Keys To Being Successful
From Dr. Chamberlain’s Desktop
R
ecently, I have had the distinct privilege to be asked to write alongside renowned bestselling author, Brian Tracy. This was a life-list opportunity for me to contribute a chapter in his next book. In consideration of that honor, I thought I would summarize a past writing of Mr. Tracy from his book, “Success Mastery Academy.” In this book Brian Tracy describes six Dr. Thomas Chamberlain characteristics of a master achiever. What is it that makes some people so successful? Here they are: 1. They are ambitious. They see themselves capable of being the best. They see themselves with the capacity of being really good at what they do. The word “deserve” comes from two Latin words meaning “from service.” You deserve 100 percent of everything you make and enjoy as long as you get it from serving other people.
2. They are courageous. Successful people work to confront the fears that hold most people back. The two biggest enemies to our success are fear and doubt. When you do something repeatedly, you develop a habit. Make a habit throughout your life of doing the things that scare you. If you do the thing you fear, the death of fear is certain. So face your fear. 3. They are committed. The top people in every field are completely committed. They believe in themselves; they believe in their companies; they believe in their products and services; they believe in their customers. They have an intense belief. We know that there is a one-toone relationship between the depth of your belief and what happens in your reality. 4. They are prepared. Successful people review every detail in advance. They do things that the average person is not willing to do. They make sacrifices the average person is not willing to make. But the difference it makes is extraordinary. Successful people are more concerned about pleasing results than they are about pleasing methods.
Dr. Thomas Chamberlain
5. They are continuous learners. High achievers recognize that if they’re not continually getting better, they’re getting worse. They read, they listen to CDs and they take additional training. The professional never stops learning. 6. They are responsible. 100 percent of us are self-employed—we are presidents of our own personal services corporation. You work for yourself, and the biggest mistake we can ever make is to think we work for anyone else. The person who signs our paycheck may change, our jobs may change, but we are always the same. We are the one constant. You’re the president of your own career, your own life, your own finances, your own body, your own family, your own health. I’m pleased to announce that our recent book with Brian Tracy has been released and has reached the bestseller list on Amazon. You can buy “Success Today” at any online or bookstore retailer, or you can call my office at 480.899.9423 and I can get a signed copy of the book for you for only $8. This could be your book that will change your life for the better.

People who have lost teeth might often feel too self-conscious to smile or talk in public. Additionally, early tooth loss can change eating habits and facial appearance and lead to secondary health problems. Although you have a number of options for the replacement of missing teeth, none have proven to be as functionally effective and durable as dental implants. In many cases, dental implants are the only logical choice for the restoration of all necessary functioning of the teeth and supporting structures; dental implants provide a simple remedy with proven results. Dental implants are stronger and more durable than bridges and dentures. Implants offer a permanent solution to tooth loss and are changing the way people live. They are designed to provide a foundation for replacement teeth which look, feel and function like natural teeth. They are proven to preserve the jaw bone, gums and the adjacent natural teeth. The person who has lost teeth regains the ability to eat virtually anything, knowing that their teeth appear natural and that their facial contours will be preserved. We offer state-of-the-art technologies and Dr. Shah is constantly implementing the latest techniques to provide you with the best care available. Patients who come to us can smile with confidence. For a consultation, please call Dr. Shah at 480.814.9500. Oral and Maxillofacial Surgeon, Board Certified, American Board of Oral and Maxillofacial Surgery.

“These are guys who want to sing. Maybe they sang in high school or college, but now their work doesn’t involve music, and they’re looking for an outlet,” Larson said. “As cheesy as it may sound, the Orpheus Male Chorus is family.” Hapip seconded that observation, and noted that returning to rehearsals after the summer is “like schoolkids getting together and comparing notes on what happened during vacation.” Previous Orpheus seasons have consisted of two concerts, one during the winter holidays and in spring. This year, the group will add a fall concert, to be performed twice at different locations on the same day. The “Legacy Concert,” which pairs Orpheus with the Phoenix Children’s Chorus, will be performed twice on Sunday, Oct. 4: 2:30 p.m. at Velda Rose United Methodist Church, 5540 E. Main St., Mesa; and again at 7 p.m. at All Saints Lutheran Church, 15649 N. Seventh St., Phoenix. Larson chooses repertoire with the intention of pleasing both his singers
and their audiences. “I start with a stack of music a foot and a half high,” Larson said. “I choose some things that fit them easily, and I pick one or two pieces that are bones for them to gnaw on, challenging music but still singable. I’m all over the map in my selections, from sacred to Broadway.” The Orpheus “has had its ups and downs over the course of 86 years,” Larson added. The Orpheus Male Chorus was founded 86 years ago, in 1929. The 2015-16 season will be its 87th. That makes it the oldest continuing performing arts organization in the Phoenix Brook Carter Larson has served as Orpheus’ artistic metro area. director since 2009. One of the biggest downs came during World War II, the group, Larson said, noting that when many prospective members got the chorus lost six members this year busy doing something else. By Kenneth LaFave Gary F. Hapip of Tempe was happy singing in a community choir, a standard mixed group of sopranos, altos, tenors and basses (SATB). As a bass singer, Hapip didn’t always get to sing the lowest notes available to him, because SATB arrangements rarely required them. But when he sat in with the Orpheus Male Chorus, a whole new musical world opened. “It set me right down into the lowest range, where I was most comfortable,” Hapip said. Around him, 80 men singing produced a startling sensation. “It was a unique sound like no other I’d ever heard. I decided to switch groups.” The retired insurance executive has spent the last five years singing with Orpheus, and serves on its board of directors. Brook Carter Larson of Mesa, Orpheus’ artistic director since 2009, recruited and auditioned Hapip. Larson said his chorus is made of men much like him.

Joining Whiskey Row on Mill will be Cornish Pasty Co., which is opening a “small pub” toward the end of this year. The original location is a half mile away, but owner Dean Thomas said that that won’t affect business. The new place will serve a limited menu of the restaurant’s awardwinning pasties, some grilled cheese sandwiches, and soups. Now that Halloween is approaching, will you be trick-or-treating with the kids or going to a neighborhood celebration? While trick-or-treating numbers are declining, we’re fond of the annual tradition. Just be sure to walk with your kids and keep them safe.

French Fry Heaven has just opened on the ASU Tempe campus and if you’re a fry fan, this really is paradise. Poutine is a given, but we also recommend the garlic parmesan chicken and pulled pork. In recognition of the service of arts advocate and former City Councilwoman Barbara J. Carter, the City of Tempe is renaming a room at its popular Tempe Center for the Arts. A dedication reception, complete with the unveiling of a plaque in Carter’s honor, will take place from 5:30 p.m. to 7 p.m. Wednesday, Sept. 16, at the center, 700 W. Rio Salado Pkwy. Carter has long been a champion for the cultural life of our community. She was a member of the Tempe Municipal Arts Commission in the 1990s. In both roles, Carter pursued the planning and construction of a community arts center at the future Tempe Town Lake—the beautiful Tempe Center for the Arts is the result.

Shivani Dallas has proven herself to be an exceptional realtor. My husband and I recently decided to sell our home. Like most people, we were concerned that our house may be on the market for a while. Others in our neighborhood had struggled with selling their own homes, and we hoped to be able to avoid such circumstances. Shivani was able to sell our home within nine days, at a price better than expected. It is not often, in our experiences, that realtors have lived up to their claims; Shivani most certainly has. Safely dispose of expired drugs at ‘take-back’ event By Tracy House In a statewide effort to encourage residents to safely dispose of unused or expired drugs, the Tempe Police Department is partnering with the Arizona Drug Enforcement Administration for a “take-back” event. Residents can anonymously bring in prescription or over-the-counter (OTC) medications from 10 a.m. to 2 p.m. Saturday, Sept. 26, at the Tempe Police South Substation, 8201 S. Hardy Dr. The police department and the DEA will safely dispose of medications, according to Molly Enright, community affairs public information officer. Tempe Police encourages residents to turn in the medications instead of flushing them down the toilet, which negatively impacts the water supply and environment. Events like these also help prevent prescription drug
abuse, addiction, theft and resale trafficking. “Many young people, unfortunately, if they’re looking to experiment with drugs, those can be found in the household medicine cabinet,” Enright said. “Kids inadvertently think it’s a safer opportunity to get high, and as we know, the narcotics and opiates particularly are extremely addictive.” Medications will be taken to the DEA incinerator for proper destruction. “It’s door to door, to incineration. Those drugs will be accompanied by law enforcement,” Enright said. Typically, she said, residents bring in about 300 pounds of medication. Meanwhile, statewide the numbers are a staggering 6,000 to 8,000 pounds. Labels with personal information do not need to be removed from the bottles. Disposables will be

By Samantha Pouls Sen. John McCain cautioned against the passage of the Iran Nuclear Agreement, stating that the Islamic State group will use the windfall of sanctions to attain weapons and support. “ISIS is as evil a force as we have encountered since Nazi Germany,” said the Republican about the group also known as IS. Under the agreement, which has yet to be passed, Iran may keep its nuclear facilities, but under no circumstances can it develop or acquire nuclear weapons. President Barack Obama is facing stiff opposition from the Republican Party on the issue. Yet, as of today (Sept. 8), the president had received the votes necessary to keep the Republicans from blocking the agreement in the Senate. McCain spoke at ASU’s Memorial Union Sept. 3 on behalf of Christians United for Israel, which shows Christian support for the nation. McCain spoke of the lack of force the United States used when negotiating with Iran. “Secretary John Kerry and his minions caved on every major issue,” he said. While the Iranians refused to negotiate, McCain said the Obama administration continuously gave way to anything that was needed for the deal to move forward. In response to nuclear inspections, McCain explained: “Now we are relying on the Iranians for inspection and I’m not making that up. I’m supposed to approve of this agreement and I don’t even know the details.” McCain was visibly frustrated with the lack of care that went into the agreement by the Obama administration. “It is a good thing that the president did not call the agreement a treaty, because the next president can easily get rid of it. This agreement is nothing but a delusion,” McCain said. For some, the lifting of economic

sanctions on Iran creates apprehension for Americans. Now that U.S. troops have pulled out of Iraq, there are those who question whether the militant group will gain support and power throughout all Islamic nations. Grocery clerk Zoe Ketchelidis, 52, explained, “Iranian interests are too limited to use them for the right purposes. I’ve never heard of Iran helping a neighboring country just for the good of it.” While McCain stressed that the Quran does not support violence, he did state that the way that IS interprets the book is harmful. “ISIS poses a direct threat to the United States and without American influence and power, really bad things can happen,” McCain replied. However, for some, technology and the voice of young Americans are all that is needed to spread influence throughout the nation. Although McCain referred to the audience as his “friends,” some in the auditorium pointed out that young people may know very little about the issues surrounding the Iran Nuclear Agreement. Audience member and Campus Outreach Worker for Jewish Arizonans on Campus, Chana Goldstein, 40, stated: “On [the ASU campus] it is really important that we talk about the deal because this is the future of our leadership. I think that if students want to make a difference, they need to educate themselves. People can do amazing things if they stand up for them.” Although McCain is not optimistic about the agreement, he claimed, “a little prayer doesn’t hurt.”

Museum captures the true ‘spirit’ of the West By Tracy House A lot has changed in Old Town Scottsdale over the 20 years since I lived in “The West’s Most Western Town.” Showing my kids the area and spending time with them at Western Spirit: Scottsdale’s Museum of the West was like turning back the clock and immersing myself in the Wild West. The huge, open and airy museum opened its doors in January with rotating exhibitions of Western art and cultural treasures on loan from some of the world’s foremost collectors and institutions. My daughter, Megan, and son, Jacob, passed a few hours with me roaming through the halls of the building, admiring the numerous paintings, sculptures, artifacts and interactive exhibits throughout the museum. To begin our tour of the 43,000-square-foot museum in Scottsdale’s historic arts district, we followed the wagon wheels suspended from the ceiling. There are eight exhibitions to view, but these change throughout the year to showcase the
artistry from 19 Western states. Walking through the galleries, we were treated to artwork depicting the Lewis and Clark expedition, bronze sculptures, Native American pottery and blankets and of course, the western collection of cowboy artifacts. This was by far my kids’ favorite area. They especially enjoyed a competitive game of “Chutes and Ladders” on the table-size game board decorated with hand-painted waterfalls and Pueblo Indian-style Kiva ladders. Displays of sheriffs’ badges, Old West guns, spurs, saddles, saloon and gambling paraphernalia, playbills from Wild West shows and interactive puzzles piqued their curiosity and kept them engaged. Included were John Wayne’s boots, photos of the Lone Ranger and numerous other Wild West memorabilia in the collected works.
Top: Jacob House takes a moment to rest while out on the trail. The 3-D painting offers a fun photo opportunity. Left: Jacob and Megan House have a competitive game of Chutes and Ladders at one of the interactive displays.
Moving throughout the collections, Jacob was interested in the artwork showcasing a reverse-perspective painting, an optical illusion, and found it engaging to study the examples on display. There are numerous photo opportunities and Megan made friends with a bison on loan in the hallway near the courtyard.

EAST VALLEY MOMS
slices of life By Jill Pertler
A letter to me 20 years ago We all change a little each day. Our experiences mold us. I’m not the same person I was 20 years ago—and I’m not just referring to my pants size. It would be interesting (to say the least) if we could go back and talk to the person we were two decades ago. What advice and insight would we give? And would the person we were then listen to us now—or not? Dear me from 1995, You are embroiled in the business and “busyness” of parenting. Two young children depend on you and you’re about to top that off with a couple more in the coming years. I know. It sounds overwhelming, but you can do it. Sleep is overrated anyway and adult naps were invented for a reason.
You feel as though this stage and their neediness will never end. Believe me, it will. You might think you know it all at this point (that’s one thing that hasn’t changed about us during the last 20 years) but you don’t. Not really. We never do. But I do have a few snippets of knowledge that might benefit you now and in the years to come. First, I have some good news: They will grow up. You will sleep through the night on a regular basis and as an added bonus you won’t have to set a substantial portion of your weekly spending toward diapers. Next, I have some bad news: they will grow up. It will come more quickly than you ever could have imagined. And as you lie awake in bed at 2 a.m. you will recall their
middle-of-the-night cries with fondness and longing. There will even be times when you wish for it to happen again, maybe just once, to be able to smell their baby breath and remind you that you are a young mama. Even though you will delight in their growth, it will be a pain like you’ve never experienced before. Their dependence—and following independence—defines your being. That is OK. The eventual independence will feel good, after a time. You may even get back to some of the old hobbies that you nearly forgot you used to enjoy—gardening, crafting, your husband. Help your children prioritize. Be kind. The importance of family. Good friends. Good choices. Good grades. Worthwhile activities. Sports. In that order. Teach them to take responsibility for their actions. I fear responsibility is getting lost in our age of
entitlement. “I was wrong,” and “I’m sorry,” are important phrases for them to practice and master. Talk to them. Keep an open dialogue. Answer their questions and they will answer yours. Often this will be at midnight when you are beyond tired or when you have a work deadline that’s overdue. Kids are lots of things, but convenient isn’t one of them. Take the time on their time. It’s all you’ve got. Finally, don’t be too hard on yourself. You’re doing the best you can. You’ve always got tomorrow to be the perfect parent. Thanks for listening. Sincerely, Me from 2015. Pallet Swing
Hooray! It’s finally cooling down. To encourage my kids to spend more time soaking up vitamin D, I decided to build them a new swing out of an old pallet. Pallets are everywhere, and if you play your cards right, you should be able to pick one up for free. If it’s bulk trash time in your neighborhood, you will probably see some sitting in front of your neighbor’s yard or discarded behind stores like Lowe’s or Fry’s. They are also all over Swip Swap and Craigslist. law talk

Sand the edges of the boards to remove splinters and sharp edges. At this point, you can either call the swing finished and move on to the next step or you can apply paint, wood stain or fabric to further smooth out the rough wood. Paint or wood stain can add a really neat look to the swing, especially if you are planning on putting it in your front yard. I opted to use some outdoor fabric I had picked up as a remnant and, folding the edges over so they won’t fray, used decorative nails to hold it in place.

Take advantage of this free wood and get to building! You will need the following: One pallet, 4-#6x3 1/2” wood screws, one box of #6x1” wood screws, hammer, electric drill, saw, sandpaper, rope, optional: outdoor fabric and decorative nails, paint or wood stain.
Step 1 Completely disassemble the pallet. If you have access to a reciprocating saw, you can quickly saw through all the nails holding the pallet together. If you don’t have a reciprocating saw, you can do it old school with the back of a hammer.
Step 5 Unroll your rope and cut it in half, melting the ends to prevent fraying if needed. Tie each rope end to one corner of the long boards used in the frame of the swing. Bring the two ropes together approximately 18" above the frame and tie together, forming a triangle. You may need to do this a couple of times to get the swing to hang evenly. I had my kids stand next to the swing to determine how high to hang it, then used the level app on my phone to make sure it was hanging horizontally.
Step 2 Using the support boards from the middle of the pallet, (usually a 2”x4”) measure and cut two long pieces at 24" and two shorter pieces at 12". Form into a rectangle with the shorter boards on the outside of the longer boards, and screw together, two screws on each corner, using the 3 1/2" wood screws.
Step 3 Cut two 12" boards from the discarded slats and using one screw on each end, attach to the underside of the frame. Flip the swing over. Starting in the middle and working your way to the outside, attach boards to the top of the swing using two screws in each end. You can cut the boards down first or do what I did, attach the boards and then cut them down after everything has been secured. Please note, the best thing about pallets is also the worst thing about pallets—they use cheap wood. Some of the wood is hard and some is soft. Some screws will go in really nicely, others will require more finesse. On the plus side, this isn’t supposed to look like it came out of the Ethan Allen furniture catalog so imperfections are not only okay, they add character!

By Christina Fuoco-Karasinski Comedian/hypnotist Flip Orley understands what it’s like to be in the audience at his shows. In some ways, he’s in the crowd himself, as he watches his hypnotized volunteers act out. “I get to watch the things develop and I get a laugh along with the audience with how creative and interesting the audience members are,” Orley said. Valley residents can get under his spell from Friday, Oct. 16, through Sunday, Oct. 18, when he performs at the Tempe Improv. This is a homecoming performance for Orley, who graduated from Central High School, and attended U of A before finishing at ASU. “It’s always fun for me to come back to Phoenix,” said Orley, who now lives in Louisiana to be with his 10-year-old son. “If it’s not home, it certainly home away from home. It’s a sentimental favorite.” During his shows, Orley isn’t the
type of comic who picks on people for the sake of getting a laugh. He likes his fans to feel like they’re in a safe environment. “That’s never been my attitude,” he said. “I want my audience to have fun and leave the stage and remember the show. I want them say, ‘That was really fun. I’m glad I did it.’ If they weren’t volunteers, I want them to wonder what they would have felt and how they would have responded.” Orley has been interested in hypnosis since elementary school, but didn’t start pursuing it heavily until high school and, even more so, in college. At U of A, he took psychology classes and studied hypnosis “anywhere and everywhere” he could. At that point, he was working with students privately to help them improve memory, sleep and grades, or to decrease stress. “At 18 or 19, I was getting on stage, starting stand-up comedy,” he said. “I was going to school on one hand and doing comedy and doing hypnosis, but not together.”
Mary Lynn’s
It was on a dare that he combined the two. “A guy who I had known and been really good friends with, he was fairly insistent on me trying hypnosis on stage,” he said. “He was pretty persistent. I said to him, ‘If I try it once will you leave me alone?’” Orley contacted a club and had to convince its owner that he was serious about doing a hypnosis-themed comedy show. He offered Orley a spot during a Monday open mic night. “I was surprised that it worked,” he said. “I got volunteers and I was surprised that people came up to me afterward and started offering me jobs for decent money. At the time, I was aggravated that my friend was harassing me, but who knew at the time I would change the focus of what I wanted to do?” While he’s found success as a comedian/hypnotist, Orley said that’s far from his greatest accomplishment. “My son is the best thing I’ve ever done,” he said. “I love being a parent.

Shimogamo Japanese Restaurant recipe corner

Nestled in a tiny space next door to the sprawling C-Fu Gourmet Chinese restaurant, Shimogamo Japanese Restaurant is a must-go destination for lovers of the subtle flavors of Japan. “Shimogamo,” is the name of the district in Kyoto from whence hail the restaurant’s owners, Yoshi and Sanae Otoho. Their family crest adorns the wall behind the sushi bar and the printed menus. The bottom line for great sushi is freshness and quality of aquatic and agricultural ingredients, plus a sushi chef who knows what to do with a knife. The art of the roll is especially demanding. On our recent dinner expedition to Shimogamo, we ordered two simple rolls—plain avocado ($4.50) for the youngest one in the group, and yellowtail ($6.75) for the rest of us—plus a more complex specialty of unagi (fresh water eel) with cucumber ($8). All were wellcomm. spotlight

made, though the proportion of yellowtail-to-rice could have been greater. On a return visit I intend to sample Shimogamo’s nigiri sushi, which includes two items rarely on other menus: buttery albacore and rich escolar. meet your neighbor

The rich flavors of panko shrimp, miso mayo, tobiko and avocado make up the “Shimogamo” roll.
Moving on to small dishes, we ordered fried calamari ($7.50), which my calamari expert at the table pronounced perfectly prepared.
They were fresh and light, not overly breaded or soggy—two common complaints. I went for the Dynamite Lobster ($8). The three of us split a pair of entrees. The Shimogamo steak ($15) was an eight-ounce prime rib eye, marinated in garlic-infused olive oil, then grilled to a tender, medium pinkness and served, Japanese style, off the bone and cut into two-bite squares. The texture of the grilled black snapper in creamy dill sauce ($9.50) was unexpected, Snapper is a delicate fish and apt to flake, but the three small filets on my plate were firm, moist and succulent. I’m not sure how we had room for dessert, but I’m glad we did, because I got to experience cappuccino Jell-O ($5.50). Our waiter assured me it is very popular in Japan. Served with cream and syrup on the side, it is frankly an acquired taste. Go instead for the decadent tempura ice cream ($5.50), scoops of vanilla and green tea encased in crunchy tempura batter. P.S. One of my dinner companions was so impressed, she went back for lunch the next day. If you’re in the mood for an exotic roll, she recommends the house’s special “Shimogamo” roll
For dessert we had the cappuccino Jell-O, with cream and syrup.
($10), a luxurious enfolding of panko shrimps, tobiko (flying fish roe), cabbage, lemon, cucumber with miso mayo and avocado. Although this restaurant is in Chandler, it’s definitely worth the drive. . Shimogamo Japanese

What’s Cooking? By Jan D’Atri
Devil’s Food Chunk Brownies October. It’s a devilish month with ghosts and goblins and such. But I’m being quite the evil one here in my kitchen as I stir up a devilishly delicious treat that takes chocolate brownies to a new level. Not only is there devil’s food cake mix added to the box of brownie mix (my longtime secret to moist brownies), but on top of the cooked brownie, I stack more
chunks of brownie. Then, to make matters even more scrumptious, it is drizzled with a rich and creamy caramel sauce. Oh, I’m such a bad ghoul. If you have a recipe that you think our readers would love to try, email me. While you’re there, check out more recipes and cooking tips at www.jandatri.com.
Chocolate Brownies with Caramel Sauce Drizzle 1/2 cup quick cooking oats 1 box devil’s food cake mix 1 box brownie mix 3 eggs 1 1/2 cups water 2/3 cup vegetable oil 2 tablespoons strong coffee or 2 teaspoons instant espresso 1 tablespoon cocoa powder 2 tablespoons Hershey’s chocolate syrup, optional 1 bag (8 oz.) semisweet chocolate chips 1 1/2 cups chopped walnuts, divided Caramel sauce to drizzle
Preheat oven to 350 degrees. Grease a 9 x 13 shallow baking dish. (Some use a jelly roll baking sheet or quarter sheet pan.) Mix together oats, dry devil’s food cake mix, brownie mix, eggs, water, oil, coffee, cocoa, chocolate syrup, chocolate chips and 1 cup of the walnuts until well blended. (Reserve 1/2 cup walnuts for topping.) Bake according to brownie mix package instructions. (Do not overbake brownies.) When cool, cut in squares. Place three to four squares in freezer. When hardened, cut into 1/2-inch cubes. Drizzle a small amount of caramel sauce over brownies. Place
frozen brownie cubes and walnuts over top. For the Caramel Sauce:
1 cup brown sugar 1 cup boiling water 1 tablespoons butter 1/2 teaspoon vanilla 1/2 teaspoon salt
In a skillet or small pot, combine sugar, boiling water, butter, vanilla and salt. Bring mixture to a boil, stirring to dissolve sugar and cool until thickened. Do not burn bottom of the pan. I wanted to share some tips for making perfect brownies. If you have a Pure Convection element in your oven, use it. It will give you the best even cooking. Also, it’s hard to tell when brownies are done. When the aroma of chocolate coming from the oven hits me, I know the brownies are just about done. Halfway through the baking process, I open the oven and gently pat the top of the brownies. That deflates the air bubble on top and I can tell if the brownies are done. Works perfectly every time and the brownies are never overbaked.
