reelection. If you are concerned about your own personal success and you need some help to get out of the rut you are in, think about this: how likely is it that some bureaucrat in Washington DC or even your local welfare office knows how to help you, I mean really help you. Will they take the time to understand your life as it is and help you find real solutions to the problems you face? Only if you are lucky enough to find a case worker who doesn’t work cases but helps people. This is not because many of them don’t care, but because most of them are overworked and pressured to take on more cases than they could possibly serve with effectiveness. Their way of helping is nearly always the same – some kind of government handout to help you get by for another week or so. In most cases, their answer will be an EBT card, a welfare check and any other government give-away that makes you think you are being helped. With nearly a half-century of testing, this way of “helping” people now has a track record. It was President Lyndon Johnson who thought he could eradicate American poverty by declaring
by Ron Ross a war on it. Despite the investment of roughly $12 trillion, with state and local governments contributing another $3 trillion, the poverty rate never went below 10.5%. The war has been fought, trillions of taxpayer dollars spent, but poverty won. According to the welfare bureaucrats, the government’s main concern is to help people no matter the reason for their situation. Charles Murray (conservative author and pundit), believes welfare offers both parent and child an unhealthy alternative to working. He claims many people abuse the system and use welfare money when they could work for a paycheck. He theorizes that when too many members of a community become dependent on the government that the social stigma that welfare once created becomes not a stigma but an acceptable way of life. Eventually this will result in the downfall of an entire society because a strong work ethic creates a strong society but a poor work ethic destroys a society. There is substantial evidence to support the theory. Just look at the big cities where generations of welfare families have left their streets and neighborhoods in ruin and the two-parentfamily in tatters. Do not expect politicians or government programs to fix your personal problems. You have the intelligence, opportunity and incentive to solve your own problems – to help yourself. OK, I know, sometimes you may need government assistance, however, it should be your last resort not your first choice. Research reported at the recent Alzheimer’s Association International Conference has some bad news for half of us ... the female half. Researchers concluded that women over age 65 have a greater chance of developing Alzheimer’s than men. There’s more: Women who have mild cognitive impairment will see cognition decline twice as fast as men with mild impairment. In clinical trials in a test that rates from 0 to 70, men declined at a rate of 1.05 points per year. For women it was 2.3 points. One possible reason: biology. Our brains are different. And more women have depression and stress, both of which are factors in Alzheimer’s. The research isn’t completely clear at this point. Other research points to the amount of amyloid in the brains of men versus women. Women have much more, and amyloid is a protein that clogs the brain. One scary bit of research points to surgery and anesthesia and how they affect the brain. Women respond in a different way, but seniors in general are at greater risk for cognitive problems than those who had no surgery. One group of researchers learned that women experience more brain shrinkage after surgery, making simple elective surgeries something to consider. The Alzheimer’s Association website (alz. org) has a section on prevention and risk. Put “Alzheimer’s risk” in the search box and you’ll get a list of articles. Look for the 17-minute video called “Diet and Exercise in Alzheimer’s.” Meanwhile, ask your doctor if the DASH or Mediterranean diets would be appropriate for you. Both emphasize whole grains, fruits and vegetables, and limit the amount of red meat. There’s research that shows diets that are healthy for the heart also are good for the brain.

When you look up “lowlife scum” in the dictionary, the corresponding picture you see next to the definition might well be one Kevin Maynard of
Rhode Island. Maynard worked at the Rhode Island VeteranÕs Memorial Cemetery in Exeter where, over the course of many years, he stole veterans’ grave markers, which he took home for backyard projects. Projects such as the floor under his makeshift garages (think: tarps on poles) and a shed. When finally caught, investigators found over 200 grave markers. Most were inscriptionside down in the mud, some under Maynard’s vehicle. (He stole full boxes of flags, too, also dumped in the mud.) Granted, the grave markers were slated to be replaced because they were worn. Markers such as these are ground into dust -- an honorable ending -- before they are replaced. The National Cemetery Administration website says,
Cemetery Thief Gets Slap on the Wrist “Marble and granite headstones or markers that are permanently removed from a grave must be destroyed, ensuring that the inscription is no longer legible.” Destined for dust or not, Maynard had no right to take them. It was theft, among other things. On learning that he could get 10 years in the prison and be fined $250,000, Maynard agreed to a plea deal in exchange for a more cushy sentence: a year of probation and 500 hours of community service. What happened, one wonders, to the Let Our Veterans Rest in Peace Act of 2008? It provides sentencing guidelines for any offense involving theft (as well as other desecrations) of any object that marks a veteran’s grave. Sentencing is supposed to be “appropriately severe ... so that potential thieves will be deterred.” Where’s the deterrent in a slap on the wrist? (c) 2015 King Features Synd., Inc.
