Toros Heading to London in 2016 December may seem like a long way off, but for the Mountain View High School Toros marching band, 2015 is going to be a busy year of preparation, fundraising and planning. The marching band was chosen to perform in the 30th anniversary London New Year’s Day Parade in January 2016 after an application process, according to Scott Burgener, Toros’ band director. “Having the kids travel and being able to share their music with other cultures and other countries is such an incredible educational experience for them,” said Burgener, who has been at Mountain View for 15 years. He is hoping to take 150 students. They are in the planning stages of fundraising to help defray the cost of travel and accommodations. The approximate cost per student is $3,350. Twenty chaperones will attend at their own expense. “One of the things that helps us, more than anything else is the tax credit,” Burgener said. “It’s something that any Arizona taxpayer can donate. Since this is an extracurricular activity, we can apply that credit to this and people get their money back when they file their taxes. I would say that probably will be, of all of our fundraisers, that will be the one that is the easiest to do.” There are plans for other fundraisers as well, including an Outback Steakhouse dinner and an auction of an Alice

The seven-day excursion, while still in the planning stages, will take the students to Big Ben, Windsor Castle, Buckingham Palace and museums. The group will leave on Dec. 27, and return on Jan. 3, 2016. “The parade ends at Big Ben. That’s where the grandstands are. That’s going to be really cool, on New Year’s Day with Big Ben towering over us. That’s just going to be awesome.” This once-in-a-lifetime experience is something Burgener is excited to be able to offer. “We have some kids that have never left Arizona,” he said. “That’s just going to be an amazing thing for them. When we went to New York (for the Macy Parade) there were kids that had never been on a plane and had never been out of the state. Mesa Dec. 14, 2014 Time is passing by at a great pace and I find myself in a hurry to experience as much as I can. School is going great because of the new friends I have made. I was busy making presentations on India during the international education week in November. Apart from providing me with an insight of how Americans view India, it also helped me redefine my communication skills. It was my pleasure
to meet and discuss the American government system with Mesa Mayor John Giles and Congresswoman Kyrsten Sinema. Let’s talk about the religions and the similarities between the secular nature of state in India and the United States. India is a country so rich and diverse in terms of culture. It instills in me a sense of sheer joy and pride. India boasts of a history several millennia old which helped shape its diverse culture. Four world religions— Hinduism, Buddhism, Jainism and Sikhism—have their roots in India. Buddhism and Jainism originated in the medieval period as modified forms of Hinduism. Sikhism came with the concept of universal brotherhood. Islam, Christianity and Zoroastrianism came to India in the first millennium CE. Secularism is at the heart of India. The Rigveda, a sacred text for Hindus and probably the oldest book in the
history of mankind, says: “Truth is one. God is one. But the sages refer to it in many ways. Our paths might be different, the destination is the same.” Similar is the essence of Quran: “To you your religion and to me mine.”
India is an example to behold for the people who believe that religion comes with extremism. Even though people are highly religious, India is by its nature a secular nation. The banks of Holy River Ganga and Yamuna are testimony to our Indo-Islamic culture, which is a perfect blend of the

goodness of Hinduism and Islam. Taj Mahal, one of the Seven Wonders of the World, is a perfect example of the Indo-Islamic architecture which blossomed with the intermingling of the cultures. Hindus join Muslims in Eid celebration and Muslims are ahead in savoring the joy of Diwali—that’s the very Indian spirit. Christians are 2 percent of India’s population, but Christmas is a public holiday. My town has just around 200 Christians out of its 200,000 people. But, you’ll have trouble finding any empty space in the churches on Christmas with people from all religions coming together to light candles and celebrate the very joy. India and the United States share common traits in the aspect of their democratic ethics making them natural allies. President Barack Obama is going to India as the chief guest of the Republic Day Parade on Jan. 26 and it’s a perfect chance for both the nations to forge cooperation and partnerships in new avenues of business and development.

Mesa Post Offices Gridiron

The United States boasted more than 44,100 post offices in 1881, but Mesa only had one. Located on the south side of Main Street and Macdonald, the first post office furnished mail to fewer than 200 Mesa residents. The city’s first postmaster was Fanny VanCott Macdonald, the mayor’s wife. She ran the post office out of her small, adobe general store from 1881 to 1885. The post office was known as Hayden’s Ferry until 1886, when it became known as Zenos. It was later referred to as Mesa when the post office closed at Mesaville on the San Pedro River. (The post office was originally called Mesa City, but postal authorities were concerned that it would be confused with Mesaville.) The first known postmark from Hayden’s Ferry was on Dec. 13, 1883.
Before the town of Mesa was settled, mail arrived in Arizona Territory via stagecoach. By 1895, mail was delivered to the west through the Transcontinental Railroad. The rail line connected with the Maricopa and Phoenix railroad in 1895. In 1937, Mesa’s third post office was built as part of President Roosevelt’s Work Projects Administration (WPA) project during the Great Depression. Using his connections, Mesa Postmaster F.K. Pomeroy was able to bring U.S. Postmaster General James Farley to Mesa for the dedication. Mesa’s quick expansion created the need for more post offices. In 1947, Mesa had seven city routes and three rural routes serving Mesa’s 16,790 residents through one main post office.

Story by Lynette Carrington | Photos by Jay Mark The Mesa Historic Home Tour is celebrating its 15th anniversary with visits to nearly two dozen homes as well as other special stops. This year’s tour, set for 10 a.m. to 4 p.m. Saturday, Jan. 24, includes homes and buildings in the Evergreen, West Second and Robson historic districts. Special stops include Fitch Farm House, Antique Wedding Virginia Aguero’s home in the 100 block House, Inside the Bungalow, Queen of West Third Place is part of the Mesa of Peace Church, the Sirrine House Historic Home Tour. The homes are marked clearly with signs and balloons. “The museum is home base,” said Lisa Anderson, CEO of the Mesa Historical Museum. “People can come there with questions, for tickets, for tour books or anything they need.” The tour is not guided but informational booklets will be given to guests. Docents will also be available in each home to answer questions. Transportation is the guests’ responsibility. Linoff said that the homes are varied from year to year so patrons are getting a completely different experi-
ence. Once the committee identifies potential homes, they are observed on the outside for interesting features. Then homeowners are contacted so the inside of the home can be viewed to ensure it meets the criteria for a walk-in tour. “We wouldn’t be able to do these tours without the homeowners,” Linoff said. “It’s a huge imposition on their part to have that many people going through their house in six or seven hours. Usually we hear from homeowners who say, ‘Well, I wanted to fix this up and now I have a reason to do it.’”

After years of family squabbles and legal red tape, the sale of Buckhorn Baths was set to be completed by the end of 2014. We just may have another historic building in Mesa!
The Mesa Governing Board honored its November and December Students of the Month from a variety of schools across the district. Las Sendas Elementary School sixth-grade student Anthony Jeffery and Merisa Mattix, an eighth grader at Poston Junior High School, were among them. For December, Kendal Baker, a sixth-grade student at Red Mountain Ranch Elementary, was honored. Students of the Month can be seen on walls of honor in the lobby of the Administrative Services Center and in the Board Room. They remind all who enter that our Students of the Month are shining examples of how high expectations lead to excellence within the students of Mesa Public Schools.

According to a Facebook message posted by Scott Smith, his father died from complications of falling and hitting his head. The Mesa City Sports Hall of fame inducted several of the city’s finest athletes, including Mountain View alumni golfer Jonathan Baker (1984), and volleyball players Julia Leddy (1999) and Chelsea Goodman (2004). These 1994 state championship teams were also honored: Mountain View girls track and field coach Mary Morris; Mountain View boys track and field coach Robbie Robinson; and Red Mountain wrestling coach Nick Karantinos. The ceremony was held at Red Mountain High School and was streamed on www.mesasports.org.
Michael Breus, Ph.D., nationally recognized as “The Sleep Doctor,” has joined the Valley Sleep Center. Breus is a clinical psychologist and a member of the American Board of Sleep Medicine and a Fellow of the American Academy of Sleep Medicine. He is one of less than 175 psychologists worldwide who has earned both of these credentials.
The National Hispanic Recognition Program, administered by the College Board, recognized six academically outstanding Hispanic/Latino high school students across the district. Among them was Janet Gutierrez of Red Mountain High School. Congrats! The Benedictine University at Mesa golf program recorded a hole-in-one without even teeing off. The student athletes who play for the university’s golf teams now call Las Sendas Golf Club their home course for practice and competition. The agreement allows Benedictine’s men’s and women’s golf teams to hone their skills on one of the top golf courses in the Phoenix area.

Friday Night Franks Celebrates Western Lifestyle
By Christina Fuoco-Karasinski It was nearly dark when we arrived at Fort McDowell Adventures, found hidden off Hiawatha Hood Road near Fort McDowell Casino and We-Ko-Pa Resort and Conference Center. The coyotes cackled as the moon lit the attraction’s intimate outdoor venue, Rosa’s Ranch, the location of the monthly Friday Night Franks. A barbecue experience, Friday Night Franks is probably the best-kept secret in the Valley. The event is a fully immersive family-friendly evening of Western barbecue, movies on a giant inflatable screen, a bounce house, hayrides and, of course, cowboy entertainment. When my husband and I went, Friday Night Franks was well attended by families and couples alike.
Kids bounced and ran around the grounds shoeless, covering their little feet in dirt. The parents imbibed on signature prickly pear margaritas or created s’mores over the bonfire. Children begged to make s’mores when they returned, out of breath, to their picnic table. Running from 5 p.m. to 9 p.m. the first Friday of the month through May, Friday Night Franks used to boast a menu of merely hot dogs, chips and s’mores. But since the Yavapai Nation moved it from weekly to monthly, Friday Night Franks has expanded its offerings to include barbecue ribs, chicken, hamburgers, bratwurst, cowboy beans and s’mores. lightful. Shredded and doused in barbecue sauce, the chicken sandwich was a juicy mess—just how we like it. The cowboy beans had a nice kick to them. Hold an orange in one hand and stick the tip of your knife into the top of the fruit next to the stem. Carefully bring the blade of the knife around to start a spiral cut of the peel, which you will continue the entire circumference of the orange. You want the entire peel to stay intact. Once it is removed, gently spread it out, rind up, on the cutting board. Using your knife, gently remove as much of the rind as possible without cutting the peel. You want the peel to be bendable. Choose one end of the peel and cut the end off at a right angle to the rest of the peel. Starting with the cut end, tightly curl the orange peel, trying to keep it as even as possible as the side that wants to be the bottom will end up being the top. When the peel reaches the halfway point, the remaining peel will form the outer petals. Use the curl at the end of the peel to form the base of your flower. Set on a plate and either let stand indoors or out in the sun for at least 24 hours so it will dry in its new shape. Orange Peel Flower Potpourri

Orange leaves have a nice scent of their own and make a great addition to potpourri. Arrange all of your ingredients in a bowl and set out to enjoy. The scent will last for a week or two and is still nice to look at months later.
Leftover Orange Room Scent Ingredients: Pint Mason jar Orange peel, rind and one sliced orange, all left over from the orange peel flower project 2 tsp whole cloves 3-4 cinnamon sticks

Starting with the orange slices and working your way down to the smallest spices, place everything in the Mason jar and cover with two cups of water. Place on the candle warmer and enjoy!

But if you’re too impatient (like me!) to wait for them to dry, you can use a length of floral wire inserted horizontally through the base of the flower to hold it in place and add it to the wreath.

I live in Sky Mountain, one of the enclaves of Red Mountain Ranch, and the last time I looked out of my north facing bedroom window I could see this beautiful mountain quite clearly. Also, I could be wrong, but I thought that the mountain was sacred to the Indian and that the thought of someone mountain biking on it was disrespectful, as well as being extremely dangerous.—Angela E.

New Year’s Resolutions mom section
The holidays are over. We celebrated, experienced meaningful moments and rang in the New Year with renewed hope and expectations for the next Eva Dwight 12 months. Some of our resolutions, without a doubt, included getting in better shape and eating healthier. While improving our personal health is laudable—especially if we follow through—I wonder how many of us resolved to improve the emotional health of our family? What if we could grow our sense of well-being and happiness and joy? What would it be like to close out 2015 and say, “We are better as a family than we were a year ago”? Consider some resolution possibilities: I resolve to engage in dialogue instead of debate: When our children pasta vixen

express an opinion that is different from ours or want to do something we disapprove of, dialogue can help us find common ground as we listen to understand the other’s position, keep an open mind to possibilities other than the one that is immediately obvious to us, and collaborate to develop common understanding. Parents always get the final say on crucial issues, of course, but taking time to listen and let kids know they’ve been heard and taken seriously, helps them feel respected so they are more likely to return the respect. It also helps them grow their ability to form logical arguments, see others’ point of view, and learn how to disagree respectfully. Those are great skills to have. I resolve to slow down. Living life in a hurry is necessary sometimes, but it’s important to make time for meaningful moments. Eat together at least
three times a week. Make one night a week family night. Have conversations that are not about school or chores or expectations. Tell jokes. Skim the Internet for goofy news stories to talk about. Laugh together. I resolve to give compliments and appreciations frequently. Don’t let a day go by without noticing the good in your spouse/ partner and your children. Positivity is contagious, so don’t be surprised if they notice you back. I resolve to grow my parenting muscles by taking a class. Mesa Public Schools’ Parent University offers an abundance of wisdom and skill-building for parents. And all of the classes are free. It’s easy to expect ourselves to just automatically know what to do in every challenging situation, as if being an effective parent should be completely instinctive.

The Duttons’ Variety Shows Are Family Affairs By Christina Fuoco-Karasinski Ben Dutton understands the importance of family. As a member of The Duttons music group, he feels strongly about uniting families through the magic of his act. “We get a lot of parents who say, ‘This is the first show my 2-year-old has sat all the way through,’” Dutton said. “That makes me so happy that we, as a family, can play a part in bringing families together.” The Duttons have returned to Mesa from Branson, Missouri, for their winter performances at the Dutton Theater at East Valley High School, 7420 E. each month through March at the Dutton Theater. “It’s not a regular concert,” Dutton said. “It’s a full show with special effects, backdrops and choreographed lighting. It’s a bit to change the show with how we do it, but it definitely makes it better. It’s never stale. We want to mix it up to give people that new experience.” The audience is just as varied as the music The Duttons play. “I like to tell this story. A guy was in the front row of one of our shows with gold teeth, chains around his neck, big combat boots and kind of looked like a gang banger type. I came up to him and asked him what drew him to our show. He said that ever since ‘America’s Got Talent,’ he’s been a fan. He said he loves the variety and it keeps him interested.” The secret of The Duttons’ success is hard work, he said. “Not only did we practice a lot growing up, but our parents really stood by our sides,” he said. “We’re all adults with our own children now, but we’re still working with them. There are three generations in the family. First and foremost, aside from the music, they tried to teach us to live according to good principles and have good values. That’s kept us together, to keep focused on the good things.” January 2015

They say never look back, so onward to 2015. But just this once, I’m looking back to holiday dishes, because there was one side salad I was introduced to that is just too good to leave behind. It’s going to be my go-to salad this year for a tasty and healthful plate of goodness and I think you’re going to love it too. It’s a shaved salad with bursts of sweetness from cranberries or raisins, the perfect amount of crunch from toasted almonds, and a phenomenal Dijon dressing punched up with horseradish. The combination leaves your taste buds wanting to come back for more and more and more. The original recipe was given to me by Chef Ryan Clark, the executive chef of Agustin Kitchen in Tucson. Clark, a three-time “Iron Chef ” winner, two-time World Margarita Champion and author of “Modern Southwest Cooking,” prepared this salad for a cooking demonstration recently and the dish absolutely wowed the crowd. He made it with shaved Brussels sprouts and I have since created
Shaved Salad with Dijon Horseradish Vinaigrette
(Party size. Cut recipe in half for four to six servings) 3 pounds Brussels sprouts (can subthe Brussels sprouts (or cabbage) stitute one large green cabbage or add toasted almonds, cranberries two Napa cabbages) (or raisins), dates, shallots, fresh 1 1/2 cups sliced almonds, lightly grated cheese, salt and pepper. Pour toasted Dijon Horseradish Vinaigrette over 1/4 cup dried cranberries (can substisalad and gently toss. When plated, tute raisins, regular or golden) sprinkle small amount of shaved 1/4 cup fresh dates, chopped into cheese over top. small pieces 2 medium shallots, sliced thin 1/2 cup grated Pecorino Romano or Parmesan cheese, shaved or grated Salt and pepper to taste

variations with green cabbage or Napa cabbage and substituting raisins for the dried cranberries to change it up a bit. The tangy vinaigrette is the perfect complement to balance the sweetness from the raisins and dates. It introduced me to grape seed oil, and now it’s one of my favorite cooking and finishing oils. Now, this recipe is designed for a party-sized bowl of salad. You can cut the recipe in half for a smaller amount, but I’ve kept the original amounts because one of the best things about this particular salad is that you can make it ahead, and it keeps in the refrigerator for days. Unlike a regular salad tossed in dressing, this one stays crunchy, firm and flavorful. I love this recipe so much that I now keep plenty of chopped dates, raisins and slivered almonds on hand to fulfill my craving for this salad anytime I want. Plus, it’s a great way to eat well in the New Year. Here’s to your good health in 2015!

Walking into 5 R Cha Thai Bistro restaurant in East Mesa, we were immediately greeted by the smiling faces of the staff who was ready to help us. That wouldn’t be shocking if it weren’t for the fact that my husband and I recently walked out of a Scottsdale Chinese restaurant because, for 15 minutes, we waited for someone to seat us. No one came. Enthusiastic customer service is one of the things on which co-owner Datcharat Mungkiarsakul prides himself. 5 R Cha Thai Bistro even offers delivery. “The atmosphere is a cozy feeling,” said Kathy Clements, who served as translator for co-owner Pormphana Uphasri. But most importantly, it’s the freshness and the quality of the food that he hopes patrons will remember. On the day we went, I tried the sweet comm. spotlight

and sour chicken with medium spice. The chicken was tender, thanks to the spices within the dish, and the vegetables and fruit, such as pineapple, were crispy and juicy, respectively. My husband tried Rama, which features a meat of the customer’s choice (he picked chicken) sautéed in Thai peanut sauce on a bed of steamed vegetables. The peanut sauce was thick and tasty, while, like mine, the chicken was tender and juicy. Speaking of peanut sauce, the satay chicken is the best we’ve had in the Valley. We order it each time we visit 5 R Cha. The chicken is juicy—not dry or breaded. The accompanying peanut sauce is thick and peanuty. “Thai food is heathier because we use lighter oil and ingredients, like spices and herbs, lemongrass, basil leaves, to benefit the health,” Mungkiarsakul said. We’re going to have a lot of seafood. Some authentic, health-conscious meals.” Clements said that pad Thai is the restaurant’s signature dish. “You know, you go to other restaurants and some may be too sweet or too wet,” she said. “Ours is not too wet. It’s not too sweet. We think it’s perfect.” The location, which formerly housed the Italian restaurant Roma Café, was chosen because a Thai food eatery was desperately needed in the area. “It also stands out,” Mungkiarsakul said. “There are plenty of parking spaces and it’s a single building. We want to have customers who feel

comfortable and the service feels like they are at home with home cooking.” Mungkiarsakul and Uphasri are best friends who met when Uphasri cut Mungkiarsakul’s hair. She enjoys her work so much that she doesn’t think she’s working,” Clements said for Uphasri. “She could cook all day. She’s doing something she loves.” Munkieatsakul, on the other hand, loves his customers. “Hopefully they like our food,” he said. “I want to make the customer happy. We put our heart and soul into it.”

Legal Issues of Same-Sex Marriage Still Unsettled law talk

Gay marriage is now federally recognized and is legal in 35 states. It has been nearly two months since U.S. District Judge John Sedwick Scott R. Rowley struck down Arizona’s prohibition on same-sex marriage as unconstitutional. Since that time, many same-sex couples have become legally married in Arizona. Despite the dire warnings of those opposed to same-sex marriage, our underlying social fabric seems to still be intact. Judge Sedwick’s order, however, allows for equal treatment under the law in other areas as well. Many couples that were previously legally married in other states, but moved to states that did not recognize their unions, found themselves unable to obtain a legal divorce. In Texas, a couple legally married in another state was denied driver’s licenses because the state did not recognize their marriage, and thus one spouse’s name change was illegal. Arizona will likely see a steady increase in the number of same-sex divorces. For the most part, Arizona family law is gender-neutral, so there are few statutory problems with two spouses of the same gender. Same-sex biz box
couples now have the same right as everyone else to argue over property, spousal maintenance, and whether or not their prenuptial agreement is valid. Same-sex couples now have easier access to adoption. Although there was no prohibition on same-sex adoption previously, Arizona law explicitly favors adoptions by married couples. Last year, I had the displeasure of informing a committed lesbian couple that they would likely be overlooked in a contested adoption proceeding due to their inability to get married. None of the above statements mean that the law around same-sex relationships is perfectly settled. There are numerous other issues that will only be resolved through further legislation and litigation. Although the legal system is often a step behind, it is also the mechanism for social progress. Veronica and Eric Joyce opened Worship Yoga and Crucible Combat and Fitness in late October with one goal in mind: to offer a family-friendly place where parents and their kids can learn yoga and/or a form of selfdefense called Krav Maga in a way that honors God. “There are a lot of families with small kids in Mesa, and we want them to know that they are all welcome to come here, bring their kids and do yoga and fitness classes,” Veronica said. “We are a family-run organization and our kids are always with their mom and dad, so family is extremely important to us.” In addition to Worship Yoga classes, Veronica also offers other services like meditation, massage, skincare diy
