RAINBOW CONNECTION May is one of our favorite months at Ventana Monthly, a time when we look beyond the 805 to focus on travel and adventure. Typically one of our most popular and visually stunning editions, the theme feels awkward and even tone deaf considering what’s happening across the globe.
So, we made some adjustments, keeping our “journeys” more metaphorical, and easy to engage with at home: a Conversation with the charming artist Frank Bauer, some wonderful and simple-to-prepare recipes, a high-flying tribute to essential workers doing so much to keep all of us safe. But there was one travel story I just couldn’t let go of. Last year, before the world changed, Chuck Graham took a trip to Costa Rica and explored the ecological riches of Corcovado National Park. Corcovado is a special place. It’s considered the crown jewel among an already impressive network of Costa Rican parks and reserves, and one of the most biologically diverse regions on the planet. With 13 different types of vegetative habitat (six of which are distinct types of forests), it houses around 10,000 animal species — about three percent of the world’s biodiversity, including all the insect species found from Panama to Mexico. That’s a lot of critters in less than 200 square miles! And our Travel story highlights a number of them, with some fantastic pictures that illustrate just how spectacular this biological hotspot is. Our ability to experience such places firsthand is hampered at the moment, but I hope it will be a pleasure to witness in these pages the power and persistence of life — which undoubtedly goes on, even as we humans continue to grapple with the current reality. We also chose for our cover that beautiful rainbow arcing over Osa Peninsula. The rainbow is a symbol for a lot of things: peace, tolerance, diversity, hope. As it breaks through the clouds following a storm, it brings with it the end of adversity, and a promise of joy and prosperity to come. We could all use some of that right now. None of us have been untouched by this pandemic, but I have faith that we will get through it, and that better days are ahead. ST. JOHN’S REGIONAL MEDICAL CENTER
O
n the morning of Saturday, April 25, staff at St. John’s Regional Medical Center in Oxnard got a high-flying surprise: four airplanes soaring overhead in synchronized formation. The flyover was organized as a way of showing appreciation to the doctors, nurses and other hospital staff caring for patients, including those suffering from complications related to COVID-19. A few of the pilots are military veterans who had once served on the frontlines; their participation was a show of solidarity with and appreciation for healthcare workers serving as a critical line of defense against the pandemic. “This is our way of thanking the care team at St. John’s and all health care workers for all that they are doing to care for the community,” said Michael Malaco, pilot and lead organizer of the flyover. “We thought, what better way to show our appreciation than with an aerial tribute.” www.dignityhealth.org/central-coast 1. s much as I do enjoy an “ordinary everyday afternoon tea,” how much more so do I delight in an afternoon of tea and accompaniments that turn the ordinary into extraordinary. Dainty sandwiches, crumbly scones and creamy confections readily come to mind when we think of a tea party and you will find all of those items here as well — but with some subtle changes that add depth of flavor. For
instance, tea itself is used as an ingredient in the poached pears and shortbread cookies. Ginger, mango, lemon and champagne lighten flavor profiles to leave the palate refreshed. Finally, fresh, homemade ricotta gives a beautiful creaminess to be savored with every bite of bread and fruit. I highly recommend using sustainable and organic tea for the purist flavor infusions.
Ginger Orange Scones Yield: 16 scones Total Time: 40 minutes Active Time: 15 minutes • 2 cups unbleached all-purpose flour • 1 tbsp. baking powder • 1/4 cup granulated sugar • 1/2 tsp. salt • 2 tbsp. orange zest • 2 tsp. grated ginger • 1/3 cup unsalted butter, chilled and cubed • 1 cup heavy whipping cream • 1 ½ tbsp. melted butter -P reheat the oven to 425° F. - I n a food processor, combine the flour, baking powder, granulated sugar, salt, grated ginger and orange zest. Add the cubed butter and pulse until coarse. -T ransfer to a large bowl and add cream. Stir with a spatula or spoon until a sticky dough begins to form. -D ivide dough in half. On a floured surface, shape each half into a 7” disc, flouring lightly as needed. Then cut into 8 wedges using a floured knife. Transfer to a large parchment paper-lined baking sheet and brush with the melted butter. -B ake 13-16 minutes or until the edges are light golden brown. -C ool for 10 minutes on the baking sheet, then transfer to a wire rack and serve. Can be stored in an airtight container for several days. Continued on page 14

Green Tea Poached Pears Yield: 4-5 pears Total Time: 3 hours Active Time: 1 hour • 4-5 small pears • 1 ¼ cups champagne • 1 tsp. whole cloves • 1/2 tsp. peppercorns • 1/4 cup brown sugar • Orange peel strips from one orange, using a vegetable peeler • Juice from one orange • 1 cinnamon stick • 1 vanilla bean, split and seeds scraped out • 2 Sencha green tea bags • Salt - Peel pears and place in a pot with the champagne, brown sugar, orange peel, orange juice, cinnamon stick, cloves, tea removed from the tea bags, vanilla bean seeds and pod, peppercorns and a pinch of salt. - Cook on a low heat to dissolve the sugar and baste the pears. Once sugar is dissolved, bring to a boil then cover and reduce heat to a simmer for 20-30 minutes until the pears are tender when pricked. - Remove pot from heat and let cool for 2 hours before serving.

Champagne-Soaked Berries with Cream Yield: 4 servings Total Time: 1 hour, 20 minutes Active Time: 50 minutes • 1 ½ cups strawberries, halved • 1 ½ cups raspberries • 2 cups champagne • 2 tbsp. maple syrup • 1 vanilla bean, split lengthwise • 1 ½ cups heavy whipping cream • 2 tsp. cacao powder • Salt - I n a medium pot, bring the champagne, 1 tablespoon of maple syrup, vanilla bean and a pinch of salt to a boil, stirring occasionally. -R educe to a simmer and then pour the champagne mixture over the strawberries and raspberries in a bowl. Let sit for 10 minutes and then transfer to the refrigerator for at least 20 minutes or up to 4 hours. - With an electric mixer, make the cream by whisking the heavy whipping cream in a chilled bowl until soft peaks form. Add cacao powder, the remaining tablespoon of maple syrup and a pinch of salt and continue whipping until stiff peaks form. -A ssemble by alternating layers of berries and cream to fill 4 serving dishes. Serve immediately.

Homemade Ricotta OUR ricotta recipe makes a delicious accompaniment to Green Tea Poached Pears (shown here) or other fruit.
Yield: 1/2 cup Total Time: 2 hours, 15 minutes Active Time: 15 minutes • 4 cups whole milk • 1/2 cup heavy whipping cream • 1/4 tsp. salt • 2 tbsp. lemon juice -L ine a colander with a tea towel over a bowl. - I n a pot on medium heat, bring to a low boil the whole milk, heavy whipping cream and salt. -A dd lemon juice and reduce to a simmer. -C ontinuously stir for 2-3 minutes until it curdles. -T ransfer to the lined colander and let drain for 2 hours. -R efrigerate the ricotta in a covered container for a minimum of one hour before using to allow it to fully set. Use within 3 days. Note: The drained whey can be stored in a sealed jar in the refrigerator to be used as a water substitute in fresh breads or soups.
Earl Grey Shortbread Cookies Yield: 24 small cookies Total Time: 1 hour, 45 minutes Active Time: 25 minutes • 1 cup butter, chilled and cubed • 1 cup powdered sugar • 1 ¾ cups flour • 1 tsp. vanilla extract • 3 Earl Grey tea bags - Cream butter and sugar in an electric mixture. Add vanilla and tea removed from the teabags and mix. Then add the flour and mix until a crumbly dough starts to form. - Turn out and knead by hand and shape into a disk. Cover dough and chill for 1 hour. - Preheat the oven to 350 degrees. - Roll out dough to 1/3-1/2 inch thick and cut into desired shape with a knife or cookie cutter. - Arrange cookies onto a parchment paper-lined baking sheet, placing one inch apart. - Bake for 15-20 minutes or until the edges are just barely brown. Cool on a wire rack.

Spicy and Sweet Deviled Egg Sandwiches Yield: 4 sandwiches Total Time: 25 minutes Active Time: 15 minutes • 3 eggs • Salt and Black pepper • 1-2 tbsp. mayonnaise • 1 tbsp. pureed mango • 1/2 tsp. mustard • 1/4 tsp. cayenne • 1/2 tsp. paprika • 2 tbsp. butter, room temperature • 4 slices white bread - Place eggs in a small pot and cover with water and a pinch of salt. Bring to a boil then reduce heat to a simmer for 8 minutes. Drain and run cold water over the eggs until they are cold. - Peel eggs and finely cut only 2 of the eggs. Slice the third egg in half vertically and set aside for later. - In a bowl, combine the finely cut eggs, mayonnaise, mango, mustard, cayenne pepper, paprika, salt and black pepper. - Butter the bread and place one half of the reserved sliced egg facedown in the center of each of two “bottom” slices of bread. Then spread the egg mixture evenly around the sliced eggs. Top with the remaining two slices of buttered bread. - Cut off the crusts and then cut each sandwich in half. Refrigerate for up to 1 hour if not serving immediately.
Roast Beef and Chive Sandwiches Yield: 8 sandwiches Total Time: 20 minutes Active Time: 20 minutes • 8 thin slices of roast beef • 1/2 cup arugula • 3 tbsp. butter, softened • 1tsp. lemon juice • 1 tbsp. fresh chives, finely chopped • 4 slices of wheat bread • Salt and Black pepper - Beat butter until smooth and creamy. Add lemon juice and salt and pepper to taste and beat again. Add chives and mix just to combine. - Spread bread with chive butter. - Layer roast beef and arugula onto two slices of buttered bread, and top with the remaining slices. - Cut off the crusts and then cut each sandwich into 4 triangles. Serve immediately.

EXQUISITE INTRICA Talking with mosaic artist Frank Bauer. BY NANCY D. LACKEY SHAFFER
A
Frank Bauer piece is unmistakable. His tile mosaics are carefully calibrated, vibrant rainbows of color and composition where every aspect — from the smallest sliver of ceramic to the most minute variation in hue — serves a purpose. With a discerning eye and painstaking attention to detail, Bauer has created intricate art for homes and gardens, both public and private. Locally, he might be best known for his many works at The Collection at RiverPark in Oxnard, including a massive installation on a large exterior wall that resembles an ocean teeming with life. Ventana Monthly caught up with Frank Bauer recently, and the artist shared a bit about his work, his process, some of his favorite projects and more. Ventana Monthly: Are you originally from Ventura County? Frank Bauer: I am proud to say, I am a first-generation American. My parents were originally from Hungary and settled in Milwaukee, Wisconsin. My father was a master tailor and my mother a master seamstress, both having completing their apprenticeships in Budapest. Growing up in a tailor shop, I was surrounded by colors, textures and design. It would shape my artistic senses. Since all of our extended family remained in Europe (Germany, Austria and Hungary), our family vacations centered around trips to Europe. As time passed I grew to love the culture, the beauty and craftsmanship of the folk art pieces that were prevalent in each ethnic area. My path towards a career in art was set at a young age. In second or third grade, when it came time for a school pageant, rather than perform, I was given the task of painting

CACY the backdrops. My work was well received and encouraged; kids only need a little encouragement. You worked in advertising before finding your way to art. What originally drew you to the commercial side of things? While attending Boy’s Technical High School, I followed a curriculum in commercial art/graphic design. After graduation I enlisted in the Air Force, putting my studies on hold. Upon completion of my enlistment, I enrolled at the University of Wisconsin-Milwaukee and earned a Bachelor of Fine Arts degree with a concentration in visual communication. My commercial art career began as a production artist preparing camera-ready art for print. Learning my trade by working at several design studios, I eventually began my own graphic design studio, Harmony Visual Design. It was definitely a hands-on business and encompassed all aspects — from creative director to account executive to sweeping up at night. My clientele included Miller Brewery, Harley Davidson and Kohler, not to mention many smaller start up businesses for whom I would develop logo designs and the company’s visual identity. These projects proved to be the most challenging and rewarding. You’re known for your extraordinary tile work. How did you find your way into that particular art form? I bought a house and moved to the country, commuting to my business in Milwaukee. I’ve always enjoyed home projects, my home was my canvas. One project, I wanted to use tile. Not satisfied with commercial tile, I decided to make my own That was the beginning. I took some night classes at a nearby college, so that I could take advantage of the facilities to create the tiles needed for my project. This lead me to buying my own kiln, setting up a ceramic studio at home where I continued making tiles. I started doing art fairs in the area along with residential projects, like kitchen backsplashes. In 2003, my life greatly changed. I moved to California from rural Wisconsin. I rented a tiny outdoor space on Abbot Kinney Boulevard in Venice. This opportunity would prove to be an exciting and ongoing
adventure. I would show my portfolio to anyone that seemed interested. You have some amazing work at The Collection at RiverPark. How did you get involved with that project? At one point, I shared my work with several interns from an architectural signage company. Shortly thereafter, they invited me back to share my work with their supervisor. This ultimately led to an opportunity for me to give a presentation of my work to the principals of the company. Their responsibility consisted of recommending artists for a variety of exterior art installations, for a upcoming commercial project: The Collection at RiverPark in Oxnard. Ultimately, the projects at The Collection included a large mural, two round benches, four floor medallions and a large urn. This project opened the door to many future endeavors for me, for which I am forever grateful. I have been so fortunate to be able to share my passion in many different venues and communities. Projects like the emergency entrance for the new Ventura Memorial Hospital and a public park project for the Pacific City development in Huntington Beach, encompassing a total of 3,000 square feet of handmade tile — my largest and most challenging project to date. New projects include my fourth community park project for The Trust for Public Land in El Monte, California. Additionally, I’ve been asked to do two memorial benches. I am so honored to work on these public projects. I am able to connect with many of the residents in the neighborhood, not only through my art but also on a personal level. I welcome them to my studio and give them an opportunity to be creative, by making their own ceramic piece that will be installed within the finished piece, giving them a feeling of ownership, community and permanence. Do you do residential work as well? I have done a number of private residential installations. I am always excited as I step into a client’s home and begin the process of getting to know them as they share their ideas with me. Together we meld visions of color, textures and design and work toward creating unique art pieces. Again, I give them an opportunity to come to my studio and get creative. I’m not sure which one of us gets a greater charge, them or me! I also create smaller pieces, planters, urns, tables— clients don’t have to commit to a large art installation. What goes into creating those intricate mosaics? Tell us a little bit about your process. I begin with wet clay. I don’t use any broken dishes or tiles. The pieces are all hand made. The clay is rolled out to the size of a cookie sheet using a slab roller table. At this point I either cut individual shapes or press the clay through the bottom of an antique milk crate for my standard pieces. These pieces come out with soft, rounded, pillow-like edges. They are left to dry. Once they are dry, I apply three coats of glaze and into the kiln, high-firing them in order to withstand the outdoor elements. Then I follow my design. I layout and glue the tiles onto a fiberglass mesh in my studio. When a project is ready for installation, I transport the pre-glued sections — I like to think of them as ceramic fabric — to the job site. These sections are then glued with thin-set mortar to whatever armature is being used, be it a concrete bench, wall or concrete sidewalk, then grouted and sealed. To say the least, it is a long process. Do you make other kinds of art? I also paint, oil on canvas. Much like the labor-intensive ceramic tile process, my technique involves the layering of very small lines of color. Because my paint is used in a rather transparent state, it takes tens of thousands of lines to create color, depth and texture. This probably explains why the end result is undeniably unique. What kind of work have you done on your own home? I recently bought a home in Ventura. I love Ventura! The house has a
pass-through fireplace. On one side, the living room side, it is a floor-toceiling bump-out wall. I decided to hang one of my paintings above the fireplace, not knowing that that would become my catalyst to incorporate my tile. I framed the painting using mosaics — where one media finishes, the other begins. On the other side, I created a curved mantel held up by columns, and covered the surfaces with dramatically vibrant tiles, giving the room a totally unique ambience. Of course, I can’t stop there! I’ve built a concrete curved bench in the backyard. My inspiration are the benches created by the artist Antonio Gaudi at Güell Park in Barcelona. Has your work been affected by the pandemic? The coronavirus has impacted us all. For me particularly, I had to cancel a home/gallery sale, and my construction projects are on hold. What do you envision for the future of Bauerkraft? t wasn’t rain falling in the rainforest of the Corcovado National Park on the Osa Peninsula of Costa Rica, but it was raining leaves, bushels of them floating beneath the canopy that was so dense it blocked out the sun. The wind wasn’t blowing, yet the leaves continued to fall. Instead, there was a lot of thrashing going on above in the trees. All that ruckus in the towering sabre and cashew trees was a thoroughly determined northern

BIODIVERSITY tamandua, also known as a collared anteater. They are nearly blind but equipped with thick, long claws, a 16-inch-long tongue and a powerful tail to wrap around tree trunks and branches to stabilize themselves. This enables these tree-climbing anteaters to extract ants and termites from cavities in precarious positions throughout the rainforest. Marine biologist Holly Lohuis and I were in the middle of a four-day trek through the Corcovado, a region of the Osa Peninsula that National Geographic states, “is the most biologically intense place on earth.” Within the first few miles of our trek, the Corcovado was living up to its reputation. We wanted to see as many species as we could within those four days, so my binoculars and camera gear were affixed to me, always at the ready. Up and down the tamandua climbed, stirring up other fauna, birdlife and insects concealed in the rainforest, most of which we would have never seen without a guide. Marco Umaña had been guiding in Costa Rica for 5 years. An avid birder with a keen eye, Umaña has seen 725 of Costa Rica’s 935 bird species and has even accomplished a “Big Year,” which means spotting as many species as one can in one country in 365 days. In Umaña’s case, he nailed down 649 species in 2017. That’s a lot of sightings and sounds to detect hidden in the rainforests of Costa Rica.
BIODIVERSITY HOTSPOT Corcovado became a national park on October 24, 1975, and is the largest park in Costa Rica. It covers 164 square miles within the largest primary rainforest on the American Pacific coastline, but it also includes one of the last remaining areas of lowland tropical forest on the planet. Over five percent of the world’s animal population is contained within just that small area. Just one example: Corcovado is said to contain the entire ecosystem of insects that can be found between Panama and Mexico. That’s 10,000 species, including 220 species of butterflies. There are also over 400 bird species and 25 lizard species throughout the park, and all four sea turtle species — green, olive ridley, leatherback and hawksbill — are represented in the Corcovado, too. Lohuis and I never saw any of the six cat species in the Corcovado, but we encountered many of the other mammals. At various places we
saw all four monkey species, including the white-throated capuchin, spider, mantled howler and the endangered squirrel monkey. We also saw collared peccaries, variegated squirrels, white-nosed coatis, four types of bats, Baird’s tapir and agoutis. On several occasions, we were fortunate to see two- and three-toed sloths high in the canopy, including one three-toed specimen that cradled a baby; they almost appeared to be smiling back down at us. To access the heart of the Corcovado National Park, all visitors are required to be accompanied by a guide. There’s no wiggle room there, but it’s to anyone’s benefit. The guides are incredible, enthusiastic and extremely knowledgeable. Lohuis and I guesstimated that we would’ve only seen 10 percent of all the wildlife we encountered if we had been on our own. The Corcovado does not allow camping. Trekking is from ranger station to ranger station, where everyone sleeps in bunk beds beneath mosquito netting on raised platforms. Meals are included. Visitors don’t go hungry in the Corcovado. They don’t want anyone cooking within the park, so all meals are at the ranger stations. Lohuis and I began our trek in the northern sector of the Corcovado at the Los Patos Ranger Station and trekked 13 miles in the mud, while crossing several rivers, to the La Sirena Ranger Station. This is the main hub of the Corcovado. Depending on how long visitors stay at Sirena, days may be filled with several guided hikes. Guides are armed with guidebooks, spotting scopes, binoculars and the E-bird app as they work extremely hard to locate the rich flora and fauna of the Corcovado.
WATER IS LIFE Jesus Christ does walk on water, but we didn’t know he could drop from a tree or a rock and cover five feet per second across the surface. Actually, the green basilisk lizard is lightning quick and runs upright. When it feels threatened, it can sprint across the water with ease, hence its status as the Jesus Christ lizard. It seems appropriate though, moving across water at biblical proportions. This unique capability comes in handy while eluding predators in the steamy Central American rainforest of Corcovado National Park. Whenever we were around a water source, we were virtually guaranteed to see these sleek two-foot-long reptiles sprinting upstream, bank to bank, along serpentine streams and rivers that were also occupied by black-mandibled toucans, spectacled caimans, American crocodiles and tiger herons. At one particularly broad rivermouth, in the fork of a dead tree, I watched a common black hawk successfully dismantle a large freshwater crab. Patiently waiting below was a crested caracara (another type of raptor) scarfing up the remains. Nothing goes to waste in the rainforest. Above the birds of prey were a breeding pair of scarlet macaws enjoying the blossoms in a huge cashew tree. They would first drink the Continued on page 31

water caught inside the blossoms and then consume the blossoms themselves. These neotropical parrots light up the canopy of the rainforest like no other bird with their stunning plumage of multicolored feathers. That and their raucous RAAAK, RAAAK, resembling what a prehistoric pterodactyl may have sounded like millions of years prior. They can live up to 75 years and the Corcovado National Park is an important bastion for this iconic species.
NO SUNSCREEN REQUIRED There was one more massive rivermouth to cross before leaving the Corcovado, reaching Carate and catching our ride back to Puerto Jiménez. This was our last stretch of the Corcovado, a short two-mile hike that didn’t disappoint. Lohuis nearly stepped on a well-concealed brown vine snake. We were snorted at by a couple of collared peccaries and watched a band of coatis ripping through a stand of banana trees. It occurred to me that I hadn’t used sunscreen the entire four days. Didn’t need to. The ever-shady rainforest took care of that. I was sorely reminded of it in Carate when we emerged from the rainforest and into the blistering sun. I quickly forgot about the heat and humidity, diverted by a pair of breeding scarlet macaws just underneath the canopy of a lone cashew tree. Not paying any attention to a minimal audience, the two lovebirds went on with their business while I enjoyed an ice-cold Coca Cola in a bottle. v
