ide open spaces. If 2020 gave us anything, it’s the appreciation (dare I say downright unbridled love?) of them and the physical and emotional freedom that they afford and inspire. In this issue, both of the feature articles address ways to stretch boundaries for ourselves—and for other important and beloved members of our households! On page 16, I shed a bright camping lantern on one of Kate Becker’s outdoor endeavors—rooftop camping. As a photographer, it’s no wonder that Becker is always on the lookout for new perspectives and viewpoints. She and her husband, Tony, have hit the camping trails on numerous adventures with their iKamper in tow, and it “… (literally) elevates the car camping experience,” Becker says. Curious? Becker answers a host of questions about “how to and what to know,” so be sure to park yourself at the article to learn about another way you can hit the road and reserve a spot under the stars for your next getaway. Repurpose old shoe boxes as storage containers. They are sturdy and an ideal size for cabinets and drawers. Add color by gift wrapping the outside of the box and use gift tags as labels. Retrieve empty pickle or pasta sauce jars, and use them to organize household items, such as pens, pencils, buttons, makeup brushes, rice, spices and even Legos. Reclaim lumber scraps and turn them into floating shelves, drawer dividers, book ends or crates. Repurposing and recycling items lessens our environmental footprint. Try hanging tiered magazine racks in your garage to hold paper and plastic bags from the grocery store. Even better, use a bicycle hook and hang recyclable grocery bags in a spot where you won’t miss them on your way to reuse them at the store. At your desk, reduce the amount of paper you toss in the trash, and add a recycle bin for your paperwork. If you get a lot of junk mail, place a bin in your office, and label it “need to unsubscribe.”

Take in the sweet smell of spring. This is a time of renewal with plants emerging from the ground and shrubs and trees forming buds with the promise of a new season. What comes after that, is my favorite thing about spring—the sweet-smelling fragrances of early blooms. There is nothing better than heading out into the garden or going for walks and absorbing all the scents spring has to offer. Wouldn’t it be great to bring those lovely fragrances into your home? A fresh cut flower bouquet could easily be at your fingertips. Add these spring blooming plants to your garden, and enjoy their sweet fragrance. Lilacs are well-known spring blooming shrubs that offer an array of bloom colors and scents. They are very hardy in Minnesota and excel with our changing weather. My favorite spring fragrances include: Honeysuckle offers a sweet honey smell mixed with ripe citrus. Peonies bring a subtle clean sent that doesn’t overwhelm a room. The mock orange smells just like fresh oranges, hence the name. Others fragrant flowers include: magnolias, flowering crabapples, irises, viburnums, azaleas and roses. Contributed by Christina Timm,

Over the Rainbow App tracks babies’ in utero movements.
SINCE FEBRUARY 2019, Tausha Patterson has been advocating for the education of mothers and medical professionals about new ways to care for babies during pregnancy, especially during the third trimester. The Maple Grove resident is the Count the Kicks Ambassador for Minnesota. Patterson was introduced to the program after the loss of a daughter, Amelia, who was stillborn in 2019. At the time, Patterson and her husband, Luke, were parents to three children. During her four pregnancies, she recalls being asked,
10

“’Is the baby moving?’ and that was it,” Patterson says. “I wasn’t shown how and how important it was to track the baby’s movements or what it could indicate if baby’s movement changed.” During her pregnancy after Amelia, Patterson was determined to learn the practice of “counting the kicks,” a way of tracking a baby’s movement in utero. After discovering the program through a perinatal loss therapist, Patterson incorporated it into her daily activities. Each morning at 8:30 a.m., she would use the foot button on the Count the Kicks app to
track her baby’s movements until she got to 10 counts. She was able to note exactly what movements her baby made, whether it was a kick, jab, swish or roll, and then compare them to the movements of other days in the app’s history graph. If Patterson’s baby ever took significantly longer or less time to get to 10 movements, she would know that she may benefit from seeing her doctor. “There were some times when [baby’s] movement was off,” she says. “I knew how long it normally took her to get to 10 movements and when she was normally active,

so I could speak up, and I could go in and be seen and make sure she was okay.” Patterson explains that a significant part of counting the kicks is knowing how to advocate for yourself. “There are so many women out there that don’t know,” she says and credits the app with encouraging them to speak up. The Count the Kicks app stems from a public health campaign started in 2008 by five women, who all experienced the loss of children. Jan Caruthers, Janet Peterson, Kate Safris, Kerry Biondi Morlan and Tiffan Yamen work together to create the Iowa’s Stillbirth Registry and to advocate for stillbirth prevention. The concept is based on public health research published by BioMed Central in Norway, which shows a 30 percent reduction of stillbirths when mothers are taught how to track their baby’s movements. Patterson’s rainbow baby, a daughter, Eleanor, was born August 2020. She now uses her own story to help others learn about the importance of counting the kicks. “I wanted other women to not have to experience that and [to know] how simple it can be to know your baby’s movement, to be able to track that and know when something’s wrong ...” Medical and pregnancy professionals can take the Count the Kicks training, a continuing education course that teaches awareness of the issue. Along with Patterson, there are 36 Count the Kicks ambassadors across the country and one in Canada. LAUREN SUTTON GREW a creative hobby into a full-blown brand—Olive + Siena—all within the course of a year. The Maple Grove resident first started her polymer clay jewelry making venture with some trepidation. “One of my coworkers had done it with some friends and thought that it would be something that I would enjoy,” she says. “At first, I was like, ‘Oh, that seems a little bit too involved for me.’” But, one day, Sutton found herself at an arts and crafts store, gathered up some supplies and decided to give it a try. After viewing a YouTube tutorial that made the whole process look deceptively easy and making a few prototypes that Sutton laughs at in retrospect, she says she started to get the hang of it. “At first, I thought it was a lot of work, and it seemed really intimidating, but I really enjoyed it. It was fun to be creative, and it was fun to wear a different pair of earrings to work every day and show off what I was working on outside of work,” she says. A series of misfortunes gave Sutton time to hone the methods of her craft. “Around the same time that I started getting into this, I injured my knee. After having knee surgery, I couldn’t do a lot of the typical things … like sports and exercise. This was just a fun way to spend my time,” she says. Then, COVID-19 struck, and Sutton—like a lot of us—found quite a bit of extra time on her hands. Sutton opened her Etsy shop, Olive + Siena, and began selling her handmade polymer clay and metal earrings. Her business truly took off from there, with sales already topping 2,000 earrings in little over a year. “It definitely has been

kind of busy,” Sutton says, adding that she enlists the help of her husband and mom, but, “It’s mostly just me,” she says, “And I do this on top of my full-time job.” As a brand, Olive + Siena fits in well with the polymer clay jewelry craze, which is becoming increasingly popular with buyers, while still bringing Sutton’s design sense to the fore. here’s tent camping. Then there’s camper camping. How about a friend’s couch camping? Or is that surfing? Regardless, have you heard of rooftop camping? Me neither—that is until photographer and avid traveler Kate Becker of Corcoran started posting some rooftop camping exploits on Instagram. Becker’s photos offer stunning views, all from an elevated vista, that provide a fresh take on some of nature’s best work.
MGM: What is rooftop camping? KB: Rooftop camping is definitely a trend that we are seeing more and more as we [her husband, Tony] travel to more national parks across the U.S. We love visiting national parks, and it’s not uncommon these days to see several other people driving around with rooftop campers—a tent that is mounted on top of your vehicle, that (literally) elevates the car camping experience. Our idea for purchasing a rooftop camper stemmed from wanting to buy a camper van for when we travel. Camper vans can be expensive when they are built out to accommodate the needs of a typical RV … we looked into other options, which brought us to rooftop campers ... It frees up space in our vehicle since we aren’t packing a traditional tent, and the setup is much faster than a traditional ground tent. With being elevated off the ground, we also have better views when we camp, and it’s overall a more comfortable experience being off the ground.

When did you start? We started rooftop camping in May of 2019. Our first trip with our iKamper was to Colorado and Utah to visit seven national parks in seven days. We had so much fun with this experience. We’ve also taken it to the Upper Peninsula of Michigan, Grand Teton National Park, Yellowstone National Park, Gooseberry Falls and a few other

Does it provide better safety? [It] does provide a little more safety than a traditional ground setup. Since you’re sleeping off the ground, there is less of a chance that smaller predatory animals, like coyotes or mountain lions, [will disturb the site]. While they aren’t necessarily bear proof, they definitely make you feel safer sleeping off the ground.

Let’s talk space … When opened up, it has the same measurements as a king-sized bed, so [it’s] much bigger than a traditional two-person tent would be. My husband and I sleep up there comfortably with both of our English Setter dogs.
… and what about wind? We have a wind deflector on the front of our Jeep that helps cut the wind when we are driving. When the tent is all set up, it’s actually a lot more stable than a traditional tent since one side is the hard exterior shell.
Does your car need special equipment? You do need a roof rack to attach the camper to the vehicle. The roof rack has to be approved to hold the weight of the camper since it’s quite heavy ... We purchased our roof rack right off Amazon and installed it to our Jeep Wrangler ourselves. Some vehicles come with roof racks on them, so when looking for a rooftop camper, be sure that you know the specs of your own vehicle’s roof rack to see if it can hold the weight.
What else should readers know? ... when installing it to your vehicle, you will want to have a couple people helping out or a pulley system in your garage to lift it for you … Another note is that the rooftop camper is something that you likely won’t keep on your vehicle at all times. We do take it off after big trips if we don’t have another trip coming up soon, and we do take it off during the winter, as well.
Are they worth the cost? It is definitely an investment compared to a traditional ground set up because of its hard shell exterior and its ability to wear the wind and weather while driving. But when compared to a camper van or RV, it’s much more cost effective. There are so many benefits to the rooftop camper that we are happy we made the investment. MG

in Minnetonka, says the shelter witnessed an uptick in interest for pet adoptions and fostering. “Our large dog coordinator had a 75 percent increase in the number of lives saved over the summer,” Mairose says. “Over the summer and into fall, we rarely have dogs stay [available for adoption] on the website more than a couple hours.”
“[Pet adoptions] is the silver lining of this whole pandemic for us,” Mairose says. “The amount of lives not only Secondhand Hounds has been able to save, but every rescue across the country, is amazing.” With so many first-time pet owners bringing animals into their homes and exploring the sociallydistanced outdoors, it brings to ques-

At home, is there anything owners can do to make sure landscaping elements are pet friendly? We turned to some experts for answers. There are plenty dog parks dotted

The Arboretum Dog Commons is “a place where members [dog-added membership required] and their leashed dogs can enjoy the beauty of the arboretum together,” says Jean Larson, PhD, manager of the arboretum’s Nature-Based Therapeutic

When you’re out and about, Larson says that it’s essential to let dogs follow their instincts while staying on marked paths. While humans are used to moving at their own speed, it’s important to allow

W h o ’s w a l k i n g dogs to have a say in the pace. “When you are on a walk with your dog, let your dog sniff.” Larson says. “Sniffing on a walk is extremely important for a dog’s wellbeing, and it allows us humans to slow down and enjoy the walk, too.” Heading out for exercise and socialization is important for pets, but, let’s face it, they spend a vast majority of their time in their own backyard. Larson gives pet owners a few tips for pet-safe yard care at home. “Invest in a quality fence for your yard,” Larson says. “Physical fencing allows your dog to roam freely and stay safe.” She also says that careful supervision and recognizing your dog’s habits can be a great way to create a space he/she will enjoy. Is he a digger? Provide a sandpit for digging. Is she a sniffer? Feature areas of heavier cover where your dog can happily nose around. Does your dog like to sunbathe? Find a sunny spot where your dog can warm his belly. Larson recommends using dog-safe materials for home landscaping and warns against cocoa bean mulch and commercial weed killers. Best in (fl ower) show Veterinary Medicine, says that often, fertilizers with bone meal can be dangerous, proving irresistible for some dogs and can make them sick if they eat too much of it. Homeowners should be mindful about what’s in their gardens. Yews, castor bean, holly and lilies are plants that can quickly become dangerous to pets if ingested. “The best prevention for keeping your dog healthy is to research plants that work in your zone and are safe for your dogs,” Larson says. She suggests books like Dog Friendly Gardens by Cheryl Smith. Pet owners Visit the American Society for the Prevention of Cruelty to Animals’ online library of poisonous plants.
While owners can’t always know if a dog has ingested a dangerous plant, there are a few signs that are important to note. “Some plants can cause drooling or mild [gastrointestinal] signs right away, while others can have more serious adverse effects delayed after ingestion,” Flynn says. If you are worried that your pet has eaten something he/she shouldn’t, Flynn recommends contacting a veterinarian or a pet poison center, including the Pet Poison Helpline at 855.764.7661. Pie–she’s often the underappreciated sister in the dessert family. Cake gets all the glory—candlelit entrances at birthdays and tiered seating at weddings, and all eyes are on her first slice at a host of gender reveal parties. But, have you ever heard of a savory cake? I think not! Pie can flex her ingredient muscles into sweet and savory recipes. More bakers and cooks are appreciating the nuances of pie by elevating traditional slab pie recipes. Made in (mostly) a 9x13-inch rimmed pan or a larger jelly roll pan, these lovelies are great for serving a crowd or adding to a buffet lineup. Diners can cut the entrée or dessert any way they like, including into squares, or they can just grab a serving spoon and dig right in. Taylor Ellingson: I think slab pies are perfect for serving to a larger crowd. While a pie will serve around eight people, a slab pie makes around 16 servings. For savory slab pies, such as my ham and cheese slab pie, I love making it for a family brunch or dinner at home and having leftovers.

* Taylor Ellingson’s Go-To Pie Crust Recipe Makes two pie crusts (enough for one slab pie) 4 cups all-purpose flour 1 ½ tsp. salt 1 ¾ cups unsalted butter, cold and cubed ¾ cup ice water In a food processor, add the flour and salt, and pulse to combine. Add the butter, pulsing until the mixture resembles coarse crumbs. Drizzle in the cold water, 2 tablespoons at a time, pulsing the food processor as you go. It should form a big clump as you add the last 1-2 tablespoons. Transfer the dough to a floured work surface, and fold the dough into itself until the flour is fully incorporated into the dough. Form the dough into a ball, divide in half, and flatten each half into a thick disk. Wrap in plastic wrap, and refrigerate for two hours, up to three days.
Apple Slab Pie with Crumb Topping Serves: 12-16
Ham, Egg and Cheese Slab Pie Serves: 12 2 refrigerated pie crusts or one batch of Taylor Ellingson’s go-to homemade pie crust * 8 eggs 1 ½ cups milk 2 Tbsp. Dijon mustard 1 tsp. salt 2 cups diced ham ¼ cup diced green onions 2 cups shredded cheddar cheese Preheat the oven to 425 degrees F. Grease a 15x10-inch jelly roll pan. Stack pie crusts on top of each other, and roll them out into a large rectangle, about 18x10 inches. Press the crust into greased jelly roll pan, pressing it up the sides of the pan to form edges. Bake in the preheated oven for 10 minutes. Reduce the oven temperature to 375 degrees F. Meanwhile, make the filling. In a large bowl, whisk together the eggs, milk, mustard and salt until well combined. Once the pie crust has parbaked, sprinkle the diced ham, green onions and shredded cheese evenly over the crust. Pour the egg mixture over the ham and cheese. Bake for 25-30 minutes, until the egg is set and the top is golden brown. Cut into squares, and serve.

Grease a 15x10-inch jelly roll pan. Stack pie crusts on top of each other, and roll out into a large rectangle, about 18x10 inches. Toss the apple slices with the lemon juice. Add the sugar, flour, cinnamon, salt, nutmeg and cloves, and stir well to combine. Spread out evenly on top of the pie crust. Make the crumb topping by combining all the topping ingredients in a large food processor, and pulse until it comes together into a coarse crumb. Sprinkle over the apple mixture. Bake in the preheated oven for 40 minutes, until golden brown.

… If you’ve never made a homemade pie crust, there’s no shame in using storebought. I have used store-bought refrigerated pie crust many times and find it yields great results. If you have a favorite go-to pie crust recipe, I would double the recipe for a slab pie. For the filling, avoid the temptation to overfill the pie crust to avoid spilling on the transfer to the oven and while baking. LET’S TALK ABOUT THE PERFECT CRUST-TO-FILLING RATIO.
The perfect crust-to-filling ratio is all personal preference. Slab pies have a high crust-to-filling ratio, meaning the filling is much thinner, and, for people who love crust, that is definitely a good thing. For people who love filling, I would suggest making a slab pie recipe with a fruit or no-bake filling, which can be piled a little bit higher than custard fillings. ON THE FENCE, placed first in
the wildlife and nature category of the Focus on Maple Grove photo contest. Rod Smoliak took the photo on a baseball field at Cedar Island Elementary. “I had been going to this area quite frequently as there was an osprey nest that had recently hatched three little ones,” he says. “... they spend most of the summer there before migrating in late summer. As I was taking pictures of the new family, I heard a little chirp behind me. I turned

around and saw this bird sitting on the fence.” The photo of the American goldfinch, which are common in Minnesota, was captured with a Sony a7r4 camera. “Photographing small birds takes a lot of patience, since [they] normally don’t stay in one spot long,” Smoliak says. “Usually, by the time you locate them with the camera and then focus, they take off. In this case, it apparently was quite comfortable there and stayed for a minute.” MG
