News Among What’s New With Us... Dear Friends, We had a great Summer and have entered a new chapter in our lives as we now have a Kindergartner in the house! Chloe is now attending Kindergarten and we can hardly believe it. I am realizing today’s Kindergartners have homework; I remember nap time and play when I was young. Now, they have homework and computer time; boy what a change from when I was that age!

I write to you as the first day of Autumn approaches. I must say it’s my favorite time of the year. The cool Autumn days filled with rustic palettes of warm colors awaken my eyes to mother nature’s beauty. Getting out those warm cozy sweaters, sipping hot apple cider by the fire with loved ones Chloe’s first day of as we enter another season of memories. What memories Kindergarten. will you make this year? I sit back and think of years gone by and what memories stand out the most to me and I find it’s always the “time we spent with someone”. You can replace things but never people and the time you spend with them. Just think about creating a portrait doing something together, maybe you bake cookies with your kids or practice a sport with one of them. Wouldn’t it be a great memory to have and look back on one day? So if you want a fun shoot making a mess in your kitchen or getting muddy in the field, call; I want to capture that special time you spend together because time goes by so fast! The First Annual Little Angels Calendar Fundraiser Event For a $100 donation per child, you can have an “Angel Portrait” taken of your child (6 months to 4 years old). Portraits will be entered in an online voting contest where family and friends can vote for a small fee. The twelve portraits with the most votes will be featured in our unique calendar, which will be sold as an additional fundraiser. All proceeds will benefit ECF’s Eastern Regional Center in Wall, New Jersey.

Homemade Pumpkin Butter
Foliage Facts
Ingredients:
• ½ tsp. ground cloves
• (1) 29 oz. can of pumpkin puree or ¾ cups fresh
• 1 tbsp. cinnamon
• ¾ cups apple juice • 1½ tsp. ginger
• ½ tsp. ground nutmeg • ½ cup brown sugar • Juice of ½ a lemon
Directions: 1. Leaves of some trees such as birches, tulip poplars, redbud and hickory, are always yellow in the fall, never red. 2. The most intense of fall color occurs in areas such as New England, with almost pure stands of a few types of trees, such as maples and birches, that all turn color at the same time during the short fall season. 3. The change in day length (photoperiod) that causes the chemical changes in the trees leading to the bright colors starts June 21, the longest day of the year, as the sun starts to move south and the days become shorter. 4. Bright sunlight is essential for the production of the red (anthocyanin) pigment in the fall leaves: if a black mask is placed on part of a leaf before it turns red, the part of the leaf under the mask will turn yellow while the exposed part will turn red. 2
1. Combine pumpkin, apple juice, spices, and sugar in a large saucepan and stir well. Bring mixture to a boil. Reduce heat and simmer, covered with lid ajar, for 35–45 minutes, stirring frequently. Be careful as the mixture bubbles and pops! 2. Remove from heat. Adjust spices to taste. Stir in lemon juice. Once cool, pumpkin butter can be kept in an airtight container in the fridge for up to 3 weeks. Makes enough to fill one large mason jar or about 3½ cups.
Note: Canning is not recommended. Get your super cute Mason jar and set aside.
