T

he global pandemic is forcing us to find new ways of doing things that we have routinely done for centuries. One of the most wrenching is how we must now commemorate the passing of our loved ones. In my case, the nonCOVID-related passing of my sister Alane last week. As it turns out, I was the only one in our family—which is spread across the country—who had the mindset and skills to put together an online memorial. I’m certainly not the only one in the last few months that had to quickly hustle up a Zoom memorial while dealing with friends and relatives who ranged from clued-in to clueless about technology. A significant family missed the memorial. Afterward, someone asked if I’d forgotten to invite them… I wanted to scream! Short of stalking, I did everything I could do to get them online for the event: “Did you and your caretaker get the Zoom link for Alane’s memorial?” I ask. “Yes,” they reply. “I sent it to your caretaker, too,” I say. “She got it, correct?” “Yes, I’m not sure what to do,” they say. “Zoom allows you to call in, at the very least,” I explain. “Oh, so it’s a phone call?” they ask, as my hidden exasperation rises. “Yes and no. It’s visual and also audio. Your caretaker is a millennial; she’ll know what to do, and I’ve been texting her.” Indeed, I had started texting the caretaker as soon as I’d set the date and time. I called, emailed, and texted daily. The day before the memorial, I found out the caretaker was too embarrassed to tell me that she had no idea what Zoom was. I forgot how some people are so massively isolated that things we take for granted don’t exist in their world. Now wholly flummoxed, I got permission to call my relative’s lawyer to see if he could bring them down to his law firm to have them watch the memorial there. The lawyer would have been amenable to it but was out of town. And as it turns out, this relative—who is solidly in the at-risk group—is so out of touch that they don’t even have a mask. Meanwhile, I spent three days sorting through hundreds and hundreds of old pictures of my family. It was healing, moving and occasionally delightful. As I neared the end of the sorting, I noticed there were barely any pictures from the 1960s. And then I remembered: we were in the infamous 1972 killer flood in Rapid City, South Dakota—one that residents there still talk about. Although I’d salvaged and cleaned many pictures a few days after the flood, apparently, I’d neglected to save the ’60s pictures and memories. On the other hand, as some people say, “if you can remember the ’60s, you weren’t really there.”

My hubby, Ken Gruberman, isn’t called the Tech Daddy for nothing. I gave him the photos I’d selected and the direction I wanted, and he made the tech and music miracles happen during the memorial. I’m very proud of what we produced, including a poignant 10 1/2-minute photo montage of Alane’s life. But more importantly, the people who attended were grateful and touched. “…attention must be paid,” says Linda Loman in Arthur Miller’s “Death of a Salesman.” Alane’s life needed attention once it ended, and so do your loved ones. If you find yourself in a similar situation, I’m here to urge you to do whatever you can to make an online ritual, ceremony or gathering happen. If you don’t, I predict you will regret it: their lives deserve recognition after their passing, pandemic or not. And that doesn’t mean you can’t do something live down the road! I have some tips for you: • Create something online as soon as you can. If you’re not up to it, find someone in your various circles who is. Get as much help as you need. • Design and outline the proceedings, including an ending time. • Pay attention to who will have a hard time getting online and help them make arrangements. I enlisted help for Alane’s husband, Paul, who had arranged for him to watch at their house, so he could just be there and not worry about anything. • Have something musical • Include pictures of their lives • If the person was religious, invite someone from their place of worship to either attend and say something or get coaching from them. • Have a “host” who is not too shy to direct the proceedings, and mute people when necessary. • Finally, when it’s time to share, give people more time than feels comfortable to raise their hands. People are reliably shy about talking, whether it’s in person or on camera, and it takes them a while to unmute and pull themselves together. I recommend that the host know ahead of time at least two or three people who will want to speak and call on them first to get the personal anecdotes going. I am glad I didn’t listen to naysayers who were cynical about the idea of a virtual memorial. While the ideal is to be together in real life, the digital version was still meaningful and gave Alane the attention she deserved. n Ellen Snortland has written Consider This… for the Pasadena Weekly for decades. Safe practices Once COVID began, Rima and Charlie knew they had to work even harder to keep their stores in business, while continuing to support and uplift less fortunate members of the San Gabriel Valley. When COVID hit in February, they immediately implemented safety precautions by putting up plexiglass, purchasing gloves and regularly sanitizing all surfaces. “We try to provide a very safe and hygienic environment. None of our staff has gotten sick,” she said. Gaurav said he believes these heightened safety measures have helped him become more disciplined. “Due to the different experiences I have personally been in, I have become more aware of maintaining a healthy atmosphere, and clean environment around me,” Gaurav said. Unlike many 7-Eleven locations that limited their hours, Rima and Charlie’s stores are still open 24 hours to help the community. “Think of the frontline workers who work day and night, such as the police and health care employees, they go to work 24 hours a day,” Rima said. “If they need something at night, there would be nothing available. We had to stay open for their convenience. Therefore, none of our stores have been closed for even a day.” When area businesses started to reopen after lockdown on June 1, Rima and Gaurav walked the entire length of the block of their Pasadena store from Colorado to California Boulevard, and distributed water bottles and sanitizers to each business and their customers. Rima recalled how, on that hot June day, the bottle of water was very refreshing for the long line of people standing in line outside the Rosemead DMV. In the midst of the riots and demonstrations following the death of George Floyd, Rima and Charlie provided the Los Angeles County Sheriff’s Department—Temple Station with free pizza and drinks. “They have been working so hard, and taking care of our local community to keep it safe,” Rima said. “We gave them food as a mark of our appreciation.” Similarly, although the Boys and Girls Club in Pasadena has been closed since March, Rima and Charlie recognized that many of the children who went to the club relied on it for daily nutrition, a need that became even more pressing with 4 PASADENA WEEKLY | 08.06.20

ongtime San Gabriel Valley residents, Rima and Charlie Madan, were recently awarded the rare 7-Eleven’s Servant Leadership Award for their efforts in supporting the Pasadena and Arcadia communities during the pandemic. Known as the “It Can Be Done” award, this couple received it for a 30-year tradition of giving back to the community, a tradition on which they doubled down during the COVID crisis. The Madans believe in giving back to the country that welcomed them four decades ago. As their business flourished, they expanded their practice of working collaboratively to support the different areas of San Gabriel Valley. The Madans purchased their first 7-Eleven franchise in Pasadena in 1989 and now own two locations, one in Pasadena and the other in Arcadia. In addition, they were partners in one of Old Town Pasadena’s first Indian restaurants, Mezbaan, which closed in 2013 after 30 years. “We do outreach on a regular basis,” Rima said. “It is not like we just did it for the pandemic. It is what we do.” For 31 years, they have provided food and annual donations to the Pasadena Boys and Girls Club. Every Thanksgiving, they give lunch bags with sandwiches and coffee to 100 residents of the local homeless shelter. In 2003, the Madans helped build the Pasadena Hindu Temple on Rosemead Boulevard to unite the Indian community. Their son Gaurav, who helps manage the stores, said “through the years both my parents have really donated their time and love to the community.” According to Rima, “We can do community outreach because our employees are also so involved in the community. We run our businesses as a family and treat our employees like relatives. Through the years, we have had over 250 people work for us, and many of them ultimately started their own businesses after we trained them. We are very happy to help them start on their own and see them succeed. It reminds us of what we did 30 years ago.” This kind of openness and sense of generosity is an integral part of the way in which Rima and Charlie approach their business and their lives.

the closure of local public schools. So, the couple told residents that their store would provide free food for those in need. Many of the children from the Boys and Girls Club came to their 7-Eleven, where they were given a free hot dog, bag of chips and a drink. The Arcadia Methodist Hospital has been one of their other benefactors. Rima brought together local Indian residents to cook 300 meals at the Alhambra Gurudwara (Sikh Temple) for the hospital’s doctors, nurses and other staff. Along with the food, Rima and Charlie donated 600 surgical masks from their 7-Eleven. “The hospital was especially thankful that our Arcadia location remained open,” she said. “At night, we have been the only business open in the city.” Gaurav recalled, “The pandemic was a real game changer for businesses, as far as how we had to serve our clients. When donating the food, we had to do so with the proper personal safety protections. We had to be fully dressed in clothing, masks, while ensuring that everything was clean, disinfected and healthy. We had to make sure that all the people we were serving were comfortable.” Rima and Charlie’s self-directed community outreach during COVID earned them the “It Can Be Done” Servant Leadership Award from the 7-Eleven Corp. This award, which is awarded to very few 7-Eleven franchisees, is given based on whether a business can work effectively in the face of major disasters, while also maintaining a positive outlook, and helping their community. “I was surprised when I got the award, because we have been doing this service for 30 years,” Rima said. “It just came naturally to us to help the community once the pandemic happened.” Their 31-year-long support for the community has proved even more pivotal as COVID cases continue to rise. “This outreach that we have done for the last 31 years is our way of saying thank you to our neighbors, and sharing with them,” Rima said. On that note, Gaurav concluded with his motto “Think good, be good, do good, and be good at it.” n

OLD PASADENA STARTS COMMUNITY PROGRAM TO HELP LOCAL RESTAURANTS STORY BY MATTHEW RODRIGUEZ | PHOTOS BY LUIS CHAVEZ

A

s businesses across the nation continue to adapt to the novel coronavirus, restaurants in Old Pasadena will receive a lifeline, through communal dining locations in the surrounding areas. In a press release from Old Pasadena Management District, the program dubbed commUNITY will install three dining locations along Big Bang Theory Way in hopes of increasing patronage to the neighborhood’s nearly 200 restaurants. The communal areas will be sanitized and cleaned throughout the day from 11:30 a.m. to 8 p.m. “I think this new program helps make it less scary for people to be out there,” said co-owner of Bone Kettle, Eric Tjahyadi. “When we had to separate ourselves and not be engaged with one another it’s not the same location. It’s not the same place. When we have programs like commUNITY coming into place, we remind people that this is still the same place that they fell in love with.” Many restaurants in the surrounding area share the same sentiment as Tjahyadi, hoping the program will help keep the lights on until the pandemic passes. A family affair As refugees from Indonesia the Tjahyadi family has always had a dream of opening a Southeast Asian restaurant in Pasadena. Three years ago, Eric Tjahyadi and his family finally achieved that dream of exposing the area to Asian cuisine with the Bone Kettle. “I grew up in the San Gabriel Valley area and growing up, being in Pasadena has always been an aspiration bucket list for us,” said Tjahyadi, who opened three restaurants with his brother Erwin prior to Bone Kettle. “Bone Kettle was a culmination of all of our hard work and a dream project to tell our story as Indonesian immigrants.” Tjahyadi put his heart and soul into this restaurant taking out half of his 401k and taking out a second mortgage on his house to open the restaurant. The restaurant saw initial success with 2020 primed to be a very successful year. “I think in March we were most definitely shocked and in disbelief because we knew that it was all kind of a serious issue, but we didn’t know how serious it was,” Tjahyadi said. The duo even considered closing the business temporarily in order to protect their staff from COVID-19. However, as bills began to pile up they were faced with the decision to open up or see their dream die in bankruptcy. “We just had no option but to open even at a limited level, to sustain our bills,” Tjahyadi said. “We had to figure out a way to pay that down otherwise we’d file bankruptcy because of the incredible amount of bills, utilities and obviously rent.” Tjahyadi and his brother, who came to this country with nothing, persevered. Their survival mentality pushed them to continue their dream and press forward even with the unpredictability of the situation. Bone Kettle and other restaurants supported each other throughout the shutdown, devising different ways to serve customers. “I’ve really been amazed at the creativity that a lot of business owners have put in place when it comes to surviving and being resilient,” he said. “I think that’s a whole part of being in such close proximity with so many great business owners around Pasadena is the shared resources. To inspire one another, even if it’s really the little things. That really excites me.” No time to Wine Ervin Galvan opened We Olive & Wine Bar in 2016 in hopes to spread his love for olive oil and wine to others. “It was always a dream of mine to get into the food industry,” said Galvan. “I have a passion for olive oil and wine. I really love educating people about it, showcasing what these producers and growers are doing.”

Since the pandemic, the stress of running a business has risen exponentially for the restauranteur with the constant fear of him or his employees contracting the virus. “As COVID started happening, it’s definitely become extremely exhausting and tedious because now I don’t really have the support that I did have,” Galvan said. With the lack of revenue, Galvan was forced to lay off more than half of his staff and even stopped collecting a salary for himself and the other owners. “There isn’t much free time for anything. It is very demanding, and we aren’t really making as much as we were,” he said. “It is definitely scary coming in and having to deal with these challenges… There’s nothing really we can do because we have to pay invoices, vendors and rent.” While the restaurant still receives help from regulars, Galvan hopes that the commUNITY program brings in new faces. “What I think is beneficial about it is it’s causing people in the area to rediscover Old Town and old Pasadena,” he said. “It is great for us because most of the people who are coming in and especially people discovering us for the first time live within a three to four block radius.” Galvan is grateful for the support from the Old Town community as it helps his dream continue to live on. “I think we’re really lucky to be in this district with that management company,” he said. “They’ve been feeding us information regularly so we’re all up to date. Dr. Roberto Tostado’s quarantine health hacks 1. Cut out the junk. Start by stopping processed foods to reduce your intake of sugars, preservatives, and chemicals that lower immunity. 2. Drink a smoothie daily. Mix up a variety of immune-boosting fruits and veggies such as apples, bananas, pineapple, mango, spinach, kale, chlorella, spirulina and chard in a blender for a delicious and healthy start to each day. 3. Build your “D”-fense against infection. Sufficient amounts of vitamin D are important for improved resistance against certain diseases. Supplement daily with 3,000 to 5,000 IU of vitamin D in the D3 form because it’s absorbed at higher levels. 9. Laugh. The act of laughter physiologically boosts immunity. Watch comedies and share humor during these times of uncertainty to encourage more laughter. Alyssa Robinson, a sophomore studying engineering at Missouri University of Science and Technology, made the honor list for the spring 2020 semester. To be included on the honor list, students must have carried a minimum of 12 hours and had a grade point average of 3.2 or above out of a possible 4.0. Nearly 8,500 students earned degrees from the University of Wisconsin-Madison during an online commencement ceremony. Among the graduates were Samantha Gilmore of Glendale, who earned a Bachelor of Science in retailing and consumer behavior; Sofie Henckel, who earned a Bachelor of Science in neurobiology; and Moriah Morgan, who earned a Doctor of Physical Therapy. Henckel and Morgan live in Pasadena. Ryan Sharpe of Altadena graduated from Marquette University in Milwaukee. Sharpe earned a Bachelor of Science in information systems. Sharpe was one of 2,236 students to graduate from Marquette in May. Marquette University is a Catholic, Jesuit university that draws its more than 11,500 students from all 50 states and more than 84 different countries. Marquette is ranked in the top 10 nationally for job placement.

ulia Child once said, “Life itself is the proper binge.” The depth of influence, food and flavor we can forage in our own neighborhood is dizzying—from Tibetan momos to Armenian barbecue and Oaxacan barbacoa. Popular interest in food, restaurants, chefs and cooking in general has soared over the last 20 years throughout the country and in Los Angeles particularly. This was not always the case. In many respects, the groundwork for America’s food craze was laid with the publication in 1961 of “Mastering the Art of French Cooking” by Julia Child, Louisette Bertholle and Simone Beck. The book brought the sophistication of French culinary technique and the concept of cuisine as an art form to the American home cook and into popular consciousness. The average local galloping gourmand may not be aware that Child was born and raised in Pasadena and she would be celebrating her 108th birthday this Saturday, August 15. Child (nee Julia Carolyn McMaster) grew up in the handsome rambling house, which still stands at 1199 S. Pasadena Ave. The house was built in 1911 and designed by G. Lawrence Stimson, who was also the architect for the Wrigley mansion on Orange Grove, now the headquarters of the Tournament of Roses Foundation. Owned by Caltrans for many years, the property has fallen into disrepair and the local conservancy group Pasadena Heritage has been on a mission for several years to landmark the house. By her own account, Child didn’t start learning to cook until she was 32 years old and living in Paris with her diplomat husband Paul Child. Pasadena didn’t provide her culinary inspiration. As a teen, she was unlikely to have encountered a baguette—let alone a good baguette—anywhere in the vicinity of Colorado Boulevard. That said, could she find one now? The answer is a resounding “Oui!” with the 3-year-old Frenchifornia. French bread. Does any other country attach its name to the word “bread” in quite the same way? What is it about a perfectly baked fresh baguette that conjures thrilling satiation with such utter simplicity? France. “It’s the country for the bread.” The direct simplicity of such a statement

delivered with an off-hand, insouciant confidence could only come from a Frenchman. That Frenchman would be Thomas Dumont Girard, the baker and managing partner with pastry chef Guillaume Delcourt of Frenchifornia, the small storefront French patisserie on Colorado Boulevard, just east of Marengo. It shares the block with dim sum at Lunasia and ramen at Kopan. Dim sum and ramen? There are options. Authentic artisanal French bread and pastry? Not so many options. In fact, despite the profusion, variety and exotic diversity of Pasadena’s food culture, true French cuisine is not so commonly found in Child’s birthplace. “It’s easy to find a French place but without the French taste, it’s very complicated to find it,” Girard said about his sense of the local landscape for his country’s cuisine. Still, he and Delcourt are fairly recent arrivals in town. Girard, a native of Oyonnax—near Lyon in the south of France—met Delcourt in the northern city of Arras, studying patisserie at the culinary school there. On an initial tour of California seven years ago, the pair arrived first in the Bay Area. “San Francisco is one of the cities we love,” Girard said. “When we arrived in LA, it was too much for us. So, we took the car and went to Pasadena. We said, ‘Whoa! It’s like a European city!’ All the trees, Old Town, we loved it.” They returned to France but with determined plans to move to Pasadena. Several years ensued, but in January 2017 the pair arrived here and in August, Frenchifornia was born. Personally, I don’t realize how much I miss a real baguette until I wander into the shop randomly and buy one on impulse. This place goes into my weekly rotation tout suite. Bread. That’s it for me. I’m sure Delcourt’s patisserie is excellent, too, but I come for the bread. Regardless it should be noted that on the day of my recent visit the pastry cases also contained smoked salmon eclairs, three types of quiche and eight flavors of macaron, including Earl Grey and salted butter caramel. Happily, one of the recent innovations spurred by the pandemic lockdown is a simple sandwich menu, which allows you to craft your own with the house baguette or croissant (or with no CONTINUED ON PAGE 10

‘We’re Fighting to Survive’ PERLE BARELY OPENED BEFORE THE PANDEMIC, NOW IT WANTS NORMALCY BY CHRISTINA FUOCO-KARASINSKI

M

ichelin-trained chef Dean Yasharian is determined to keep his Old Town Pasadena French restaurant, Perle, afloat during the pandemic. He’s heads to work at 6 a.m. and leaves at 3 a.m. He takes orders, and acts as prep cook and line cook. Finally, after nearly six months, he’s starting to see the light. “We’re adding a prep cook and another cook on the line by next week to free myself up a little bit more to work on menu evolution,” Yasharian said. Yasharian’s restaurant opened in March. The day the States closed down was the same night as his friends and family night. “We couldn’t have timed it any worse,” he said. “I had 15, 16 people training for about a week. I think the first night of our friends and family day was the day of the COVID shutdown. We had to cancel all that and lay off the staff. The stay-at-home order was pretty strong.” Since then, business has wavered as the restaurant opened and closed, in accordance with government regulations. “With the outdoor dining, things are seeming a little more regular,” he said. “That’s giving us some sense of normalcy now. We’ve had 10 tables outside the last couple of weeks. “Now we have some consistency and we’re finding a little bit

bread as a “salad box”). The bread starts at $6 and $5.20, respectively. Add a choice of ham, turkey or pate at $1.50, followed by a choice of cheese: comte, brie, or goat for $1. Veggies include sun-dried tomatoes, avocado and black olives along with the usual greens at 75 cents per add-on. Seasonings, at 25 cents each, include Dijon mustard, cornichons, vinaigrette and fried onion. Next to the blackboard menu, pink handwritten signs indicate the most popular sandwich as ham and comte on either bread. “D’accord!” Add Dijon and cornichons to the baguette and cloudy Colorado Boulevard dissolves into the Rue de Rivoli on a sunny day. Business at Frenchifornia has been relatively resilient through the mandated lockdown and local reopening iterations. There were no “pivots” required as an established takeout business with a growing loyal clientele, although operating hours were adjusted with the shop now open Wednesday through Sunday. “The weekend is very busy,” Girard said. “It’s like a small city in France, the Mondays are very, very quiet.” Catering inquiries have obviously diminished but recently the two partners at Frenchifornia have prepped and served patisserie for “special small events.” As Girard continues, “We are very happy. We have three employees. It could be worse.” OK, where do you guys go for authentic French cuisine in town? Girard quickly offers, “On Green Street—Entre Nous? It’s a very good French place.” Now next on my list, Entre Nous is the progeny of Jean-Christophe Febbrari and Mathias Wakrat former partners at long-time local favorite Café Beaujolais in Eagle Rock. Entre Nous is open for dinner service Wednesday to Sunday for takeout and outdoor distanced seating. “Plus a venir!” As we end our chat, Girard muses on Pasadena, his new hometown. “For a French guy like me it’s a real European place.” Apparently, we need go no further than our own backyard for continental atmosphere and cuisine. We didn’t know what was going to happen.” Perle offers a sustainable and organicfocused menu featuring classic French dishes as well as modern, seasonal creations influenced by California’s fresh cuisine. Yasharian employs a mirrored menu concept, with half of the menu consisting of meat and seafood dishes and the other half composed of vegetarian and plant-based dishes. In better times, the menu is updated weekly. Dishes on the meat and seafood menu may include organic coq au vin with tahdig rice, grass-fed steak tartare and Santa Barbara ridgeback prawns with salt-cured Meyer lemon and saffron. The vegetarian and vegan menu will feature vegan French onion soup with cashew cheese gratin, frisée Lyonnaise salad with tofu “egg” and tempeh “bacon lardons,” and braised Le Puy green lentils with plantbased sausage and Dijon. Initially, Yasharian wasn’t going to offer takeout, as he saw Perle as more of a “dine-in place.” “We shine the most with the ambiance of the service. That’s what we do,” he said. “I knew we needed to discuss takeout when we learned we could reopen dine-in with restrictions. We put together a plan to do takeout and right around the launch date, we went ahead and stuck with our plan to do takeout for a week. “The following week, we opened for dine-in. We had the 6-foot distancing on the tables. We had plexiglass barrier walls. The restaurant was full. It was a great feeling. After a week, they shut it down again. Just in the first week, we ran pretty tight on staff. We didn’t get hardly any government funding, which doesn’t make sense.” Yasharian said the lender said Perle wasn’t eligible because the restaurant was so new. “We were left out to dry and set up to fail through the COVID-19 thing,” he said. “We had some working capital left to scrape us by.” For the second shutdown, restaurants can use sidewalks and alleyways—anything adjacent to the building. Perle had space for two tables on the sidewalk. Chignon Salon let Yasharian put tables in front of its place, as they share a landlord. “What’s great is the little community of restaurants here supports each other,” Yasharian said. “They really welcomed us nicely. I’m talking Union, Bone Kettle, The Blind Donkey. We banded together and we told the city as a group.. The main focus is always on Colorado and Green Street. “They didn’t talk about Union Street or Raymond. We put ourselves out there. We requested they shut down one lane on our block. I have to say it happened quickly. We’re happy with the support of the Old Town Pasadena and the historical association. They put the barriers up and it’s been a game changer.” Yasharian’s restaurant is packed every night—with social distancing in place, of course. It’s been challenging to find a rhythm, he admitted, because due to the lack of a PPP loan, he could only rehire the staff he absolutely needed. Little by little he’s getting there, but the staff is stretching itself to the “absolute max.” “We’re looking at grants and local grants,” he said. “We’re at a point now where we need more tables to be profitable. With the ones we have

and outdoor seating, we’re scraping by. “I wouldn’t say we’re breaking even, but at this point, we’re not losing money. We’re not paying the full amount of rent. We don’t have the amount of stuff that we want. This outdoor seating is the only thing keeping us going. Even with the delivery, we’ve had to tone down the quality and almost go in a more casual direction to sell more volume.” He’s trying Yasharian has been a chef for 20 years and an executive chef for 10. He’s experienced crisis situations but he just isn’t giving up. “We don’t have the choice to sit back and ride this thing out anymore,” he said. “It’s stretched so long. We have to keep moving forward. We’re at a point where we’re building a core team to find our rhythm. What would be great is if we could keep the outdoor space for the long term and allow us to reopen dine-in. That would be amazing for us. We’re fighting to survive. We’re pushing every week to improve as much as we’re allowed.”
