EDIBLE INSECTS (Continued) • The Klamath Indians used to light fires beneath trees to smoke out the caterpillars of the Pandora moth which would be collected as they fell. Some Paiutes still eat Pandora caterpillars. When the U.S. Forest Service proposed a spraying plan to control the Pandora moth, the Paiutes sued, and won. • In Botswana, mopane caterpillars are relished. Named after the mopane tree which they feed off of, mopane caterpillars turn into the emperor moth, one of the largest moths on the planet. The caterpillars are huge, too, weighing about half an ounce each. The demand for these caterpillars is so great that their population has been drastically reduced. The one thing that has saved them from extinction is that the small, young caterpillars taste bad. It’s not until they get fat and ready to pupate that they taste good- so the smallest are spared to carry on the species. Researchers are trying to figure out a way to raise them in captivity on a caterpillar farm. BON APPETITE • Sound revolting? Well, you eat insect parts every day of your life without knowing it. In every sandwich you eat, there may be up to 56 insect parts in keeping with U.S. Food and Drug Administration standards. DRUNK WORMS • Why are there worms in the bottom of bottles of tequila and mescal? Tequila and mescal are made from agave plants, and the worms in the bottles are maguey worms, which feed exclusively on agave plants. The presence of the caterpillar in the bottle certifies authenticity. Also, tequila and mescal are usually doubledistilled and are around 110 proof but they are sometimes watered down by greedy

dealers. Caterpillar carcasses can’t stay in a state of perfect preservation for very long in watered-down liquor. So if the worm at the bottom of the bottle is in good shape, you know the liquor is pure. NATIONAL STINKBUG DAY • South of Mexico City near the town of Taxco at the temple on top of Mount Huizteco the residents celebrate the Day of the Jumil. The jumil is a type of stinkbug about half-inch long. Each year townfolk gather on the mountaintop to collect the insects, cook them, eat them, elect the Jumil Queen, and have a great celebration. These insects are a delicacy, suitable for serving to honored guests. Peter Menzel, author of “Man Eating Bugs: The Art and Science of Eating Insects” described their taste as, “Like an aspirin saturated in cod liver oil with dangerous sub-currents of rubbing alcohol and iodine.” The insects are indeed high in iodine, important in preventing goiter in an inland area far from the ocean’s natural sources of iodine. The locals say they taste slightly of apples. RECIPES • If you’re interested in making a meal of mealworms, check out David George Gordon’s “Eat-A-Bug Cookbook” where you’ll find recipes for Termite Treats, Grilled Grasshopper, Three Bee Salad, Cricket Casserole, Cockroach a la King, and Pest-O, among others. COOKING TIPS • Interested in raising your own grub? Try mealworms, crickets, or termites, which are some of the easiest ‘microlivestock’ to grow. All you need is a tank or aquarium, some grain to provide food, and a few slices of fresh fruit for moisture and you’re in business. • The official term for insect-eating is “entomophagy.” • Deep-fried tarantulas, two for 20 cents, are consumed by Cambodian men
who think it will boost their virility. • Most kinds of caterpillars are edible, but don’t eat the brightly colored ones which may contain toxins. According to the rule of thumb for insect eating in the “Eat-a-Bug Cookbook”: “Red, orange, or yellow / forgo this small fellow / Black, green, or brown / Go ahead and toss him down.” • In general, avoid eating any insects that have a strong odor. • If you’re allergic to shellfish, avoid eating insects because the two are closely related. • Scorpions are eaten just like shrimp. • Boil slugs in vinegar to remove mucus, then stir fry in butter and garlic. • Boil wasps and bees before eating to neutralize the poison in their stingers. • In Colombia they enjoy ant paste, which is spread on bread. • Canned ant eggs, available in Thailand, goes best when spread on toast. • Grasshoppers and crickets are edible at all of their life stages: larvae, pupa, and adult. Like lobsters, grasshoppers turn red when cooked. • A cup of crickets has about 250 calories and only 6 grams of fat. (We are done discussing insects now)

TIDBITS® GAZES INTO YOUR EYES by Kathy Wolfe In 1981, President Ronald Reagan issued Proclamation 4821, declaring March 3 – 9 as Save Your Vision Week, urging citizens to show “greater concern for preserving vision and preventing eye injury…” Follow along as Tidbits takes a peek into those organs of sight, the eyes. • The eye is the second-most complex organ in the human body. Only the brain is more complex. Each eye has more than 2 million operational parts, and can process upwards of 36,000 bits of information every hour. We actually see with our brain, not our eyes. The eyes function like a camera, capturing images and sending them to the brain. About half of the brain is used for vision and seeing. Over the course of the average lifetime, the eyes will see about 24 million different images. • Eyes sit in a hollowed socket called the orbit for protection, with only about 1/6 of the eye exposed. The eye is about 1 inch (2.54 cm) in diameter and weighs about 0.25 oz. (7.09 grams). Eyes begin to develop just two weeks after conception. Growth of the eye is rapid the first three years of life, and by age 13, it is full size. • When your eyes are watering, it’s not because they have excess moisture. Actually, it’s the opposite! Your eyes are producing tears to compensate for dry eyes. • You’ve heard it said that life passes by in a blink of an eye. Did you know that we spend about 10% of our waking hours with our eyes closed, blinking. Each blink lasts about 1/10th of a second, and takes place about 25,000 times a day, about every 12 to 15 seconds. A person blinks more when talking, but less when reading or staring at a computer screen. Because we blink less often during screen time, that’s what makes our eyes tired. Blinking keeps our eyes lubricated as well as protecting the eye from foreign particles. • Each fingerprint has 40 distinctive characteristics. The colored part of your eye, the iris, has 256, which is why eye scans are gaining widespread use for security purposes. • One of the most common eye injuries is poking the eyeball with a mascara wand! But the good news is that it takes only about 48 hours to repair a minor scratch on the cornea. • The iris, that colored part of the eye, has an important function – controlling the size of the pupil and the amount of light reaching the retina. The color of your eyes is due to the amount of the pigment melanin. A high concentration of melanin in the front layer of the iris results in brown eyes, while blue eyes have a lower

Although brown is the world’s most common eye color, 86% of the population of Ireland and Scotland have either blue or green eyes. • Most newborn babies with European ancestry have blue eyes at birth. But as the child grows, cells within the iris of the eyes begin to produce melanin, and by 3 to 6 months of age, the adult eye color is established. • Speaking of newborns, although they do a whole lot of crying, they don’t produce any tears until they are between 4 and 13 weeks of age. • The eye’s cornea is the only tissue in the human body that does not contain any blood vessels. • Vision is measured in fractions, known as Snellen fractions, named for the Dutch ophthalmologist who developed the system in 1862. If a person has 20/20 vision, he or she is able to clearly see an object at a distance of 20 feet (6.1 m). The distance from the person to the eyechart is 20 feet, and the letters on the chart are a certain size, getting larger as the fractions increase. If a person can only see the big single “E” at the top of the chart, vision is 20/200. The smallest letters on the Snellen chart correspond to 20/10 vision. If you’re fortunate enough to have 20/10 vision, your eyesight is twice as sharp as a person with 20/20. • Cells in the eyes come in different shapes. Rodshaped cells are very sensitive to light and allow us to see shapes. There are 100 million of these rods, which also enable us to see better in the dark. The cone-shaped cells are responsible for the eyes seeing color. The 7 million cone cells can differentiate between about 10 million colors. • Folks whose cones don’t have all the necessary pigments – red, green, and blue -- have trouble seeing
certain colors. Deuteranomoly is the most common form of color blindness, affecting 5% of all males. The green cone pigment doesn’t work properly, making yellow and green look redder, and making it difficult to distinguish blue from violet. • When the red cone is deficient, known as protanomaly, orange, red, and yellow look greener. Tritanomaly is the result of missing or limited blue cones. Blue looks greener, and it’s hard to tell pink from yellow and red. Some rare individuals have no pigments in any of the eyes’ cones, and see no color at all. This condition is known as monochromacy or achromatopsia. • One in 12 men of European descent is colorblind, while just one in 200 women are affected. This is because the condition is located on the X chromosome, of which men have only one. Women have two X chromosomes, so that if a female has the colorblind gene, she has a normal gene as a “backup.” • Each of your eyes has about 100 eyelashes on the top eyelid, and 50 on the lower lid, each with a lifespan of about five months. Over the course of your lifetime, you will shed eyelashes amounting to a length of over 98 feet (29.9 m). • When you hit about age 45, you may have to don reading glasses due to an increasingly worsening ability to focus clearly on small print and close objects. This condition, simply due to the aging of the eye, is known as presbyopia. • The number 80 is an important one when it comes to eyes. Our eyes account for 80% of what we learn, 80% of our memories are determined by what we see, and 80% of vision problems around the world are avoidable or curable.

Fake Blood Pressure Readings, Again
clinic in Kentucky, and the blood pressure reading was 128/78. In that case the OIG discovered that by entering that particular reading, it would turn off the automatic note to physicians about whether or not the patient needed lab work, referrals or medication. It was a ploy to save work on the part of the medical staff. The OIG discovered, by calling veterans, that often no blood pressure reading had even been taken. What made it worse was that the fake readings triggered staff performance bonuses. We need to step up and manage our health care. Take a pad and pen with you to appointments and take notes: your weight, any medications you’re to take, the results of any lab work ... and your blood pressure reading. Keep these notes in a file. Compare them to previous appointment notes. If you see a pattern -- in this case, if your blood pressure is the same from visit to visit -- ask questions. Get a message to your doctor and let him know. High blood pressure can lead to heart attack, stroke, kidney disease and more. Take care of yourself.
A Department of Veterans Affairs outpatient clinic in Virginia has been recording fake, incorrect blood pressure readings of veterans who came in for care. A 139/89 reading was routinely entered during blood pressure rechecks. Why that number? Because a higher number would have triggered follow-up care. Once again, it was the VA’s Office of the Inspector General that caught the pattern. Eight weeks later, the OIG discovered that nothing had been done to correct the problem. They stepped in again and wrote five recommendations for improved care, and more than 800 veterans have been notified to return for blood pressure screenings. PAUL FREES
By: Janet Spencer • Paul Frees is the most famous person you’ve heard, but never heard of. Born in Illinois in 1920, he developed a versatile four-octave voice. Then he mastered the art of doing impressions. He toured Vaudeville, perfecting his timing and improving his vocal talent. • Beginning in 1942, Frees found that his talents were in demand in the world of radio. He played a wide variety of parts in audio dramas, often playing the role of several characters due to his ability to change his voice. In one radio series, he played not only every part in the drama, but also the narrator. • Over four decades, he was involved in making over 250 films, innumerable cartoons, and many TV appearances. • His gift for impressions meant that he was invaluable to Hollywood producers who needed help with dubbing sound tracks. Humphrey Bogart was battling throat cancer in his final film “The Harder They Fall” (1959), and spoke his lines so softly that they couldn’t be heard well. Paul Frees dubbed over the

lines in a perfect imitation of the star. • Throughout the 1950s and 1960s, Frees was called upon to dub dialogue of other actors to correct for foreign accents, poor English proficiency, or bad line readings. Sometimes he was needed to over-dub just a few lines; other times he dubbed entire roles. In the 1959 film “Some Like It Hot”, Frees provides the voice of the funeral director as well as much of the falsetto voice for Tony Curtis' female character Josephine. Frees also dubbed the entire role of Eddie in the 1966 Disney film “The Ugly Dachshund”, replacing actor Dick Wessel, who died of a heart attack before the sound work on the film was finished. • But Paul Frees’ talent shown most brightly in his work as the voice of various cartoon characters. He voiced the part of Boris Badenov (The Rocky and Bullwinkle Show), Inspector Fenwick (Dudley DoRight), Weevil Plumtree (George of the Jungle), and Ludwig Von Drake (with Donald Duck). • Unlike many voice actors who did most of their work for one studio, Frees worked extensively with at least nine of the major animation production companies of the 20th century, including Walt Disney Studios, Warner Bros., Hanna-Barbera, Metro-Goldwyn-Mayer, and others. • Paul Frees really came into his own in the
world of cartoon commercials. He played the part of the Farmer in the Jolly Green Giant ads; Toucan Sam for Froot Loops; and Boo Berry for Monster Cereals. • But his most famous role, the one for which he is still remembered today, was as the voice of Poppin’ Fresh, the Pillsbury Doughboy. More than 50 actors auditioned to do the voice for the Pillsbury Doughboy, including Paul Winchell, who did the voice for Tigger from “Winnie the Pooh.” Paul Frees won the role, and his iconic giggle is famous. The commercial first aired in 1965, and since then, Poppin’ Fresh has appeared in over 600 ads. • Paul Frees died in 1986 at the age of 66. Upon his death, Jeff Bergman, who also voiced Charlie the Tuna, took over the voice of the Pillsbury Doughboy. • Poppin’ Fresh is recognized by 87% of American consumers, yet few know the name of Paul Frees. When asked if he resented that so much of his work was done anonymously, Frees replied, “Sometimes, yes. But it’s nothing I can’t overcome when I look at the bank balance.”
OREOS by Kathy Wolfe Oreo Cookie Day is celebrated every March 6, honoring the day that the treats were first marketed in 1912 by the National Biscuit Company (Nabisco). This week, Tidbits has all the info on these little sandwich cookies. • Nabisco produced the first Oreo cookies in their factory in the Chelsea Manhattan section of New York City factory. They were packaged in tin containers with glass tops and sold for 25 cents a pound (453 g). The first Oreo was sold in a Hoboken, New Jersey grocery store. • Oreo’s weren’t the first chocolate sandwich cookie. The Sunshine Company had already been baking Hydrox cookies for four years before the introduction of Oreo’s. The Hydrox cookie was a little crunchier and the filling was a little less sweet. • A lemon meringue variety was also offered at the Oreo debut, but was discontinued in the 1920s. • When Oreo’s were introduced, they were known as Oreo Biscuits. A name change to Oreo Sandwich came along in 1921, and another in 1948 to Oreo Crème Sandwich. Since 1974, they’ve been known as Oreo Chocolate Sandwich Cookie. • A regular Oreo cookie is 71% cookie and 29% cream, and contains 45 calories. Double Stuff Oreo’s, introduced in 1975, don’t really have double the filling. In 2013, a high school math school conducted an experiment in 2013 to determine the ratio, and found that Double Stuff have just 1.86 times the filling in the original. And Mega Stuff, which reportedly have three times the filling, have only 2.68 times the cream of a regular Oreo. • It takes about 59 minutes to make an Oreo. A rotary mold forms the cake dough into the round shape before the cookie enters a 300-foot-long (91 m) oven. • Oreo has had several advertising slogans over the years. Their first slogan and jingle was in 1950 – “Oh! Oh! Oreo.” During the 1980s, the company changed slogans five times, and included “For the Kid in All of Us,” “The One and Only,” “Who’s the Kid with the Oreo Cookie?”, “Oreo, the Original Twister,” and “America’s Best Loved Cookie.” And in fact, Oreo is not only America’s best-loved cookie, it’s the bestselling cookie in the entire world, available in more than 100 countries, with over $2 billion in annual sales. In the U.S. alone, about 20 million Oreo’s are consumed every day. • Also during the 1980’s, advertising copywriter Edna Robinson wrote the famous lyrics, “A kid’ll eat the middle of an Oreo first, and save the chocolate cookie outside for last.” Since 2004, Oreo’s slogan has been “Milk’s Favorite Cookie.” • The name Oreo was trademarked just eight days after its introduction. There are several theories as to how the Oreo got its name. Some say that because the original packaging was gold, the cookie took its name from the French word for gold, “oro.” Others contend that the two “O’s” represent the round wafers, and the “RE” is the cream. Yet another theory insists that the names comes from the genus of the laurel wreath imprinted on the original cookie, the Latin word “Oreodaphne.” • In 2018, Google purchased the former Nabisco factory for $2.4 billion. The street where the building stands on Ninth Avenue between 15th and 16th Streets is known as “Oreo Way” in commemoration of the cookie.

Finding the Right Nursing Home When it’s time to find a nursing home for an elderly parent or your spouse, the decision can be the hardest part of the process. But it’s not the only tough part. Gathering information can make the task even more difficult. One source is Medicare’s nursing home comparisons (www.medicare. gov, then put nursing homes in the search box). Enter your ZIP code and you’ll get an list of places within 25 miles. They’ll each be rated with stars for health inspections, fire safety, staffing, quality of resident care and penalties. Make special note of this last category; it can reveal a lot. Penalties can

include the past three years of fines and denial of payments if the nursing home failed to correct a citation for health or fire safety. In a serious situation, a manager or state monitor might be called in to oversee the facility. Staffing is another big issue, especially if the nursing home doesn’t have enough employees. Medicare keeps track of how many registered nurses, licensed practical nurses, nursing aides and physical therapists are on staff, and how many hours per day are devoted to working with patients. RNs, for example, are in charge of the patient’s overall care plan and supervise the other staff. Even having the right number of nursing aides per patient is critical to ensure that bathing, grooming, eating and more are managed for each patient. What might be most crucial, however, is how you feel when you first walk through the door. Do you hear any staff members speaking in a rude tone to any of the patients? Would you be able to visit all day? Is it noisy?
