THE NEIGHBORHOOD TAKES NOTICE A story of discovery. The Love Story of Missy Carmichael by Beth Morrey introduces 79-year-old Millicent “Missy” Carmichael in the midst of her post-Christmas blues. Her son, Alistair, has returned to his home in Australia with Missy’s grandson, Arthur. Missy must find meaning in the drear of London, alone in her big home without her beloved husband, Leo, a well-known historical novelist. Through a series of accidents, Missy begins to meet people in her community. Most notably, she meets, the loud and opinionated Angela, an Irish freelance journalist, and Angela’s delightful young son, Otis. Angela brings a dog named Bob into Missy’s life and home. Of course, Bob is a female. As Missy makes new friendships and her universe expands, she examines her personal history. How she survived World War II, but her father did not, and how she met Leo. Morrey’s writing is honest and humorous about a worthy character that has been noticed by her neighborhood. Readers will take note of her as well.

Nonprofit exec asks, “What can we do for others?” Ukasha Dakane has been an Edina resident for seven years. He is an extrovert whose interest in connecting led him on a journey from helping other East African immigrants forge a path in a new culture to a stop at the 2019 National Prayer Breakfast at the White House and a run for Edina City Council in 2020. Dakane founded and is executive director of the Fortune Relief and Youth Empowerment Organization (FRAYEO) that has helped countless immigrant youth find employment and housing as well as how to deal with conflict and manage anger. He’s mentored 115 local youth to be community ambassadors. The work earned him a 2018 Connecting with Kids Leadership Award. Dakane sees a world that needs hope, togetherness and shared values. His experience meeting leaders from around the world have galvanized his enthusiasm for teamwork. He’s also interested in Edina’s climate action plan and joined Edina’s Energy & Environment Commission, and later decided to run for city council in order to help bring a diverse voice to local government and to give back to the community he calls home. Despite not getting elected to city council, Dakane has no regrets about running for office. He loved every minute of connecting with Edina residents and says his next step is creating Iskaashi Talks, a collaborative effort to do what he loves most, bringing people and communities together in conversation. Dakane’s outlook on life can likely be summed up in one of his favorite Dr. Martin Luther King Jr. quotes, “Life’s most persistent and urgent question is ‘What are you doing for others?’”

»»1 lb. spaghetti noodles »»1 egg »»2 1/2 cups shredded mozzarella cheese divided use »»1/2 cup Parmesan cheese »»1 tsp. dried basil »»1 tsp. dried oregano »»1 tsp. dried rosemary »»1/2 tsp. garlic powder »»1 tsp. salt »»24 oz. marinara »»14 oz. diced tomatoes »»22 oz. frozen meatballs
Directions: 1. Preheat the oven to 350 degrees. 2. Boil the spaghetti noodles to al dente. Once cooked, rinse with cold water. 3. In a medium bowl, mix together the egg, Parmesan cheese, 1/2 cup mozzarella cheese, basil, oregano, rosemary, garlic powder and salt. 4. In a large bowl, stir together the noodles with the egg/cheese mixture and then place into a greased 9x13” baking dish. 5. In a medium bowl, stir together the marinara and diced tomatoes. 6. Evenly distribute meatballs on top of spaghetti noodles. 7. Top with marinara/tomato mixture, and then sprinkle with remaining mozzarella cheese. 8. Bake in preheated oven for 30 minutes, until cheese is melted and golden brown.

Spaghetti night is always a favorite in our house and my kids especially love it when I add meatballs. This spaghetti and meatball casserole uses frozen meatballs which make the whole dish incredibly fast and easy to make. This dish can also be made ahead of time, so when it comes time for dinner all you have to do is pop it in the oven!

of The Holistic Guide to Decluttering, Michele Vig is committed to creating and developing decluttering and organizational strategies for your home, time and mind. “We help people create systems so that they can live their lives more simplified,” Vig says. Certified in the KonMari Method, a Japanese decluttering expert of Marie Kondo’s system for organizing spaces, Vig guides clients through effective methods of decluttering. Doing more than organizing, she works to uncover what is challenging them in their day-today lives. “My goal is to help [clients] get the ultimate thing that they are looking for which is peace in their soul and happiness,” Vig says. Prior to COVID-19 people were always on-the-go which caused a cluster in their physical spaces. With work and school switching to virtual alternatives, more time at home has fostered a new distractions and disorganization that leads to increased stress. “There are times in our lives when we feel stuck and I think it is because we don’t realize that we have over-burdened ourselves with so much stuff and we just need to purge,” Rolling Green resident and Neat Little Nest client Brenda Barr says. “Anyone that does that feels a sense of freedom and movement in your home more than ever before.” Drawn to Neat Little Nest for its attention to detail, enthusiasm toward the work and effective solutions, Barr says, “[Vig] does simple things that make it extraordinary.” From first glance, Vig says Barr’s living space wasn’t necessarily cluttered. Killing It with Kindness Local gym builds its brand on being welcoming. BY ANGELA JOHNSON
YOU MAY KNOW DREW COLEMAN FROM AROUND TOWN as a realtor with
Fox Homes. Coleman also owns Skybox Gym in neighboring St. Louis Park. Coleman’s trajectory toward the world of fitness has been in motion most of his life. He comes from a sports-minded family. His dad played college football for the University of Illinois and his brother played for the University of WisconsinMadison. Coleman was a high school varsity athlete in football and wrestling. He put competitive sports aside to study

business at Arizona State University and pursue a career. But, when approaching 30 years old, he realized how much he missed the benefits of routine fitness. “I got really serious about [fitness],” says Coleman who studied up on personal training and managed to get himself into incredible shape. People wanted to know his secrets and began asking him to be their trainer. And since success often involves some combination of luck and timing, as luck would have it, the universe’s timing meant that just as
Coleman was tiring of his then job as an event planner, his friend, an endurance athlete, was tiring of owning a gym. First, she hired Coleman. They gelled quickly and she gladly handed the daily operations over so she could take a vacation. It was quickly noticed how Coleman shined in his role at the gym, making it a no-brainer to eventually sell the business to him. Coleman hired a general manager and opened a St. Paul location. The business now includes four coaches and the development of a mobile app.

Skybox Gym promotes a hybrid style of training that includes weight lifting and explosive plyometric elements like jumping or throwing balls to get your heart rate up. “We use that same physiology from playing sports,” says Coleman. “Yes, we think you should get stronger, but we stop way short of what a Crossfit [workout] would be … It’s far more exciting than running on a treadmill and what’s really cool is that the workouts are different every day so you don’t get bored with it.” He says Skybox is everyone’s gym, adding, “We stress you are going to do this at your own pace … just push yourself to do a little better than yesterday.” That approach has led to increased interest from all people groups—women and men from every lifestyle and background. The pandemic has been tough on gym owners and Coleman says the Skybox brand is all about kindness and being welcoming, bringing friends and giving high fives. Some things changed, but people kept coming, making it clear that people still crave connection and opportunities to stay fit. Workout areas are spaced apart with one-way traffic flow and lots of available hand sanitizer. Those not comfortable with in-person workouts can participate via a virtual modality and Coleman says new people have discovered Skybox through these online connections. Coleman noted that Skybox has a garage door that is kept open during workouts when weather permits. He believes being able to throw that garage door open again in the spring might be a symbol of having weathered the COVID storm. Whether inspired by nostalgia or the need to mix your own drinks (a global pandemic having made at-home cocktail hour more popular at the time of this writing), it’s clear: The bar cart is back. Bar carts can be used for entertaining or simply as elegant home décor, adding a dash of glitz and glamour into your space. Stock your classy, glassy bar cart with these essentials.
COCKTAILS AND MIXERS
A selection of versatile liquors is the key to pleasing every palate. Whether top shelf or the basics, every bar cart should have vodka, gin, rum, tequila, whiskey and scotch (FYI: All scotch is whiskey, but not all whiskey is scotch). The secret language of mixology may be a tricky one, but there are some basic and necessary tools for every bar cart tender. • Boston shaker: Seen in most bars, a Boston shaker uses a large glass and metal tumbler to shake the ice with cocktail ingredients, fully mixing the cocktail and deeply chilling the drink with the ice. Locals create space for conversations about shared values.

Fartun Ismail has lived in Edina for seven years and is the founder of the Somali American Women Action Center (SAWAC). She was raised by a single mother. Her grandmother was the bread winner in the family’s homeland of Somalia and taught Ismail the importance of women’s independence. This, and other shared values, have encouraged Ismail to connect with other community members in Edina to share perspectives through ongoing informal conversations in a group called Iskaashi Talks. “Iskaashi means collaboration,” says Ukasha Dakane, a member of
Edina’s east African community and founder of Fortune Relief and Youth Empowerment Organization (FRAYEO). Dakane has participated on Edina’s energy and environment commission and recently ran for public office. It was while serving on the energy and environment commission that Dakane met Michelle Horan and Melissa Seely of Edina. Horan and Seely have known each other for many years. They are passionate about sustainability and helped launch the organics recycling program in Edina Public Schools. It was a conversation at the commission about intersectional
topics related to sustainability and social justice that prompted Dakane, Horan and Seely to launch Iskaashi Talks, a gathering for anyone interested in the environment and community building. The group’s first meeting was last August at Centennial Lakes Park. Dakane invited Ismail and other Somali women from Ismail’s SAWAC sewing group. “My grandmother was a great sewer,” Ismail says. “She used to sew tote bags and sell them to feed her family. She taught other women to do this. I saw her do it and when I moved here, I came up with the idea to challenge

people to not use plastic bags in our homes.” Since 2018 volunteers with SAWAC have been teaching local women, who were once refugees, how to become economically independent while also acting on climate issues. In Somalia, “we’ve seen livestock animals eating [discarded] plastic bags and that is not good,” says Ismail who wants others to know that educating people about sustainability issues truly is a global concern. Dakane points out that environmental injustices tend to disproportionally affect vulnerable communities. During an Iskaashi Talks conversation Horan and Seely heard personal stories of refugees who’ve lost their homes and who see the possibility of others losing their homes due to environmental calamities. Horan says, “[SAWAC] decided to tackle the idea by making reusable bags and selling them. It’s amazing.” (Prior to the pandemic, the SAWAC tote bags were available for sale at the Minnesota Institute of Arts, Minnesota History Center and at pop-up shops outside Jerry’s Foods. The group has also provided income for women out of work due to the pandemic by having them sew over 5,000 face masks from home.) Dakane says, “I liked the tote bags and [the sewers] moti-

People like Horan, Seely and others who want to get to know the perspectives of local residents who don’t necessarily look like them or share similar life experiences but do share similar values. A group like Iskaashi Talks is a great way to overcome barriers and to connect. During the pandemic, Iskaashi Talks moved online. A follow-up to the Centennial Lakes meeting included a screening of a film about plastic bags followed by a Zoom discussion. Seely says, “The goal is just to bring a diverse group of voices together to chat about environmentalism and sustainability, topics that don’t belong to any one people group.”

This Scandinavian style home prioritizes life’s simple pleasures.
There may be no better time in history to own a home that makes daily life feel like being on vacation. This Scandinavian style, chaletlike house nestled into a treed lot in Edina lets homeowners Brian Patty and Janet Skalicky enjoy the beauty of nature and the simplicity of thoughtfully selected amenities. Every detail from the position of the house on the lot to the pitch of the roof were specifically designed to give the couple a home well suited to their stage of life and their appreciation of the environment. Woman-owned City Homes built this beauty after over a year of owner Rebecca Remick trying to figure out how to build a cool and different house at a price point that people can afford without sacrificing the high

standards of a premium build. Talk about a win-win. Here’s how it all came together … Patty and Skalicky felt their previous home was too big after their grown children graduated from college. “I didn’t want to clean rooms we don’t use,” says Skalicky who also wanted to do something different. She found a photo online of a Scandinavian style bed and breakfast in Canada. This would be the inspiration for their new home. She showed the photo to Remick and was astonished to learn she had the same photograph saved as a potential muse. “All of my efforts on right-sizing is about not wasting space,” says Remick. This build would be about allocating space to where it can be best appreciated once the kids are gone. The design and aesthetic

are nature based with floor to ceiling windows in the living area in order to invite nature in. The homeowners also worked extensively with the builder to position the house in order to save as many existing trees as possible. A huge bur oak stands just outside those giant windows. Patty says they

love seeing the woodpeckers, nuthatches, chickadees, squirrels and chipmunks all enjoying the existing landscape. They were afraid the visiting turkeys they saw during the build might not return once a backyard cedar fence was installed. Thankfully, the turkeys just fly over the fence to continue their entertaining
trots across the couple’s yard. The couple’s two Italian greyhounds also enjoy the view. The pair of pups are often snuggled on their dog bed near the window entranced by the wildlife on the other side of the glass. The front entry, garage entry mud room and fireplace base along with the main
floor powder room and two upstairs bathrooms all have grey slate tile flooring. The rest of the house has ash wood plank flooring sanded smooth; the consistency of materials throughout provides a calming effect. Plus, this house was all about going back to nature, making a crackling fire that much more appealing. They partnered with Acucraft Fireplaces in Big Lake, Minn. to complete the modern Scandinavian fireplace design. The open floor plan includes dining for 8-10 guests and a kitchen featuring a large granite-topped island with marble counters and backsplash outlining the rest of the plain white cabinetry. Lighting was chosen specifically so as not to obscure the eyeline to the outdoors. A screen porch expands the home’s living space toward the backyard. there are standard screens and a single door to the outside. Deciding against a huge opening or movable screens was a cost savings that fit the homeowners’ needs. Remick says the gas fireplace in the screen porch adds interest without the need for anything more

elaborate. The same can be said for the backyard lap pool which is a simple pleasure and space for exercise devoid of any fancy add-ons. It’s the natural landscape of this property, recently a certified as a Wildlife Habitat® by the National Wildlife Federation, that provides the
real visual interest. Patty’s mother and grandmother were avid gardeners and he has followed along that garden path. “Every place I’ve lived, I’ve done a lot of trial and error gardening,” says Patty. “I started to pay more attention to what grows best in my landscape
and discovered what survives is native.” Patty worked tirelessly to plant a variety of native shrubs, perennials and grasses. He included chokeberry, dogwood and serviceberry. He also planted a lot of milkweed, cone flower and liatrus. He says, “Prairie Moon Nursery [in Winona,

Patty says it made perfect sense to plant on the flat garage roof since it would provide a better view and he’s a big fan of as much greenery as possible. “Bachman’s has this great solution that comes in trays,” says Patty. “You just order the trays and the plants come fully potted. You just lay them down and they are self-sustaining, require little maintenance and help decrease runoff because they absorb a lot of water.” When asked what they love most about their new home, Skalicky says, “I love everything. Cake gets all the glory—candlelit entrances at birthdays and tiered seating at weddings, and all eyes are on her first slice at a host of gender reveal parties. But, have you ever heard of a savory cake? I think not! Pie can flex her ingredient muscles into sweet and savory recipes. More bakers and cooks are appreciating the nuances of pie by elevating traditional slab pie recipes. Made in (mostly) a 9x13-inch rimmed pan or larger jelly roll pan, these lovelies are great for serving a crowd or adding to a buffet lineup. Diners can cut the entrée or dessert any way they like, including into squares, or they can just grab a serving spoon and dig right in. For a delicious take on sweet and savory slab pies, we turned to Taylor Ellingson of Greens & Chocolate— “where” the website notes, “healthy cooking meets sinful indulgence.” Edina Magazine: On what occasion does it make sense to serve slab pie? Taylor Ellingson: I think slab pies are perfect for serving to a larger crowd. While a pie will serve around eight people, a slab pie makes around 16 servings. TE: Slab pies are, generally, not as thick/ deep as circular pies, which will affect cooking time. The thinner filling will require less baking time than a deeper circular pie. To adjust to the decreased baking time due to the shorter height of filling, when you are baking a slab pie with a liquid or custard filling, you will have best results if you parbake the crust prior to adding the filling. TE: … If you’ve never made a homemade pie crust, there’s no shame in using storebought. I have used store-bought refrigerated pie crust many times and find it yields great results. If you have a favorite go-to pie crust recipe, I would double the recipe for a slab pie. For the filling, avoid the temptation to overfill the pie crust to avoid spilling on the transfer to the oven and while baking. EM: Let’s talk about the perfect crust-to-filling ratio. TE: The perfect crust-to-filling ratio is all personal preference. Slab pies have a high crust-to-filling ratio, meaning the filling is much thinner, and, for people who love

crust, that is definitely a good thing. For people who love filling, I would suggest making a slab pie recipe with a fruit or nobake filling, which can be piled a little bit higher than custard fillings. EM: What about go-to ingredient brands? TE: … For butter, Land O’Lakes is my go-to butter for all baking. HAM, EGG AND CHEESE SLAB PIE Serves: 12
• 2 refrigerated pie crusts or homemade pie crust • 8 eggs • 1 ½ cups milk

Preheat the oven to 425 degrees F. Grease a 15x10-inch jelly roll pan with cooking spray. Stack pie crusts on top of each other, and roll them out into a large triangle, about 18x10 inches. Press the crust into greased jelly roll pan, pressing it up the sides of the pan to form edges. Bake in the preheated oven for 10 minutes. Reduce the oven temperature to 375 degrees F. Meanwhile, make the filling. In a large bowl, whisk together the eggs, milk, mustard and salt until well combined. Once the pie crust has parbaked, sprinkle the diced ham, green onions and shredded cheese evenly over the crust. Pour the egg mixture over the ham and cheese. Bake for 25-30 minutes, until the egg is set and the top is golden brown. Cut into squares, and serve.

This month, we asked Barbara Lund to tell us about his photograph titled Shannon Pond on Easter. Lund says, “Shannon Pond is at the south end of Coventry Way, backed up by Long Break Trail. Inspiration for the photo came first and foremost, from the sheer wintry beauty of the lacy snow on the branches of a willow tree. Secondly, the wintry surprise of a snowfall blanketing the ice and the shoreline timber is quite stunning on an April Easter morning.

So, instead of choosing your best Easter attire for church and a family gathering … you find yourself wondering which snow boots to wear. One feels annoyance that winter refuses to leave, but at the same time, the stillness of the snow cover accentuates the quiet beauty of Shannon Pond’s landscape. It’s a rare day that I don’t take a photo, often to the dismay of my family members who have suffered from my learning and experimentation over the decades. I sent my photo to Edina Magazine because I have admired other images there, and when you get excited about an image you’ve shot, it’s a pleasure to be able to share it.”
