• Researchers have found no link between acne and chocolate. • Researchers have found a link between daily consumption of dark chocolate and the reduced rate of heart disease. • Compounds found in dark chocolate have an anti-bacterial effect which helps prevent tooth decay. • Chocolate contains an alkaloid compound called theobromine which is similar to caffeine, an alkaloid found in coffee beans. Theobromine, when isolated and refined, is used in medicine as a vasodilator to lower blood pressure, as a diuretic, and as a heart stimulant. The amount of theobromine present in 2.5 ounces of dark chocolate has been shown to reduce coughing, and it has been used to reduce asthma.
CHOCOLATE: THE BAD NEWS
• Theobromine can be poisonous when taken in excess. A lethal dose for an average human would be about 40 Hershey bars. Dogs and cats metabolize theobromine more slowly, making it more dangerous. Although cats can rarely be induced to eat sweets because they are unable to taste sweet things, dogs will happily gorge on chocolate. A smaller dog can die after eating as little as 1.8 oz (50 g) of milk chocolate; a larger dog can die after eating a pound of it. • Dark chocolate is far higher in theobromine concentration than milk chocolate and is therefore more dangerous for dogs. It’s treatable if caught early and treated, but can cause seizures and death. • In 2014, four black bears were found dead of theobromine poisoning in New Hampshire after unscrupulous hunters lured them to a bait site using chocolate and chocolate donuts.

Finicky Cats Stage Hunger Strikes
DEAR PAW’S CORNER: I’m writing in regards to your recent column about the causes of finicky eating in pets. My two cats don’t like liver or the smell of liver. However, most wet cat food contains chicken or beef “byproducts,” which usually means some amount of liver. If my cats smell liver in their food, they just won’t eat it, and will go hungry and meow about it -- usually in the middle of the night. By trial and error, I have found about five or six different cans they really like to eat. However, some days they gobble the food down and other days they go on a hunger strike, even with foods they liked the last time. When that happens, I pick up the bowl and smell it. Every single time it smells like liver, and I have to throw it out. They also like variety in their wet food,
although I never have had to switch their dry food. I wish cat food manufacturers would not add any liver at all, but almost all cat food has byproducts in it. CHOCOLATE HISTORY Chocolate comes from a bean that grows on the cacao tree. The cacao tree is an evergreen native to the tropical regions of Central and South America. Its cultivation has since spread to tropical regions worldwide, primarily in Africa. The name ‘cacao’ is a Maya word meaning ‘god food.’ This inspired the Latin name which is ‘Theobroma cacao’ where ‘theo’ means ‘god’ and ‘broma’ means ‘food.’ The word ‘cocoa’ is a corrupted spelling of ‘cacao.’ The word ‘chocolate’ is derived from the Mayan word ‘xocolatl’ meaning ‘bitter water’ because raw cacao is indeed bitter unless sweetened. CHOCOLATE FARMS More than two-thirds of the world’s cacao is grown in Africa, and the Ivory Coast alone produces about one third of the world’s supply. Ninety percent of the world’s supply of cacao is grown on small family-run farms, most of which are smaller than 12 acres. Many poor rural cacao farmers have never experienced chocolate. It takes a cacao tree four to five years to produce its first cacao pods. A pod is about the size and shape of a football, and it contains about 50 individual cacao beans. Each cacao tree can produce approximately 2,500 beans each year. Cacao trees can live to be 200 years old, but they only produce marketable beans for about 25 years. Cacao butter is the white-colored natural fat inside a cacao bean. Cacao butter is the main ingredient in white chocolate. Because of the nature of cacao butter, chocolate is one of the few edible substances that melts at just below body temperature. This means that chocolate does in fact ‘melt in your mouth.’

Tilt-Out TV Q: My mom and dad were among the first in Chicago to own a television set. It was an Emerson Model 608 console with pop-up screen. I have inherited it, and its unusual design must mean that it is worth more than just a few dollars. -- Carl, Naperville, Illinois A: Your television was introduced in 1949 and was, as you claim, quite unusual. I would, in fact, consider it a classic. It had a 16-inch tilt-out screen that could be hidden when not in use. I have checked with two serious collectors, and they seem to agree that your set is worth somewhere in the $400 to $600 range depending, of course, on its condition. Q: I have three issues of “Marge’s Little Lulu” comics, Nos. 39, 81 and 123. Are they worth keeping? -- Betty, Springfield, Ill. A: According to most of the guides I consulted, they are worth a minimum of $100 each in good shape. As with most collectibles, condition is paramount. The value of a comic boils down to several factors, including condition, scarcity and demand. A good place to monitor the value of comics is eBay. Incidentally, your issue No. 39 also features another popular cartoon character, Witch Hazel.
Q: I have an old paper recording by Rudy Vallee with his picture on the blank side. Is it worth much? -- Donna, Wiers Beach, N.H. A: Your record was issued by Hit of the Week and was sold at news stands beside the latest copies of Liberty, Saturday Evening Post and Punch. The recordings, which featured such popular entertainers as Eddie Cantor and Duke Ellington, sold for about 10 cents, making them extremely affordable. Your Rudy Vallee recording is worth about $5 in good playable condition. Incidentally, the main drawback of these products is that they had a tendency to curl. Q: I have a political poster of Richard Nixon that was used in 1948 to promote his congressional campaign in California. It is in fairly good condition, and I have been offered $200 for it. Amazing Animals PIGS • Pigs are among the most intelligent of the domesticated animals. Their IQ is comparable to a dog’s. • Technically speaking, a pig is an animal less than 10 weeks old, and a hog is a mature pig. Piglets weaned off their mother’s milk are called shoats. A female pig is called a gilt until she has given birth, when she is called a sow. An adult male is called a boar. A castrated male is called a barrow. • From birth to the age of six months, a typical piglet will increase its size by 7,000 percent. • Pigs can live up to 15 years. • Like humans, pigs are omnivores, meaning they eat both plants and other animals. They prefer to eat slowly and savor their food. • There are 16 species of pigs including wild boars, pygmy hogs, and domestic pigs. Domestic pigs have curly tails; wild pigs have straight tails. • Pig skin has no sweat glands. To keep cool, pigs prefer a dip in cool, clean water. If that is not available, mud will do. Mud also protects them from lice and other parasites as well as preventing sunburn. • Pigs prefer clean pens, and will always relieve themselves in the corner furthest from where they sleep. • The pig’s snout is very sensitive to touch. Today, 38% of meat consumed worldwide is pork. • Spanish explorer Hernando de Soto brought pigs with him in the year 1539 when he came to explore the southeastern region of North America. They were the first pigs on the continent. Pigs that escaped from his herd became and ancestors of razorback pigs. • Pigs are important in medicine, because their skin is used for treating burns, their insulin is used for diabetics, their thyroxine is used to treat underactive thyroids, and a compound from their pituitary gland is used to relieve arthritis. About 40 different medications are made from pigs, and their heart valves have been used to replace human heart valves. • Because of their thick skin, pigs can withstand the bite of venomous snakes far better than other animals. • “Porcus” is Latin for pig, giving us the word pork. • The world’s largest pig was Big Bill, a hog who was five feet tall (1.5 m) at the shoulder, nine feet long (2.7 m), and weighed 2,552 pounds (1,157 kg) in 1933. He was scheduled to be exhibited at the World’s Fair but broke a leg and had to be put down. • Because young pigs grow so fast, a total of 48 piglets were used during the filming of the movie “Babe.” • The reason pigs are used to sniff out truffles below the ground is because truffles exude a scent that imitates the pig’s sexual chemical messengers. • Winston Churchill famously said that, “Dogs look up to man. • John was born in England in 1801 to a Quaker family. As a Quaker, he was not allowed to attend college or join the military, so he did what most Quakers did in those days: he went into business. • He felt the consumption of alcohol was responsible for many of society’s ills, so he decided to provide people with an alternative. In 1824 he rented a factory and began to manufacture ‘drinking chocolate’ which is now called cocoa or hot chocolate. He made it by grinding up cocoa beans using a mortar and pestle, blending it with sugar, and pressing it into blocks. Customers would take the blocks home and shave some off into hot water or milk. • The enterprise prospered, and in 1861 he turned the business over to his sons. A few years later, his sons began using a new automated process that removed cocoa butter from the cocoa bean, which allowed them to expand their business into offering chocolate bars and chocolate candy. • In 1875 they offered chocolate Easter eggs which were so popular they soon had 200 employees in their factory. They studied the Swiss techniques of making milk chocolate and by 1899 they had 2,600 employees. • When John’s sons grew old, his grandsons took over. They revamped their Easter eggs, adding a crème filling in order to mimic the yolk of an egg. Today, 1.5 million of those crème-filled eggs are produced every single day at the main factory in Birmingham, England. They are sold primarily at Easter. Answer: Cadbury. A TOFFEE BAR In 1913 in Robinson, Illinois, a father bought a candy store to give his sons a business to run. The sons, named Bayard and Everett, turned the store into a successful candy shop, soda fountain, and ice cream parlor. A traveling salesman shared a recipe for toffee with them, which he got from a candy store in a nearby town. Bayard and Everett experimented with the new candy until they perfected the recipe. Later they covered the toffee with chocolate. In 1928 their father bought a dairy nearby and he convinced his sons to quit the candy store to come help him on the dairy farm. They did, but they brought their candy-making equipment with them and continued to turn out toffee. They started including ‘toffee bars’ on the dairy’s order form, so people could order milk, cream, cottage cheese, or toffee delivered right to their door every morning. Sales got a boost, but then the Great Depression hit. However, toffee bars sold well during the Depression, because they cost only a nickel and there was no other candy on the market that was like them. Another boost arrived with World War II, when the Army discovered the toffee bar’s long shelf life and began to include it in soldiers rations. When the soldiers came home, they looked for it in stores. Hershey bought the company in 1996, but the candy bar, named after the family that invented it, remains unchanged. What’s it called? By Keith Roach, M. D, Healthy Bodies Don’t Need Supplements DEAR DR. ROACH: After viewing an infomercial that praised the benefits of probiotics, I would like to know what you think. Probiotics have been prescribed when one is taking antibiotics to replenish the good bacteria that is lost. When taking no medication, I found that when I took one capsule (30 billion live cultures per capsule/10 probiotic strains) on a daily basis, I would get gas and diarrhea; therefore, I stopped taking them. I thought that this was the exact opposite reaction that should have occurred. Please write about the pros and cons and the reasons/necessity for taking probiotics on a daily basis. -- D.A.M. ANSWER: Probiotics are microorganisms, usually bacteria or yeast, that have beneficial properties. There is at least some evidence to support the use of probiotics for inflammatory bowel disease (Crohn’s and ulcerative colitis), colon inflammation from radiation, irritable bowel syndrome and other diseases of the GI tract. However, with a few exceptions, there is very little evidence that taking anything (prescription or supplement) is of benefit to people who are healthy with no symptoms. Probiotics haven’t been shown to benefit healthy people. Any treatment can have side effects. While there may be some benefits, such as preventing antibiotics-associated diarrhea, I hesitate before recommending any treatment to a healthy, asymptomatic person. DEAR DR. ROACH: Does high blood pressure cause irregular or abnormal heart rhythms? -- P.K.S. ANSWER: Not usually. In some people with very longstanding high blood pressure, the heart can become dilated -- blown up like a balloon to much more than its normal size. When the heart, particularly the atria (the top chambers), becomes dilated like that, it makes atrial fibrillation more likely. High blood pressure is very common. Irregular heartbeats are universal -- we all have some every day. It is human nature to associate one problem with another, since they are both related to the heart. However, it’s more likely that the everyday irregularities you may have had without noticing take on new significance with a diagnosis of high blood pressure. That being said, since it is possible they are related, it’s certainly worth an EKG next time you see your internist or cardiologist to make sure you don’t have a dangerous heart rhythm. Sometimes doctors order 24hour (or longer) EKGs for use at home, which can be correlated with any symptoms of heart irregularities. The booklet on abnormal heart rhythms explains atrial fibrillation and the more common heart-rhythm disturbances in detail. The Long Drive Picture, if you will, a jam-packed Cleveland Municipal Stadium. The Browns, the league’s perennial heartbreakers, have taken a 20-13 lead in the AFC Championship Game against the Denver Broncos. There are less than six minutes left in the game, and the crowd is in a frenzy. The Broncos would muff the kickoff return and start their possession on their own 2-yard line. For most quarterbacks, this would seem like a daunting task. Not Broncos quarterback John Elway. The record-setting Stanford grad, standing 6-foot-3 and weighing in at 215, was basically engineered for just this sort of thing. Smart, cool under pressure, howitzer of an arm, had legs that could plow a field. He could punt, too. Put simply, he wasn’t like the other guys in the league. So he went to work, providing us what is today simply known as “The Drive”: After the mishandled kick, the Broncos face first down and 10 at their 2-yard line. Elway from the end zone, dumps to running back Sammy Winder for 5 yards. Second down and 5, Denver 7-yard line. Winder 3-yard run. Third down and 2, Denver 10yard line. Winder 2-yard run, first down. Denver 12-yard line, Winder 3-yard run. Second down and 7, Denver 15-yard line. Elway breaks for a 11-yard run, first down. Denver 26-yard line. Elway has time, smashes tight-end Steve Sewell for a 22-yard pass over the middle. First down, Denver 48-yard line. Elway fires to Steve Watson for 12 yards to bring us to the 2-minute warning. Cleveland fights back, Dave Puzzuoli sacks Elway for a loss of 8 after his incomplete pass intended for Vance Johnson. It’s third down and 18 at the Cleveland 48-yard line with 1:47 left in regulation. Elway drops back before rifling a pass to Mark Jackson for 20 yards. The Broncos have not failed to convert a third down. Denver at the Cleveland 28 with 1:19 left. A 14-yard rocket to Sewell, then a 9-yard scramble by Elway. It’s third and 1, and Denver is at the door on the Cleveland 5-yard line with 39 seconds left in the game. Cleveland fans are screaming. Elway drops back, stops and drills Jackson in the end zone for a touchdown, and the Rich Karlis extra point sends them into overtime. He later kicks the field goal that will send them to the Super Bowl. The Broncos were trounced by the Giants and the Redskins in successive years, the 49ers would crush the Orange in 1990. The secret to beating them was simple: stop Elway. Between Dan Reeves’ predictable, conservative play-calling and a thin supporting cast, Elway was almost a man alone. In the late ‘90s, this time armed with Terrell Davis and a stiff defense, Elway would win two Super Bowls in a row, including one over the Reeves-coached Atlanta Falcons. Now 55, Elway is the general manager of the Broncos, a team recently crushed in the Super Bowl by the Seahawks. Their quarterback is an aging legend, Peyton Manning. Elway is credited with rebuilding the team around him, setting the stage for a comeback against the Cam Newton-led Carolina Panthers. Newton, at 6-foot-5 and 250 pounds, is the modern-day Elway. The Broncos game plan will be simple: stop Newton. Just as the Giants, Redskins and 49ers did to Elway in years past. The Broncos again stand at the precipice. This time they are reloaded. Pick up a bag of birdseed, packets of unflavored gelatin and root through your cupboards for cookie cutters, then you’re all set to go. COOKIE CUTTER BIRDSEED TREATS 2 envelopes (1/4 ounce each) unflavored gelatin, such as Knox brand 1/2 cup boiling water 1 1/2 to 1 3/4 cups birdseed Baking sheet lined with parchment or waxed paper 4-6 heart-shaped cookie cutters, roughly 3 inches by 4 inches 2 straws, cut into 3-inch pieces String or twine 1. In a large bowl, an adult should pour the boiling water into the gelatin. Stir until dissolved, and then add 1 1/2 cups birdseed. Stir until birdseed is coated, adding more seed if mixture is too watery. 2. Meanwhile, arrange the cookie cutters on the lined baking sheet. 3. Spoon the mixture into the cookie cutters. Press down with the back of a spoon, or compact the mixture with fingers using a piece of waxed paper between fingers and the mixture. 4. Insert a straw piece into each shape to create a hole for hanging, and leave in place. 5. Set the baking sheet of filled cookie cutters in the refrigerator for two hours. Remove and let stand in a dry room overnight or until hard, turning the filled cookie cutters occasionally. 6. Carefully pop each treat out of its cookie cutter. Remove straws, thread string or twine through the holes, and hang from a tree branch, fence or deck railing. Makes 4-6 bird treats TIP: Extra birdseed in your bag? Take a pine cone, roll it around in peanut butter until it’s completely covered, then roll it once more in birdseed. These delicious breakfast bars are full of oldfashioned, good-for-you oats. 1/2 cups vegetable oil 1/2 cups honey 2 teaspoons vanilla extract 1 large egg 2 cups old-fashioned oats, uncooked 3/4 cups all-purpose flour 1/2 cups (packed) light brown sugar 1/2 cups sliced almonds 1/2 cups toasted wheat germ 1/2 cups raisins 3/4 teaspoons salt 1. Heat oven to 350 F. Line 13-by-9-inch metal baking pan with nonstick foil (if not using nonstick, lightly grease foil). 2. In 2-cup liquid measuring cup, stir oil, honey, vanilla and egg until mixed. In large bowl, with fork, mix oats, flour, sugar, almonds, wheat germ, raisins and salt until combined. With rubber spatula, stir honey mixture into oat mixture until blended; scrape into prepared pan. With wet hand, pat oat mixture evenly into pan. 3. Bake 30 to 35 minutes or until pale golden around edges. Cool completely in pan on wire rack, about 1 hour. 4. When cool, transfer using foil to cutting board. Cut lengthwise into 4 strips, then cut each strip crosswise into 6 pieces. Store in tightly sealed container at room temperature up to 2 weeks. Makes 24 bars.

Before we start talking about caramel and popcorn and sprinkles, and Chocolate Covered Caramel Popcorn Balls, I have to tell you that I burned the caramel. Yes, I did. I looked away for a second or two and bam! Burnt! I was so upset with myself and not because I burned it, but more because I caused myself more dishes:( I was so frustrated, I didn’t even bother to make another batch. I went straight for the Brach’s caramel candies that were sitting in my pantry. I unwrapped them one by one, mixed in some butter, and there it was, Caramel on the fly! So you’d think that a 3 year old would be the most excited about eating these fun treats. No, Ruby was more excited about dipping the balls into the chocolate and sprinkles and packaging them for her friends. We are bagging these treats and printed cards that say “you make my heart POP” for an easy DIY Valentine for Ruby’s classmates. CHOCOLATE COVERED CARAMEL POPCORN BALLS Serves: 10 Popcorn balls Ingredients: 14 cups popped plain popcorn 1 (14 oz.) package Caramel Candies, unwrapped 4 tablespoons butter 10 popsicle sticks 1 (12 oz.) package semi-sweet chocolate chips, melted Sprinkles Pop the popcorn, place the popped popcorn in a large bowl. Set aside. Put the unwrapped caramel candies and butter in a medium-sized saucepan; cook over medium-low heat and stir until melted and smooth. Remove from heat and pour over popcorn. Mix until all the popcorn is well coated. Let stand for a couple of minutes to cool. In the meantime prepare your chocolate chips by melting them either in the microwave or over a double broiler. Melt until smooth. Grease your hands with butter and shape the popcorn balls into the size of a softball. Stick a popsicle stick in each popcorn ball and dip into melted chocolate, then roll in sprinkles. Place on waxed paper until chocolate is set. A 10-year British study out of Kings College found an interesting correlation between leg strength and brainpower. In the first-ofits-kind study, strong legs equated to cognitive strength down the road. Female twins between the ages of 43 and 73 (average age 55) were recruited for baseline testing, with adjustments made for various parameters such as socioeconomic status, alcohol drinking, blood pressure, level of exercise and more. Memory and learning were measured at the start of the study, as were the strength of leg muscles of both twins. Brain scans also were taken. Ten years later the tests were repeated. Those who’d started and ended with more muscular legs showed the best results in memory and cognitive tests and more brain volume. The researchers still don’t know for certain why they saw these results. More studies need to be done, they said, to understand how aerobics, brain function and leg muscle power all come together, and whether muscle-building chemicals somehow make their way to the brain. While scientists didn’t predict the outcome, it was not surprising because they’ve long known that general exercise can help with cognitive function. Until they figure out the specifics, one thing is clear: adding more walking or doing exercises designed to increase leg strength can help with memory and thinking. We can run, take dance classes, lengthen our daily walk and spend time on a treadmill or rowing machine at the gym. Even yoga can help strengthen leg muscles. For those who aren’t mobile, seated rowing exercises with a resistance band can help, as can a recumbent bicycle. The online Daily Caller headline was a bit of a shock: “Only VA Job Reserved Specifically For Vets: Janitor.” But that was only the tip of the iceberg. Additional investigative articles from the Daily Caller News Foundation [dailycaller.com] had even more disturbing facts. The site has a comprehensive interactive chart that shows the number of veterans versus non-veterans in 300 managerial positions. The number of veterans out of that 300: 50. Here are a few examples of executive
positions: Albany, N.Y.: 19 non-veterans, 2 veterans Bedford, Mass.: 21 non-veterans, 8 veterans Glendale, Colo.: 5 non-veterans, 0 veterans Bronx, N.Y. 13 non-veterans, 1 veteran Of the officials who run Department of Veterans Affairs medical centers (with titles like associate director, nurse executive and chief of staff), only 13 percent are veterans. And why is this allowed to happen? Because VA employees have a union. The union agreement that says that any job will go first to any qualified candidate within the facility. And then there are the hiring categories. One hefty position for coordinator is open only to in-house employees. Lower-paying jobs, involving peer support, are open to veterans, but only if they’ve
