Keys To Being Successful
From Dr. Chamberlain’s Desktop
R
ecently, I have had the distinct privilege to be asked to write alongside renowned bestselling author, Brian Tracy. This was a life-list opportunity for me to contribute a chapter in his next book. In consideration of that honor, I thought I would summarize a past writing of Mr. Tracy from his book, “Success Mastery Academy.” In this book Brian Tracy describes six Dr. Thomas Chamberlain characteristics of a master achiever. What is it that makes some people so successful? Here they are: 1. They are ambitious. They see themselves capable of being the best. They see themselves with the capacity of being really good at what they do. The word “deserve” comes from two Latin words meaning “from service.” You deserve 100 percent of everything you make and enjoy as long as you get it from serving other people.
2. They are courageous. Successful people work to confront the fears that hold most people back. The two biggest enemies to our success are fear and doubt. When you do something repeatedly, you develop a habit. Make a habit throughout your life of doing the things that scare you. If you do the thing you fear, the death of fear is certain. So face your fear. 3. They are committed. The top people in every field are completely committed. They believe in themselves; they believe in their companies; they believe in their products and services; they believe in their customers. They have an intense belief. We know that there is a one-toone relationship between the depth of your belief and what happens in your reality. 4. They are prepared. Successful people review every detail in advance. They do things that the average person is not willing to do. They make sacrifices the average person is not willing to make. But the difference it makes is extraordinary. Successful people are more concerned about pleasing results than they are about pleasing methods.
Dr. Thomas Chamberlain
5. They are continuous learners. High achievers recognize that if they’re not continually getting better, they’re getting worse. They read, they listen to CDs and they take additional training. The professional never stops learning. 6. They are responsible. 100 percent of us are self-employed—we are presidents of our own personal services corporation. You work for yourself, and the biggest mistake we can ever make is to think we work for anyone else. The person who signs our paycheck may change, our jobs may change, but we are always the same. We are the one constant. You’re the president of your own career, your own life, your own finances, your own body, your own family, your own health. I’m pleased to announce that our recent book with Brian Tracy has been released and has reached the bestseller list on Amazon. You can buy “Success Today” at any online or bookstore retailer, or you can call my office at 480.899.9423 and I can get a signed copy of the book for you for only $8. This could be your book that will change your life for the better.

People who have lost teeth might often feel too self-conscious to smile or talk in public. Additionally, early tooth loss can change eating habits and facial appearance and lead to secondary health problems. Although you have a number of options for the replacement of missing teeth, none have proven to be as functionally effective and durable as dental implants. In many cases, dental implants are the only logical choice for the restoration of all necessary functioning of the teeth and supporting structures; dental implants provide a simple remedy with proven results. Dental implants are stronger and more durable than bridges and dentures. Implants offer a permanent solution to tooth loss and are changing the way people live. They are designed to provide a foundation for replacement teeth which look, feel and function like natural teeth. They are proven to preserve the jaw bone, gums and the adjacent natural teeth. The person who has lost teeth regains the ability to eat virtually anything, knowing that their teeth appear natural and that their facial contours will be preserved. We offer state-of-the-art technologies and Dr. Shah is constantly implementing the latest techniques to provide you with the best care available. Patients who come to us can smile with confidence. For a consultation, please call Dr. Shah at 480.814.9500. Oral and Maxillofacial Surgeon, Board Certified, American Board of Oral and Maxillofacial Surgery.

After being on the City of Chandler’s wish list for more than 30 years, a new museum is on track to open, with construction slated to begin in fiscal year 2017-18. New track goes the distance at Seton
Seton Catholic Preparatory recently held a blessing ceremony for its new track. Seton Chaplain Fr. Chris Axline was the main celebrant, assisted by Fr. Scott Sperry of Christ the King Catholic Church in Mesa. In attendance were MaryBeth Mueller, superintendent of the Diocese of Phoenix Catholic Schools, Seton Principal Patricia Collins and other administrators and athletics staff, teachers, coaches, students and alumni. The new track at Seton features an all-weather, high-performance surface, two pole vault event areas in the north D-Zone, two long jump event areas (one on each sideline of the football field) and a high jump pad in the south D-Zone. Other improvements to the Sentinel Athletic Complex include a new LED scoreboard, sound system and walkways between the visitor and home bleachers.

Car seat checks in Chandler provided by AAA Arizona Here’s a shocking statistic: Three out of four car seats are installed incorrectly. As a safety advocate, AAA is using National Child Passenger Safety Week—Sept. 13 through Sept. 19—to remind parents and caregivers about the importance of child passenger safety. AAA Arizona is partnering with SafeKids Maricopa County to ensure children in Arizona are buckled in safely. Bilingual child passenger safety technicians will be out at the AAA Chandler branch, located at 4040 W. Ray Rd., Suite 2, from 9 a.m. to 12 p.m. Saturday, Sept. 19, to perform car seat checks and give away free child passenger safety seats to families in need. Children must be present. In honor of Child Passenger Safety Week, AAA reminds parents and caregivers about Arizona laws on child occupant protection: • Car seats: Children up to at least age 2 must ride in a rear-facing car seat. Car seats installed in the center of the back seat—whether front- or rearfacing—are the safest. Even after they
turn 2, children should remain rearfacing until they reach the top height or weight limit allowed by the seat’s manufacturer. Once they outgrow the rear-facing seat, they’re ready to transition to a forward-facing seat with a harness. • When purchasing a car seat, make sure to mail in its registration card so you will be notified of any recalls. Never buy a used car seat, because the history often isn’t known and car seats expire after six years. You can find the manufacture date stamped on the seat. The correct use of a child safety seat reduces the risk of death by as much as 71 percent, according to NHTSA. • Booster seats: Using a booster seat is 60 percent safer for kids than being restrained by a seat belt alone. When children in Arizona turn 5, they can start using a booster seat. Arizona’s child passenger safety law requires children to remain in a booster or child safety seat until age 8 or until the child is at least 4’, 9” tall. • Keep children in booster seats until

they’re big enough to fit properly in a seat belt. For a proper seat belt fit, the lap belt must lie snugly across the upper thighs, not the stomach. The shoulder belt should lie snug across the shoulder and chest and not cross the neck or face. • Seat belts: According to the Centers for Disease Control, seat belts reduce serious crash-related injuries and deaths by about 50 percent. All drivers and front-seat passengers must wear seat belts in Arizona. Kids younger than 12 should ride in the back seat with seat belts on because it’s safest. AAA Arizona has certified car seat technicians in Phoenix to help install and inspect car seats to make sure they are being used properly. Visit www. AAA.com/childsafety to learn more.

Engineering for Kids classes open By Tracy House Children innocently assemble LEGO without realizing the talent it is creating. Others wonder how their video games were made. Now, kids can put their creative minds and curiosity to good use during the Engineering for Kids program, which is held at Makutu’s Island and Primavera Learning Center. Engineering for Kids is bringing together the concepts that kids learn in school and applying it to hands-on activities, thereby inspiring the next generation of engineers, according to Ron Hoagland, owner and director. Children as young as 4 and as old as 14 can participate. “There’s not a lot for the younger age group that introduces engineering at such a young age,” Hoagland said. “If there’s a field of engineering out there, we probably have a program for it.” Engineering for Kids offers engineering classes and numerous technology classes that introduce kids to programming, concepts and graphic design through video game design. Using science, technology, engineering and math (STEM) programs provide an enrichment opportunity for students. Parents can choose one class, pay for their kids to take all the classes, or mix it up as children go along, “We have a different theme every day of the week,” Hoagland said. “The classes are designed to be eight-week classes.” Afterschool programs are for kids

7 years and older. Hoagland said the ratio of students to teacher is 12 to 1. Teachers are typically from ASU’s engineering and education programs and receive training in classroom management, subject matter and curriculum. Hoagland opened Engineering for Kids in January 2014, and it is part of the franchise that began in 2009. Today, Engineering for Kids is in 34 states and seven countries. Hoagland comes from a corporate background, but said it’s exciting to part of the engineering field. “This is an area of opportunity where we can make a strong impact,” he said.
How to attend Engineering for Kids follows the Kyrene School District calendar. Monday, Oct. 5, through Friday, Oct. 9, is the fall break camp at Makutu’s Island, 6919 W. Ray Rd., for kids age 4 and older. The full-time structured afterschool program for fall begins Monday, Oct. 12, at Makutu’s Island and Primavera Learning Center, 2451 N. Chandler resident and Miss Maricopa County Christina Tetreault as well as Kelsey Oney, director of marketing for Value Trend Solutions, are both survivors of suicide loss. To kick off its new organization, The Commit Campaign, the duo hosting expensive homes is looking back the inaugural Commit Campaign Fashion Show. The event is set for 7 p.m. to 10 p.m. Friday, Sept. 25, at Boondocks Patio and Grill, 4341 N. 75th St., Scottsdale. Tickets are $25. To purchase tickets, visit http://bit. ly/1Oj7PL3. Halloween is approaching. Will you be trick-or-treating with the kids or going to a neighborhood celebration? While trick-or-treating numbers are declining, we’re fond of the annual tradition. Just be sure to walk with your kids to be safe! It’s time to schedule that babysitter. Now! Oktoberfests are in full swing, and while some are kid-friendly, maybe it’s best leave the little ones home while you hop on over to SanTan Brewing Company’s version in Chandler, or the Valley’s classic Tempe Town Lake Oktoberfest. Organ Stop Pizza in Mesa will be celebrating its 20th year at its current location. The restaurant-meets-musicvenue will offer 1995 pricing! A fourtopping pizza is just $13.59, rather than the normal $18.99, so now is a great time to get dinner and show at this historic East Valley landmark.
on the free event, call (480) 855-3539. To become a sponsor of the event or to apply as a new artist, visit www. downtownchandler.org/artwalk. Surprisingly, tickets are still available for Slash’s Tuesday, Oct. 20, show at Wild Horse Pass Hotel and Casino. We thought for sure that would be an immediate sellout. Speaking of Wild Horse Pass, don’t forget that Donny Osmond has postponed his show until Friday, Jan. 8, after he was diagnosed with a vocal cord polyp. A full recovery is expected. Now here’s a deal. Social Box is offering 1-cent beer every time a patron’s favorite NFL team scores a TD. All you need to do is pay $7 and tell them your favorite team. While we’re on the food and drink tip, The Perch is hosting a Sierra Nevada beer brunch at 11 a.m. Saturday, Sept. 26. James Conery, assistant brewer and barrel master for the California brewery, is the special guest. The meal will include crab cake Benedict with Pale Ale Hollandaise; Oktoberfestbraised porkbelly with Hatch chili egg potato grenade, Norwhal mousse parfait; grilled broccoli and kohlrabi frittata with cashew reduction and house queso fresco. Brunch is $35. For more information, visit https://www. facebook.com/perchpubbrewery.
Popular downtown Chandler restaurant Coach & Willie’s closed recently due to landlord-tenant dispute. Rumor has it the eatery is planning on reopening it soon. The City of Chandler and the Human Relations Commission are celebrating Hispanic Heritage Month through several community events, to honor the contributions of Chandler’s Latino residents. It begins with the Chandler Art Walk from 6 p.m. to 10 p.m. Friday, Sept. 18, on the west side of Dr. A.J. Chandler Park. In honor of Hispanic Heritage Month, there will be live entertainment by Ballet Folklorico Quetzalli-AZ and live music by Rumba Mezcal, as well as additional Latino art vendors, who will accompany the traditional Art Walk line-up. Shivani Dallas has proven herself to be an exceptional realtor. My husband and I recently decided to sell our home. Like most people, we were concerned that our house may be on the market for a while. Others in our neighborhood had struggled with selling their own homes, and we hoped to be able to avoid such circumstances. Shivani was able to sell our home within nine days, at a price better than expected. It is not often, in our experiences, that realtors have lived up to their claims; Shivani most certainly has. Learn how to survive the flu season naturally By Tracy House With the cooler temperatures come the beginning of cold and flu season. Kids come home with fevers and sniffles, that pesky sore throat and a cough that comes out of nowhere. To prevent this, most people get flu shots. However, there are alternatives. Desert Health Specialists in Chandler is hosting the free seminar “Surviving Flu Season, Naturally” Tuesday, Oct. 6. “You can read reports on it,” said Dr. Nathan Papadeas, who is presenting the seminar with fellow naturopath Dr. Joelle Fox. “It’s like a 50-50 shot sometimes, getting the flu shot, whether you get the flu or not. We try to guide people in directions of different supplementations that we use, how to boost their overall immune system and health that prevent the flu.” The “Surviving Flu Season, Naturally” seminar is 6 p.m. to 7 p.m. Tuesday, Oct. 6, at the Desert Health Specialist office, 2905 W. Warner Rd., Suite 23, Chandler.
RSVP to yourhealth@nmd.com, or call (480) 237-3889. For more information, visit www.deserthealthspecialists.com. The discussion will focus on the flu shot’s side effects and why it isn’t beneficial for some individuals. It will also explore why some people get the flu after being vaccinated and alternative treatments to the vaccine. The duo will present both sides of the issue, as well as conventional and alternative treatments, so that attendees can make an informed decision. “We’ll present the alternative side and how we can boost your immune system and get you through the flu season naturally,” Fox said. “We’ll also talk about the pros and cons of the flu shot. Even though we’re not necessarily for the flu shot, we’re not going to be pushing it one way or the other. We’re leaving it up to the patient. We’re just there to present information for both sides.” Included in the presentation will be ways to minimize exposure. “It’s not just the flu shot or supplements,” Papadeas

said. “It’s about proper hygiene, diet, supplementation, foods to boost your immune system.” The symptoms of cold and flu are similar, but Fox explained the flu can manifest as abdominal discomfort and can be a rapid attack with body aches, whereas the common cold can be a runny nose, a sore throat, fever and headache
and last longer. Desert Health Specialists offer monthly presentations for the community to gain information about natural and alternative medical treatments. A free, 15-minute phone consultation is available for anyone interested in getting more information about the practice and treatments.

Museum captures the true ‘spirit’ of the West By Tracy House A lot has changed in Old Town Scottsdale over the 20 years since I lived in “The West’s Most Western Town.” Showing my kids the area and spending time with them at Western Spirit: Scottsdale’s Museum of the West was like turning back the clock and immersing myself in the Wild West. The huge, open and airy museum opened its doors in January with rotating exhibitions of Western art and cultural treasures on loan from some of the world’s foremost collectors and institutions. My daughter, Megan, and son, Jacob, passed a few hours with me roaming through the halls of the building, admiring the numerous paintings, sculptures, artifacts and interactive exhibits throughout the museum. To begin our tour of the 43,000-square-foot museum in Scottsdale’s historic arts district, we followed the wagon wheels suspended from the ceiling. There are eight exhibitions to view, but these change throughout the year to showcase the
artistry from 19 Western states. Walking through the galleries, we were treated to artwork depicting the Lewis and Clark expedition, bronze sculptures, Native American pottery and blankets and of course, the western collection of cowboy artifacts. This was by far my kids’ favorite area. They especially enjoyed a competitive game of “Chutes and Ladders” on the table-size game board decorated with hand-painted waterfalls and Pueblo Indian-style Kiva ladders. Displays of sheriffs’ badges, Old West guns, spurs, saddles, saloon and gambling paraphernalia, playbills from Wild West shows and interactive puzzles piqued their curiosity and kept them engaged. Included were John Wayne’s boots, photos of the Lone Ranger and numerous other Wild West memorabilia in the collected works.
Top: Jacob House takes a moment to rest while out on the trail. The 3-D painting offers a fun photo opportunity. Left: Jacob and Megan House have a competitive game of Chutes and Ladders at one of the interactive displays.
Moving throughout the collections, Jacob was interested in the artwork showcasing a reverse-perspective painting, an optical illusion, and found it engaging to study the examples on display. There are numerous photo opportunities and Megan made friends with a bison on loan in the hallway near the courtyard.

slices of life By Jill Pertler
A letter to me 20 years ago We all change a little each day. Our experiences mold us. I’m not the same person I was 20 years ago—and I’m not just referring to my pants size. It would be interesting (to say the least) if we could go back and talk to the person we were two decades ago. What advice and insight would we give? And would the person we were then listen to us now—or not? Dear me from 1995, You are embroiled in the business and “busyness” of parenting. Two young children depend on you and you’re about to top that off with a couple more in the coming years. I know. It sounds overwhelming, but you can do it. Sleep is overrated anyway and adult naps were invented for a reason.
You feel as though this stage and their neediness will never end. Believe me, it will. You might think you know it all at this point (that’s one thing that hasn’t changed about us during the last 20 years) but you don’t. Not really. We never do. But I do have a few snippets of knowledge that might benefit you now and in the years to come. First, I have some good news: They will grow up. You will sleep through the night on a regular basis and as an added bonus you won’t have to set a substantial portion of your weekly spending toward diapers. Next, I have some bad news: They will grow up. It will come more quickly than you ever could have imagined. And as you lie awake in bed at 2 a.m. you will recall their

middle-of-the-night cries with fondness and longing. There will even be times when you wish for it to happen again, maybe just once, to be able to smell their baby breath and remind you that you are a young mama. Even though you will delight in their growth, it will be a pain like you’ve never experienced before. Their dependence—and following independence—defines your being. That is OK. The eventual independence will feel good, after a time. You may even get back to some of the old hobbies that you nearly forgot you used to enjoy—gardening, crafting, your husband. Help your children prioritize. Be kind. The importance of family. Good friends. Good choices. Good grades. Worthwhile activities. Sports. In that order. Teach them to take responsibility for their actions. I fear responsibility is getting lost in our age of
entitlement. “I was wrong,” and “I’m sorry,” are important phrases for them to practice and master. Talk to them. Keep an open dialogue. Answer their questions and they will answer yours. Often this will be at midnight when you are beyond tired or when you have a work deadline that’s overdue. Kids are lots of things, but convenient isn’t one of them. Take the time on their time. It’s all you’ve got. Finally, don’t be too hard on yourself. You’re doing the best you can. You’ve always got tomorrow to be the perfect parent. Thanks for listening. Sincerely, Me from 2015. To encourage my kids to spend more time soaking up vitamin D, I decided to build them a new swing out of an old pallet. Pallets are everywhere, whether discarded behind stores like Lowe’s or Fry’s, one of your neighbors is remodeling or you are checking Swip Swap and Craigslist, they are very easy to find. You will need the following: One pallet, 4-#6x3 1/2" wood screws, one box of #6x1" wood screws, hammer, electric drill, saw, sandpaper, rope, optional: outdoor fabric and decorative nails, paint or wood stain. law talk

Step 2
480-384-9911
Using the support boards from the middle of the pallet, (usually a 2"x4") measure and cut two long pieces at 24" and two shorter pieces at 12". Form into a rectangle with the shorter boards on the outside of the longer boards, and screw together, two screws on each corner, using the 3 1/2" wood screws.
Step 3 Cut two 12" boards from the discarded slats and using one screw on each end, attach to the underside of the frame. Flip the swing over. Starting in the middle and working your way to the outside, attach boards to the top of the swing using two screws in each end. You can cut the boards down first or do what I did, attach the boards and then cut them down after everything has been secured.
Step 4 Sand the edges of the boards to remove splinters and sharp edges. At this point, you can either call the swing finished and move on to the next step or you can apply paint, wood stain or fabric to further smooth out the rough wood. Paint or wood stain can add a really neat look to the swing, especially if you are planning on putting it in your front yard. I opted to use some outdoor fabric I had picked up as a remnant and, folding the edges over so they won’t fray, used decorative nails to hold it in place.
Step 5 Unroll your rope and cut it in half, melting the ends to prevent fraying if needed. Tie each rope end to one corner of the long boards used in the frame of the swing. Bring the two ropes together approximately 18" above the frame and tie together, forming a triangle. You may need to do this a couple of times to get the swing to hang evenly. I had my kids stand next to the swing to determine how high to hang it, then used the level app on my phone to make sure it was hanging horizontally.

Chandler Center for the Arts brings the best in arts culture By Kenneth LaFave The performing arts season is back. Time to get out and celebrate all that is creative. The Chandler Center for the Arts has a national and even international lineup waiting for you, as it presents a circus from Italy, ballet companies from Russia, tenors from Texas and Shakespeare from Utah. CCA General Manager Michelle Mac Lennan said the season boasts artists from France, New Zealand, Russia, Spain, Mexico and Quebec— not to mention the East Valley. “We will feature new artist collaborations, award winners, virtuosic performers and stars of comedy and stage,” Mac Lennan said. Is the focus on international acts a deliberate change for CCA? “It is a conscious new turn. We have yet to identify it as a targeted niche market, but depending on how it goes, I see us expanding it more,” Mac Lennan said. “I recommend seeing something you have never seen before, such as Cirque Alfonse (Jan. 17). This is a young circus company from SaintAlfonse Rodriquez in the province of Quebec. Its founding members have all worked with some of the most renowned ‘nouveau cirque’ companies around the world.” At the opposite end of circus sensibility is the 173-year-old Zoppé Family Circus, from Italy, on the CCA grounds Dec. 22 through Jan. 3. Page 22
Anchored by six free concerts of the Chandler Symphony Orchestra, the 2015-16 season at CCA also features a raft of classic pop acts including ‘60s urban soul pioneers Tower of Power (Nov. 7), ‘60s crooner Frankie Avalon (Feb. 20), and the Grammy Awardwinning vocal quartet The Manhattan Transfer (Feb. 14). Three Russian dance troupes will appear. The Russian Grand Ballet will perform “Swan Lake” Oct. 2; National Dance Company of Siberia presents modern dance Nov. 15; and Moscow Festival Ballet stages “Don Quixote” Jan. 29. East Valley dance company Ballet Etudes will produce its 29th annual “Nutcracker” from Nov. 27 to Dec. 6, and Chandler’s 16th annual Mariachi Festival, highlighting the vibrant music and dances of Mexico, is scheduled for Oct. 3. March will be rich in theater, when the Utah Shakespeare Festival presents “Hamlet” (March 4), followed by “Tony ‘n Tina’s Wedding,” March 8 through March 13. A range of vocal stylings will include the world-music sounds of Gaelic Storm (Nov. 20) and the unlikely crossover of country-and-classical ensemble The Texas Tenors (Dec. 18). By Christina Fuoco-Karasinski Martin Fry and his band ABC have traveled the world, thanks to the ‘80s hits “Poison Arrow” and “Be Near Me.” Despite the hundreds of locales, Fry vividly remembers a 1982 gig in Phoenix. “We had a 14-piece band,” Fry said via telephone from England. “We had sparkly outfits. We were kind of ‘new romantics’ conquering America. “Then we had to open for a heavy metal band. We had a lot of success in Britain and it was our first date in the U.S. That brought us down to earth.” Since then, Fry said, the band has “obviously been through many adventures.” Among those, playing “When Smokey Sings,” “Poison Arrow” and “Look of Love” on U.S. stages. Performing in the United States has afforded ABC the chance to spread its wings. “There are a couple songs that we never play in the U.K. that we get to play in the U.S.A.,” he said. “‘Be Near
Me’ was a big hit in the U.S.A., but not at home. So we get to dust that down and play. “We never play that song (in the United Kingdom), though. It’s like having two careers. The gigs in the U.S. have been fantastic. Many years have rolled on. We’re still energetic and the music means something in 2015. That’s why we’ve been putting dates down through September/ October time.” That includes “Lost ‘80s Live” with other stalwarts from that decade like Wang Chung, A Flock of Seagulls, Christopher Anton of Information Society and Boys Don’t Cry. It is set for Saturday, Oct. 10, at Wild Horse Pass Hotel and Casino. “I’ve played a lot of multi kind of band gigs before and it’s a lot of fun,” Fry said. “There’s a tiny little competitive edge between the acts, which means everybody’s up for it. They want to maximize the applause in a way.” Besides playing gigs like “Lost ‘80s Live,” Fry has been writing new
Mary Lynn’s
songs for a sequel to the album “Lexicon of Love,” which spawned the hits “Look of Love” and “Poison Arrow.” Orchestral music will be featured on the new collection. “The album is about what it’s like to be the age I’m at now and looking at love and all its manifestations,” he said. “I’m in my mid50s, you have to be very inspired to make a record. I saw that New Order just put Martin Fry performs with ABC on Saturday, Oct. 10. an album out. U2, Lost ‘80s Live begins at 8 p.m. too, of course. Those guys are my contemporaries. If you’re an artist in Saturday, Oct. 10, at Wild Horse your 50s you have to be on fire. You Pass Hotel and Casino’s Ovations gotta show up with a very strong Live Showroom, 5040 W. Wild Horse selection of songs to justify making Pass Blvd., Chandler. Tickets are $39 a record because it’s a young man’s to $99. Chandler, you have your answer to North Scottsdale’s Hiro Sushi and Hana in Central Phoenix. Nestled in a tiny space next door to the sprawling C-Fu Gourmet Chinese restaurant, Shimogamo Japanese Restaurant is a must-go destination for lovers of the subtle flavors of Japan. “Shimogamo,” is the name of the district in Kyoto from whence hail the restaurant’s owners, Yoshi and Sanae Otoho. Their family crest adorns the wall behind the sushi bar and the printed menus. The bottom line for great sushi is freshness and quality of aquatic and agricultural ingredients, plus a sushi chef who knows what to do with a knife. The art of the roll is especially demanding. On our recent dinner expedition to Shimogamo, we ordered two simple rolls—plain avocado ($4.50) for the youngest one in the group, and yellowtail ($6.75) for the rest of comm. spotlight

us—plus a more complex specialty of unagi (fresh water eel) with cucumber ($8). All were well-made, though the proportion of yellowtail-to-rice could have been greater. On a return visit I intend to sample Shimogamo’s nigiri sushi, which includes two items rarely meet your neighbor

on other menus: buttery albacore and rich escolar. Moving on to small dishes, we ordered fried calamari ($7.50), which
my calamari expert at the table pronounced perfectly prepared. They were fresh and light, not overly breaded or soggy—two common complaints. I went for the Dynamite Lobster ($8). The three of us split a pair of entrees. The Shimogamo steak ($15) was an eight-ounce prime rib eye, marinated in garlic-infused olive oil, then grilled to a tender, medium pinkness and served, Japanese style, off the bone and cut into two-bite squares. The texture of the grilled black snapper in creamy dill sauce ($9.50) was unexpected, Snapper is a delicate fish and apt to flake, but the three small filets on my plate were firm, moist and succulent. I’m not sure how we had room for dessert, but I’m glad we did, because I got to experience cappuccino Jell-O ($5.50). Our waiter assured me it is very popular in Japan. Served with cream and syrup on the side, it is frankly an acquired taste. Go instead for the decadent tempura ice cream ($5.50), scoops of vanilla and green tea encased in crunchy tempura batter. P.S. One of my dinner companions was so impressed, she went back for lunch the next day. If you’re in the mood

What’s Cooking? By Jan D’Atri
Devil’s Food Chunk Brownies October. It’s a devilish month with ghosts and goblins and such. But I’m being quite the evil one here in my kitchen as I stir up a devilishly delicious treat that takes chocolate brownies to a new level. Not only is there devil’s food cake mix added to the box of brownie mix (my longtime secret to moist brownies), but on top of the cooked brownie, I stack more
chunks of brownie. Then, to make matters even more scrumptious, it is drizzled with a rich and creamy caramel sauce. Oh, I’m such a bad ghoul. If you have a recipe that you think our readers would love to try, email me. While you’re there, check out more recipes and cooking tips at www.jandatri.com.
Chocolate Brownies with Caramel Sauce Drizzle 1/2 cup quick cooking oats 1 box devil’s food cake mix 1 box brownie mix 3 eggs 1 1/2 cups water 2/3 cup vegetable oil 2 tablespoons strong coffee or 2 teaspoons instant espresso 1 tablespoon cocoa powder 2 tablespoons Hershey’s chocolate syrup, optional 1 bag (8 oz.) semisweet chocolate chips 1 1/2 cups chopped walnuts, divided Caramel sauce to drizzle
Preheat oven to 350 degrees. Grease a 9 x 13 shallow baking dish. (Some use a jelly roll baking sheet or quarter sheet pan.) Mix together oats, dry devil’s food cake mix, brownie mix, eggs, water, oil, coffee, cocoa, chocolate syrup, chocolate chips and 1 cup of the walnuts until well blended. (Reserve 1/2 cup walnuts for topping.) Bake according to brownie mix package instructions. (Do not overbake brownies.) When cool, cut in squares. Place three to four squares in freezer. When hardened, cut into 1/2-inch cubes. Drizzle a small amount of caramel sauce over brownies. Place
frozen brownie cubes and walnuts over top. For the Caramel Sauce:
1 cup brown sugar 1 cup boiling water 1 tablespoon butter 1/2 teaspoon vanilla 1/2 teaspoon salt
DO YOU HAVE LOWER DENTURES THAT DON'T FIT? MISSING TEETH? TALK TO US ABOUT IMPLANTS!
In a skillet or small pot, combine sugar, boiling water, butter, vanilla and salt. Bring mixture to a boil, stirring to dissolve sugar and cool until thickened. Do not burn bottom of the pan. I wanted to share some tips for making perfect brownies. If you have a Pure Convection element in your oven, use it. It will give you the best even cooking. Also, it’s hard to tell when brownies are done. When the aroma of chocolate coming from the oven hits me, I know the brownies are just about done. Halfway through the baking process, I open the oven and gently pat the top of the brownies. That deflates the air bubble on top and I can tell if the brownies are done. Works perfectly every time and the brownies are never overbaked.
