T
hanks to a longtime source, I have a major scoop as I have obtained a verified copy of the following letter from Dr. Claus to Mr. Santa Claus.
North Pole / Claus Haus December 24, 2020 Dear Nick, Let me come right out and say it: the first thing I have on my wish list this year is to leave you. After 1,750 years of marriage, it is way past time I leave. In truth, I haven’t loved you for 1,749 of those years, but for the sake of appearances I have hung onto an icy marriage. Why now? What was the icicle that broke the reindeer’s back? It was when I discovered that you were the source of the COVID-19 virus. Talk about being a “Super Spreader!” In 2019, I begged you to let me deliver the gifts. After all, it has always been I and the elves who’ve done everything as you grabbed the credit. Nevertheless, you had a fever, could barely breathe and sounded like you were hacking up a lung, all while watching Fox News nonstop. But nooooo… you had to put on your red “Make The North Pole Great Again” Santa hat and go on your yearly “Ho, Ho, Ho!” tour, which turned into the “Hack, hack, hack!” tour. Do you have any idea how many droplets you spread that night? You started a worldwide pandemic, Mr. Kris “I won’t wear a mask because it’s too sissy” Kringle. I’m leaving you for my childhood sweetheart, Lucia Barbrödottir, back in Norway. And might I remind you that Norway is a socialist/ capitalist hybrid, so you can put that in your right-wing extremist pipe and smoke it. And feel free to stuff that into your pal Lou Dobbs’ stocking. Lucia and I have been corresponding for centuries. She thinks I’m beautiful and tells me so. We luxuriate in the scent of our lavender sachets. We stare into each other’s deep blue eyes and exult in the cobwebs of wrinkles on our faces while enjoying our amply upholstered bodies. Speaking of which, how dare you fat-shame me all these years, even though you haven’t seen your own Yule log for centuries. Regarding the “Rona,” you didn’t have the common decency to bust yourself. Instead, you let the Chinese take the blame, and they don’t believe in you! Even worse, you stayed quiet while Drumpf—the ultimate phony-baloney patriarchal jerk—started calling it the Kung Flu. Shame on you for passing up ample opportunities to correct that hateful, racist rhetoric. Just like many of the cowardly, sniveling U.S. Republicans, you stayed silent. I know I will get hate mail for divorcing you, instead of you being correctly vilified for your double life. I’m done with your white cis male privilege. I’m taking the reindeer calves with me. You can keep your igloo-style monstrosity of a McMansion, built with unpaid labor. Although I don’t want spousal support, I want you to finally give the elves
a standard living wage. If you don’t, I’ll be busting you with the newly revitalized International Union of Allied Novelty and Production Workers. I remember you when you were young and generous. How you saved those Turkish Christian daughters from the sex trade by providing their dowries. That was the Nick I loved. From then on, it was downhill. How could you sell your soul to Satan? He suckered you into using the same letters as his name to come up with Santa; I saw through that immediately… why didn’t you? And what about your sadistic mean streak of putting coal in the shoes of poor children? Guilting kids into living a confining binary of naughty or nice? You’re one to talk. Who do you think you are to scar children that way, when in fact, all of us are on the naughty-nice spectrum! If you had a conscience, you would volunteer to dispense the vaccine since you already have a worldwide distribution system anyway. I won’t be holding my breath. Don’t contact me, and for goodness’ sakes, do not come down Lucia’s and my chimney. I’m going Full Pagan and worshiping the Norse Goddess Elle, Goddess of Age and Wisdom. You may not be aware of her any longer since you helped usher her into obscurity. She’s the goddess who, as an old woman, was so powerful she wrestled that upstart Thor to the ground without hurting him! She simply put him in his place. Now he’s got billion-dollar movies, and Elle only has a niche magazine. Ugh. Sexism, racism, materialism need to go, and now, so do you. Sincerely, The woman formerly known as Dr. Claus. I am now Dr. Elle Glade Busker (Norwegian for Dr. Elle Happy Pants) P.S. Enjoy your last plate of Snicker Doodles. P.P.S. And yes, my two Ph.D.s in home economics and business administration allow me to use “Dr.” as an honorific, Mr. Couldn’t-bebothered-with-education. n Ellen Snortland has written “Consider This…” for a heckuva long time, and she also coaches first-time book authors! ROSE PARADE CONTINUES WITH TELEVISED CELEBRATION BY JANA MONJI
A
s Pasadena residents know, the city ushers in the New Year with a day-long celebration. First there’s a parade that starts at 8 a.m. PST and then there’s the Rose Bowl game. Due to California’s COVID-19 restrictions, the game has been moved to Arlington, Texas, home of the yellow rose, but the Rose Parade’s time slot will be filled by “The Rose Parade’s New Year Celebration Presented by Honda” from 8 to 10 a.m. on January 1. The special will not only offer entertainment, but also honor health workers and provide an opportunity to give locally. Under the guidance of a long-time Tournament of Roses Association volunteer and current president Bob Miller and the relatively new-at-the-helm executive director and CEO David Ead, the Tournament of Roses has navigated these unusual circumstances by raising their community involvement. Airing on ABC, NBC, KTLA, the Hallmark Channel, RFD-TV and Univision, the two-hour special will include musical and marching band performances, behind-the-scenes footage and highlights from the past, but also special guest appearances. “We have produced a television spectacular with a huge list of A-talent,” Miller said. Nine-time Grammy Award winner Sheryl Crow, seven-time Grammy Award-winning Lady A, Grammy Award-winner Tori Kelly and Grammy Award nominee Mickey Guyton are among the scheduled musical performers. Past Rose Parade grand marshals Gary Sinise (2018), EGOT awards winner Rita Moreno (2019), Olympic gold medal gymnast Laurie Hernandez (2019) and chef and restaurateur Emeril Lagasse (2008) will be among the celebrities making an appearance. The upcoming celebration will not have a grand marshal or queen. Longtime Rose Parade participants will be featured as well. There will be a behind-thescenes look at Cal Poly students and how they organize and construct a float. The City of Hope will feature its doctors, nurses and cancer survivors. UPS will highlight its dedication to literacy. All the bands that were scheduled to perform have been invited back for 2022, but the graduating seniors will be spotlighted in a virtual performance of “Everything’s Coming up Roses.” The decision to cancel the Tournament of Roses Parade wasn’t taken lightly. “When the pandemic hit in mid-March and we got the stay-at-home orders, I think like most people we thought it would be two or three weeks and things would be back to normal,” Eads said. “By mid-April, we started meeting to really discuss: Could this have an impact on the 2021 Rose Bowl and Parade?” That meant reaching out the LA County and Pasadena Health departments and the governor’s office. “We also knew we were approaching deadlines for the bands to book air travel, to book hotels,” Eads said. Other deadlines included float builders and their orders for floral and organic materials. “Moving into May, we knew that the pandemic was going to be much longer than expected. We began to build a timeline for decision-making.” For the parade and the bowl, California had to be at Stage 4 reopening for mass gathering events. The association reached out to the USC Keck School of Medicine, asking a team of medical experts, including epidemiologists, “to evaluate whether Pasadena would be at Stage 4 on January 1.” Their conclusions weren’t good. “With that scientific evidence and data, we made the decision in early July and as things have played out, that report was correct,” Eads said. Eads is a relative newcomer to the Tournament of Roses, taking his current position in February 2017 after serving on the Board of Directors of the Southern California Leadership Network for 13 years. 6 PASADENA WEEKLY | 12.24.20

Eads graduated from Wichita State University and been the executive vice president and COO of the Wichita Convention & Visitors Bureau before coming to the Los Angeles area in 2000. He remembers growing up in the Midwest and watching the Rose Parade and the Rose Bowl game as part of a family tradition. He never dreamed he’d be part of it. It wasn’t until he came to Southern California and settled in the Pasadena area that he became aware that people camped out Sheryl Crow overnight to secure a seat on the sidewalk for the Rose Parade. He recalls being “blown away not just by the size of the crowds, but by atmosphere on New Year’s Day, the energy of the crowd” and the multigenerational nature of the event. During his first years in California, Eads recalled wearing shorts to enjoy the festivities. “Back home, it might be 5 degrees in snow and ice” but in Pasadena, it might be 70 degrees. The good weather and beautiful blue skies are what makes the Rose Bowl and Rose Parade. Now, 20 years later, his blood has thinned and he’s less impervious to the cold of Southern California, but he still enjoys the whole Pasadena-style New Year even though his day will start at 4 a.m. and end at 7 p.m. Miller has been in Pasadena since he was 14. Association members Pete Arnold and later Dick Ratliff helped Miller get involved with the association in 1984. Miller worked at Pasadena City College for 10 years, last serving as superintendent and president for the 2014 academic year before leaving to become the vice chancellor in finance and resource development for the Los Angeles Community College District. At the end of last year, Miller retired from his 43-year career in community college education “for the purposes of being president. I needed time to do what I call the ambassador-in-chief role of the president, to travel to all our band locations and help with fundraising.” That amounts to 17 to 22 trips, domestic and international. That couldn’t happen under COVID-19 restrictions. While most presidents serve for only one year, Miller’s appointment will roll over into 2022. He, his wife of 45 years, Barbara, with their kids will get that iconic ride down Colorado Boulevard in 2022. Miller is incredibly honored to be serving twice and emphasizes that the association is “focused on giving to our community” and is proud how the members have risen to the challenges of the pandemic. Also rolling over is the theme: Dream, Believe, Achieve. Although originally aimed at education, for 2022, the theme will be expanded beyond education. The theme for 2020’s parade was “Hope” and Eads noted that messages of hope from around the world and the theme of the power of hope are included in the television special. The association also wants to give people hope another way. It is partnering with Feeding America, the nation’s largest organization that battles domestic hunger through a chain of food banks. Viewers can give call in and make contributions to help feed their fellow Americans. “The contributions will go locally. It’s our gift to the country; our gift to the world,” Miller said. If you’re in Pasadena or the Los Angeles area, you’ll have an opportunity to take some selfies still. There’s already a large art installation in front of the tournament house that captures the feel of the Rose Parade. After Christmas watch for the Donate Life art installation. “I’ve done my best to keep all of this in perspective, with the death and serious illnesses and the overlay of the financial hardship and financial ruin, the cancelation of the parade and football game at the Rose Bowl are negligible,” Miller said. “All that’s left now is we do our best to manage the fall out and move forward.” Eads and Miller promise something very special for 2022, when the Rose Parade and the Rose Bowl return to Pasadena. n

EVEN WITH COVID-19’S ECONOMIC WOES, THE ROSE BOWL STADIUM CONTINUES TO OPERATE BY MATTHEW RODRIGUEZ
I
t’s been a long time since the Rose Bowl has been this quiet for this long. The iconic stadium has hosted many legendary games in front of packed crowds but now because of the COVID-19 pandemic, the 90,000 seats that surround the field remain empty. “We’ve been devastated,” said Darryl Dunn, general manager of the Rose Bowl Operating Company. “Our financial side [is] pretty much tied to the number of people who come to our venue. The more people who come, typically, the more revenue we generate. So not having the ability to have fans at big events clearly hurts a lot.” The Rose Bowl Operating Company maintains the nearly 100-year-old stadium however the city of Pasadena owns the stadium thus holding it financially responsible. The economic downfall has put the city and the iconic stadium in a precarious situation. In 2005, the Rose Bowl began a $183 million remodel to keep the iconic stadium competitive and future-proof. In normal times, the operating company has kept up with the payments, even showing annual net profits but as COVID-19 ravaged the nation, the Rose Bowl’s profits diminished. According to Dunn, due primarily to COVID the Rose Bowl Operating Company originally forecasted a $16 million deficit. However, with the success of the Brookside Golf Course and the enterprise events, the deficit was cut to $14 million. Still financially responsible for the stadium, Pasadena transferred $11.5 million from the city reserves to keep up with the debt payments in June. Similar to many state orders, California banned stadium events to mitigate the spread of the virus. This meant no fans for football games and no cheering audiences for concerts—essentially an end to all major revenue streams for the Rose Bowl. The Rose Bowl stadium was built on college football. One of the biggest events of the year is the Rose Bowl Game. Titled the “granddaddy of them all” the Rose Bowl game is the oldest college football postseason game after it was first played on January 1, 1902, at the
Rose Bowl’s predecessor, Tournament Park. It would be 21 years until the game was moved from Tournament park to the Rose Bowl Stadium. According to Dunn, the Rose Bowl game consistently fills the stadium to its capacity of 90,000 people and generates a net revenue of $4 to $5 million in a single day. Now with no fans, the stadium stands to barely make anything close to that with just the money coming from TV coverage. After the state denied the Tournament of Roses appeal to allow friends and family in the stadium, the Rose Bowl game moved to AT&T Stadium in Arlington, Texas. Apart from football and concerts, the Rose Bowl continued to operate by hosting numerous enterprise events, with drive-in movies and other events hosted in the parking lots. “At a time when a lot of our peers throughout the country have sort of shut down we’ve continued to operate and have quite a bit of success,” Dunn said. “Does it make up for the loss of football concerts and soccer? No.” With vaccines on the way to Americans across the country, heading into 2021 Dunn believes the return to normalcy will help the Rose Bowl but believes it will still need help from the city. “Now that the vaccine is out, we’re starting to see a light at the end of the tunnel,” Dunn said. “We do feel like we’re heading in the right direction. 2021 is going to be challenging for sure, but we are hopeful. If we’re fortunate—but next football season we’ll be able to fill the stands.” Even with the economic downfall, the empty stands and the uncertainty of the future, the nearly world-famous Rose Bowl is here to stay. “Rose Bowl is not going anywhere,” Dunn said. “We’ve been around 98 years and we’re excited about preparing for 100th.” n
WHERE HAVE THE ROSES GONE? COLLEGE FOOTBALL PLAYOFF MOVED TO ARLINGTON, TEXAS BY CHRISTOPHER FLOCH
T
he COVID-19 pandemic has forced California officials to ban fans at sporting events. Considering that, the College Football Playoff, which was to be held at the Rose Bowl, was relocated to AT&T Stadium in Arlington, Texas. The game is set for January 1 and will be broadcast on ESPN. The game, the first semifinal of the playoffs, pits No. 1-ranked Alabama Crimson Tide against No. 4 Notre Dame Fighting Irish. The Fighting Irish and Crimson Tide have a bowl game history. In the 2012 BCS Title game the Crimson Tide won 42-14. It is not determined if the CFP semifinal in Arlington will be called the CFP Semifinal at the Rose Bowl Game presented by Capital One. The name is a part of the master license agreement and is co-owned by the Pasadena Tournament of Roses and the city of Pasadena. “We know that the decision was not an easy one to make,” said David Eads, Tournament of Roses CEO and executive director. “While we remain confident that a game could have been played at the Rose Bowl Stadium, as evident in the other collegiate and professional games taking place in the region, the projection of COVID-19 cases in the region has continued on an upward trend.” College Football Playoff Executive Director Bill Hancock said the organization is grateful for the Rose Bowl and city of Pasadena officials. “They have worked hard to listen to the concerns of the CFP, the teams that might have played there, and their state and government officials,” Hancock said.
The Tournament of Roses received word late this week that the state of California would not make a special exception for player guests at the game. Additionally, with significant strain on medical resources throughout Los Angeles County, the Tournament of Roses officials said the well-being of the student-athlete needs to come first. Since March, all of California’s sporting events have been unable to host spectators and participant families. The Pasadena Tournament of Roses made its first appeal for a special exception at the Rose Bowl Game in November and made a second request to the state in December. Both requests were denied. The last time the Rose Bowl game was played outside Pasadena was 1942. The game between Oregon State and Duke was played in Durham, North Carolina, because the West Coast was deemed unsafe after the attacks on Pearl Harbor on December 7, 1941. Notre Dame’s Brian Kelly expressed doubts about playing in the Rose Bowl if players’ families couldn’t be in attendance. Texas will allow 16,000 fans. “Why would we play if you can’t have families at the game?” Kelly said. “If you can’t have families at bowl games, why would you go to a game where your families can’t be part of it? What’s the sense of playing a game in an area of the country where nobody can be part of it?” “We’re just happy to be in the game,” said Alabama head coach, Nick Saban. “We knew that we’d be playing against a very good team wherever. I think both venues are outstanding venues and will be a great experience for our players.” n

‘AN ENDING BECOMES A BEGINNING’ ISELA MENA’S DAUGHTER SET TO BE HONORED ON SCULPTURE BY CHRISTINA FUOCO-KARASINSKI
A
Saving lives Isela said LifeShare Transplant Donors Services of Oklahoma was “amazing.” During the three days Mariee was on life support, the organization kept in touch with Isela. “She survived three days,” Isela said. “They asked me if I wanted to bathe her. They gave me a warm washcloth and water and soap and wash her legs and see all those little scars she got when she was little. “She just had a manicure and pedicure. I wiped her face and remembered the chicken pox scar she had on her forehead. I even walked with her down to the operating room.” She donned a blue gown, a cap and booties for the walk. Isela had accompanied her daughter for surgeries before –she tore her ACL and meniscus—but this was different. “I just focused on all the amazing things she did,” Isela said. “The biggest one was she was going to be giving life to others. I was so proud of her. What a selfless act. When we reached the surgery room, they were right there, quietly. I thanked them. I was able to place my hand on her heart and feel it beat one more time. I’ve had that precious memory ever since.” Mariee saved six lives that day, including Krissy Bagley, a then-23-year-old with cardiomyopathy. 8 PASADENA WEEKLY | 12.24.20
From bottom, Rhonda Kingfisher, Renee Burchell and Isela Mena. The three women are bonded by the generosity of Mena’s daughter, Mariee. Mariee died in a motorcycle crash and donated her organs. Burchell’s daughter, Krissy, received Mariee’s heart and Kingfisher’s son, Curtis, received a kidney.
“Krissy calls her heart her ‘forever heart,’” Isela said. “Her mom and I are now BFFs.” A kidney went to Curtis Kingfisher in Oklahoma. He was 12 at the time; he is now 23 and a close member of the Mena family. The family met after Curtis’ dad, Floyd, was reading the newspaper while they were waiting in the recovery room during his son’s transplant. “There was an article about Mariee Mena and her accident,” Floyd remembered. “I think God wanted us to know who Curtis’ donor was.” On October 31, 2009, Make-AWish sent Curtis to the University of Oklahoma to be a Sooner for a Day. He toured the coaches’ offices, the Switzer Center, locker rooms and more. He met the coaches and players and made the coin toss at the start of the game against Mariee Mena played softball for Oklahoma University Kansas State. before she died in a motor“He was so little,” Isela recalled. “We cycle crash. She donated her met him when we traveled to Oklahoma organs. to get our daughter’s things to bring them home. I was scared to meet him. I prayed really hard and the little boy wouldn’t let go of me.” The other kidney went to a 63-year-old female; the liver to a 55-year-old female; and the lung to a 65-year-old female. The pancreas went to diabetes research. “It showed a selfless act of one can change the lives of so many,” Isela said. “An ending becomes a beginning.” n

dam and Isela Mena remember their daughter, Mariee, as having a neverending smile and a contagious laugh. She loved her friends and family, and she had a giving soul. Mariee died three days after sustaining a severe head injury in a motorcycle crash on October 6, 2009, in Oklahoma. The Escondido native was preparing to earn her master’s degree at Oklahoma University when she died at age 26. She just finished her bachelor’s degree at OU, for whom she played softball on a scholarship. “She was a passenger,” Isela said. “In Oklahoma, they don’t have a helmet law. The car just didn’t yield. It was an accident. It wasn’t intentional.” Mariee’s giving nature is eternal. Her final act of giving was offering her organs to those in need. “She was an organ donor,” Isela said. “She placed a little red heart on her driver’s license, indicating she wanted to be an organ donor.” Mariee, whose brother, Steven, lives in Pasadena, will be a fluorograph honoree, which is a deceased donor whose photo is highlighted on a sculpture at Tournament House. She’s honored by LifeShare Transplant Donors Services of Oklahoma. Donate Life’s 2021 theme is “Community of Life,” and it will be part of the Tournament of Roses 2021 TV special, “The Rose Parade’s New Year Celebration presented by Honda.” The Donate Life community is preparing a tribute for this event, with a floral sculpture that honors donors and donation health care professionals. This sculpture will be available to view at the Tournament House in Pasadena on New Year’s Day. Award-winning float designer, Charles Meier, created the sculpture’s beautiful design; and Fiesta Parade Floats will produce it this year. The 2021 Donate Life Rose Parade floral sculpture, “Community of Life,” features a vibrant floral honeycomb built by bees, sharing the important message that we are stronger when we work together as a community. Twenty-one hexagonal memorial portraits of donors are interwoven within the honeycomb, symbolizing the life donors give through organ, eye and tissue donation. Much like the families and donors who have given the gift of life, bees epitomize a harmonious community that helps and benefits others. Just like busy bees, donation health care professionals devote every single day to make donation and transplantation possible; and the names of six health care professionals will be featured within the floral sculpture.
REDISCOVERING GOLF BROOKSIDE HAS SEEN AN EXPLOSION IN POPULARITY SINCE ITS REOPENING IN MAY BY MATTHEW RODRIGUEZ
W
hile the Rose Bowl has struggled to turn a profit this year, one of its bright spots has been the Brookside Golf Course. “Golf has definitely rebounded,” said Jens Weiden, chief revenue officer of the Rose Bowl Operating company. “We’re seeing levels of golf now that we haven’t seen in over a decade.” With the success of golf during the pandemic, the Rose Bowl Operating Company, who maintains the Brookside and the iconic stadium, cut their originally estimated $16 million deficit to $14 million deficit. Prior to the reopening of Brookside, golf in general was losing popularity across the country. Since 2011, the golf course has seen a steady decline in business beginning with $2,156,682 in net golf income to $945,147 net golf income in FY 2019. However, as a sport that tends to be socially distant, many have called for their golf courses
to be one of the first businesses to be reopened in the summer. According to a Washington Post and University of Maryland poll, while many opposed the reopening any of businesses, golf was the least opposed with 41% of all adults supporting a reopening compared to the next highest of 34% of adults supporting retail stores and the lowest of 18% of adults supporting movie theaters. After the initial shutdown in March, golf was among the first businesses to reopen with Brookside reopening on May 8. According to Weiden, Brookside has seen a renaissance of golf, with over 500 golfers per day between the two courses. “It’s been golf’s heyday,” said Weiden. “It’s been great for golf… Golf has been a shining star for us since it was allowed to open back up.” According to Brookside’s snapshot of the fiscal year 2020, golf has tallied similar numbers to previous fiscal year even though two months of the year the golf course was closed. In FY 2019, Brookside hosted 135,845 rounds of golf netting an income of $945,147 with an average dollar per round at $31.67. For FY 2020, with only 117,204 rounds recorded $812,838 but with a higher average dollar per round at $35.25. However, because of the upward trend in popularity and the increase in golf fees approved by the Pasadena City Council at the end of the FY 2020, RBOC has estimated an incredible boom in the golf business. According to its projections Brookside would see the most rounds its in 15 years with 165,000 rounds of golf, $6.6 million in total golf revenues and a net golf income of $2.4 million. Previously, the most Brookside made was $2,279,201 in 2006, almost 15 years ago. Weiden attributes this explosion in popularity to the extra down time people have working from home. “We’re averaging, even on weekdays over 500 golfers a day which is a really high number for us,” he said. “It’s not just because people aren’t working now. We’re finding a lot more people who are maybe using their former commute time to go out to play golf.” Weiden believes that with many rediscovering their love for the sport, golf will continue to gain popularity. “We’re hopeful and optimistic that golf long term is going to stay up not just during the pandemic,” he said. “People are rediscovering it and some commute patterns are going to change a bit and all those things are good news for golf.” n

Carrara’s Pastries: PANETTONE PERFECTION STORY BY FRIER MCCOLLISTER | PHOTOS BY LUIS CHAVEZ
P
anettone. It’s the iconic sweet bread or leavened fruitcake, originally from Northern Italy. Traditionally popular in Europe and Latin America throughout the holiday season, it’s most recognizable here as a boxed confection that mysteriously retains an air of freshness, despite an apparently prolonged shelf life. Fortunately for folks in Pasadena looking to indulge a bit of sweetness for the holidays, we have a brand new pasticceria dispensing fresh and authentic Northern Italian cakes, pastries and gelato. And the panettone? It’s not in a box. Carrara’s Pastries quietly opened its third location in August as part of the new Avila condominium development on Walnut, just west of Fair Oaks. It’s an unassuming storefront skirted by a spacious outdoor patio. Though street parking is elusive, guests of Carrara’s can park in the building’s indoor lot with the first 90 minutes free. The block on Walnut is largely bereft of pedestrians, perhaps one of the reasons the place has largely slipped under local gourmands’ radar. That said, I was tipped off to the opening by a friend, who was acquainted with Carrara’s already well-earned local reputation. A stray guest at the shop perusing the display cases offered a bit more insight. Dan Dietz of Simi Valley works in Pasadena and was quick to assert, “Oh, there’s a following for Carrara’s. There’s one in Moorpark. I’ve been a fan for years. They did the desserts for my wedding reception.” The first location of Carrara’s was opened by the Carrara brothers, Damiano, 35, and Massimiliano, 33, in Moorpark in 2013. However, the real story begins in Lucca, Tuscany, where the brothers were born and raised. Their family had no background in food. Their father worked in

construction and their mother was a postal supervisor. “Honestly, I never liked to study,” Massimiliano said. “My parents wanted me to go to school, but I wanted to do this. I wanted to bake. (My parents said) ‘OK,’” let’s see if we can find you a job.’” At 14, Massimiliano began working at Le Bonta. “It’s one of the best bakeries in Lucca,” he said. “So I was lucky to start there. I grew up at the bakery.” The owner—Marco Toschi—paid for Massimiliano’s formal culinary training at the Italian Pastries Academy of Rimini. “I’m very grateful to him,” said Massimiliano. The two remain close friends. The younger Carrara worked at the bakery in Lucca for 10 years, while his brother Damiano began bartending in Italy and Ireland before moving to Southern California. He landed as general manager and head bartender at Café Fiorentini in Moorpark. “I asked my boss (if I could) visit my brother for a month,” Massimiliano said. “I came to America. We saw there weren’t so many Italian bakeries here.” The seed for Carrara’s was planted and their first store, which remains their flagship and primary commercial bakery, opened in 2013. One year later, they opened a smaller outlet in Agoura Hills. The positive reception and success of both outlets prompted the Carraras to consider a franchise model and they began preparations to open the new branch in Pasadena as a prototype for prospective franchisees. At this point, it should also be noted that everything created at Carrara’s is scratch-made, fresh from ingredients directly sourced and imported from
Italy. So are the elegant bags and boxes for purchased treats as well as the tables, chairs and display cases. Originally the Pasadena opening was slated for March. Recalling the state of the pandemic in Italy in February and March, the fact that Carrara’s managed to open in August is remarkable. More remarkable is the care, attention and expertise reflected in the quality of the cakes, pastries and even the gelato here. Massimiliano deserves much of the credit for what you see in the display cases these days. However, it’s also worth noting that while the elder brother, bartending Damiano Carrara initially supervised front-of-house in Moorpark, he also trained belatedly, at the same Italian pastry academy as his younger brother. As their mini-empire began to expand, Damiano’s TV career as a celebrity baker also launched. He appeared as a contestant in the first season of the Food Network’s “Spring Baking Championship” in 2015 and took second place. Later the same year, he won the “Chocotage XXL” episode of the network’s popular “Cutthroat Kitchen.” These appearances led to recurrent roles as a judge for a variety of televised baking competitions, now including three shows in Italy, most notably Bake Off Italia. He’s also the author of “A Taste of Italy” published in 2017 by Sterling Epicure. It’s for sale in the Pasadena shop and he has two other books published in Italy and written in Italian. “My brother, when he puts something in his head, he doesn’t do it halfway,” Fortunately, someone’s minding the store. Massimiliano has his hand in every cake and pastry displayed in the elegant Pasadena shop, managed by the ever-helpful Sara Norcott. The three locations are supervised by chief operating officer Shaylee Olson, who partnered with the brothers shortly after the first bakery opened in Moorpark. The notion of using the Pasadena outlet as a franchise prototype began last year. “The original plan was to start franchising,” Olson said. “We wanted to bring this Italian culture to more locations.” She and the brothers traveled back to Italy and attended a major convention in Rimini to conduct research. “We met with an architect in Italy,” Olson said. “He made the vision come to life with this brass and black marble. Our goal is to make (the pastry) look like jewelry.” Now, about the glittering contents of those cases. Although the larger Moorpark location functions as a fullservice restaurant, in Pasadena it’s all cakes, pastries and gelato. Fresh cakes are available in three size diameters: 6-inch ($24); 8-inch ($36) and 9-inch ($39). Individual portions of tiramisu, ricotta cheesecake, sfogliatelle, and croccantino are admirably splayed aside colorful rows of bite-sized bigne, cannoli and rum baba. By the way, first timers are always treated to a complimentary frittelle, lightly fried and sugared spheres filled with Chantilly crème. Pro-tip from Massimiliano? “I like to work with chocolate.” Fresh coffee in all of the Italian styles is also served. The house blend is sourced and roasted back home in Lucca. It’s also available at the shop. Finally—‘tis the season—let’s not forget the panettone. Massimiliano’s renditions of this holiday classic begin with a yeasted dough, from a living culture that is more than 100 years old. “I got it from one of the best pastry chefs in Italy,” he said. The panettone process requires three full days of preparation to produce each of the fluffy, bell-shaped confections. Massimiliano is blunt when he reflects on the current state of things at the new location. “So far it’s been very hard for us to stay alive, to open up in the pandemic,” he said. “We’re excited to bring this to Pasadena,” Olson added. n

BREWING INSPIRATION
TRÉVON SAILOR HELPS MOTIVATE THROUGH HIS COFFEE COMPANY BY CHRISTINA FUOCO-KARASINSKI
H
ard work was instilled in Trévon Sailor from a young age. An Army veteran, Sailor is using his work ethic to make his coffee company, Sailor’s Brew Coffee, successful. “I grew up with my mom and my grandparents in Altadena,” Sailor said. “My grandfather was always doing yard work. He did everything himself. We didn’t have a gardener. He was very hands on. He’s hop out there in the yard and then work in the kitchen. He taught me hard work pays off. It’s good. It builds character. It was a good transition to the military and building character.” Sailor launched his Pasadena-based coffee concept with brothers Tevin, 21, and Travis, 23, in November 2018 as a website. He came up with the idea after speaking to family friend, coffee roaster Kip Rolfe. “He enlightened me not just about roasting, but about the entire business,” Sailor said. “Through those conversations, I decided to start my own cold brew. I started giving out samples to family and friends and I had a lot of good feedback.” In mid-June, he took a 19-day trip to Colombia to learn about coffee at a “ground level,” he said. He did research and returned in July and shared with his family his direction. Through other research, he discovered Ethiopian Arabica, which is about 6% of the coffee consumed worldwide. Sailor’s Brew Coffee offers slow-roasted, single-origin coffee from renowned coffee farms across the globe including Ethiopia, Jamaica and Columbia. He’s planning to debut a light roast coffee, but his niche is Ethiopian coffee. Sailor, 29, shares his love of quality coffee and a positive lifestyle one “cup of motivation” at a time. Sailor’s Brew is named after his surname and he plays on it at his company. He has North Star, a medium roast and named after sailors’ navigation guide, and Crow’s Nest, a dark roast that refers to the highest part of a ship. Unrelated to shipping is the medium roast Jamaican Blue Mountain Coffee, which is world-renown for its sweetness and body. “Our brand is about positive motivation and sticking to your goals,” he said. “As a boat can only go to one port at a time, we’re sticking to one thing and we’re planning the next one as we get accustomed. “We’re going to have a push notification through an app that’s going to tie into our online store, if you want coffee, a mug or apparel that we offer for purchase. The app will serve motivational purposes, too. We’ll have quotes that will come out daily.” Sailor’s Brew Coffee gave 10% of his sales to the Wounded Warrior Project during Veterans Day week. Sailor dedicated more than four years of his life to the U.S. Army as an airborne ranger with the 82nd Airborne Division. Reaching the rank of sergeant, he served two deployments to Iraq and Afghanistan in a sniper/reconnaissance platoon. He joined at age 17 when it was hard for him to get a job. He graduated high school at age 17 and, in light of lawsuits by parents suing companies for overworking their children, he was left without a job until he was 18. “It was set in stone that I was going to go to CSUN, but at the last minute, my financial aid was revoked,” he said. “It was a back against the wall situation.” He isn’t one to stay stagnant, so he joined the Army. He understands veterans’ plight. “Help is needed,” said Sailor, who was born at Huntington Hospital. “I’ve dealt with the PTSD I’ve had in various degrees. I have different disabilities due to deployment. People have strained backs. People still have shrapnel in them from IEDs, lost limbs. It’s only right that I give back. If I could give back more, I would. It’s just in the growing stage. I want to bless other people as well.” n

OLD CALIFORNIO FINISH LONG-SHELVED ALBUM THAT UNEXPECTEDLY SPEAKS TO 2020 BY BLISS BOWEN
E
ven under normal circumstances, resuscitating creative projects long left unattended is a challenge. When local rockers Old Californio re-entered the studio this year to finish their long-shelved album “Songs from the Sea of Cortez,” it helped that most of the instrumental tracks were recorded and all but three already had vocals. Still, save for some isolated gigs at a Utah saloon, guitarist Woody Aplanalp, bassist Jason Chesney, singer and songwriter Rich Dembowski and drummer Justin Smith hadn’t all worked together since 2013, and the logistics of overdubbing and mixing tracks were complicated by coronavirus restrictions. Most of those sessions took place at Aplanalp’s San Gabriel studio. It was Aplanalp who suggested the band start working together again; Dembowski describes the album as “Woody’s baby in a lot of ways.” They shouldered responsibility for getting it finished. Chesney added remotely recorded tracks from Nesmith Ranch in Monterey, where he’s been holing up since the pandemic shutdowns hit, and Smith supplied more vocals and percussion from his home studio in Altadena. “The conditions we’re in right now are a little limiting,” Dembowski acknowledged, “but fun and creative.” The original tracks were “all live takes,” according to Aplanalp, recorded in Dembowski’s house in Pasadena. Drums and piano were set up in the dining room and living room, amps in the bathroom, and a mobile soundboard in the spare bedroom—and as they describe that close, convivial process now, when we’re all hunkered down under stay-at-home orders and nightclubs have been shuttered since March, it sounds unreachably exotic. Dembowski likens revisiting the world of those early recordings to entering a “time capsule.” He cites the organic sound of The Byrds, The Outsiders and especially Ronnie Lane & Slim Chance when explaining why he wanted to record in the living room. Funnily enough, the “close-to-the-ground” honesty of those seminal influences parallels Old Californio’s present desire to “get back to basics” and play for the love of making music with people they care about. “Songs from the Sea of Cortez” takes its title from the 1951 book “The Sea of Cortez: A Leisurely Journal of Travel and Research,” an uncommon collaboration between Pulitzer- and Nobel Prize-winning novelist John Steinbeck—one of Dembowski’s chief lyrical influences—and marine biologist Edward Ricketts. Like the book, it is thoroughly informed by California as a geologic reality as well as its history as a mecca of cultural, political and creative reinvention. Opening track “Saint Cecelia” sends up a prayer to the patron saint of musicians, sweetened with jangly guitars, fiddle and harmonies. The philosophical “Too Tired” ponders when enough is enough; when do you finally give up on what isn’t working? The country-wheeled “Broke, Blessed and Penniless” could be a make-the-best-of-it anthem for 2020, while “A Savage Grace” is an uncommonly literate rocker about personal agency and fate. It, too, speaks from the past to the present, over acoustic fingerpicking that gradually swells to a crescendo of martial drumbeats and Aplanalp’s angry guitar: “I will tell no lies I come not to preach but bring only opinion And I believe in the right Of every man to sit in abnegation … Ah, but this cannot be Our final end, you and me To be victims of our own plight Slaves to our own appetites”
“It is very relevant in terms of a mythological place we’ve got to make new for ourselves, because tomorrow is challenging and we can’t rely on old concepts,” Dembowski mused. “We have to reinvent ourselves now, and it’s a little bit scary.” Back when Old Californio originally began recording, the band was a familiar presence at area venues such as Buccaneer Lounge, the Echo, Old Towne Pub and T. Boyle’s Tavern. Their penchant for 1960-’70s psychedelic pop, California country-rock and namechecking local landmarks informed their 2009 album “Westering Again” and 2011’s “Sundrunk Angels.” “Westering” included “Just Like Joseph Campbell,” a tribute to the late mythologist; his work influenced “Songs from the Sea of Cortez” too, notably “Lyre of Orpheus.” “I like the idea of when we were brave enough to see ourselves in the stars, and can we get there again?” Dembowski explained. “That’s a big undercurrent (in) ‘Sea of Cortez’ … mythology, telling mythological stories. How do we reinvent ourselves through storytelling, through narrative? That is really what draws us all together.” “Lyre of Orpheus” ends with an evocative guitar solo Aplanalp layered over Chesney’s rubbery bass line. At Smith’s suggestion during overdubbing, he augmented that with a slide harmony—giving it, he said, “a sound that we hadn’t heard before in our band.” “There’s more music coming,” he emphasized. “We’ve been working on a lot of new material.” That includes two singles issued November 29, the mariachi-infused “Sweet Cantico” and the soothing “Old Californio’s Lonesome Rambling Ways.” Last week they released “Songs from the Sea of Cortez” through Bandcamp (oldcalifornio.bandcamp.com). Per Dembowski, it will be available January 1 on Amazon, Spotify and other streaming platforms. Looking backward to Steinbeck and Ricketts’ collecting sojourn may have seeded the album’s songs. But it was recently re-reading the book—at a time when “people were trying to have their voice heard somehow”—that sparked fresh awareness in Dembowski of his Hispanic roots as well as California’s indigenous, Mexican and Spanish heritage and its present-day diversity. “These are trying times. Our life is different and weird. But you look around at the pace of geology, and the turning of the sun and the stars — it’s something pretty constant to tune in to. That’s still an inspiration.” n 12.24.20 | PASADENA WEEKLY 13
