With his brother to assist him, he collected thousands of teeth from fallen soldiers. GEORGE WASHINGTON’S TEETH George Washington, who lost all of his teeth at an early age, actually had several sets of false teeth. None were made of wood, which is a popular misconception. Two of them were made of hippopotamus ivory and gold, fashioned by Dr. John Greenwood, who was one of the most prominent dentists of the day. They had springs in them which pressed them firmly against the top and bottom of his mouth. Washington had to actively close his mouth to keep his teeth together. One of the denture sets is on display at the Samuel Harris National Museum of Dentistry in Baltimore. The other set was donated to the University of Maryland Dental School in Baltimore, which is the oldest dental college in the world. They in turn loaned the dentures to the Smithsonian Institute in 1976 for display at the bicentennial exhibit. They were stolen from the Smithsonian on June 19, 1981, probably for their gold content. The owner of the Carnegie Deli in New York offered a reward of a year's worth of delicatessen food for their safe return, no questions asked. However, the dentures have never been recovered. ballerinas, and even a Tooth Fairy bag lady. Of course there are a lot of Tooth Fairy boxes designed for children to put their teeth into in order to receive their money. One is shaped like a set of pink gums and is designed so that each tooth lost is placed in the appropriate slot, reproducing the child's smile. • Collecting money for lost teeth is an American habit which became popular around 1900. At that time the going rate per tooth was about 12 cents. Now, it's at least a dollar per tooth lost. YOU BE THE JUDGE A dental hygienist who happened to be a born-again Christian found that when she had people in the dental chair it was a perfect time to save their souls. Patients resented this; the dentist she worked for forbad it; but she continued the practice anyway. She was fired. She sued, saying she'd only been exercising her right to free speech. If you were the judge, how would you rule? The judge disagreed with the hygienist and supported her dismissal because, "a dentist has the right to expect his hygienist... not to add more discomfort to a patient's already uncomfortable situation." More farmland is devoted to wheat than any other food crop. What better time than harvest season to learn something new about it? • Evidence points to the first cultivation of wheat in the Tigris and Euphrates River valley, near present-day Iraq. In the U.S., it was first planted in the early 1600s in Massachusetts. Scottish settlers brought wheat to Canada in 1812, planting their first winter wheat in August of that year. • Wheat is the most common cereal grain used in food. About 75% of all U.S. grain products are made from wheat flour. Out of the 42 U.S. states that grow wheat, Kansas produces the most, followed closely by North Dakota. Montana and Oklahoma also rank high in acreage planted. • In the U.S. over 60 million acres of land are planted in wheat, producing about 2.5 billion bushels. But that’s far from the world’s largest producer. China and India both outrank the U.S. in wheat cultivation. • One acre yields an average of 38 bushels. One bushel of wheat weighs about 60 pounds (27.2 kg), and contains about a million individual kernels. Approximately 42 pounds (19 kg) of white flour can be produced from one bushel or 60 pounds of whole wheat flour. A bushel can also be used to make 42 loaves of white bread or 42 pounds of pasta. If you’d rather eat cereal, one bushel will make about 45 24-oz. (680 g.) boxes of wheat flake cereal. • There are six main classes of wheat, based on hardness, color, and time of
planting – hard red winter, hard red spring, soft red winter, durum hard white, and soft white. • Soft red winter wheat is cultivated primarily in the Midwestern U.S., with Ohio, Missouri, and Illinois as leaders. There is less protein in soft red wheat, making it a softer texture for use in cakes, pastries, and biscuits. The soft white wheat is planted in the Northwest – Washington, Oregon, and Idaho. Shredded and puffed breakfast foods are the primary products. • Durum wheat is the firmest of all wheats and its kernels are larger than those of the others. It has a high protein and gluten strength, and its density makes it perfect for the manufacture of pasta. Most of this exceptionally hard wheat is grown in North Dakota, where 28% of the state’s 30,000 farms grown durum, producing two-thirds of the nation’s supply. • When durum wheat is coarsely ground to a sugar-like texture, it becomes what is known as semolina, the principal raw ingredient in pasta. The National Pasta Association tells us that if you were to eat pasta three times a week, it would take you 70 weeks to eat all the pasta produced from just one bushel of durum. • Those people suffering from Celiac Disease are those whose digestive systems cannot tolerate the gluten in wheat. When they eat it, their immune system responds by damaging the lining of the small intestine, inhibiting the absorption of nutrients into the bloodstream. They might experience joint pain, anemia, osteoporosis, seizures, depression, or a severe skin rash from ingesting wheat. Pasta is still an option for these individuals in the form of a gluten-free product made from brown rice, corn, quinoa, potatoes, and soybeans.

Think eating broccoli is icky? Try out these recipes still relished by people around the world! Sweetbread: • Take the thymus gland or pancreas of a calf or lamb. Trim cartilage, tubes, connective tissue, and tougher membranes. Poach for 20 to 30 minutes; cut into nuggets and drench in seasoned flour. Pan fry on all sides until crispy; drain on paper towels. Serve immediately while still piping hot. Tripe: • Take the stomach tissue of a cow, sheep, or goat. Place in pot and cover with water. Add a pinch of salt. Cover and simmer for one hour. Drain and cut into pieces. Dip into beaten egg then into bread crumbs; sautÊ in melted fat until browned on all sides. Garnish with cheese and parsley. Serve. Blood pudding: • To three quarts pork blood, add one pound raisins; one pound sugar; one pound nuts; 3/4 pound cooked rice, bread crumbs, or cooked barley; one pound figs; two oranges with rind; one bay leaf; salt and pepper to taste. Mix well and bake in oven for one hour. Drizzle with melted butter, sprinkle with powdered sugar and serve. Haggis: • Take the larger of a sheep’s two stomachs, wash it thoroughly, and soak it overnight in cold salted water. Turn it inside out. Boil sheep heart, tongue, lungs and liver for two hours and then mince. Put these into a bowl and mix with a pound of suet, chopped onion, a cup of toasted oatmeal, seasonings to taste, and broth to make the mixture sappy. Fill the stomach half full, sew shut, and boil steadily for three hours, pricking the stomach as it begins to swell to prevent bursting. Serve hot. Headcheese: • Take the cheeks, forehead, tongue, and nose of a livestock animal. (Optional: use entire head; add feet if desired.) Wrap tightly in cloth, boil for hours until the water becomes gelatinous. Finely dice meat; add cooking fluid and seasonings to make a smooth syrupy mixture. Place in

Even if you’re not a horse person you’ve probably heard the quote: “There is nothing so good for the inside of a man as the outside of a horse.” Several people are credited with the remark, from Winston Churchill to Ronald Reagan. At this point, it doesn’t matter who said it; what is important is what they meant: horses are beneficial for a person’s health. That couldn’t be more true as it relates to Therapeutic Horseback Riding and Hippotherapy for people living with disabilities. First, let’s define what we’re talking about. What is Therapeutic Horseback Riding? A person with disabilities (i.e. Autism, Cerebral Palsy, TBI, MS, to name a few) sits astride a horse in a saddle or on a bareback pad. Someone leads the horse and one or two people walk alongside for safety. A certified therapeutic riding instructor teaches the lesson. What is Hippotherapy? It’s basically that same thing, however, the session involves physical, occupational, or speech therapy prescribed by a physician and is carried out by a licensed therapist.So that’s what it is, but you’re wondering: what makes it beneficial for a person’s health? Horseback riding is recognized as a uniquely beneficial form of therapy for individuals challenged by disabilities, since researchers have found the rhythmic stride of a horse is much like the gait of humans. The horse’s gait – its physical elements, rhythm, sense of balance, and centering – transmit directly to a person’s body and brain when astride the horse. This allows the rider to perceive the physical world around them in relation to their own bodies – a process that might otherwise be impossible because of physical or cognitive challenges. Sitting astride a horse provides a fantastic opportunity for symmetrical input to both sides of the body. The movement of the horse challenges balance, reflexes and sensory systems in a way therapists say cannot be matched in a clinical setting, because it’s front to back or side-to-side, or depending on the horse – all those at the same time! This means the movement of the horse is physically challenging, thereby increasing core strength through muscle building, increasing trunk control, stretching and strengthening legs, testing motor skills. At the same time, the movement of the horse, the warmth, the rhythm helps a rider to relax. For a rider who lives with limited mobility, it sets their body free for a while and changes their dynamic. For a person living with disabilities, there are also organizing benefits that impact areas of communication and social skills. With things like repetitive cues and sensory input, riders also learn to focus on tasks in a different way and that may cause improvement in responses to verbal and external cues. When participating in therapeutic horseback riding, riders also learn independence and decision making (which way to turn their horse, which activity to pursue), practice social skills and interacting (with fellow riders and sidewalkers), and may develop or broaden nurturing skills and feelings of empathy (caring for and/or responding to an animal.) Those who have experienced Therapeutic Horseback Riding and Hippotherapy have been changed by it. They are riders with heart.
