Summer Recipe­—Zucchini Boats Ingredients: (5 ) Zucchinis Crushed garlic Olive oil Salt and pepper

Grape tomatoes Bread crumbs Diced Fontina or Mozzerella cheese Grated Parmesan

Directions: Cut zucchini in half length-wise. Trim a little off the bottom so it sits still in the baking dish. Scoop out center where the seeds are with spoon. Brush surface with mixture of crushed garlic, olive oil and salt and pepper. Arrange halved grape tomatoes into grooves and sprinkle with bread crumbs. Bake 350° for about 30 minutes. Remove and add diced Fontina or Mozzerella cheese between tomatoes. Place back in the oven under the broiler until golden. Remove and drizzle with olive oil and sprinkle a little Parmesan cheese!
