medium. Unlike other types of art, however, food plays to all of the senses—sound, texture, aroma and, most uniquely, flavor. As art director for At Home with Kowalski’s, I spend a lot of time thinking about how to make food beautiful, but my interest in making food look as good as it tastes extends beyond my job. In the same way I think about what shade of lipstick might complete my look, I also consider the last touches on the meals I make. Even the most rushed family fare always gets these three final considerations:

I start with deciding on a serving dish. Food can look very different depending on the size, shape and color of the dish on which it’s served. I tend to favor white plates with no pattern and choose a “canvas” that will allow for the composition I’m looking for; it’s never good for food to look crowded, but neither do I want to see more of my plate than my meal. Next, I select a garnish or two, even something as simple as a bit of lemon zest, finishing salt or a sprig of cilantro can turn dinner into dining. Garnishes can provide visual interest but also textural or temperature contrasts, which can heighten the overall experience of a dish.

Finally, just as I don’t leave the house before checking to see if my mascara has migrated, I don’t serve supper without checking for spills and always wipe any splatters or drips from the edges of a plate before taking it to the table. Sure, there are the usual perks involved in a traditional shave or haircut experience. I got rid of the problems I’ve had my whole life.’” Before COVID-19 struck, McCastle had planned to take his expertise to educational events at the University of Minnesota and local high schools, but the virus has limited him to offering oneon-one consultations for the time being. “I teach people exactly what their skin type is, so they can shave properly,” he says, explaining that individual shaving techniques are determined by types of hair follicles. “The best way to shave someone or to shave yourself is with the grain first—in the direction of growth of your hair,” McCastle says. After that, the next step is determined by hair follicle. If your hair is straight or only slightly curly, your second pass can be against the grain. But, McCastle cautions, if your hair is curly, it’s best to go with the grain twice to avoid irritation. For those who want to grow their facial hair, McCastle shares a few thoughts on Instagram, “What’s the point in having a great beard if you can’t maintain it?” And for those who join the beard club during No-Shave November (or anytime), “Don’t just grow a beard ... make it epic this beard season,” he says.

Brick by Brick Paint expert provides tips for homeowners.

AT THIS STAGE OF THE PANDEMIC, a fair amount of homeowners have given the interiors of their homes a glow-up, a redo, a transformation—call it what you will. But all that effort begs the question—now what? Head outside, take a few steps back, and give a long, hard look at your home’s exterior. Even brick facades and fireplace chimneys can get in line for a makeover. Before you pop the paint can or hire a painting crew, Jon Nelson, store manager of Hirshfield’s in Wayzata, provides some

20

valuable insight into painting brick. To start, the brick should be properly cleaned. “A scrub brush, hot soapy water or possibly a ‘no-rinse’ cleaner will help you thoroughly clean the surface,” Nelson says. “It is important to let the brick fully dry after this before continuing with the project.” Now, it’s time paint. “The first coat when painting brick should always be a primer,” Nelson says. “This will help your topcoat seal and bond properly.” He recommends using a 100 percent

acrylic masonry primer and allowing it to completely dry before applying two coats of a latex topcoat. Nelson recommends Housecoat, which comes in flat and low luster sheens and can be tinted any desired color. The Brick Industry Association (BIA) weighs in, noting that paint used on brick masonry walls should be “durable, easy to apply and have good adhesive characteristics. It should be porous if applied on exterior masonry, thereby permitting the wall to breathe and preventing the trapping of

free moisture behind the paint film.” Nelson says paint is best applied on brick with a heavier nap roller if spraying the brick is not an option. “If the brick has already been painted, I would still recommend following the above procedure even if it seems to be in good repair,” he says. “If done correctly, painted brick will last just as long as other painted surfaces.” And these recommendations can be used for chimneys, as well. The BIA also has recommendations when it comes to new masonry. “As a general rule, new clay masonry is seldom painted. It is difficult to justify the extra expenditure for initial and future painting,” it notes. “However, if for any reason painting new masonry is desired, there are a few precautions necessary for reasonable success. Do not wash new clay masonry walls with acid cleaning solutions. Acid reactions can result in paint failures. Use alkali-resistant paints.” (This might be the time to connect with a painting professional or contractor.) If homeowners decided to go the painted brick route, the paint color should fall within the color scheme of the rest of the home’s exterior. Consider the colors of the window and door trims, flashing, gutters and even the roof. There are, however, a few popular colors that Nelson highlights, including a dark gray like Benjamin Moore’s Iron Mountain (213430) or a bright white called Chantilly Lace (OC-65). What’s the upshot of painting exterior brick? “Painting your brick can be a great way to modernize the look of your home,” Nelson says. “That being said, exposed brick is still an extremely appealing look.”

The seed for Amerigo’s interest in the Miss America Organization was planted during the summer of her senior year of high school. A competitive dancer since the age of 5, she had just completed summer nationals, where she won the dance title, and was on her way home from Florida when one of her mother’s friends mentioned the Miss America Organization. Amerigo had been so involved with competition dance programs that she didn’t have time in her schedule to invest in new projects. “But, now that I had this opening, I was hungry for a new adventure and something new that would inspire me,” she says. Although she had a background in competitive performance, Amerigo didn’t know what to expect going into her first competition in Purim, Minn. “I went into it pretty blindly,” she says. “But within the first five minutes, I met some of the girls that were there, and I knew I was in good hands. They were so amazing.” Amerigo walked out of that competition with a crown and an open title: Miss Heart of the Lakes. Unlike a Miss America candidate titled to serve in a specific area (Miss Purim serves the Purim community, for example) open titles allow their holder to serve anywhere throughout Minnesota. More of an emphasis on service is part of Miss America, which underwent

a 2019 retooling to shift focus away from physical appearance (swimsuit competition was removed) and toward empowerment and community impact. Each candidate champions her own Social Impact Initiative, which she presents as part of the competition. Amerigo’s initiative, One Bottle, One Straw, One Bag, At A Time, was inspired by that senior year trip to Florida. “All of the beaches I went to were messy, and there was plastic everywhere,” Amerigo says. “We all bring something different to our social impact initiative. For me, I speak on reducing the amount of plastic in our oceans, lakes and rivers.” Over the spring and summer, the Miss America Organization held a Service-A-Thon, with each contestant dedicating a minimum of five hours of her time. “I probably ended up doing 50,” Amerigo says with a laugh. Over the summer, she also visited beaches and parks to create a clean-up guide, with an accompanying video. Overall, Amerigo finds the revamped version of Miss America much more inclusive and empowering as a competition. “When I saw that the competition was changing for the better and conforming to what our world needs, it was really inspiring,” she says.

Why Flying is Too Stressful for Our Family After I married my husband and we had four wonderful kids together, we figured flying would be a bit more complicated but still manageable with a bit of forethought. But when three of our children were diagnosed with ASD, we quickly realized we would have to adapt our vacation plans to be more accessible. Kids with ASD can quickly get overwhelmed in unfamiliar spaces, and I knew the long TSA lines, loud airport noises and cramped airplane seats would make flying an anxiety-ridden nightmare for them and for me. We did try flying with the kids a couple times. But the stress they picked up on the flight meant it took a few days before they began enjoying our vacation, and by then, it was nearly time to get back on the plane and head home. Still, despite all the complications, I was determined my children would see and travel the world, and that we would share the journey joyfully. I was determined to pass my love for travel on to my kids.

Bunyan in his virtual classroom this year. Being from Texas, I knew all the tall tales about Pecos Bill, but not so much about Minnesota’s legendary lumberjack. And with widespread vaccinations just around the corner, we’re planning a summer vacation so my children can meet Paul—and his sidekick, Babe the Blue Ox—for themselves. First, we’ll set up for a few days at one of the RV campgrounds near Bemidji in northwest Minnesota to see the giant statues of Paul and Babe overlooking the lake. Once we’re done there, we’ll swing down to Brainerd to visit Paul Bunyan Land—a combination Bunyan-themed amusement park, petting zoo, pioneer village and campground. I can’t wait to get some pictures of my kids posed under the giant statues—I can almost see my Christmas card photo already!

TO U RS Of course, we won’t stop with just Paul Bunyan trips. We’re also excited to take an overnight at Taylors Falls to walk the trails and check out the St. Croix River, and to drive down to Wabasha to look for eagles soaring over the Mississippi. I’m also excited for the kids to spend some time on the North

Shore, where we’ll stick a toe into Lake Superior while we look for agates. They can’t wait to see Gooseberry Falls and tour Split Rock Lighthouse. My anxiety about these activities is low because I know we can always pop into the RV for a nap, a book, a snack or to just chill if the trip suddenly feels overwhelming.

RV trips have opened the world to my kids and given them a major confidence boost. My heart bursts with pride watching them experience the joys of travel. They get to see the world through new eyes, broaden their horizons and soak up the knowledge other cultures can teach. And I’m right there with them.

Backyard camping is a timeless outdoor experience, but it can come at a cost—time, spent figuring out meals, pitching the tent, blowing up air mattress and everything else that goes along with prepping for a night or two under the stars. Luckily, Pitched Mpls. brings glitzy and glamorous

camping experiences right to your backyard and home. Kenny Young, a transplant from southern California, made the trek to Minnesota to attend North Central University, where he met his wife, Autumn. In 2019, Young, deciding to take time away from his career in ballet, was thinking about starting his own business, so he could spend more time with Autumn and their two children. “I kept asking myself, ‘What kind of business?’” Young says. “I’m an Enneagram [a system that describes human personality]

eight, so I’m fueled by mission and purpose … I was thinking, ‘How can I get families together? How can I make quality time easy, accessible and different?’” Drawing from his personal background, as well as his love of nature, Young decided to bring backyard camping to people’s homes—with a twist. “In the development stage, my wife and I thought, ‘Anyone could have a Coleman tent’ … What if we took it to the next level?” he says. Young officially formulated Pitched Mpls., on March 7, 2020— just six days before the first COVID shutdown. “We deliver the complete glamping experience to backyards,” Young says. Each experience is complete with a weather-proof canvas tent and comfort items, such as rugs, chairs and a memory foam bed. There are also add-on items, including an in-tent movie theatre—popular for a movie night under the stars, according to Young—or a picnic table with floor pillow seating. Though Young did not rent out any tents until April 2020, he says the business gained speed from that point. “In April, we rented one tent. May had two tents. June had three tents. July had four tents,” he says. “Every weekend, we were booked. I had to create a waitlist.” For Wayzata residents Ryan and Kristin Rivard, date night does not come easy. “We have four kids … Which makes it difficult to get away long enough for a simple conversation, much less dinner and a movie,” Kristin says.

So, Ryan called Young at Pitched Mpls., and Kristin called in the grandparents to babysit. Since Young sets everything up, from the tent to the movie screen and projector, the Rivards could enjoy an evening without having to lift a finger. “We got take-out, talked and enjoyed an old classic film like we did in our pre-kid days,” Kristin says. “Except, this time, our tent had some pretty rad accommodations, unlike the camping we did in our 20s on a bed of sticks and rocks.” Kristin adds, “The best part was we literally didn’t have to do anything … So dreamy!” Kelly Gigerich of Wayzata hired Pitched Mpls. for a unique experience for her daughter. “I love the idea of camping in the backyard, but I never want to set

it all up,” Gigerich says. “Pitched does all the work and creates a boho glamping experience. My girls and all her friends loved it!” While the Pitched backyard glamping experience was a hit, it was not conducive for colder weather. “In theory, you could sleep in these tents when it’s zero degrees outside,” Young says. “But we thought, ‘What if we brought a tent experience inside?’” Young and his team decided to focus on bringing the camping experience to kids and developed the Pitched Tiny Tents experience. Clients can choose to have two to six tents, all of which come with a memory foam twin bed, linens, themed décor, pillows, string lighting and a bedside table. The experience also includes a Pitched mug, North Mallow

cocoa and an eye mask for keeping, plus a customizable letter board for the event. There are also add-ons, including an instant print camera and film or the popular in-tent theater. “It’s much more for sleepovers, birthday parties or fun things with grandma,” Young says. Though Young started the business with only Autumn and four tents, Pitched has grown into a team dedicated to providing backyard or in-home events and includes a Tiny Tents coordinator, part-time employees and seven tents—though Young plans to increase his tent inventory in order to decrease the need for waitlists. “Through this business, I’m able to serve people,” Young says. “It has been a really cool and fulfilling experience. It keeps me motivated every day.”

The Fab Tap serves up bubbly, flowers and fun. Do what you love. This expression has been key to many people’s success, and Lindsey Pattee took it to heart when creating The Fab Tap. With a desire to share her favorite things with others, Pattee explains that her interests serve as the backbone of her business. “I always

kept going back to the three things that brought me joy—connection, flowers and a bit of bubbly,” she says. “There are a number of people out there that are celebrating every single day, and we want to be a part of any celebration— large or small,” Pattee says about getting

the wheels rolling on her business this past winter. The Fab Tap, which comes by way of a silver 1970s Caravel Land Yacht Airstream RV Trailer, is a customizable experience tap trailer that clients can rent by the hour to host events without the hassle of set up or clean up.

Supporting businesses such as Amy’s Cupcake Shoppe, Larissa Loden Jewelry and Thirsty Whale Bakery, she is able to amplify their businesses in the community while simultaneously enhancing The Fab Tap clients’ experiences with featured products. (At the time of this writing, Pattee was poised to announce a partnership with Kendra Scott for a customizable jewelry option.) With hopes of collaborating with more businesses in the future, Pattee says the relationships developed with other creatives are the best part of owning her own business. “That is the beauty of it,” she says. “There are so many talented women out there, and I have met a lot of amazing people.”

tions, these furry friends need attentive training and handling to help them adjust to their new home. Minnetonka Community Education (MCE) has you covered on new pooch care through classes for entrylevel training or children and pup relationships. MCE offers three summer options for its introduction to dog obedience. Held at Excelsior Elementary School on Tuesday evenings, one six-week session begins at 7:30 p.m. on June 8, and two more begin on at 6:15 p.m. and 7:30 p.m. on June 27. The hour-long classes offer seasoned and new owners alike the chance to help their dog learn self-calming behaviors,

social manners and basic commands. For families with children, the center is also hosting two six-week courses, focusing on building children’s handling skills and strengthening child-pet relationships. These courses will begin at Excelsior Elementary on June 8 and June 29, respectively, and will repeat on Tuesdays from 6:15–7:15 p.m. Course topics include appropriate play for dogs and kids, how to read dog body language and basic pup tricks. Any time of year is snack season for kids, but summertime can pose a bit of a conundrum when it comes to serving healthy nibbles. With school (officially) out, life is supposed to switch to vacation mode, but we all know that isn’t always the way it rolls. Loads of kids are off to day camps or athletic training sessions. Recreation

and travel sport teams ramp up their schedules. Child care centers brim with attendance, and community education offers a wide variety of programs from art to Zumba (so hard to choose!). The clock is ticking for kids to get here and there, but there has to be enough time to offer them a healthy snack to fuel their endeavors—from here to there.

Deephaven’s Kate Doubler understands the importance of proper nutrition even when it comes to snacks. In 2013, she launched realfoodrn.com as a hobby to share healthy recipes. “I never knew it would become my future career path,” she says. The site strives “to help people live a healthier life through education and awareness around: good nutrition, toxin-free living, detoxification and many other aspects that bring balance to life,” Doubler says. To understand Doubler’s passion, let’s start from the beginning. “I went into nursing in the pursuit of helping people get healthy, but I found that much of what I did at the hospital was Band-Aid medicine,” says the registered nurse. “It was not making people well, so I went

• 1/2 cup raw honey • 1 Tbsp. ground cinnamon • 1 tsp. organic vanilla extract

HEALTHY FUDGE POPS

[These are] super easy to make and loaded with nutrients. Your kids will have no idea these are not ... from the store. • 2 avocados • 1 banana • 1/2 cup raw honey • 1/4 cup cocoa powder • 2 Tbsp. coconut oil • pinch of sea salt

Put all the ingredients into a food processor, and process until smooth and creamy. Pour mixture into frozen treat molds. Freeze until solid.

GRANOLA CLUSTERS

Make big batches of this and freeze half. I like to divide it up into individual graband-go bags ... for when we are on the go.

• 1 tsp. fine sea salt

Preheat oven to 300°F. Rough chop the almonds in a food processor. Add cashews, walnuts and pumpkin seeds. Pulse until all ingredients are roughly chopped. Add the mixture to a medium bowl with remaining ingredients, and stir well. Spread mixture on a Silpat baking sheet. Bake for 10 minutes. Remove baking sheet from the oven, stir the granola, and return to oven for 10 minutes. Allow to cool for at least 10 minutes and break into kid-sized clusters. Store clusters in an airtight container for up to two weeks.

HOMEMADE GELATIN CUPS

We juice fresh fruit to make these gelatin cups—full of vitamins, minerals and guthealing gelatin! • 1 cup fresh juice (fruits or vegetables) • ½ cup kombucha (adds probiotics)

• 1 cup raw almonds

• 1/3 cup cold water

• 1 cup raw cashews

• 1/3 cup hot water

• 1 cup raw walnuts

• 1 Tbsp. gelatin

• 1/2 cup raw pumpkin seeds

• fresh fruit (optional)

• 1/4 cup raw sunflower seeds • zest and juice from 1/2 medium orange

Juice fruits and/or vegetables. Pour fresh

juice and kombucha into a medium bowl. In a Mason jar, add cold water and gelatin, and stir until combined. Add hot water, and stir. Pour contents of the jar into the juice mixture. Stir and pour into individual gelatin cups. Add fresh fruit to the cups if you desire. Place in the refrigerator for at least one hour before serving.

CHEESE CRACKERS

Store bought cheese crackers are filled with not-so-great ingredients, so I made up a healthier version. (Get little goldfish cookie cutters, and make them into the kid favorite goldfish crackers.) • 1 cup all-purpose gluten-free flour • 1 cup shredded extrasharp cheddar cheese • 4 Tbsp. cold grass-fed butter, cut into pieces • 2 Tbsp. cold water • sea salt for sprinkling on top

Preheat the oven to 350°F. In a food processor, combine flour, cheese and butter. Pulse until mixture is crumbly but well combined. Add water, and process until a dough forms. Divide dough into two balls, and chill for 15 minutes or until firm (not longer than 30 minutes). Roll one ball out on a Silpat until about ¼-inch

www.generalstoreofminnetonka.com thick. Place Silpat (dough included) on a baking sheet. Using a pizza cutter, cut dough into small squares, and trim off uneven edges. Lightly sprinkle with salt. Poke little holes in the top of each square with a toothpick (to look like store crackers). Bake for 10–15 minutes (bubbly and slightly brown around the edges). Take out of the oven, and recut the crackers along the original cuts with a pizza cutter. Cool completely before breaking them apart. Repeat with the second dough ball. Store crackers in a plastic bag in the fridge for up to one week.

She didn’t need to look far for her photo subject—just her driveway—as Beadle-Reinitz used her Nikon D850 and a 50 mm lens to capture Patrick’s sweet face. He must have wandered over for a friendly chat, as he’s owned by a neighbor.

Patrick, a Chihuahua, who was 1 at the time of the photo, “is a little skittish at first, but once he knows you, he loves to get pets and love from you,” she says. It’s easy to want to take pictures of pets, but it’s not always easy to pull off the perfect photo. “The best tips I have for photographing animals and pets in general is to have a lot of patience, possibly a few of their favorite treats, and aim for their eyes,” Beadle-Reinitz says. “I truly believe the eyes are the windows to the soul.”
