The work primarily centers around prostate and testicular cancer as well as mental health and suicide prevention among men. Ready to “grow a Mo” this month? The rules are simple. Au gratin vs gratin dauphinoise: au
gratin includes slices of precooked potatoes cooked in cream and topped with cheese; dauphinoise includes slices of uncooked potatoes cooked in cream. (Don’t go the boxed route for au gratin potatoes; fresh is best, especially for the holidays.)
Braising: uses wet and dry heat with food sautéed or seared and finished in a covered pot in low temperature with a liquid. Crimped Crust
Brine: a salt solution, typically featuring
Compote vs chutney vs coulis: compote features fresh or dried fruit slowly cooked in a sugar syrup; chutney is a combination of fruit, vinegar, sugar and spices; and coulis is simply a fruit (or veggie) puree. Crimping: the technique of pleating or adding a ruffled edge to pie dough, along the upper edge of the pie plate. (It’s all the presentation, so mastering this is half the battle of making homemade crust.)

ADVENTURE AWAITS. For those at a loss of interesting things to see and do, or those who’d love to entertain out-of-town guests through nature, art, science, history and innovation, one local writer wants to help you experience a bit of the unexpected right here in the metro. Julie Jo Severson has written Secret Twin Cities: A Guide to the Weird, Wonderful, and Obscure. The book unlocks some of the most intriguing, entertaining and arcane attractions that will definitely broaden your knowledge of local trivia. For example, do you know which building a notorious gangster was once chained to a radiator? Or where there is a park hidden 120 feet below street level? Reedy Press sought a local writer to compile such a guide and now you have another great gift idea heading into the holiday season. Severson has a B.A. in English and Communications from College of St. Benedict where she was heavily involved with the campus newspaper. She says, “That
extracurricular experience had a huge impact on my career after graduation. Every job since, whether inhouse or freelance, has been somehow related to journalism and storytelling.” So, when the publisher reached out to Julie Burton, founder of Modernwell, a local co-working, writing and wellness studio in Minneapolis where Severson had been participating in the writing studio, Burton recommended Severson for the project. “Julie knows my skill set, interests and deep Minnesota roots enough to know this would be a project I’d pour myself into,” Severson says. Her research took her all over. She says, “I picked the brains of everyone and anyone, from neighbors and old college friends to archivists and bartenders. I devoured local books and websites and neighborhood newsletters and old clippings and information signs. And most importantly, I got out and about and rediscovered my hometown.” As for the style of this particular reference guide,

Severson says, “Right away, I decided that I wanted Secret Twin Cities to be not only a fun, quirky guidebook but also a keepsake that makes for an entertaining armchair read loaded with rich, relevant backstories and deep local ties. That was my compass as I made decisions about what to include.” She says the hardest part was trying to determine what most other people already knew. “My biggest fear was to have readers saying, ‘Oh, pffft, I already knew all this.’ I’m happy to report that so far, I’ve haven’t heard anybody say that.” The book was released in mid-March which unintentionally made it a great resource for outdoor social distancing types of outings. But now that temperatures are dipping, it gets trickier for Severson to make recommendations for indoor locations because news about reopenings have been frequently changing, and so her current recommendations error on the side of caution. “The Bell Museum on the [University of Minnesota] campus has taken a very measured approach to re-opening safely and with advanced reservations,” says Severson. She says, “the Bakken Museum located inside the West Winds mansion on Bde Maka Ska (formerly Lake Calhoun) is another cultural gem. They are in the midst of some renovations but are back open on a limited basis. I really enjoyed the Mary and Her Monster exhibit where you learn about what inspired Mary Shelley, the fascinating author of the novel Frankenstein." If you’re not comfortable going inside, early December through early March is the perfect time to head northwest a little bit to Monticello and visit Swan Park.

WHILE A STUDENT at Avail Academy’s K-8 campus in Edina, Julianna Velgersdyk placed among the top three at this year’s National History Day competition. She took home second place in the junior paper category with her paper titled “Weeks v. Southern Bell: Breaking Discriminatory Employment Barriers for Women in the Workforce.”
The competition features a different theme every year that students must focus their project around. This year’s theme was “Breaking Barriers.” Students get an opportunity to progress through a regional round, a state round and the final national round. This was Velgersdyk’s first year competing in the competition and she explains that her school hosts

a round and requires all students to participate. If students chose, they are offered an opportunity to move on to the regional round, which is what she chose to do. “I decided to advance with my project because they said I have potential if I made more edits and continued on with my research” “I really like court cases and the justice system,” Velgersdyk says. “I find that so fascinating, and I wanted to look at court cases and women’s rights.” As she researched her topic, her teacher sent her a link to a website on Lorena Weeks. “Lorena Weeks has kind of a sassy, spunky personality,” says Velgersdyk. “I immediately knew that was the [topic] I wanted to do.” Because Weeks is not a commonly known person, Velgersdyk had to intensify her sleuthing skills in order to find more information. “I really had to go deep into my research,” she says. Velgersdyk had more time to work on her project during online distance learning this past spring. She says, “I was done with school before lunch every single day, so I had the rest of the afternoon to work on my project.” This year, instead of having students attend a national event in Washington, D.C., organizers held the ceremony online. Velgersdyk says, “Virtually they made it work and they had some fun things.” Velgersdyk says the experience teaches a lot about how to research something and provides an opportunity to become an expert on a topic. “Being a kid, all these people are always teaching you stuff,” she says. “But now you get to show people what you’ve learned.” Her advice to students entering the History Day competition is to find a topic you truly care about so that it doesn’t become boring. She says, “Choose a topic that you’re really interested in and realize that you’re going to get frustrated sometimes, but you have to find what’s fun in it.”

Answering the Call Local volunteers stepped up to the door of someone in need.
Last year, Edina resident Kristen Karpinsky became a volunteer with Minnesota based nonprofit called Best Christmas Ever (BCE). The organization serves families who have fallen on tough times through no fault of their own by blessing them with the “best Christmas ever.” Karpinsky says it was a heart-warming experience. Her team captain was Julie James of Edina who agrees that it was a particularly moving experience. James has a long history of volunteerism in the community, and after years of saying “yes” to everything, she was in the midst of a season of rest when she first learned of BCE. “Lou Nanne Jr. is on the board. He posted the founding story [about Best Christmas Ever] video on his Facebook page and offered to meet with anyone considering being
a volunteer captain,” says James. “I thought [the organization] was awesome and that it aligns with my values, but I thought, ‘I can’t do it right now.’” But, two days later, James messaged Nanne because she couldn’t get the opportunity off her heart. She would also call her mother-in-law, someone she admires and trusts to ask for advice about the timing of getting involved. “She told me, ‘if it’s on your heart, you must answer that call and it will all be provided to you.’” James heeded that advice and you won’t believe what happened next … James says that as a volunteer captain, one of the first things you do is select a family to support from a list populated by nominations. “Right here in the Twin Cities, there were over 500 families nominated by people who know them very well. after story that rips your heart out,” she says. But one story in particular resonated with James. The couple were college sweethearts who married and had two young children. “They were doing life right, hard workers and really good people,” James says. “But then, one day last summer, the dad was sitting in traffic on I-494 and a semi-truck plowed into him and killed him on impact. This family had no warning and I just felt very pulled to pick this family.” The next step is to contact the family’s nominator and plan the surprise. “Thank goodness there is a captain’s packet that includes everything you need, including scripts of what to say when you call,” James says. “I’m not much of a crier and the script went something like ‘hello, my name is’ … and I maybe made it through my name before I was crying. Then we were both crying.” Once the pair overcame their emotion, they got to work developing a gift list for the family. James relates the experience to being an expectant mother who has an immediate bond with someone they haven’t met yet. “Never in my life have I loved strangers as much as I love that family,” she says. “There were four weeks between selecting this nominated family and delivering their gifts and I wanted to fulfil the whole list.” James reached out to community

She notes that part of the commitment is to raise $5,000 to help cover the nominated family’s financial needs and she wondered how she would raise the money. “I’m not connected. I’m not working. I was shaking in my boots wondering how we were going to raise the money,” says James. “But it wasn’t tough at all. We raised the money within three days and ended up raising over $12,000 for the family.” (Purchased gifts are delivered to nominated families at a surprise event but cash is not provided directly. It is placed in a fund used to pay bills or expenses. Financial and health and wellness related education is also offered as a way to provide ongoing support.) After a wrapping party at Davanni’s, it was time to surprise this mother and children with the best Christmas ever. James says, “When you walk up to that door as a volunteer captain, your heart is pounding and there are butterflies in your stomach.” It would be the beginning of what James calls an unbelievable connection with Trina Lawrence of Woodbury. Lawrence says, “At first I thought my friend had brought over carolers. Then, I saw just a few familiar faces in the crowd, like my parents and teachers from daycare … I felt immediately overwhelmed … I knew that Drew [her departed husband] was there and God brought this gift into my life for a reason.” “Trina calls me her life coach,” says James. “I’m not sure what I did to gain that title, but she tells me that when she calls me, things feel better.”

Lawrence says, “[James] has truly become a friend, source of support and inspiring presence in my life … BCE showed up at my door during a very dark time. James says, “This year, we are encouraging Amazon gift lists as a contact-less way to gather gifts,” but she is uncertain if teams can host wrapping parties this year. “My family may wrap all of the gifts for our team this year,” says James who is also thinking creatively about what the drop events might look like, especially for families that might have health concerns. “We will have adaptable plans,” she says, confident that volunteers who share the values of faith, hope and community will find a way.

DAN AROM DA N A RO M Edina native and athletic booster Dan Arom returned to his old stomping grounds in 2009 to coach his son’s team through the Edina Football Association (EFA). Through his involvement over the years he’s served as the treasurer, vice president and president of EFA and eventually joined the Edina
Athletic Booster Club in 2015 and has served as president. As someone whose parents immigranted from Thailand, Arom says that the Edina community has afforded him a great life which is why he chooses to be involved so that he can provide similar experiences for others. “I really enjoy the community and

I think it is an amazing place for all,” he says. “I am happy to give back and give others the opportunity, I think it is the best use of my time.” As one who credits his successes to his utter passion for football, he says that the award was unexpected. “I was super humbled,” Arom says. “To me it [his volunteering] was just something fun to do.” SA RA W E GMA N President of Her Next Play, Sara Wegman strives to empower young girls by providing them with the tools to confidently launch careers through the skillsets they learn in their competitive extracurriculars. As an experiential-based nonprofit, Her Next Play recognizes female potential and inspires girls to stick with their passions so they can grow to be the powerful women that they are destined to be. The organization was the winner of the Edina Community Foundation’s first Bold New Idea contest in 2019, the organization used the $5,000 grant award to kick start its mission and host the Edina Girls’ Sports summit for over 150 girls. With the Edina community aiding support from the start, Wegman says they’ve had a solid launch pad to make the organization what it is today. In its first year, Her Next Play won the 2020 Afton Play Institute Project Play champions
award and the Junior Varisty (student-led) board members received the Mayor’s Youth Service Commendation for 2020. “We are really fortunate to have the Edina community foundation and the resources of the community,” Wegman says. T H E G U MP FAMILY Building friendships with communities globally, the Gump family is committed to learning new customs and experiencing different cultures. As part of the Rotary Student Exchange Program, the Gump family has opened their home to students from France, Czech Republic, South Korea, Belgium, India and Spain. The program allows up to 120 students (60 inbound and 60 outbound) from around the world to stay with a total of three different families in the same community over the course of nine months. Building strong relationships with the individuals and their families, Tom Gump says that the best part is that “you get to have children all around the world.” As the first family (as opposed to an individual) to receive this award, Gump says it means a lot because it came from people in the community that he highly respects. “I just think that the Edina community is very supportive,” Gump says. “The world seems like a bet-

C HRI S M O Q U I ST Beginning his career in corporate communications and marketing, Chris Moquist decided he wanted to be his own boss. Drawing inspiration from his grandfather’s South Dakota creamery that also served fresh donuts, he wanted to redevelop the same beloved recipe. Opening Yoyo Donuts, one of few peanut and tree nut-free bakeries in the nation, Moquist created a place that was happy, comfortable and fun for kids, whom make up a majority of his customer base. Expanding his expertise beyond the bakery, Moquist ventured into the classroom. Discussing topics of budgeting and production with students in kindergarten through 12th grade; he says that each experience is rewarding because he knows that he is making learning more fun, digestible and relatable. Moquist hopes to see a program develop within Edina Public Schools that will encourage local community members to volunteer their time, expertise and skillsets to help youth explore their interests and enhance exposure to realworld instances.

Beginning his community involvement as a freshman, he was a tutor once a week through the Study Buddy Program at Creek Valley Elementary School and assisted at STEM enrichment camps the following two summers. Volunteering over 140 hours over the course of two summers, he’s been a park program leader; a student board member at Edina Give and Go; a member of Mosaic, a student group that works with citizens and administrative leaders to find healthy solutions to difficult problems in the community; and has been active in Model UN and the school newspaper. Hovelsrud says it is fulfilling to see kids grow in their own ways. “Kids are some of the most creative, inventive, smart and unique people out there,” he says. After being recognized by his community at a young age, Hovelsrud explains how the most meaningful aspect of the experience was the realization that there are so many organizations and people present in the community invested in giving back. “Although only a handful were recognized it was such an important, gracious and powerful group, I am very proud to say that I was a part of it,” he says.

legacy at her alma mater as the new girl’s head coach for both teams. Stemming from a love of being involved with a team, she says that some of her greatest experiences and lessons came from being an athlete; which gives her a unique perspective in her role. With the intent of maintaining the integrity and excellence of Edina Athletics that everyone knows and loves, Gaard Chapman says that can only be achieved if she focuses on the culture of the environment and youth development. “I focus on what is relatable,” she says. “Always acknowledging that it is not just about the sport that you are coaching but the lives that you are influencing.” As the founder of Gaard Performance Academy, she works with athletes as young as 4 years old through college age to prepare them for a life beyond sports. Using a strength-based approach, Gaard Chapman focuses on health and fitness, mental performance training and academic coaching. With her career coming full circle, she describes this surreal experience as icing on the cake to her athletic career. “I am so appreciative of the opportunities that I have had since coming home in my community,” she says. “I’m thrilled to be such a positive role model and mentor
for young athletes, and I hope to be around for a very long time.” MI C H AE L WE INKAU F Passionate about fitness and working with kids, retired Cornelia Physical Education teacher of 27 years Michael Weinkauf devoted his career to promoting health and wellness to Edina youth. At a time when education is at a crossroad due to COVID-19, Weinkauf hopes the attention to physical education remains despite trying times. “Kids need to play, they need to move,” Weinkauf says. “It’s not just about their physical development but about their emotional and mental development as well.” Caring for the well-being of his students, Weinkauf explains that he chose to teach at Edina because of its quality of education, the support provided for staff members, the parental involvement and the emphasis of art, music and physical education. ‘Clients Come First’ for Father-Son Investment Firm

VEAP Food Shelf has provided a valuable service in southwest Twin Cities communities
since it began operating in 1973. Open MondayFriday 9 a.m.--4:30 p.m., with no appointment necessary for any food pick up or drop off. There is also no minimum income requirement for anyone in need of food, as many people helped by VEAP experience income loss due to unemployment, death of a family member or illness. The only requirement is proof of residency within Bloomington, Edina, Richfield and a small portion of South Minneapolis.
Throughout November, VEAP will station its mobile food pantry at a variety of locations including Normandale Community College, Dar Al-Farooq and Seasons Park. VEAP is especially in need of food donations due to the COVID-19 global pandemic. Donations of non-perishable foods as well as fresh produce and common household and hygiene products such as deodorant, soap and diapers are encouraged and appreciated. Spending an evening gathered around a bubbling fondue pot of melted cheese with some delicious dippers in which to sop up that glorious cheesy goodness, well, the late-fall months don’t get much better than that. Add a deliciously decadent chocolate fondue with an assortment of fruit, pound cake and scintillating sweets for dessert, and you’ve got yourself, in the words of Heidi Rathbun, FoodE expert with Lunds & Byerlys, a “FUN-Do.” And a super easy one at that. Lucky for us, Rachael Perron, culinary and branding director for Kowalski’s Markets, and the aforementioned Rathbun, share a few of their favorite cheese and chocolate fondue recipes, along with practical tips to help your next fondue night come off without a hitch. And Perron offers up some tasty morsels of history and interesting insight into the craze that has its culinary roots in the cloud-kissed mountains, hills and plains of Switzerland, when Swiss folks were looking for a way to use their day-old bread and leftover cheese. So, melt that cheese, cube some bread, cut some fruit and get that chocolate a-melting, because it’s time for fondue.
FONDUE FUN FACTS Submitted by Rachael Perron • Fondue is a European tradition that made its way into the United States in the 1960s. It has its history in and is to this day enjoyed widely in Switzerland, Italy and France. It’s an unpretentious, simple and uniquely fun dish that amounts to little more than melted cheese served in a communal pot. • The term fondue is often generalized to include any dish in which food is dipped into a pot of hot liquid such as chocolate, oil or broth. Nonetheless, traditional cheese fondue is by far the most popular type of fondue. • The French name for a fondue pot is caquelon, but you don›t need one to enjoy fondue. Small slow cookers are very effective at keeping fondue warm for serving. A makeshift double boiler for gently cooking the fondue and melting the cheese is easy to create on a stovetop with a bowl set over a pot of simmering water. With care, fondue can even be made directly in a saucepan over very low heat. • The introduction of cornstarch to Switzerland in 1905 made it easier to make a smooth and stable emulsion of wine and cheese and probably contributed to the success of fondue in the years that followed. It was promoted as a Swiss national dish by the Swiss Cheese Union in the 1930s as a way of increasing cheese consumption.

• 1 clove garlic, crushed • 1 cup dry white wine • 1 Tbsp. cornstarch

from our Images of Edina photo contest. This month, we asked Kayla Maring to tell us about her photograph titled Fall Meets Winter. Where was the photo taken? Centennial Lakes Park in Edina. What inspired the shot? The calming atmosphere of the park … It was peak fall season, and what was supposed to be a beautiful fall morning quickly turned snowy, chilly and damp. The heavy, wet snow shortened the family photo session I had, and when the family left, I realized that no one else was in the park with me. I couldn’t feel my hands and my clothes were soaking wet already, but I knew I couldn’t pass up the opportunity to enjoy the park all to myself. What’s your favorite thing about this image? The serene feeling that it gives me. Do you typically take photos like this or is this out of the norm for you? Yes … I’ve always liked to be well-rounded in what I know and do, and photography is no exception. I have a photography business, Lifetime Adventures Photography, where I specialize in senior and family portraits, but I always try to capture other subjects like nature and travel to help me stay creative.
